Another Spring type day in July, it was about 50 degrees this morning and then a high of 77 degrees today. I hear more normal Summer weather is on the way though, but it’s been very enjoyable while it lasted! For dinner tonight I prepared a Broiled Sea Bass with Herbed Lemon Butter w/ Au Gratin Potatoes, Sugar Snap Peas, and Whole Grain Bread.

 

 

 

I normally don’t purchase Sea Bass due to the price by our local Kroger had it on sale so I purchased a small 1/2 fillet. To prepare it I needed; 2 Tablespoons melted Blue Bonnet Light Stick Butter, 1/2 tablespoon Lemon Juice, 1/2 tablespoon chopped Parsley, 1/8 Teaspoon Dill, rosemary or marjoram, crumbled and Sea Salt and Ground Pepper, to taste. Then line a broiled pan with foil and place the fillets on the rack. Sprinkle lightly with salt and pepper. Combine remaining ingredients and use to baste the fish. Place the broiler pan 4 inches from heat and broil, allowing 10 minutes cooking time per inch of thickness. Do not turn the fish. Baste several times during cooking. First time I had New Zealand Wild Caught Sea Bass and I really enjoyed it! The Sea Bass was a mild tasting Fish and with the Herbed Lemon Butter it was delicious! This Lemon Butter would go good on Flounder or Walleye also.

 

 
For sides it was leftovers. I reheated the Idahoan Au Gratin Potato Casserole and also the remainder of the Sugar Snap Peas. I also had a couple of slices of Healthy Life Whole Grain Bread. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with a dab of Cool Whip free.

Today’s Menu: Seasoned Breaded Fried Haddock w/ Au Gratin Potatoes, Boiled Sliced Carrots, and Baked Sour Dough Bread

 

 

 
Warming up out there today, 85 degrees for today and the rest of the week. First a Deer earlier this week and now I spotted a family of raccoons, Mama and 3 little ones roaming around the edge of the woods. For dinner tonight I prepared a Seasoned Breaded Fried Haddock w/ Au Gratin Potatoes, Boiled Carrots, and Baked Sour Dough Bread.

 
Layed out a Haddock Fillet in the fridge overnight to thaw. Rinsed it off, patted it dry, and seasoned it with Sea Salt and Ground Black Haddock 007Pepper. Sliced the fillet into smaller pieces and put them in a Hefty Zip Plastic Bag and added Zatarain’s Lemon Pepper Breading Mix, shook till the pieces were all well covered. I pan fried them in Canola Oil, fried skin side down about 4 minutes and turned them over and fried for another 3 minutes. i love using the Zatarain’s Breading Mix, all are seasoned just right and make a perfect crust.

 
For side dishes I reheated some Idahoan Au Gratin Potatoes that were leftover from the other night, heated up a small can of Del Monte Sliced Carrots, and baked the other half of the Goldminer California Sour Dough Bread. I could make a meal of baked bread! For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Today’s Menu: Cajun Spiced Seared Scallops w/ Brown Rice, Parmesan and Herb Red Potatoes, and Baked Artisan Multi Grain Loaf

 

 

They confirmed today my Dad is coming home Saturday from the rehab center! He’s been gone for a while now it’s going to be nice to have him home. So for dinner tonight while at Kroger yesterday I purchased some Bay Scallops, which I haven’t had in years! For Dinner; Cajun Spiced Seared Scallops w/ Brown Rice, Parmesan and Herb Red Potatoes, and Baked Artisan Multi Grain Loaf.

 

 

To prepare it I’ll need; 1 pound of Bay Sea Scallops, 2 teaspoons Cajun Seasoning, 2 teaspoons Extra Virgin Olive Oil, 1/2 teaspoon Sea Bay Scallops Brown Rice 008Salt, Dash freshly Ground Peppercorn, 1 tablespoon Extra Virgin Olive Oil, and 2 teaspoons unsalted Butter. To prepare them is quick and easy first in a food storage bag, toss the scallops gently with the Zatarain’s Cajun Seasoning, 2 teaspoons olive oil, salt, and pepper. Refrigerate for about 1 hour. Heat the 1 tablespoon olive oil and 2 teaspoons of butter in a large skillet over high heat. With tongs, arrange the scallops in the hot fat and cook for about 2 to 3 minutes on each side, or until nicely browned and your done! The Zatarain’s Cajun Seasoning is fantastic on the Scallops, nice heat and seasoning but not overpowering where you can’t enjoy the flavor of the Bay Scallops.

