We set a record for the coldest morning on this date, 18 degrees! But the sun came out and it was around 45 degrees. Our temperatures are to get warmer as the week goes on, at last! Got out side and was able to clean the some of the outside windows, and they needed it. Then went and had my car washed and the inside cleaned. Back home for some NCAA Basketball for the rest of the afternoon. For dinner tonight it’s a Cumin Spiced Pork Chop w/ Mashed Potatoes, Cut Green Beans, Baked Corn Muffins.

 

 

I picked up a huge package of Pork Chops on my last visit to at Costco and had them in the freezer. Costco has some of the finest meats around and the Pork Chops are right there with some of the best! The good thing about these Chops are They are so big that there’s plenty leftover for my Breakfast the next morning! I got one of the Chops from the freezer and let it thaw overnight in the fridge. To prepare my Chop I’ll need; The Cumin SCumin Spiced Monster Pork Chop w Mashed Potatoes 002piced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. I had to increase the cooking time due to the size of the Chop. Start by heating the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning both sides. From the stove to the oven and bake at 400° for 25 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!

 

 

Jiffy Corn Muffins
For one side dish I heated up some Bob Evan’s Mashed Potatoes, just microwave for 6 minutes and serve. Just as good as homemade, if not better. Then I heated up a small can of Del Monte Cut Green Beans. Also I baked some Corn Muffins. I used a box of Jiffy Corn Muffin Mix. Easy to prepare and so delicious, been a long time since I’ve had these! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Stove Top (Time and temperature settings may vary due to differences in your particular stove or microwave. Always cook this product to 160 degrees F prior to serving.): 1. Remove board overwrap and film. 2. Empty contents of tray into sauce pan. 3. Place on stove top over medium heat. 4. Heat and stir until hot. 5. Carefully remove from cooktop and serve.

Our first big chill of the season, about 38 degrees this morning. Had to get up during the night and turn the heat on. Made a Breakfast Burrito this morning for Breakfast. Made of 1 Scrambled Egg, two diced Jennie – O Turkey Sausage links, a dab of Daisy Reduced Fat Sour Cream, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, and a Low Carb Whole Grain Tortilla. Then it was an afternoon of NFL Football! For dinner tonight it’s a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.

 

 

 

 

Panko Orange Roughy Sandwich 003

I had the Orange Roughy in the freezer so I let it thaw in the fridge overnight. To prepare the Orange Roughy Fillet; start by rinsing the fillet off in cold water and pat dry with a paper towel. Then season it with Sea Salt and Pepper. Combine flour and Hungarian Sweet Paprika mix well, then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip floured fillet into Egg Beater’s, allowing excess to drip off. Then roll the fillets in the Shake and Bake Seasoned Panko. Meanwhile, heat a tablespoon of Extra Virgin Olive Oil in skillet and place the fillets in the oil and fry 4 minutes each side. It comes out a beautiful golden brown on the outside and a moist flavorful fillet on the inside! This breading will work well with almost all Fish. I served it on a Healthy Life Whole Grain Bun.

 

 

 

 

To go with my Fish Sandwich I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Love Potatoes and love these fries! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 
Orange Roughy with PankoPanko orange Roughy 001

Ingredients:

(4) 4 oz. Orange Roughy Fillets
1c. Panko Italian Style Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1/2 tsp. Hungarian Sweet Paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Package of Shake and Bake Seasoned Panko Bread Crumbs.
1 1/2 Tbs. Extra Virgin Olive Oil
Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and paprika then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Egg Beater’s, allowing excess to drip off.
*Roll fillets in the Panko Bread Crumbs making sure all sides are covered.
* Meanwhile, heat Olive Oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

Happy Labor Day everyone! It’s a hot, humid, with rain showers Labor Day around here today. Did some morning laundry and then went to see my Dad at the rehab center. He looks a lot better and is getting around a lot better, with a walker but he is walking. Came home and not a lot going on today. For dinner tonight I prepared Happy Labor Day everyone! He looks a lot better and is getting around a lot better, with a walker but he is walking. Came home and not a lot going on today. For dinner tonight I prepared Roasted Cumin Spiced Turkey Tenderloins w/ Mashed Potatoes and Asparagus.

 

 

 

Cumin Spiced Turkey Tenderloins 003

I used Jennie – O Extra Lean Boneless Turkey Breast Tenderloins. So for the Turkey Tenderloins I’ll need; 2 Tbls of Extra Virgin Olive Oil, 1/2 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat my oven to 350°. Combine all the ingredients; rub it all over the Turkey Tenderloins. Let stand 10 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add Turkey to pan; cook 4 minutes, browning on both sides. Bake at 350° for 15 minutes or until a thermometer registers 165°, turning after 7 minutes. Let stand 10 minutes before slicing. Then get ready to enjoy one delicious Turkey Tenderloin! Fantastic combo of Spices, which made one incredible Crust on the Turkey with the inside being tender and moist! I’ve used the Cumin Spice Rub on different meats now and it works well with all of them, gives it a nice crust and great flavor.

