Cloudy and cool out today, a high in the low 60’s. Had a Poached Egg, and 2 Eckrich Smoked Turkey Sausage Links, on a Healthy Life Whole Grain Muffin. Love those Poached Eggs! Had the morning work out and cleaned up around the house a bit. Then later ran a couple of errands for Mom and back home. For dinner tonight I prepared a Muenster Cheese Turkey Burger w/ Baked Potato.

I’m using the Jennie – O Turkey Burger Patties. Picked up a package at Meijer a while back and have them in the freezer. I sat one pattie in the fridge overnight to thaw. They’re already pre-made Patties and come fresh or frozen so all I did was season it with Sea Salt and Ground Black Pepper and fry! I fried them in Extra Virgin Olive Oil about 7 minutes per side. Always cook to 165°F as measured by a meat thermometer. As always the Burger came out moist, flavorful, and delicious! Served it on a Kroger Lite Wheat Hamburger Bun and topped with a slice of Simple Truth Muenster Cheese.

 

For a side with my Burger I had a Baked Potato seasoned with Sea Salt and Ground Black Pepper and I Can’t Believe It’s Not Butter. For dessert later a Healthy Life Dark Fudge Swirl Frozen Greek Yogurt.

After an early morning rain, the sun came out and it was one beautiful Spring Day! Sunshine and low 70’s. Had a Hoveround repairman stop today to do some maintenance on my Hoveround chair in the late morning. After that I got some laundry done and then I got the 4 wheel cart out to enjoy the that sunshine. Good to get out and get some fresh air and see some of the neighbors. For dinner tonight, Muenster Cheese Turkey Burger w/ Baked Potato.

 

I’m using the Jennie – O Turkey Burger Patties. Picked up a package at Meijer a couple of days ago. Today’s Menu: Grilled Cheese and Baked Fries

 
A little more energy and strength today but the big news is Mom and Dad. Both are doing much, much better today, and about time! Dad was released from the hospital late this afternoon. From people I’ve talked to, this strain of flu going around keeping everyone down and out for a while. I’ll be glad when it passes. Been a cloudy, windy, and cold day out today. Went to Walgreen for Mom and back home. For dinner tonight it’s a Grilled Cheese and Baked Fries.

A light comfort food sounded good, real easy to prepare and delicious too! I used 3 slices of Sargento Ultra Thin Sharp Cheddar. Then for my Bread I used Klosterman Wheat Bread, 70 calories and 13 net carbs for 2 slices. Then to prepare it I got out the Flat Griddle Pan, heated it up on medium heat and coated it with a pat of I Can’t Believe It’s Not Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Nothing like a good and toasty Grilled Cheese on a cold Winters day!

 

 
Then for a side for my Grilled Cheese I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

It’s been pouring the rain since last night. Already Flood Warnings out for different areas around here. Not quite as humid out though. Just did some work on the computer, scans and deleting some old files and such. For dinner something a bit different, a Chili Spud and Grilled Cheese. A hearty but easily prepared meal.

 

 

 
For my Chili Spud I used a medium size Russet Potato with toppings and seasoning of; McCormick Grinder Sea Salt and Black Peppercorn, Dried Parsley, Chives, Hormel Turkey Chili with Beans, and Sargento Reduced Fat Shredded Sharp Cheddar Cheese. I started by adding the Chili to a small sauce pan and heating on medium until it was completely heated. To prepare the Potato, I gave it a good wash and scrub and poked about a dozen holes in it all around the Potato. Then I microwaved it for 3 minutes and 15 seconds. With the Potato done I split it in the middle and seasoned it withe McCormick Grinder Sea Salt and Black Peppercorn. Topped it with Turkey Chili, sprinkled it with the Parsley and Chives, and topped it all with the Shredded Cheese! Now this one Awesome Potato!

 

 

 
Then for my Grilled Cheese I used Klosterman Wheat Bread and Sargento Ultra Thin Sharp Cheddar. I added a couple of pats of I Can’t Believe It’s Not Butter to a flat grill pan. As that melted took two slices of Klosterman Bread, added my Cheese between the slices and grilled it on the pan. Flipped over once and frying until both sides were golden brown and the Cheese was melted.Grilled Cheese is still and always will be one of the Classic Comfort Foods! Chili Spud and Grilled Cheese, very good dinner! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Lot of rain today and only a high in the mid 3o’s. Had some Turkey Goetta for breakfast this morning. First time I’ve had it in a while, I really like Goetta! Fries up to nice golden brown with good crunch to it. Had Goetta, one Egg, and Toast. Doctor’s appointment tomorrow afternoon, my 6 month check-up at my Oncologist. For dinner tonight a Buffalo T-Bone Steak w/ Baked Potato and Roasted Asparagus.

 

 

 

It was the first time I’ve had a Buffalo T-Bone Steak. I have 2 of them, 1 left in the freezer, they came in the Wild Idea Buffalo Holiday Package I had purchased. The Buffalo Ribeye was incredible and I think the T-Bone was even better! I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it Canola Oil about 9 minutes, 5 minutes on one side and 4 1/2 on the other. Had to cook it a bit longer than normal, a thick Steak. It came a perfect medium rare and just bursting with incredible flavor! As any Wild Idea Buffalo cut, just a perfect piece of meat!

 

 

 

For one side I had a Baked Potato that I topped with McCormick Grinder Sea Salt and Black Peppercorn, a dab of Daisy Reduced Fat Sour Cream, and I Can’t Believe It’s Not Butter. Then I had some fresh Roasted Asparagus. To prepare the Asparagus I just needed Extra Virgin Olive Oil, Cloves Garlic, minced, Sea Salt, Freshly grated Black Pepper, Lemon Juice, and Shredded Parmesan Cheese. The complete recipe and instructions are at the end of the post. Another fine dinner tonight. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Roasted Asparagus

INGREDIENTS
1 lb asparagus spears (thick spears are best for roasting)
1-2 Tbsp Extra Virgin Olive Oil
2 Cloves Garlic, minced
Sea Salt
Freshly grated Black Pepper
Lemon Juice
Shredded Parmesan Cheese

 

 

METHOD
1 Preheat oven to 400°F. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard.
2 Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. (Alternatively you can put the asparagus and oil in a plastic bag, and rub the bag so that the oil gets evenly distributed.) Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly distributed.
3 Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until lightly browned and tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving.
Yield: Serves 4.

Today’s Menu: Buffalo Terres Major Fillet w/ Sauteed Mushrooms, Green Beans, and Baked Potato

About 33 degrees this morning but it’s been dropping ever since. Went to the store early to pick up a few items and then had to take my Dad to the Doctor, he has a lot of heavy congestion. Not good for a person that’s 92. They took some x-rays and waiting for the results tomorrow to see exactly what it is. For dinner tonight I prepared a Wild Idea Buffalo Terres Major Fillet w/ Sauteed Mushrooms, Green Beans, and Baked Potato.

 

 

 

This is always the tenderest cut of Buffalo Steak I can find, and one of the most delicious cuts also! I pan fried it in Canola Oil about 4 minutes per side, which gives you a perfect medium rare! The steak is so tender with just an incredible flavor. As with all the Wild Idea Buffalo cuts it has a slight sweet taste and so tender a knife isn’t really needed!

 

 

 

For a side dish I made some Sauteed Mushrooms. I’ve been using Green Giant Sliced Mushrooms. Really like these, nice taste and keeps so good in a jar. I sautéed them in Extra Virgin olive Oil and a pat of I Can’t Believe It’s not Butter and seasoned with Sea Salt, Ground Roasted Cumin, Parsley Flakes, and Dried Thyme. I also heated up a can of Del Monte Cut Green Beans and had a Baked Potato. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Not quite as cold today, high in the 40’s. No rain but cloudy and dreary out. Not a whole lot going on today, a bit of laundry and watching Football. I had bought some Honey Crisp Apples from Kroger the other day and they were possibly some of the largest and juicy Honey Crisps I had ever had! Good crop coming in so far. Have to fast after 10:00 pm tonight, Doctor’s appointment in the morning and they’ll be doing blood work, checking Cholesterol and Sugar. So for dinner I wanted a filling and healthy dinner so tonight I prepared 5 oz. Buffalo Sirloin and Sauteed Mushrooms w/ Baked Potato and Green Beans.

 

 

 

I used my favorite brand of Buffalo, Wild Idea Buffalo 5 oz. Petite Top Sirloin Steak. I seasoned it with Sea Salt and Ground Black Pepper and pan fried it, in Canola Oil. Fried it about 4 minutes per side, to a medium rare. The taste of Wild Buffalo Steaks are just incredible! The meat has a sweet taste to it and cooks up so easy. I topped it with some Sauteed Baby Bella Mushrooms.

 

 

 

For a side I had a Baked Potato that I seasoned with Sea Salt, Ground Black Pepper, and I Can’t Believe It’s Not Butter. i also heated up a small can of Del Monte Cut green Beans and had a slice of Klosterman Wheat Bread. For dessert later a Jello Sugarless Double Chocolate Pudding topped with a dab of Cool Whip Free.

Buffalo Steak and Egg Breakfast!

Another morning in the 20’s here so I wanted to fix a hearty Breakfast to warm it up! I had a Wild Idea Buffalo 6 oz. Buffalo Sirloin Steak, a 1 Egg Scrambled Egg, and 2 slices of toasted Klosterman Wheat Bread.

 

 
I seasoned the Buffalo Sirloin with Sea Salt and Ground Black Pepper. I then pan fried it in Extra Virgin Olive Oil, fried it about 3 1/2 minutes per side. Nice char outside and moist and pink in the middle. These are the most tender and delicious Buffalo Steaks there are! I could eat these for any meal. I also made a 1 Egg Scrambled Egg that I topped with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar. To finish everything I toasted a couple of slices of Klosterman Wheat Bread topping with I Can’t Believe It’s Not Butter. With the morning papers and a hot cup of Bigelow Decaf Green Tea I was ready for that cold and blustery Saturday!

A cloudy and rainy morning outside but it was Sunnyside Up with Turkey Bacon and Toast on the inside. It was gloomy and a slow drizzle of rain early this morning so what better way to brighten it up than a hot and delicious Breakfast! I got the flat top griddle out which I love using. It cooks everything evenly and no oil needed, just a light coat of Pam With Olive Oil. I fried up an 1 Egg Sunnyside Up, 3 slices of Jennie – O Lean Turkey Bacon (30 calories and 0 carbs per slice), and 2 slices of Healthy Life Whole Grain Bread buttered with I Can’t Believe It’s Not Butter. Throw in the Morning Papers and fresh cup of Bigelow Decaf Green Tea and washes away that gloomy day outside. The Sun is breaking out as I’m writing this!

Whew-whee it’s humid out! Really bad out. My parents went to a Church Picnic and it was outdoors at a local Park. They lasted about an hour before they packed up and came back home. Me I opted to stay in where the air conditioner was feeling real good! For dinner I prepared a Buffalo Terres Major Filet w/ Sauteed Mushrooms, Boiled Corn on the Cob and a Baked Potato.

 
I used another of the Wild Idea Buffalo 8oz. Buffalo Terres Major Filets. Beyond any doubts one of the most tender cuts of any steak, Beef or Buffalo, I’ve ever had. I didn’t even attempt to fire the grill up so I pan fried it in Canola Oil. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I fried it 4 minutes on one side and about 3 minutes on the other side, it gets done very quickly because it’s so lean. The Filet came out medium rare, moist and just full of flavor! I topped it with Sauteed Baby Bella Mushrooms.

 
For side dishes I prepared 2 Mini Ears of Green Giant Corn. I keep this in stock in my freezer now. Never goes bad, stores very easy, and prepares in 10 minutes. If you like Sweet Corn on the Cob you’ll have to try this out. I also had a Baked Potato that I topped with Sea Salt, Ground Black Pepper, and I Can’t Believe It’s Not Butter. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice cream topped with Mango Chunks.