 

For side dishes I prepared some Uncle Ben’s Natural Whole Grain Brown Rice, not much to prepare it was the microwave single serving of Rice. The quick but still delicious way for Rice. I also prepared some more of the Idahoan Parmesan and Herb Red Potatoes. Second time I’ve had these and love them! I also baked up some more of the La Brea Bakery Take and Bake Artisan Multi Grain Loaf. I’ll have to have the Bay Scallops more often! The Scallops paired with the Parm Red Potatoes and Brown Rice is perfect! For dessert later a Jello Sugar Free Double Chocolate Pudding.

 

 

Cajun Spiced Seared Scallops
Ingredients:

1 pound Bay Scallops, about 18 to 20
2 teaspoons Cajun Seasoning
2 teaspoons Extra Virgin Olive Oil
1/2 teaspoon Sea Salt
Dash freshly ground Peppercorn

1 tablespoon Extara Virgin Olive Oil
2 teaspoons unsalted Butter
Preparation:

In a food storage bag, toss scallops gently with the Cajun seasoning, 2 teaspoons olive oil, salt, and pepper. Refrigerate for about 1 hour.
Heat the 1 tablespoon olive oil and 2 teaspoons of butter in a large skillet over high heat. With tongs, arrange the scallops in the hot fat and cook for about 2 to 3 minutes on each side, or until nicely browned.

Oven Directions

Bake uncovered at 450°F for 20 minutes. Sprinkle Parmesan topping on top of potatoes and bake another 5 min.
Let stand 5 minutes, then serve.

Today’s Menu: Fried Haddock w/ Baked Steakhouse Scalloped Red Potatoes, Green Beans, and Whole Grain Bread
Spent the afternoon at the rehab center with my Dad. Yesterday was a rough day for him, he just wasn’t feeling up to par. Today was a Haddock Idahoan Red Potatoes 007much better day for him. He felt good and we were able to get him outside a bit, which always helps! I had some more of the Haddock frozen and I had it thawing in the fridge overnight. So for dinner tonight I prepared; Baked Steakhouse Scalloped Red Potatoes, Green Beans, along with sliced Whole Grain Bread.

I used the Zatarain’s Fish Fri Lemon Pepper Seafood Breading Mix again. I love this breading it’s quickly became my favorite Fish breading. I had the fillet cut into two smaller pieces and rinsed off with water already. I then poured some of the breading mix into a Hefty Zippper Bag and added the Fish shaking it in the bag until it was well covered. I skillet fried it in about a 1/2 inch of Canola Oil until it was golden brown. With this breading the Fish comes out perfect. The crust and the seasoning is meant for Fish!

For side dishes I prepared a new one from Idahoan; Idahoan Steakhouse Scalloped Red Potatoes. I really love using the Idahoan Products, they’re all delicious and so easy to prepare and this new one is no different. Great seasoning and taste and love the added Bacon and Ranch to it. Another great option from Idahoan. I also had a slice of Healthy Life Whole Grain Bread. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice cream topped with fresh Mango slices.

Today’s Menu: Grouper Sandwich w/ Baked Cheesy Hash Browns and Carrot Slices

I had a fillet of that delicious Gulf Coast Grouper leftover from the other night and I fried it up and had a Grouper Sandwich w/ Baked Cheesy Hash Browns and Carrot Slices for dinner. Simple and easy to make Grouper. I seasoned it with Sea Salt and Ground Black Pepper then rolled it in Progresso Italian Style Bread Crumbs. I pan fried it in Extra Virgin Olive Oil about 3 1/2 minutes on the first side then flipping it over and continued to fry it for 3 minutes. What a fantastic tasting fish! Really no way to describe just how good it is. If you’ve never tried Grouper it’s time!

For sides I prepared Idahoan Farmhouse Fix’ns Cheesy Hash Browns. Another easy but tasty dish. I left the product description at the end of the post. I also had some boiled Carrot slices. For dessert a very special and mouthwatering dessert. My Mom baked an Apple Pie! The good part she used White and Brown Splenda to make it. It’s delicious and it tastes just as good as it would if you used Sugar. Great Job Mom!