 

 

 
For one side I prepared some Betty Crocker Creamy Buttery Mashed Potatoes. Comes in a microwavable container, just add water and heat. Then I also tried a new side dish, Kroger Private Selection Handpicked Asparagus Spears. Another microwave side, microwave on high for 5 minutes and they’re ready! Very good side, good to have at hand in the freezer. Comes in a steamable microwave bag, seasoned it with Sea Salt, Pepper, and Kraft Reduced Fat Grated Parm Cheese. For dessert later a Healthy Choice Dark Fudge Swirl Greek Frozen Yogurt.

Cooking Instructions:
STOVETOP METHOD:
Sray skillet with nonstick cooking spray or add 1 to 2 teaspoons oil.
Preheat skillet over medium-high heat.
Place tenderloins in hot skillet.
Brown on both sides.
Add 1/3 cup liquid.
Reduce heat to medium-low.
Cook, covered, 35 to 40 minutes.
Always cook to well-done, 165º F. as measured by a meat thermometer.

 

 

OVEN METHOD:
Preheat oven to 350°F.
Spray 9×9 or 11×17-inch pan with nonstick cooking spray.
Place tenderloins in pan.
Add 1/3 cup liquid.
Cover with foil.
Cook 30 minutes.
Remove foil.
Cook 20 to 30 minutes more, basting occasionally if desired.
Always cook to well-done, 165º F. as measured by a meat thermometer.

Started the day off with one of my favorites, Glier’s Turkey Goetta! I had the Turkey Goetta along with a couple of buttered slices of Healthy Life Whole Grain Bread and a cup of fresh brewed Bigelow Decaf Green Tea. It was cloudy and a lot more humid outside today. Had a brief shower in the afternoon, a very light one. Not much going on today, did a load of laundry and cleaned the house. For dinner tonight it’s a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.

 

 

 

To prepare the Orange Roughy Fillets rinse fillets and pat dry fillets and season with Sea Salt and Pepper. Combine flour and Hungarian Sweet Paprika mix well, then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip floured fillets into Egg Beater’s, allowing excess to drip off. Then roll the fillets in the Shake and Bake Seasoned Panko. Today’s Menu: Panko Crusted Cubed Pork Steak w/ Spaetzle and Green Beans

Dealing with little bit of a Sinus infection, not a bad one but just enough to be annoying! It was 52 degrees out this morning, cool for the middle of July. Only a high of 73 but no humidity either! Had to stop by Kroger for some Milk and Bread and then the Bank. From there went to Costco for some Vitamins, Bulk Items, and some cases of canned Vegetables and Tuna. Purchased quite a few, I’m going to drop them off at our Church. Our Church, along with other local Churches provide free meals and supplies who need them. So they can never have too much, I’m glad I have a little extra money to help out when I can. Dinner tonight it’s Panko Crusted Cubed Pork Steak w/ Spaetzle and Green Beans

 

 

 

 

Cubed Pork Steak Spaetzle 001

I grabbed a Cubed Pork Steak out of the freezer and let it thaw overnight in the fridge. Used the big three out to bread it with; Flour, Egg Beater’s, and Panko Bread Crumbs. I seasoned the Steak with Sea Salt and Black Ground Pepper. Next I seasoned the Flour with Hungarian Paprika and rolled the Cube Pork in that and shook off the excess. Then I dipped it in the Egg Beater’s shaking off the excess and then pressed both sides in the Shake and Bake Seasoned Panko Bread Crumbs, making sure both sides was well covered. I heated up a medium size skillet, that I had drizzled with Extra Virgin Olive Oil, on medium high heat. Added my Cubed Pork and fried both sides about 4 minutes, till each side was golden brown. The Cubed Pork Steak came out delicious! Moist and very tender with a good flavor from the Paprika. As you can tell in the picture, the Steak was huge so I cut in half and I’ll have the other half for Breakfast in the morning. I like the Shake and Bake Seasoned Panko, a lot fewer calories than most. I don’t care for any of Kroger’s Beef but their Pork is hard to beat!

 

 

 

 

Cubed Pork Steak Spaetzle 003
For one side dish to go with my Cubed Pork I prepared some Spaetzle. Which is a German Potato Dumpling. At the end of the post I left a little history of Spaetzle and product info. I boiled it in hot water for about 25 minutes and seasoned it with Sea Salt and Ground Black Pepper, Rubbed Sage, and a pat of I Can’t Believe It’s Not Butter. Very tasty and goes very well with Veal or Pork. We also had some fresh Green Beans we had picked up at Jungle Jim’s Market the other day. Love those Green Beans! The Spaetzle and Green Beans are a perfect pairing! I could have made a meal just out of these 2 items. Also had a slice of Healthy Life Whole Grain Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt
