Today’s Menu: Cincinnati Style 4 Way – Spaghetti, Turkey Chili w/ Beans, and Cheese

It heated up outside today! Sunny and a high around 87 degrees, and as usual with the heat comes the humidity. A Cincinnati Style 4 Way 014very good day to have the Central Air going. Tried a new product for Breakfast, and I’ve come across a winner! I found this at Kroger yesterday, Smithfield Anytime Hickory Smoked Boneless Sliced Ham. The Ham is precooked so it’s a breeze to prepare. Heat it up in a skillet on medium high heat for just 30 seconds a side, or until heated through. I cooked it 30 seconds and it was heated. Lean, flavorful, and delicious. I’ve got a great new Breakfast Item. Had a Sunnyside Egg and Wheat Toast with it, and my morning cup of Bigelow Decaf Green Tea. Did some laundry for Mom and while her and Dad was out cleaned the house. For dinner tonight it’s Comfort Food Extreme! I prepared a Cincinnati Style 4 Way – Spaghetti, Turkey Chili w/ Beans, and Cheese

Being from and living in the Cincinnati area all my life I’ve been around and prepared the local cuisine, and love it! Sausages, Goetta, and the Chili are just endless in varieties around here. And tonight I’m preparing one of my favorites, Cincinnati Style 4 Way – Spaghetti, Turkey Chili w/ Beans, and Cheese. For the Spaghetti I’ll be using my regular Pasta that I use, the Ronzoni Healthy Harvest Whole Grain Spaghetti. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta.

For the Chili I went with Hormel Turkey Chili with Beans. It’s my favorite canned Chili hands down. It’s a nice thickCincinnati Style 4 Way 002 Chili made with Turkey and seasoned just right with plenty of Beans. It’s also a perfect Chili for making Chili and Cheese Nachos. Then for my Cheese I used Sargento Reduced Fat Shredded Sharp Cheddar. I boiled the Spaghetti according to the box instructions and in a sauce pan I heated 1 can of the Hormel Turkey Chili w/ Beans. I added a few shakes of the Frank’s Red Hot Sauce to the Chili. To serve I used a bowl and made a bed of Spaghetti, topped it with the Turkey Chili with Beans, and topped everything with Sargento Cheese. Some mighty fine food! Some people like adding fine diced Onions also, which makes it a 5 Way. So the 4 Way – Spaghetti, Chili, Beans, and Cheese and there you have it! Wow I almost forgot one of the most important parts, Oyster Crackers! Chili Spaghetti is always served with a bowl of Oyster Crackers, why who knows they go great with pasta and chili. I used Skyline Chili Oyster Crackers with a side of Frank’s Red Hot Sauce. To properly eat an Oyster Cracker you have to put a couple of drops of Hot Sauce on it!

Cincinnati Style 4 Way 006

As the Spaghetti was finishing up I seen we had a 1/4 loaf of Pillsbury Rustic French Bread Loaf leftover from the other night. I preheated the oven to 400 degrees. I sliced the loaf into 5 thin slices, added some fresh sliced Mozzarella Cheese, and topped it with McCormick Grinder Italian Seasoning. Placed it on a small cookie sheet and baked it until the Cheese was melted. Made a perfect side with Spaghetti. For dessert later a bowl of Del Monte Sugarless Peach Slices.

Turkey Chili Mac and Cheese w/ Baked Harvest Grain Bread.

Today’s Menu: Turkey Chili Mac and Cheese w/ Baked Harvest Grain Bread.

Turkey Chili Mac and Cheese 013
Getting sort of chilly around here, it was about 33 degrees with a wind chill of 24 degrees. Cloudy all day but we’ve been lucky none of the snow that some places have been getting. Took Mom and Dad to their Family Doctor, Dad had to have a checkup and they wrote a prescription for a lift chair. He’s been having problems getting out of a chair so this lift chair should help. For dinner tonight I prepared Turkey Chili Mac and Cheese w/ Baked Harvest Grain Bread.

Turkey Chili Mac and Cheese 001
Made some Turkey Chili Mac and Cheese to warm the day up a little. I used 2 Cans of Hormel Turkey Chili with Beans, Barilla Whole Grain Elbow Pasta (4 servings), Dried Cilantro, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, and fresh grated Dutch Gouda Cheese. For some reason, not sure why, it’s getting harder to find Whole Grain Pasta Products around this area. You can find Spaghetti, most of the time, but all other varieties are hard to find anymore.