Product Description

Preparation Instruction
Oven Directions

Today’s Menu: Seafood Feast Lobster Claws and Grouper w/ Green Beans and Scalloped Potatoes

 
Yesterday a friend of mine came home from a fishing trip down in Florida’s Gulf Coast. He gave me a beautiful bag of Grouper fillets! Which worked out perfectly with my visit to Jungle Jim’s Market this morning. Among the many items I picked up at the Market I hit the Seafood Dept. at the right time. they were just putting out packages of fresh boiled Lobster Claws. Of course these were too good to pass up and they would go perfect with the Grouper I had planned on having for dinner tonight. For the Grouper after washing and patting the fillets dry I seasoned them with Sea Salt and Ground Black Pepper. I then rolled them in Progresso Italian Style Bread crumbs. I pan fried them in Extra Virgin Olive Oil, 3 minutes per side. The Lobster was very easy to prepare.it was already boiled so to heat them back up I took a large skillet and heated about a 1/2″ of water to boil and added the Lobster Claws. I put the lid on the skillet and let them steam for 4 minutes and they were ready! Needless to say the Gulf Grouper was incredible! It had salt water flavoring and was a meal itself but we had the Lobster also. The Lobster as always is a little bit of work to get the meat out of the shell but worth it! The meat was sweet and bursting with flavor. One great combo, a Seafood Feast!

I also prepared some Idahoan Brand Scalloped Potatoes and Del Monte Cut Green Beans. Anymore we always use Idahoan Potato Products. All are easy th make and delicious Potato Dishes. For dessert later a Jello Sugar free Chocolate Pudding topped with Cool Whip Free.

 

 
Idahoan SCALLOPED HOMESTYLE CASSEROLE

Product Description
There’s no better way to start a hearty Scalloped homestyle casserole than with world-famous Idaho® potatoes, which is why you’ll taste only 100% grown-in-Idaho potatoes in this rich & creamy side. For family meals or for special occasions, this creamy, delicious dish is sure to please.

 

Baking Instructions

 

PREHEAT oven to 450°F. COMBINE potatoes and sauce mix in 1 1/2 quart baking dish.
STIR in 1 1/2 cups boiling water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
BAKE uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling).
Remove from oven and let stand a few minutes before serving.
BAKING NOTES: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min. To bake potatoes and roast meat at the same time, bake at 375°F for about 45 min; 350°F for about 50 min; or 325°F for about 60 min.

 
Stove Top Directions
HEAT potatoes and sauce mix, 1 1/2 cups hot water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter to boil in 2-quart saucepan over high heat, stirring occasionally. Watch carefully to avoid boilover.
REDUCE HEAT, then COVER and simmer 15 minutes, stirring occasionally, until potatoes are tender and sauce reaches desired consistency (sauce will thicken slightly when cooling).
Remove from heat and let stand a few minutes before serving

Today’s Menu: Crock Pot Falling Off the Bone Ribs w/ Potato Pancakes, Sugar Snap Peas, and Whole Grain Bread

 

 

 

My Mom purchased some Ribs yesterday so it was decided yesterday what was for dinner tonight! Just not Rib but Crock Pot BBQ Baby Back Ribs! I used Kroger Pork Baby Back Ribs. While I had the crock pot warming up I cut the rack of Ribs in half, to fit in the crock pot, and seasoned the Ribs with JB’s Fat Boy Premium Rub and I then brushed on a half a bottle of JB’s Fat Boy Haugwaush Bar B Cue Sauce. I cooked the ribs for 8 hours on low in the crock pot. After 5 hours I applied the other half of Haugwaush to the Ribs. The ribs came out tender fall off the bone delicious. No knife needed as the bones could be removed by just pulling on them. The aroma of the Ribs were throughout the house. My rub and sauce are both J B’s Fat Boy products.If your looking for an easy and delicious Rib recipe look no further!

