Today’s Menu: Egg Maccheroncini w/ Turkey Meatballs

I went out to fetch the morning papers this morning around 7 am. and it’s a bit chilly out there this morning, about 40 degrees. Scampered back inside to cook up some Breakfast. This morning I toasted a Healthy Life Whole Grain English Muffin (lightly buttered), fried up a couple of Jennie – O Turkey Breakfast Sausage, Scrambled 2 medium size Eggs (topped with Sargento Reduced Fat Shredded Sharp Cheddar), and a cup of the Bigelow Decaf Green Tea. Had a high in the 60’s and partly sunny. Went to McDonald’s and Dunkin Donuts to pick up Mom and Dad’s Breakfast for them. Dropped their Breakfast off and ran a couple of errands and up to the assisted living center to see a friend of mine. Still not doing very good, not sure if he’s going to recover. So for Dinner tonight I prepared Egg Maccheroncini w/ Turkey Meatballs.

Kroger has been featuring Italian Foods for the past few weeks. An item I ran across and decided to try was Egg Maccheroncini Pasta Panarese. I haven’t found a lot of information or history of this product but here’s what I did find; Made using the traditional methods of bronze drawing and slow-drying, Pasta Panarese has a rough texture that will help the absorption of water whilst boiling, and will allow a better adherence of the sauce. The result is an evenly cooked, full flavored product much different from the industrial pasta production. It comes in lovely transparent packaging and is the ideal present for a foodie friend … It The Pasta is produced from top quality Durum Wheat Semolina grown in Tuscany. It’s made with 30% Egg. It looked good and only contains 160 calories and 30 net carbs per serving which isn’t too bad for Pasta.

For the meatballs I used Honeysuckle White Fresh Italian Style Turkey Meatballs. I’ve been using the Honeysuckle White Fresh Italian Style Turkey Meatballs for quite a few years now. The Meatballs are good size, always fresh, meaty, and have a fantastic taste and they’re 190 calories and 5 net carbs for 3 Meatballs. I heated them up in a sauce pan in a jar of Ragu Super Chunky Mushroom Sauce.

To prepare Pasta all I’ll need is McCormick Grinder Sea Salt and McCormick Italian Seasoning. According to the package instructions it said to cook the Pasta 7-9 minutes. So I used a large sauce pot, filled half way with water. I brought the water to a rolling boil and seasoned the water with the Sea Salt. The Pasta itself is a flat Noodle and comes in, what looks like, small haystack bundles. There was 6 of the bundles in the package and I prepared 3 of them. Added the 3 bundles to the pot and cooked them for 9 minutes, gently stirring them frequently. After 9 minutes removed the pot from heat and drained the Pasta. Put the Pasta into a large bowl and seasoned it with a bit more of the McCormick Grinder Sea Salt and McCormick Italian Seasoning. to serve I topped with Ragu Mushroom Pasta Sauce, Fresh Shaved, Turkey Meatballs, and Parmesan Cheese. Some of the best Pasta I’ve ever had! It tasted so fresh and the Seasoning, Meatballs, and Sauce worked great with it. I purchased a couple of packages of it, I’m not sure if it’s limited time product at Kroger. For dessert later a bowl of Dole Sliced Peaches.

Today’s Menu: Sweet and Sour Turkey Meatballs w/ Sugar Snap Peas, Pineapple, Water Chestnuts, and White Rice

 

 

After a light breakfast I took Mom up to Kroger so she could pick up a few items and while there they had Coffee Makers on sale so I picked one up for Mom and Dad for Christmas. They’ve needed a new for a long time. I’ve never Sweet and Sour Turkey Meatballs w Sugar Snap Peas, Pineapple, Wa 010been a Coffee drinker, Green Tea is about it. I also stopped by McDonald’s so she could pick their Breakfast up. Outside it was in the 50’s and cloudy early, as day went on rain moved in. We have cooler weather moving in for the weekend they say, high in the 30’s Saturday. The hospital called and I going Tuesday morning for my finger surgery. Shouldn’t been in there but about 20 minutes. I’m having the cyst removed and they have to do it at the Hospital due to possible infection. Anyway not much else going on today. For dinner tonight something new, I prepared Sweet and Sour Turkey Meatballs w/ Sugar Snap Peas, Pineapple, Water Chestnuts, and White Rice.

 

 
Wanted something different tonight so it’s Sweet and Sour Turkey Meatballs w/ Sugar Snap Peas, Pineapple, Water Sweet and Sour Turkey Meatballs w Sugar Snap Peas, Pineapple, Wa 002Chestnuts, and White Rice. I had seen the Sweet and Sour Meatballs on an episode of Pioneer Woman so I thought I would do a version of that for dinner. Wasn’t sure what to have with it so I raided the pantry and came out with the Pineapple, Water Chestnuts, and White Rice. I had the Sugar Snap Peas in a container in the fridge. I used Honeysuckle White Turkey Meatballs, La Choy Sweet Sour Sauce, Kroger fresh Sugar Snap Peas, 1 can of Dole Pineapple Tidbits, 1 can of Sliced water Chestnuts, and Uncle Ben’s White Rice.