Turkey Chili Mac and Cheese 010
I prepared the Elbow Pasta in a large sauce pan, according to the package directions. When the Pasta was done I drained the water and put the Pasta in a small Dutch Oven. I then added the Turkey Chili to the Pasta and mixed well. Added a 1/2 cup of the Sargento Cheese and Cilantro, mixed and put the lid on the Dutch Oven. Heated it on medium low until I was ready to serve it. Another tasty comfort food dish! The Pasta came out just right and as always the Hormel Turkey Chili with Beans was delicious. Served it in a bowl and topped it with a sprinkle of The Sargento Cheese and the fresh grated Dutch Gouda. Love using Dutch Gouda, it melts good and gives dishy a creamy taste. I also baked a loaf of Kroger Bakery Harvest Grain Bread, which goes great with Chili, Soups, and Stews. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Barilla Whole Grain ElbowsBarilla Whole Grain Elbow Pasta

Try Barilla’s Whole Grain Elbow pasta. Made with 51% whole wheat, Barilla Whole Grain had 3 times the fiber of regular pasta while still tasting great!
Elbows is named for its twisted tubular shape that can vary in size, and be either smooth or ridged. Pasta elbows originated from Northern and Central Italy, where they are traditionally used in soups. The Barilla version is ridged with an extra twist, giving it a more sophisticated shape that also helps to hold the sauce. With Barilla twisted Elbows, you can take this fun shape beyond the expected in any number of traditional Italian meals, in soups, baked pasta dishes, or tossed with vegetable or cheese sauces.

1. Bring 4-6 quarts of water to a rolling boil. Add salt to taste, if desired.
2. Add contents of package to boiling water. Stir gently.
3. Return to a boil. For authentic “al dente” pasta, boil uncovered, stirring occasionally for 7 minutes. For more tender pasta, boil an additional minute.
4. Remove from heat. Drain well and serve as desired.

Whole grain pasta is best paired with tomato or cream sauces. Pesto sauces also go well with whole grain pasta. Meat and game sauces pair well too. Green vegetables in general taste very good with whole grain pasta. Pine nuts, walnuts, chestnuts, pistachios, and dried fruit such as raisins and apples pair very well with this whole grain pasta. Cheese sauces made with Parmigiano, Grana, Asiago, Pecorino, Ricotta, Provolone, or Fontina cheese work well with whole grain pasta in terms of flavor profiles.

Today’s Menu: Chili and Cheese Nachos

Chili and Cheese Nachos 005

Today was our Community Annual Yard Sale, Fred Stanford would have a field day today around here! Taking a tour of the Park it looks as though neighbors bought their neighbor’s junk from last year and now are reselling it this year. Only in the eye of the beholder! It was little hotter out and bit more humid out today, nothing too bad though. Really didn’t want a big meal tonight so I went with a family favorite, Chili and Cheese Nachos!

I used Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape real good. For my toppings I used 1 can of Mario Sliced Black Olives. Before I go any further a bit about these Olives, anyone that uses small cans of Sliced Black Olives know what a pain they can be opening sometimes. Not these, they come in a can with a pull tab! About time. For my other toppings I used some Sliced Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella and some fresh grated Murray’s Dutch Gouda.

chili-and-cheese-nachos
To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I start with a couple of tablespoons of Chili then I add my Scoops (Chips). I then add the Sliced Black Olives, the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese Blend. Then just pop it in the oven 10 minutes or so until the Cheese had started to melt and everything heated. For the Chili I warm it up in a sauce pan, adding a few shakes of Frank’s Red Hot Sauce, before I top the Scoops with it. Nothing better than a big plate of Chili Cheese Nachos! Also had an ice-cold Diet Dr. Pepper to drink. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Ronzoni Healthy Harvestronz (1)

Here’s something to absorb: One serving of RONZONI HEALTHY HARVEST pasta has over 20% of your daily recommended fiber intake – but did you know that fiber is good for you in more ways than just digestion?

People with diets high in fiber have a lower risk for weight gain, obesity, development of insulin resistance and diabetes. Fiber also prevents constipation, hemorrhoids and diverticulosis, but it also helps reduce the risk of certain chronic diseases like colon and breast cancer. Fiber may help lower LDL (bad) cholesterol and total cholesterol, therefore reducing the risk of heart disease. It can also help lower blood sugar to better manage diabetes.

Dietary fiber is the edible part of plants, primarily carbohydrates that are resistant to digestion and absorption in the small intestine. Fiber may be digested by fermentation in the large intestine. By eating high fiber foods you feel fuller, eat less, with fewer absorbed calories.

Fiber comes in two basic forms – soluble and insoluble. Soluble fiber is found in fruits, vegetables, seeds, brown rice, oats and barley. It prevents or reduces the absorption of certain substances into the bloodstream. Insoluble fiber is found mainly in whole grains and on the outside of seeds, fruits, legumes, and other foods. It is like a sponge that swells within the intestine to promote more efficient elimination and alleviate some digestive disorders.