For sides I prepared Sugar Snap Peas,Idahoan Scalloped Homestyle Casserole, for Mom and Dad, and I baked the other half of the Walmart Bakery Marketside Everything Italian Loaf Bread. The Sugar Snap Peas were left over from a previous meal. The Idahoan Scalloped Potatoes are an easy and quick way to have a delicious Scalloped Potatoes. I’ve left the item description along with instructions at the end of the post. Instead of the Scalloped Potatoes I had Potato Pancakes that were leftover from last night’s dinner. For dessert/snack later a 100 calorie mini bag of Jolly Time Pop Corn.

 

Idahoan Scalloped Potatoes

Scalloped Homestyle Casserole

Today’s Menu: Oven Roasted Turkey Breast w/ Mashed Potatoes, Sugar Snap Peas, and Baked Artisan Harvest Grain Bread


It was a bit of pre Thanksgiving Dinner tonight, Oven Roasted Turkey Breast w/ Mashed Potatoes, Sugar Snap Peas, and Baked Artisan Harvest grain Bread. I prepared a Jennie – O Oven Ready Turkey Breast. This is the easiest Turkey Breast there is to prepare! Preheat your oven to 375 degrees and remove the frozen Turkey from the outer package. Keep the Turkey in it’s cooking bag and place it in a roasting pan. Roast it for 2 1/2 to 3 hours making sure the Turkey reads at least 170 degrees. You have Turkey! Simple, easy, and delicious.

For sides we had individual servings of Idahoan Mashed potatoes, Sugar Snap Peas, and Meijer Bakery Artisan Harvest grain Bread. All these are easily prepared items also. For the Idahoan Mashed Potatoes just add a bit of water and microwave for 1 1/2 minutes, done. The Sugar Snap Peas is a new one I’ve tried now a couple of times, Walmart Marketside brand. You can microwave these or boil them in water which is what I did. Just boil for 3 – 4 minutes and their ready. These are some of the best tasting Sugar Snap Peas I’ve ever had. Their big and bursting with flavor. I also baked a Meijer Bakery Artisan Harvest Grain Loaf Bread. For dessert later a bowl of Blue Bunny Frozen Chocolate/Vanilla Swirl Yogurt.

Today’s Menu: Slow Roasted Turkey Pot Roast & Brown Mushroom Gravy w/ Green Beans, Mashed Potatoes, and Cinnamon Apples

 

 

Tonight I prepared a Jennie – O Slow Roasted Turkey Pot Roast. Easy to fix, you can microwave it in its own container or bake it at 375 degrees for 1 hour which was the way I prepared it. After I hour I removed it from the oven and the aroma was fantastic! I pulled the bone out of the meat and then using two forks shredded the meat. I then, in a bowl, added Heinz Mushroom Brown Gravy to the Turkey and we have Pot Roast! This is going to make some killer Pot Roast sandwiches. I served the Pot Roast on a Healthy Life Whole Grain Bun and topped it with a splash of Woeber’s Horseradish Mustard. A really easy and delicious way for Turkey Pot Roast. It’s all dark meat and more than enough for 4 people.

For sides we had Green Beans, Idahoan Mashed Potatoes, Country Crock Cinnamon Apples (1/2 Serving). Later for dessert a bowl of Blue Bunny Naturally Frozen Chocolate/Vanilla Swirl Yogurt.

Today’s Menu: Veal Cubed Steak & Brown Mushroom Gravy w/ Green Beans, Mashed Potatoes, Cinnamon Apples, and Whole Grain Bread

 

After slacking yesterday I was ready to hit the kitchen and make a full healthy dinner! I prepared a beautiful lean Cubed Veal Steak. I seasoned them with Morton’s Salt Substitute and Ground Black Pepper and then rolled them in italian Style Bread Crumbs. I then fried them in Canola Oil about 4 minutes per side. They came out a beautiful crusted brown and very tender. I need to get Veal more often tender, great tasting and only 120 calories and 0 carbs per Cubed Steak. I topped it with a Heinz Mushroom Gravy that I added extra Mushrooms to and also used the Gravy for my Mashed Potatoes also.

For sides I had Idahoan Mashed Potatoes that as I said before were topped with Brown Mushroom Gravy. I also had Green Beans and a half serving of Cinnamon Apples. The meal was very low in calories and carbs that’s why I was able to add on the Cinnamon Apples, which really made the meal giving everything that added flavor boost! For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.
