Well a Happy Father’s Day to all the Fathers out there! A very special Happy Father’s Day to my Dad, who will be 92 later this year! It’s been raining on and off all day so it sort of put a damper on grilling outdoors. So I made dinner indoors preparing a Baked Chicken Breast Hogie w/ a Baked Potato

 
I used PERDUE PERFECT PORTIONS Boneless, Skinless Chicken Breasts. Their fresh boneless, skinless individually wrapped chicken breast filets, you can store them in the fridge or freeze them and just grab one from the freezer when your ready. They have a few different kinds, I’ve tried the Italian Style and the Plain, which is what I’m having for dinner. I baked mine, baked it on 350 degrees for about 20 minutes. It came out perfect! Seasoned it with Sea salt and Ground Black Pepper and served on a Kroger Bakery Sub Bun and topped with a slice of Kroger Brand Private Selection Buffalo Monterey Jack Cheese, Monterey with a hint of Buffalo Heat. I also topped it with a bit of Hellman’s Reduced Fat Mayo and Lettuce.

 
For a side I had a Baked Potato that I seasoned with McCormick Grinder Sea Salt and Black Peppercorn along with I Can’t Believe It’s Not Butter. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

It was nice enough to get out and have the car washed of all the dirt and salt from winter, still cold out but sunny. We just seem not to be able to get away from Winter around here. I’m out of my favorite Wild Idea Buffalo Top Sirloin so I went to Kroger and picked up a Great Range Bison Sirloin, which isn’t a bad second choice what so ever. For dinner tonight; Bison Sirloin Steak and Sauteed Mushrooms w/ Baked Potato and Cut Green Beans.

 
i prepared a 6 oz. Bison Sirloin. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I pan fried it in Canola Oil about 4 minutes per side, medium rare. As usual it came tender and bursting with that Bison, or Buffalo if you prefer, fresh and sweet flavor. I topped it with Sauteed Baby Bella Mushrooms.

 

T o go with the Bison I prepared a Baked Potato that I topped with McCormick Grinder Sea Salt and Black Peppercorn and I Can’t Believe It’s Not Butter. I also had heated up a single serving can of Del Monte Cut Green Beans and a couple of slices of Aunt Millie’s Light Whole Grain Bread. For dessert later a Jello Sugarless Double Chocolate Pudding.

Want an easy, filling, comfort dinner tonight, I have one for you and it’s one those pot meals! Easy to make and easy to clean up. It’s the Kraft/Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac, But mine is Turkey Mac. Using Ground turkey its a little healthier and less calories and carbs. So for dinner tonight I prepared Kraft/Velveeta Cheesy Skillets Dinner Kit/Ultimate Turkey and Cheese Mac with Harvest Grain Bread.

 

 

I used Kraft/Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac. The dinner kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. All I had to do was add the 2 cups of water and 1 lb. of Ground Turkey. I used Jennie – O Extra Lean Ground Turkey. Using the Extra Lean Ground Turkey instead of the Ground Beef you can lower the calorie count by anywhere from 60 – 80 calories! As I browned the Turkey I added Sea Salt, Pepper, and Ground Smoked Cumin for seasoning. It’s ready in about 10 minutes. I then add 2 cups of water, the seasoning and pasta. Simmer for 11 – 13 minutes and add the Velveeta Cheese and your ready for dinner. I’ll leave the instructions at the end of the post. It’s 350 calories and 27 carbs but you can lower the calorie count by using the Ground Turkey as stated above. I also warmed up a small loaf of Kroger Bakery Harvest Grain Bread and topped the slices with I Can’t Believe It’s Not Butter. This makes one hearty and tasty meal! They have different varieties of the Velveeta Skillets, I’ve tried 3 different ones and they are all delicious! For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time pop Corn.

