Today’s Menu: Buffalo Ribeye Steak w/ Cheesy Hashbrown Potatoes and Cut Green Beans

 

 

For Breakfast I prepared some Glier’s Turkey Goetta. I also prepared some Simply Potato Shredded Hash Browns, toasted 1 slice of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Love a good Breakfast! After Breakfast I went with Mom to the Hospital to see how a family friend was doing. She had exploratory surgery to see if they could find what was giving her stomach pains. She’s one of Mom’s best friend and someone I’ve known for as long as I can remember. Hope that they find what’s wrong she’s a fine lady! A lot of heavy rain and thunderstorms on and off all day, also very muggy out. For Dinner tonight it’s a Buffalo Ribeye Steak w/ Cheesy Hashbrown Potatoes and Cut Green Beans.

 

Used the Wild Idea Buffalo 10 oz. Ribeye Steak, and what a beautiful cut of meat these Ribeyes are! It’s about 1 1/2″ thick with just enough of marbling to make it perfect. To prepare it I preheated the oven on 400 degrees. I then rubbed the Ribeye with a light coat of Extra Light Olive Oil and then seasoned it with a sprinkle of Garlic Powder, a shake of Ground Roasted Cumin, and McCormick Grinder Sea Salt and Peppercorn Medley.

 

 

 

 

To start I pan fried it, using a Cast Iron Skillet on medium heat about 3 minutes per side. Then I put the Skillet in the oven and roasted it until it had internal temperature of 145 degrees for a medium rare, and it came out perfect, love using Cast Iron Skillets; from the stove to the oven! After removing it from the oven I put the Ribeye on a plate and lest it rest for 5 minutes before serving. These Steaks are so moist and tender and have that distinct Wild idea Buffalo flavor. The juices off the Steak was just incredible! Way to big for one meal, I’ll have the leftover for breakfast or lunch tomorrow. Love that Wild Idea Buffalo!

 

 

For one side I prepared some Idahoan Cheesy Hash Brown Potatoes. I love all the Idahoan products and this one no different. As the others its baked in a casserole dish. To make the dish I’ll need 1 box of the Idahoan Premium Steakhouse Cheesy Hashbrown Potatoes, 2 Tbsp Blue Bonnet Light Butter, 1 3/4 cups boiling water, and 1/2 cup 2% Milk.

 

 

 

To prepare it; Preheat the oven on 450°F . Then in a 1 1/2 qt casserole dish, combine potatoes, contents of sauce pouch, 2 Tbsp butter, and 1 3/4 cups boiling water. Add the 1/2 cup milk and stir to combine. Bake uncovered at 450°F for 25 minutes. Sprinkle crunchy onion topping on top of potatoes. Let stand 5 minutes, then serve. Well seasoned and Cheesy. Goes great with Buffalo Ribeye.

 

 

 

For a second side I had some Fresh Cut Green Beans. Mom had purchased some 1/2 Runner Green Beans from Jungle Jim’s the other day. There was a couple of servings left so I reheated those. I can never have enough Green Beans! I also baked a loaf of La Brea Multi-Grain Bread. For Dessert later a Breyer’s 100 Calorie Vanilla Cup.

Today’s Menu: 5 oz. Petite Buffalo Top Sirloin Steak w/ Baked Cheesy Hash Browns and Cut Italian Green Beans

 
For Breakfast I toasted a Healthy Life Whole Grain English Muffin (lightly buttered), heated up 3 slices of Boar’s petite-buffalo-top-sirloin-steak-cheesey-hash-brown-casserole-013Head Sweet Sliced Ham, and made my morning cup of Bigelow Decaf Green Tea. Delicious and light Breakfast sandwich! Cold day here today, had a low this morning around 11 degrees and a high of only 20. We ended up with about 2″ or more of snow, so not bad at all. So not a lot going on outside today. I didn’t have a lot to do today so I shredded some bills and statements for Mom, and she had a ton of them! Good thing I had nothing else to do because this took a while. So for my Dinner tonight it’s my favorite Steak, the Wild Idea Buffalo – 5 oz. Petite Top Sirloin Steak. Tonight I prepared a 5 oz. Petite Buffalo Top Sirloin Steak w/ Baked Cheesy Hash Browns and Cut Italian Green Beans.

 
I’ll be using Wild Idea Buffalo Petite Top Sirloin Steak (5 oz.). To prepare the Steak; I rubbed the Steak with a Wild Idea Buffalo – 5 oz. Petite Top Sirloin Steak 008teaspoon of Extra Light Virgin Olive Oil. Then seasoned it with McCormick’s Grinder Sea Salt and Peppercorn Medley. As the Steak rested I preheated a Cast Iron Skillet on medium heat. When the skillet was heated I added my Buffalo Sirloin, cooked it 4 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So juicy and the best flavor of any Steak, Beef or Buffalo I’ve ever had. As always when cooking Buffalo, keep an eye on it will get done quickly. They cook faster than marbled meat and when overcooked will be tough and dry. Buffalo is best cooked medium-rare or rare. The Steak came out a beautiful medium rare, and juicy and tender! I also Sauteed some Baby Portobello Mushrooms to top the Steak.

For one side I prepared some Idahoan Cheesy Hash Brown Potatoes. I love all the Idahoan products and this one no different. As the others its baked in a casserole dish. Just follow the box instructions and it comes out perfect! Excellent Hash Brown Dish! Well seasoned and Cheesy. Goes great with my Buffalo Sirloin. I left the description and cooking instructions at the end of the post.

Then for another side I heated up a can of Allens Cut Italian Green Beans. I had a Diet Half and Half Snapple to drink. For Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar, only 80 calories!
