This week’s Sunday’s Chicken Dinner Recipe is – Southwest Chicken Skillet.

Southwest Chicken Skillet
A Southwestern-style skillet supper with chicken breasts, Mexican-style tomatoes, diced yams, green chiles, hominy and fresh cilantro seasoned with mild green taco sauce.

Recipe Ingredients:
2 tablespoons vegetable oil
6 boneless, skinless chicken breast halves
Salt and freshly ground black pepper to taste
6 garlic cloves, finely chopped
1 (14.5-ounce) can Mexican-style stewed tomatoes
1 large yam, peeled, cut into 1/2-inch dice
1 (4-ounce) can diced green chiles
1 (15-ounce) can yellow or white hominy, drained
1/2 cup chicken broth
1/2 cup packed chopped fresh cilantro – divided use
1/4 cup bottled mild green taco sauce

Cooking Directions:
1 – Heat oil in large skillet over medium-high heat. Season chicken with salt and pepper. Sauté chicken until golden brown, about 4 minutes per side. Transfer chicken to a bowl; set aside.
2 – Pour off all but 1 tablespoon drippings from skillet. Add garlic and cook about 30 seconds. Add stewed tomatoes, yam, chiles, hominy, broth, 1/4 cup cilantro and taco sauce.
3 – Return chicken to skillet, including any juices in bowl, stir to combine and cover skillet. Reduce heat to medium-low and simmer until chicken is just tender, about 20 minutes, removing cover last 5 minutes to reduce juices to sauce consistency.
4 – Transfer to large deep serving platter. Garnish with remaining cilantro.

SOUTHWESTERN EGG SCRAMBLE
Ingredients

3/4 cup canned (drained) hominy
2 tablespoons chopped green chilies
2 cups fat-free egg substitute
1/2 cup shredded, reduced-fat Monterey Jack (plain or with hot peppers) or Mexican cheese blend

Directions

1 – Coat a large nonstick skillet with cooking spray and preheat over medium heat. Add the hominy to the skillet and cook for about 1 minute, until heated through.
2 – Stir the chilies into the egg substitute and pour over the hominy. Reduce the heat to medium-low and cook without stirring for several minutes, until the eggs are set around the edges. Stirring gently to scramble, continue to cook for another minute, until the eggs are almost set.
3 – Sprinkle the cheese over the eggs and cook just until the eggs are set but not dry and the cheese is melted. Serve hot.

Today’s Menu: Cumin Spiced Pork Tenderloin w/Roasted Butternut Squash and Golden Hominy

 

 

To start my morning off I prepared Turkey Goetta, Hash Browns, and Toast. For the Turkey Goetta I used Glier’s Turkey Goetta, best by far! I just sliced a few slices off and lightly fried them in Extra Light Olive Oil. Then I also prepared some Simply Potatoes Shredded Hash Browns. I also toasted a slice of Aunt Millie’s Light Whole Grain Bread that I topped with some Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. After Breakfast I did a couple of loads of laundry. Then after Lunch I took my car up and had it washed and I vacuumed the inside. Then went to the ATM and then dropped off a few letters at the Post Office. For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Roasted Butternut Squash and Golden Hominy.

 

 

 

 

I purchased the Simple Truth Pork Tenderloin from Kroger yesterday, just over 1 1/2 lbs. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe by far!

 

 

 

Then for one side I prepared some Roasted Butternut Squash, easy recipe for some delicious Butternut Squash! I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Walnut Pieces, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.

 

 

 

 

 

To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the Olive Oil, add the Walnut Pieces, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! The Walnuts work perfect with the Squash. I really love Butternut Squash!

 

 

 

 

 

For another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy, and its been a while since I’ve any. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke zero to drink.

To start my morning off I prepared French Toast and Sausage. For the French Toast I used Aunt Millie’s Light Whole Grain Bread, Egg Beater’s, Ground Nutmeg, and Ground Cinnamon. For the Sausage I used Johnsonville Turkey Sausage Links. I also had my morning cup of Bigelow Decaf Green Tea. From 62 degrees yesterday to today’s high oh 37 degrees. Snow flurries early turning to rain showers later. Only a high of 29 degrees tomorrow they say. Spent the day replacing wood trim around the base of the walls here in the house. My Hoveround tears it up at times if I run into it. For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Roasted Butternut Squash and Golden Hominy.

I started the day off today the same way I did yesterday, by preparing a Breakfast Burrito! To make it I’ll need 1 medium size Egg, Jennie – O Turkey Ground Breakfast Sausage, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Frank’s Hot Sauce, sliced Jalapeno Pepper, and Old El Paso Flour Soft Tortilla. Not a bad way to start my day! Sunny and 84 degrees out, and low humidity again! Got the cart out and did what yard work I could do around the house. Then I had purchased some new tire for my Hoveround that I had to put on with the help of the next door neighbor. For Dinner tonight its a Cumin Spiced Center Cut Pork Loin Chop w/ Mashed Potatoes and Golden Hominy.

I picked up the Center Cut Pork Loin Chop at Meijer yesterday. It’s a nice size, bone-in chop. Meijer always has top quality meat and Seafood Department. So for my Chop I used my Cumin Spice Rub. Which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper.

To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.

 

 

Mashed Potatoes
I served it with some Bob Evan’s Mashed Potatoes, which I just microwave and serve. Then I also heated up a can Kroger Brand Golden Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Choose meat that’s pink with a small amount of marbling and white (not yellow) fat. Choose wrapped packages without any tears, holes or leaks. There should be little or no liquid in the bottom of the tray.

Had a light Breakfast of 2 Eckrich Smoked Turkey Sausage Breakfast Links and a Healthy Life While Grain Muffin, with my morning Bigelow Decaf Green Tea. Did a load of laundry for Mom. Then went to Kroger and picked up a couple of prescriptions for Dad. Came back and got the leaf blower out and cleaned the drive and around the house. Grilled a Ball Park White Turkey Frank for lunch. After lunch a friend of mine called and wanted me to pick her up to go get her car at mechanics. Busy day. For dinner tonight it’s nothing but good! I prepared Fried Okeechobee Crappie w/ Golden Hominy and Cut Green Beans.

 
As I scanned the freezer last night for something to have for dinner a bag of that Lake Okeechobee Crappie caught Fried Okeechobee Crappie w Golden Hominy Cut Green Beans 001my eye right away! So I grabbed a couple of bags and put them in the fridge to thaw overnight. Okeechobee Crappie, or Specks as they call them in Florida are my favorite, just love the taste of them! To start I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Extra Virgin Olive Oil about 3 minutes per side.As always they came out Golden Brown and delicious! It’s hard to even describe how much I love eating Crappie, especially the Lake Okeechobee Crappie.