 

 

 

Velveeta Cheesy Skillets Ultimate Cheeseburger Macturkey-mac-001

Ingredients:
* 1 LB. Ground Beef or Ground Turkey (Extra Lean)
* Sea Salt, Pepper, Cilantro, Ground Smoked Cumin to taste; Optional
* 2 Cups Water
* 1 Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac

Instructions:
* Brown and season 1 LB. Ground Turkey in large skillet. Drain
* Add 2 cups water, seasoning and pasta. Bring to a boil. Reduce Heat.
* Cover, Simmer and stir often until most of water is gone about 11-13 minutes. Remove from heat.
* Add Cheese from Velveeta Cheese Pouch. Stir in Cheese Sauce and serve

 

An Easy But Tasty Lunch and I’ve switched to Sargento Cheese!

For lunch I broke the flat griddle out making a Grilled Cheese and Ham Sandwich. Easy to make, delicious, and still a classic comfort food!

I used Healthy Life Whole Grain Bread, Sargento Ultra Thin Colby/Jack Cheese, and Kroger Brand Private Selection Smokehouse Hickory Ham. I used I Can’t Believe It’s Not Butter to coat the grill. As I said it’s quick, easy and delicious. The Smokehouse Ham is some of the best packaged Ham there is, very flavorful! The Sargento Cheese is only 120 calories and 1 carb for 3 slices. Ah the Cheese.

 

 
I’ve been using Kraft Cheese products my entire life. But in the past couple of years the size and amount of the various Kraft Cheese has been getting smaller and smaller with the price remaining the same or in some instances increasing. I’m a huge fan of their Cracker Barrel Extra Sharp Cheese (Block). That has shrunk from 540g down to 500g (was 600g in 2007). Plus I’ve noticed that the local stores around here are carrying less Kraft Cheese Products and the 2% Cheese products are real hard to find. So with all that I’ve almost completely switched over to Sargento Cheese. The prices are somewhat cheaper most of the time and they have a fantastic selection of Reduced Fat and Ultra Thin Cheese products. So it’s goodbye Kraft, hello Sargento!

Today’s Menu: One Egg Sunnyside Up, Turkey Breakfast Patties, Hash Browns, and ToastBreakfast Dinner 002

I had skimpped on Breakfast the last few mornings, in hurry to get a few things done early. So I was really wanting a good Breakfast so what better time than Dinner Time! I prepared One Egg Sunnyside Up, Turkey Breakfast Patties, Hash Browns, and Toast. This sounds good enough for any meal!
I prepared the Egg and Turkey Patties on a griddle and the Hash Browns in a small skillet. I really like using the griddle when possible. All you have to do is give it a light spray of Pam and your ready to cook. No Oil needed which means less fat and calories. Scrambled Eggs and Sunnyside Up are my favorite ways to prepare Eggs, I went with Sunnyside Up. I used Jennie – O Lean Turkey Breakfast Sausage. Comes in a roll, just slice and form the size of Patties you want. For my Hash Browns I used Simply Potatoes Shredded Hash Browns. Then to top everything off I toasted 2 slices of Healthy Life Whole Grain Bread topped with I Can’t Believe It’s Not Butter. To drink a nice cold glass of 2% Milk. For dessert later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

 

 

 

 

Jennie – O Lean Turkey Breakfast Sausage Roll – MildJO GRD TURK SAUS.
Breakfast Sausage Rolls contain less fat than regular pork sausage.
Product Features:

Cooking Instructions:
SLICE:
Remove casing and slice roll into 1/2 inch thick patties.

TO BAKE:
Preheat oven to 400 °F.

It’s 4 days before the first day of Winter and we have Heavy Rain and a Thunder Storm going on outside. I was going to grill a Bison Top Sirloin but due to the weather it was indoor cooking! For dinner I prepared a Bison Top Sirloin & Sauteed Mushrooms w/ Baked Potato, Sugar Snap Pea 7 Carrot Melody, and Whole grain Bread.