Fiber is found only in plant foods and passes through the digestive tract without being completely broken down. Being indigestible, fiber provides no nutrients to the body, which is why for many years it was removed from processed foods like white bread. But, nutritionists have since discovered that fiber performs valuable functions precisely because it is not digested, and it is essential to good health.

Today’s Menu: Chili Spud and Grilled Cheese

Chili Spud and Grilled Cheese 002
It’s been pouring the rain since last night. Already Flood Warnings out for different areas around here. Not quite as humid out though. Just did some work on the computer, scans and deleting some old files and such. For dinner something a bit different, a Chili Spud and Grilled Cheese. A hearty but easily prepared meal.

For my Chili Spud I used a medium size Russet Potato with toppings and seasoning of; McCormick Grinder Sea Salt and Black Peppercorn, Dried Parsley, Chives, Hormel Turkey Chili with Beans, and Sargento Reduced Fat Shredded Sharp Cheddar Cheese. I started by adding the Chili to a small sauce pan and heating on medium until it was completely heated. To prepare the Potato, I gave it a good wash and scrub and poked about a dozen holes in it all around the Potato. Then I microwaved it for 3 minutes and 15 seconds. With the Potato done I split it in the middle and seasoned it withe McCormick Grinder Sea Salt and Black Peppercorn. Topped it with Turkey Chili, sprinkled it with the Parsley and Chives, and topped it all with the Shredded Cheese! Now this one Awesome Potato!

Then for my Grilled Cheese I used Klosterman Wheat Bread and Sargento Ultra Thin Sharp Cheddar. I added a couple of pats of I Can’t Believe It’s Not Butter to a flat grill pan. As that melted took two slices of Klosterman Bread, added my Cheese between the slices and grilled it on the pan. Flipped over once and frying until both sides were golden brown and the Cheese was melted.Grilled Cheese is still and always will be one of the Classic Comfort Foods! Chili Spud and Grilled Cheese, very good dinner! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Today’s Menu: Chili and Cheese Coneys!

Chili and Cheese Coneys 008
Only about 40 degrees this morning, Spring time? The high for the day wasn’t much higher and there was a cold breeze blowing all day. But 70’s and 80’s coming the upcoming week. Ran Mom around for a few errands and home. For dinner tonight, nothing but comfort food! Tonight it’s Chili and Cheese Coneys!

I used Oscar Mayer Extra Lean Turkey Franks. Just boiled them for 5 minutes and they were ready. A very lean Hot Dog, only 50 calories and 4 carbs per Hot Dog. Then for the Chili I used Hormel Turkey Chili with Beans. One of the best canned Chilis there is, in my opinion. It’s a nice thick Chili and seasoned just right with plenty of Beans. Emptied the can into a small sauce pan and heated it up for about 10 minutes or so. I did add a few shakes of Frank’s Red Hot Sauce to the Chili as it was heating up.

Pillsbury Nut Quick Bread 001

Served everything on a Healthy Life Whole Grain Hot Dog Bun. Topped the Dog with French’s Yellow Mustard, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, and then the Chili and they were ready to go! Nothing better than a couple of Cincinnati Style Chili and Cheese Coneys for dinner! For dessert later, I had baked some Pillsbury Nut Quick Bread. Instead of adding 2 Eggs to the batter I used Egg Beaters, 2 Eggs (Medium size) is 140 calories while 2 servings of Egg Beaters is only 50 calories. So I’ll have a slice of the Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Vanilla Bean Ice Cream.

Today’s Menu: Chili Dogs

Cincy Chili Dogs 003

It is one freezing cold day out there, maybe 20 degrees out. I guess we ended up with about 5, maybe 5 1/2 inches of snow. It is sunny out so that’s helping to clear the streets a bit. More Winter weather on the way for tomorrow though. Warm and snug on the inside and for dinner a huge favorite of mine, Chili Dogs!

I used Oscar Mayer Extra Lean Turkey Franks, my new choice of Hot Dogs. Just boiled them for 5 minutes and they were ready. I had planned on using some of the 3 Bean Buffalo Chili but I had none in the freezer left, I’ll be making a new batch this week to cure that problem! So instead I used Hormel Turkey Chili with Beans. Emptied the can into a small sauce pan and heated it up for about 10 minutes or so. I did add a few shakes of Frank’s Red Hot Sauce to the Chili as it was heating up.

Served everything on a Healthy Life Whole Grain Hot Dog Bun. Topped the Dog with French’s Yellow Mustard, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, and then the Chili and they were ready to go! Nothing better than a couple of Cincinnati Style Chili Dogs! For dessert later a Skinny Cow Truffle Ice Cream Bar.
