Spinach, Crab, and Artichoke Dip

Ingredients
1 can (6 1/2 ounces) crabmeat, drained and shredded
1 package (10 ounces) frozen chopped spinach, thawed and squeezed nearly dry
1 package (8 ounces) reduced-fat cream cheese
1 jar (about 6 ounces) marinated artichoke hearts, drained and finely chopped
1/4 teaspoon hot pepper sauce
Melba toast or whole grain crackers (optional)

Directions
Yield: 10 servings
Serving size: 1/4 cup

* Pick out and discard any shell or cartilage from crabmeat. Combine crabmeat, spinach, cream cheese, artichokes, and hot pepper sauce in 1 1/2-quart slow cooker. Cover; cook on high 1 1/2 to 2 hours or until heated through, stirring after 1 hour. Serve with melba toast, if desired.

Spicy Turkey Sloppy Joes
Here’s a classic American recipe that’s as kid-friendly as it is easy to make. Made with lean ground turkey, garlic and bell peppers, it’s a hearty meal at under 500 calories per serving.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 tablespoon vegetable oil
1 small onion, chopped
½ cup diced green or yellow bell pepper
3 cloves minced garlic
1 cup chili sauce
2 tablespoons worcestershire sauce
1 tablespoon tomato paste
½ teaspoon hot pepper sauce
5 whole wheat buns, split

DIRECTIONS
1) Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) In skillet, over medium heat add oil, onion, bell pepper and garlic; cook 3 minutes, stirring occasionally. Add turkey, chili sauce, Worcestershire sauce, tomato paste and hot pepper sauce. Simmer 10 to 15 minutes or until sauce thickens. Spoon mixture on split buns.
* Always cook to an internal temperature of 165°F.

Spicy Chicken and Corn on the Cob

Recipe Ingredients:
3 pounds chicken pieces
6 tablespoons butter, melted
2 tablespoons Dijon mustard
2 tablespoons cider vinegar
1 teaspoon dried thyme
1/2 teaspoon salt
2 teaspoons hot pepper sauce
4 ears corn on the cob, husked
1/4 cup dry bread crumbs

Cooking Directions:
1 – Preheat oven to 400°F (205°C).
2 – In medium bowl, stir together melted butter, mustard, vinegar, thyme, salt and hot pepper sauce. Brush corn and chicken thoroughly with butter mixture.
3 – Arrange chicken in one layer in a baking dish. Sprinkle chicken with bread crumbs.
4 – Set corn in another baking dish; cover with aluminum foil.
5 – Bake chicken and corn for one hour; serve hot.

Makes 4 servings.

Turkey Sausage and Sassy Scrambled Eggs
Spice up your breakfast or brunch with this carb-conscious Mexican recipe. Fluffy scrambled eggs mixed with fresh green onion and bell peppers pairs perfectly with savory lean turkey sausage.

INGREDIENTS
1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links
2 tablespoons butter
2½ cups egg substitute or 10 eggs
½ cup diced red bell pepper
½ cup diced green onions
¾ teaspoon hot pepper sauce
½ cup shredded Cheddar cheese

DIRECTIONS
1) Cook turkey sausage links as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Meanwhile, in large skillet over medium-high heat melt butter. In medium bowl, beat together eggs, bell pepper, green onions and hot pepper sauce. Pour into skillet. Cook 3 minutes or until eggs are set; stirring occasionally.
3) Sprinkle with cheese and stir to combine. Serve with sausages.
* Always cook to an internal temperature of 165°F.

Fireside Chili

Savor the flavor of this chili, filled with hot and spicy ingredients slowly simmered with stew meat and hamburger.

Recipe Ingredients:

2 pounds beef stew meat, diced Cooksrecipes 2
1 pound lean ground beef
2 cups hot water
1 (8-ounce) can tomato sauce
2 onions, peeled and chopped
1 jalapeño chile, seeded and minced
2 cloves garlic, chopped
1 teaspoon hot pepper sauce
3 tablespoons chili powder
1 tablespoon crushed dried oregano
1 tablespoon ground cumin
1 teaspoon paprika
1 teaspoon dry mustard
1 teaspoon salt
1/4 teaspoon cayenne pepper

Cooking Directions:

In a large, heavy-bottomed pot, brown stew meat and beef; drain.

Add water, tomato sauce, onion, jalapeño, garlic and hot pepper sauce. Bring to a oil, reduce heat and simmer for 30 minutes.
Stir in chili powder, oregano, cumin, paprika, dry mustard, salt and cayenne pepper. Gently simmer for 1 1/2 hours. Serve warm.
Makes 8 servings.