 

The Top Sirloin was the Top Sirloin I had ordered from Buffalo Gal at http://www.buffalogal.com/Bison-Top-Sirloin-Steaks-P42.aspx. We had already tried the Bison Hot Dogs, which were good, that was part of the order. T o prepare the Steaks I seasoned them with McCormick Grinder Sea Salt and Black Peppercorn. I pan fried them in Canola Oil on medium heat, about 5 1/2 – 6 minutes per side, medium rare! The Steaks came out delicious with great flavor. Comparing these, Buffalo Gal, to Wild Idea Sirloins I would have to give the edge to Wild Idea though. The Wild Idea had a slightly better taste and also the Buffalo Gal Sirloins were a bit tougher meat than Wild Idea. With that being said the Buffalo Gal Sirloins were very good though. I topped them with Sauteed Baby Bella Mushrooms.
For side dishes I prepared a Baked Potato, that was seasoned with McCormick Grinder Sea Salt and Black Peppercorn along with I Can’t Believe It’s Not Butter, and I combined the leftover Sugar Snap Peas and sliced Carrots from dinner the other day and warmed them up in a Medley of the two. We also had a side of sliced Healthy Life Whole Grain Bread. For dessert later a couple of Honey Crisp Apple slices and a Jello Sugar Free Dark Cherry Jello.

Another rainy and dreary day around here today. Spent the biggest part of the day cleaning the house and baking cookies. As for dinner I prepared Top Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Green Beans, and Whole Grain Bread.
I used another of Costco Top Sirloin Steaks. I prefer Bison but with the cost of Bison going up I use Beef from to time, and you can’t beatcostco top sirloin 006 Costco’s Steak for flavor! if I have to eat Beef I prefer Costco’s. I’ve yet to have a bad cut of Steak from them. As I said earlier the taste of these Steaks is heaven! The only seasoning you need for these is a little Sea Salt and Black Pepper. I pan fried it in Canola Oil about 5 minutes per side. Medium Rare and Delicious just like I like them! I topped it with Sauteed Baby Bella Mushrooms.

 

For side dishes I had a Baked Potato that I topped with I Can’t Believe It’s Not Butter, Sea Salt and Ground Black Pepper. Along with the Potato I had a single serving can of Del Monte Cut Green Beans and Healthy Life Whole Grain Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Grilled Ham and Cheese Sandwich w/ Chunky Baked Potato & Cheddar and Bacon Bits Soup
Another one of those day’s where I planned on a bigger meal but was running late helping my Mom out, still has a bad case of the flu. Thankfully I have a full freezer and pantry where I can make last minute dinners.

I went with a Grilled Ham and Cheese Sandwich w/ Chunky Baked Potato & Bacon Bits Soup. Always a hearty, quick and easy dinner! I used Oscar Mayer Carver Board Ham, Sargento Ultra Thin Colby – Jack Cheese, Litehouse Lite Thousand Island Dressing, and Healthy Life Whole Grain Bread to make my sandwich with. Thousand Island Dressing is a great way to liven up any sandwich, especially when you can find a great tasting Lite or Reduced Fat one. The Litehouse Lite is only 70 calories and 4 carbs per serving. To make the sandwich I butter both pieces of the bread with I Can’t Belive It’s Not Butter and then on the unbuttered sides I spread the Thousand Island Dressing, then layer the Ham, and then the Cheese. I heated a small frying pan spraying it with Pam Spray and melting about a 1/2 pat of I Can’t.. butter in the pan. When the butter stops bubbling I add my sandwich. I grill it on both sides until they are golden brown and the cheese is just starting to melt. A Grilled Cheese is good anytime of the day but one with added Ham and the Thousand Island Dressing makes it special!


Along with the sandwich I had a bowl of  Campbell’s Chunky Baked Potato with Cheddar and Bacon Bits Soup, 200 calories and 24 carbs per serving. One of Campbell’s Better Soups. Very good tasty, thick and hearty Soup. I topped with a some Kraft 2% Shredded Sharp Cheddar Cheese. A warm and hearty last minute meal! For dessert later a Jello Sugarless Dark Cherry Jello.

