Today’s Menu: Crispy Chicken Strips w/ Mashed Potatoes and Cut Green Beans

 

 

 
Started my morning off by preparing some Simply Potatoes Shredded Hash Browns, 1 Egg Sunny Side Up, 2 Jimmy crispy-chicken-strips-w-scalloped-potato-casserole-and-cut-itali-003Dean Turkey Breakfast Sausage links, toasted a couple of slices of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. One great Breakfast! From a high of 65 degrees 2 days ago to a high of 25 degrees with snow flurries! And yesterday evening we got about 1/2 inch of snow. Back to 60 degrees Sunday and Monday. After Lunch I went over to see Dad at rehab. They moved him to a private room finally. Which will be a lot quieter and a lot more privacy. Stopped by the bank and filled up with gas before coming home. For Dinner tonight I prepared Crispy Chicken Strips w/ Mashed Potatoes and Cut Green Beans.

 

Perdue Crispy Chicken Strips

I used the PERDUE® Crispy Chicken Strips, the families favorite Chicken. To prepare it I preheated the oven to 425°F . Sprayed a small baking sheet with cooking spray. Placed frozen strips in single layer on baking sheet. Baked for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn the Strips halfway through heating time. They come out golden brown and delicious! Really enjoy these and so easy to prepare!

 

 

 

Idahoan Scalloped Potato Casserole

For one side I prepared a box of Idahoan Scalloped Potato Casserole. Another easy to prepare and delicious Potato dish from Idahoan. A breeze to make just mix the ingredients and bake at 450 degrees for 25 minutes and you have some delicious Scalloped Potatoes. Plus their only 140 calories and 19 net carbs.

 

 

 

 

Fried Walleye w Cut Roma Beans and Baked Roasted Fingerling Pota 002
For another side I heated a can of Allens Cut Italian Green Beans, our family’s favorite Bean Side. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Conventional/Toaster Oven (Preferred Methods) Preheat Oven to 425°F. Spray baking sheet with cooking spray. Place frozen strips in single layer on baking sheet. Bake on middle oven rack for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn patties halfway through heating time. Microwave Oven Place 4-6 frozen strips in single layer on a microwave safe plate lined with paper towel. Heat, uncovered, on high for 2 to 3 minutes, turning halfway through heating time. Let stand for 1 to 2 minutes before serving.

Went out early this morning to get the morning paper and a large Doe Deer was coming across the street and going on into woods behind us, beautiful site to start the day! Had a Simple Truth Breakfast Sandwich to start the day, really enjoy these. It wasn’t humid out until the sun finally broke through the clouds and the humidity shot up. A lot of rain again overnight, now we are getting too much rain. There was an article in the paper talking about with all the rain its hampering Yard Care Businesses and local Farms. Usually we don’t seem to get enough rain but not this year. For dinner tonight Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Green Beans.

Mom had been wanting some Ribs so what my Mom wants my Mom gets! So I picked up a package at Kroger yesterday, they always have top quality Pork. And these were some Pork Back Ribs, 4 1/2 lbs. worth! Last night before I went to bed I cut the Ribs in half, so they’ll fit in the Crock Pot, and put each half in a Hefty Gallon Plastic Bag then seasoned them with Sea Salt and Black Pepper and then covered the Ribs in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray. Got the Ribs out of the fridge, discarded the Hefty Bags, and put them in the Crock Pot where I let them cook and simmer, on low, for about 8 hours. Long up in the afternoon you can start smelling the aroma of the Ribs, intoxicating! After 8 hours their ready and now for the hard part of cooking them, getting them out whole without breaking them up! Their that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For all of us JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs were incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot little to no clean-up. Just wipe it down and store it for the next time.

For side dishes I prepared some Idahoan Au Gratin Homestyle Casserole. I left the Idahoan Product info and instructions at the end of the post. Then I heated up a can Del Monte Cut Green Beans. For dessert a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 

 
Idahoan Au Gratin Homestyle Casserole

Product Description

Oven Directions

Best for Golden Browning

PREHEAT oven to 450°F. COMBINE potatoes and sauce mix in 1 1/2 quart baking dish.
STIR in 1 1/2 cups boiling water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
BAKE uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling).
Remove from oven and let stand a few minutes before serving.
BAKING NOTES: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min. To bake potatoes and roast meat at the same time, bake at 375°F for about 45 min; 350°F for about 50 min; or 325°F for about 60 min.

Today’s Menu: Panko Crusted Cubed Pork Steak w/ Scalloped Potato Casserole and Roasted Asparagus

 
Well the rain has finally slowed down, but it’s windy and cooler outside. Looking up and down our street this Panko Crusted Cubed Pork Steak w Scalloped Potato Casserole 011morning, as I went to fetch the morning papers, all the Crab Trees are in full bloom and beautiful! Started my day off with some Jennie – O Turkey Breakfast Sausage Links, Simply Potatoes Hash Browns, a slice of Buttered Klosterman Wheat Bread, and a cup of fresh brewed Bigelow Decaf Green Tea. Now I’m ready for the day! Pulled both cars out of the driveway and swept it and gave it a good washing down, looking a lot better. The sod I put down along the driveway looks great and is nice and green. Plus it solved our drainage problems. Made a full meal tonight, especially for Mom and Dad. I prepared Panko Crusted Cubed Pork Steak w/ Scalloped Potato Casserole and Roasted Asparagus.

 

 
I bought a couple of packages of Cubed Pork Steak at Kroger yesterday. So I got the big three out to bread it with; Flour, Egg Beater’s, and Panko Bread Crumbs. I seasoned the Steak with Sea Salt and Black Ground Pepper. Next I Panko Crusted Cubed Pork Steak w Scalloped Potato Casserole 003seasoned the Flour with Hungarian Paprika and rolled the Cube Pork in that and shook off the excess. Then I dipped it in the Egg Beater’s shaking off the excess and then pressed both sides in the Shake and Bake Seasoned Panko Bread Crumbs, making sure both sides was well covered. I heated up a medium size skillet, that I drizzled with Extra Virgin Olive Oil, on medium high heat. Added my Cubed Pork and fried both sides about 4 minutes per side, till each side was golden brown. Topped it with some Pioneer Peppered White Gravy. The Cubed Pork Steak came out delicious! Moist and very tender with a good flavor from the Paprika and all the other ingredients. As you can tell in the picture, the Steak was huge so I cut in half and I’ll have the other half for Breakfast in the morning, where I’ll serve it on a Whole Grain English Muffin as a Breakfast Sandwich.

 

 

Idahoan Scalloped Potato Casserole

Then to prepare the Asparagus I just needed Extra Virgin Olive Oil, Cloves Garlic (minced), Sea Salt, Freshly grated Black Pepper, Lemon Juice, and Shredded Parmesan Cheese. Rinse clean the asparagus. Break the tough ends off of Roasted Asparagus 2the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. (Alternatively you can put the asparagus and oil in a plastic bag, and rub the bag so that the oil gets evenly distributed.) Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until lightly browned and tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving. It’s our favorite Asparagus recipe. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

INGREDIENTS
1 lb asparagus spears (thick spears are best for roasting)
1-2 Tbsp Extra Virgin Olive Oil
2 Cloves Garlic, minced

Shredded Parmesan Cheese

Directions

But he got dizzy and almost fell so we called 911 and let them take him on to the hospital. They did release him after about 4 hours, still waiting on results of the tests. Hopefully good news! For dinner tonight, Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Green Beans.

Today’s Menu: Roasted Cumin Spiced Turkey Cutlets w/ Scalloped Potatoes and Sugar Snap Peas

It was a beautiful and sunny morning here today, about 61 degrees! Started the day off with a Healthy Life Whole Grain English Muffin topped with some Smucker’s Sugar Free Blackberry Jam and a fresh brewed cup of Bigelow Decaf Green Tea. Then took my breakfast along with the Morning Paper and had Breakfast outside on a small table we have. Great way to start the day! For dinner tonight I prepared Roasted Cumin Spiced Turkey Cutlets w/ Scalloped Potatoes and Sugar Snap Peas.

 

 

 
Yesterday I had just posted about Jennie – O Extra Lean Turkey Breast Cutlets and how they were difficult to find at times. Then I stopped by Walmart yesterday afternoon and they had just put out all kinds of them! Ahh the power of positive thinking! So for the Turkey Cutlets I’ll need; 2 Tbls of Extra Virgin Olive Oil, 1/2 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat my oven to 350°. Combine all the ingredients; rub it all over the Turkey Cutlets. Let stand 10 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add Turkey to pan; cook 4 minutes, browning on both sides. Bake at 350° for 15 minutes or until a thermometer registers 165°, turning after 7 minutes. Let stand 10 minutes before slicing. Then get ready to enjoy one delicious Turkey Cutlet! Fantastic combo of Spices, which made one incredible Crust on the Turkey with the inside being tender and moist! I’ve used the Cumin Spice Rub on different meats now and it works well with all of them, gives it a nice crust and great flavor.

 

 

 

For one side dish I used the leftover Idahoan Scalloped Potato Casserole that I used the night before. Reheated that up and it’s just as tasty as it was the night before. I love using Idahoan Potato Products,a great variety of Potato Products and all delicious. I also heated up a bag of Walmart Marketside Sugar Snap Peas, just microwave in the steamable bag for 2 minutes and done! Wow, one great dinner tonight! Love those Jennie – O Extra Lean Turkey Breast Cutlets. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Honey-Ginger Chicken with Lime w/ Scalloped Potatoes and Cut Green Beans (Spoiler Alert) One delicious chicken Thigh recipe!

A little warmer and a bit more humid out today, but not real bad out. Ran a couple of errands for my Mom and then picked up a friend of mine and we went to see an old friend of ours that was in the hospital. He was involved in a bad car crash a couple of days ago, thankfully he’s doing a lot better now. For dinner tonight I tried a new recipe from the website of Food and Wine. I prepared Honey-Ginger Chicken with Lime w/ Scalloped Potatoes and Cut Green Beans.

 

 

 

To prepare this dish I’ll be using; 2 tablespoons balsamic vinegar, 1 tablespoon honey, 1/3 cup minced fresh ginger, 1 jalapeño, finely chopped, 2 teaspoons garam masala, 1/2 teaspoon cayenne, 1 tablespoon plus 1 teaspoon salt, 1 teaspoon cracked black pepper, 3 1/2 teaspoons grated lime zest, 1 package of 6 Boneless and skinless Chicken Thighs, 2 teaspoons sugar (Splenda), 4 tablespoons unsalted butter, 2 tablespoons canola oil, 2 tablespoons fresh lime juice, and Lime wedges, for serving (optional). *I couldn’t find garam masala at the store so I made my own. The garam masala recipe I used contained a lot of the ingredient listed in the original recipe, so some of the ingredients are not listed above. There are different garam masala recipes that I seen but I went with this one that contained ingredients needed for this recipe. Chicken Thighs are quickly becoming my favorite cut of Chicken. I left the original recipe and web link at the bottom of the post.

 

 

 

Honey Ginger Chicken Thighs 001
To prepare it I preheated the oven to 400°. In a bowl, whisk the vinegar, honey, ginger, jalapeño, garam masala, cayenne, salt, and 3 teaspoons of the lime zest. Prick the chicken with a fork, add it to the bowl and toss. In a small bowl, mix the sugar with the remaining lime zest. In a large ovenproof skillet, I melted 2 tablespoons of the butter in the oil over moderately high heat. Add the chicken and cook, turning, until golden, 5 minutes. Sprinkle with the lime sugar and roast for 25 minutes, or until the chicken is cooked. Add the lime juice and the remaining butter to the skillet. Serve the chicken with the pan juices and lime wedges. If you want some incredible tasting Chicken Thighs you have to try this one out! I love using Spices and this one is packed with a varied assortment that all comes together to make one fabulous Chicken Thigh Dish. One of those Keeper Recipes. You have the bite of the Ginger, the heat of a Jalapeno and Cayenne, and then the sweetness of Honey to balance everything out. I could have eaten the entire package of Thighs, but the leftovers will make a fantastic Chicken Slider for lunch tomorrow!

 

 

 

Then for one side dish I prepared a box of Idahoan Scalloped Potato Casserole. I love all the Idahoan Potato Products, all easy to prepare and all delicious! Then I also heated up a can of Del Monte Cut Green Beans. For dessert later some Breyer’s Carb Smart Vanilla Bean Ice Cream topped with some fresh sliced Georgia Peaches!

 

 

 

 

 

Honey-Ginger Chicken with Lime

Honey Ginger Chicken Thighs 005

 

Ingredients:

 

2 tablespoons balsamic vinegar
1 tablespoon honey
1/3 cup minced fresh ginger
1 jalapeño, finely chopped
2 teaspoons garam masala
1 1/2 teaspoons ground coriander
1 teaspoon ground cumin
1/2 teaspoon cayenne
1 tablespoon plus 1 teaspoon salt
1 teaspoon cracked black pepper
3 1/2 teaspoons grated lime zest
4 chicken legs, cut into drumsticks and thighs
2 teaspoons sugar
4 tablespoons unsalted butter
2 tablespoons canola oil
2 tablespoons fresh lime juice
Lime wedges, for serving

 
*I couldn’t find garam masala at the store so I made my own by adding the following spices:
2 teaspoon ginger
1 teaspoon cinnamon
2 teaspoon black pepper
3 teaspoon ground cumin
3 teaspoon ground coriander
1/2 teaspoon ground nutmeg
1 teaspoon ground cloves