To prepare the Meatballs; I heated up a medium size skillet on medium heat (sprayed with Pam Cooking Spray). Added the Turkey Meatballs. The meatballs are precooked so all you have to do is reheat them. So I added then to the skillet and topped them with La Choy Sweet Sour Sauce. I let them simmer, turning them several times, for 15 minutes; until they were heated through. Se the skillet aside, putting the lid on the skillet.

I then took another medium size skillet, sprayed it with Pam Cooking Spray and added 2 tablespoons of Extra Virgin Olive Oil. Heated this on medium heat also. As the skillet was heating I opened up the Sliced Water Chestnuts, draining the can of all the liquid. I then opened up the can of Dole Pineapple Tidbits, I drained the juice from the can and reserving it in a small bowl. The Sugar Snap Peas come in a sealed plastic container, just cut it open and gave the Peas a quick wash with water.

 

 
So the skillet is heated and I first add the Water Chestnuts, they take the longest to get done. Cooked them for aboutSweet and Sour Turkey Meatballs w Sugar Snap Peas, Pineapple, Wa 006 10 minutes, stirring often. I then added Sugar Snap Peas, these don’t take long at all. Stirring the Peas and Chestnuts together. I turned the heat down to low and added the Pineapple Tidbits and the reserved Pineapple Juice. The amount of juice you add is up to your preference. I added about 1/4 of the juice. Continued cooking for another 5 minutes; turned the heat off and put the lid on the skillet. To prepare the Uncle Ben’s White Rice is the easy part. It comes in a microwavable package; just heat for 90 seconds and serve! I love Uncle Ben’s Rice, I don’t care if you boil it or microwave it always turns out perfect.

 

 
So to serve this, in a bowl, I made a bed of the White Rice. Topped it with Water Chestnuts, Sugar Snap Peas, and Sweet and Sour Turkey Meatballs w Sugar Snap Peas, Pineapple, Wa 011Pineapple Tidbits. The topped that with the Turkey Meatballs, and chow down! This made one delicious dish! The Turkey Meatballs were incredible. The Meatballs absorbed all that Sweet and Sour Sauce and just made the Meatballs pop with flavor. Then you have a mixture of Water Chestnuts, Sugar Snap Peas, and Pineapple Tidbits. All just had such a fantastic flavor, the Pineapple Juice just tied all 3 ingredients together. With the bed of White Rice it made everything perfect, Rice is good with any dish! I’ll have to add this to the “Keeper Recipes” I had a Diet Peach Snapple to drink. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Spaghetti LaRosa Sauce
Humid and hazy out today. Went and seen Dad this morning, looks as though he may come home around September 10th. Came home and repaired Mom’s Sweeper for her. Then watched College Football for the afternoon, first weekend of Football! Love Football starting but that also means that the Summer is almost over! It went quick this year. Mom ate with Dad at the rehab center so it was solo cooking for dinner. Tonight one of my favorites, Spaghetti and Meatballs.

 

 

 

Honeysuckle White Fresh Italian Style Turkey Meatballs
I used Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. Cooks up great and an excellent tasting Pasta. Then for my Meatballs I used Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are good size, meaty, and have a fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs. I almost always use Jennie -O when using Turkey but no store in this area sells Jennie – O Turkey Meatballs. On a Jennie – O Turkey note, Kroger has started selling Jennie – O Turkey Bacon now. For my Pasta Sauce I used LaRosa’s Original Sauce. A local favorite and still one of the best Sauces I’ve had. For dessert later a bowl of Breyer’s Carb Smart Vanilla Bean Ice Cream topped with some fresh sliced Peaches.

But, nutritionists have since discovered that fiber performs valuable functions precisely because it is not digested, and it is essential to good health.

Today’s Menu: Turkey Meatball Hogie w/ Baked Fries

 

 

 

No new snow but only a high of 21 today. It sure seems like a long winter this year! Sears came today to clean the fridge today, they clean and replace the coils at the bottom run, a cleaner through the water lines and ice maker, change the water filter, and any repairs if needed. All done free under the extended warranty we have on it. Comes in handy if anything breaks down on it, as it is getting to be an old fridge. For dinner tonight; Meatball Hogie w/ Baked Fries.

I used Honeysuckle White Fresh Italian Style Turkey Meatballs. I’ve tried many different Turkey Meatballs and these are the best tasting I’ve found. Their 190 calories and 5 net carbs per serving (3 Meatballs ). And three is plenty as these are good size Meatballs, three fit perfectly on Hot Dog Buns also. i put them in a small size sauce pan added a 1/2 jar of Ragu Old World Style Traditional Pizza Sauce. Turned the burner on medium low and let the Meatballs and Sauce slow simmer.

 

 

 
When completely heated through I served the Meatballs on an Aunt Millie’s Reduced Calorie Hot Dog Bun and topped with a thin slice of Muenster Cheese. Makes one fine Turkey Meatball Hogie! I served it with a side of Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, my favorite fries! Later tonight for dessert a Jello Sugar Free Double Chocolate Pudding with a dab of Cool Whip Free.