Today’s Menu: Bison Sirloin and Sauteed Mushrooms w/ Cauliflower & Cheese Sauce, Baked Potato, and Whole Grain Bread

 

 

 

Excellent dinner tonight! Bison Sirloin and Sauteed Mushrooms w/ Cauliflower & Cheese Sauce, Baked Potato, and Whole Grain Bread. I used Great Range Bison Sirloin. I seasoned it with McCormick Grinder Steakhouse Seasoning and pan fried it in a tablespoon of Extra Virgin Olive Oil about 4 minutes per side to a medium rare. As far as I’m concerned you can’t beat the taste and tenderness of Bison. Just wish you could find it more in this area.

For my side dishes I prepared Green Giant Cauliflower & Cheese Sauce, a Baked Potato, and Healthy Life Whole Grain Bread. I’m not a huge Cauliflower fan but I love this Green Giant Cauliflower & Cheese Sauce! It comes frozen and in a microwavable bag. Just make a small slit in the bag and heat on high for 5 1/2 minutes. The Cauliflower comes out crisp and with the Cheese Sauce added delicious. I left the product description at the end of the post. I also had a Baked Potato topped with Salt and Pepper along with I Can’t Believe It’s Not Butter. Also 2 slices of Healthy Life Whole Grain Bread. For dessert later I’m fixing some Breyer’s Carb Smart Vanilla Ice cream topped with Smucker’s Sugarless Hot Fudge Topping.

Today’s Menu: Progresso Kitchen Favorites Classic Lasagna w/ Toasted Whole Grain Bread

I wanted some Lasagna for dinner and when it’s Lasagna it’s Progresso Kitchen Favorites Classic Lasagna! Its was very easy to make as the dinner kit contains the Lasagna Pasta, Tomato Herb sauce, Ricotta Sauce Mix, and Grated Parmesan Cheese. I added 1 LB. Lean Ground Turkey, 1 Cup water, 2/3 Cup 2% Milk, 1 (8 oz.) Shredded Mozzarella Cheese (2 Cups), and I also added a bit more seasoning (McCormick Grinder Italian Herb). Basically you just layer your ingredients in a 8″ square baking dish and cover and bake at 425 degrees for 30 minutes and bake an additional 10 minutes uncovered. The product description along with full instructions are at the bottom of the post.

Prepared by the instructions it was 390 calories but I cut that and the carb count down by using Honeysuckle White Extra Lean Ground Turkey instead of Beef and Sargento Reduced Fat 2% Mozzarella Cheese. The Lasagna came out delicious again! Everyone really loves this. I’ve got a quick and easy way to have Lasagna now. The flavor was excellent. The Sauce was thick and well seasoned and the same for the pasta, perfect. I had a side of Aunt Millie’s Whole Grain Bread that I buttered with I Can’t Believe It’s Not Butter and then sprinkled Shredded Parmesan Cheese and Sargento Shredded Provolone/Mozzarella on it. Then I baked for 10 minutes until the the bread was toasted. For dessert later a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Ice Cream.

Progresso Kitchen Favorites Classic Lasagna

Directions
Ready to bake in about 20 minutes. You Will Need: 1 lb lean ground beef; 1 cup water; 2/3 cup milk; 1 bag (8 oz) shredded mozzarella cheese (2 cups); nonstick cooking spray and foil. Sauce: Heat oven to 425 degrees F. Brown beef in 10-inch skillet, breaking up beef into small pieces; drain. Stir Tomato Herb Sauce and water into beef; heat to boiling. Reduce heat; simmer 3 to 5 minutes, stirring occasionally. Meanwhile, mix Ricotta Sauce Mix and milk in liquid measuring cup or small bowl, using whisk or fork. Layer: Spray 8-inch square glass baking dish with cooking spray. Layer lasagna: Spread about 2/3 cup beef sauce in dish.