 
Directions;
Preheat the oven to 400°. In a bowl, whisk the vinegar, honey, ginger, jalapeño, garam masala, coriander, cumin, cayenne, salt, pepper and 3 teaspoons of the lime zest. Prick the chicken with a fork, add it to the bowl and toss. In a small bowl, mix the sugar with the remaining lime zest.
In a large ovenproof skillet, melt 2 tablespoons of the butter in the oil over moderately high heat. Add the chicken and cook, turning, until golden, 5 minutes. Sprinkle with the lime sugar and roast for 25 minutes, or until the chicken is cooked.
Add the lime juice and the remaining butter to the skillet. Serve the chicken with the pan juices and lime wedges.

Still no break in this humid weather, very bad day out today. They say by Friday we’ll get a big break in this weather, Friday sunny and only a high of 72 degrees! Come on Friday and get here. Went to the bank and stopped by Walmart for a few items and home. Then for dinner tonight its Breaded Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.

 

 

 
Nothing easier and delicious than Pilgrim’s Southern Style Breast Strips, it’s always a great go too when you want that easy to prepare meal! It’s the best Frozen Chicken that I’ve found by far. Very easy to prepare; Preheat oven to 350° F. Arrange frozen chicken breast fritters in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes until no pink remains or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter. Chicken is served! As I said it’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of JB’s Fat Boy Sticky Stuff BBQ Sauce.

 
For one side I cooked up some fresh Green Beans that we purchased out in Ross, Ohio the other day. Then I also prepared a cup of Idahoan Homestyle Mashed Potatoes. It comes in a microwavable cup, another heat and serve item. I also had a slice of Klosterman Wheat Bread that I buttered with I Can’t Believe It’s Not Butter. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Rain and more rain today and in the future forecast! A little cooler out also, high in the 60’s. Went for my Cancer Checkup and every thing is looking normal! Really blessed on having one of the finest Oncology Doctors around, but I was informed today that he was going to retire in June. Very sad, I’m losing a Doctor that I trust more than any other and a friend at the same time. Wanted an easy meal to prepare for Dinner tonight So tonight its Breaded Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.

Another cold and blustery day out again. It seems that’s the norm around here anymore. But a very positive sign that was on yesterday was the Cincinnati Reds had their first Spring Training Game in Arizona, which they won 8-3 over Cleveland. Spring can’t be too far away when “The Boys of Summer” start playing. For dinner tonight it’s a Jennie – O Seasoned Turkey Breast Steak w/ Au Gratin Potato Casserole, Cut Green Beans, and Fried Apples.

 

 
I’ve been buying the Jennie – O Seasoned Turkey Breast Steak for a while now. Easy to prepare, comes seasoned, and always delicious! It serves up to 5, but a lot of times like tonight I’m cooking for 1. So I’ve got some great leftovers that’s perfect for Sandwiches or Fajitas.

 

 
I had come across the Jennie – O Seasoned Turkey Breast Steak at Walmart a while back, and been using regular ever since! As I described earlier it comes Seasoned and it’s only 130 calories and 3 carbs per serving. You can prepare it several ways, I pan fried mine. To prepare it just preheat a large skillet over medium heat, spray it with nonstick spray. Cook the steaks, turning 2-3 times until meat thermometer inserted into thickest portion of meat reached 165°F, approximately 19-21 minutes. Covered with lid for the last 5 minutes of cooking. Remove from stove top, cover, and let rest for 5-10 minutes before slicing. As usual it’s another winner from Jennie – O! It was moist and well seasoned, I did add a couple of shakes of Sea Salt while it was cooking.

For one side dish I baked a Idahoan Homestyle Au Gratin Potato Casserole. Use these from time to time, another easy to prepare dish. Just mix all the box ingredients with water, milk, and butter and bake. Bakes up a delicious Au Gratin Potato Casserole! Then I heated up a small can of Del Monte Cut Green Beans. I also had a slice of Klosterman Wheat Bread. Then for dessert a bowl of my Mom’s Fried Apples. She makes them with Splenda and they just melt in your mouth!

Jennie – O Seasoned Turkey Breast Steak
A leaner, great tasting grilling option with only 130 calories and 23 g of protein per serving.

Cooking Instructions:
SKILLET METHOD:
Preheat a large skillet over Medium heat.
Spray with nonstick spray.

Cover with lid for the last 5 minues of cooking.
Remove from stovetop, cover, and let rest for 5-10 minutes before slicing.
