Today’s Menu: Chicken Burger w/ Baked Fries
Just a cup of Bigelow Decaf Green Tea for Breakfast. 62 degrees and mostly sunny today, very windy out again. I had Phantom Pains start around 3:00 this morning and continue until about 1:00 this afternoon! These are so painful and frustrating. So I did very little today but catch up on some sleep and relaxation. Phantom pains just drain you. For Dinner tonight I prepared a Ground Chicken Burger w/ Baked Fries.
I had purchased a package of Ground Chicken while at Meijer earlier yesterday. To make the Burger I’ll need; the Ground Chicken (1 lb. package), Ground Cumin, Paprika, Garlic Powder, Dried Oregano, McCormick’s Grinders of Sea Salt and Peppercorn Medley, and Meijer Italian Style Bread Crumbs. For toppings I’m using Kraft Reduced Fat Mayo w/Olive Oil, Heinz 57 Sauce, Hoffman’s Sharp Cheddar Cheese, Butter Leaf Lettuce and served on a Aunt Millie’s Reduced Calorie Whole Grain Bun, finally found these Buns at Walmart. I keep them in the freezer and get one out when needed.
To prepare them, in a large bowl, combine Chicken, Ground Cumin, Paprika, Garlic Powder, Dried Oregano, Sea Salt and Peppercorn Medley, and Italian Style Bread Crumbs. The Seasonings amount are to taste and 2 tablespoons of the Italian Style Bread Crumbs. Make a little depression with your thumb in the center of each burger so they cook evenly. Divide the mixture into 4 patties.
In a Cast Iron Skillet over medium heat, heat oil. Add burger patties and cook, flipping once, until golden and a thermometer inserted into the center registers 165°, 8 to 10 minutes. Top with cheddar and cook until just started melting, 2 minutes. Remove from heat and transfer patties to a plate. Serve on the Buns and top with Mayo, Heinz 57 Sauce, and Lettuce. The Ground Chicken Burger is juicy, moist, and flavorful! I’ll have to start having a lot more often!
To go with the Chicken Burger I prepared Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Heinz 57 Sauce. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

I also had a cup of Bigelow Decaf Green Tea. 64 degrees and cloudy, rain showers moving in late. Did laundry after Breakfast. Not a lot going on today. Cleaned off the deck and driveway areas, lot of leaves. Did a few things on the inside. For Dinner tonight I prepared a Ground Chicken Burger w/ Baked Fries.

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, heated up some Kroger Diced Ham, and had a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. We had a high of 66 degrees and sunny out today. After Breakfast I went and picked up Breakfast for Mom at McDonald’s. Not much going on so I got the cart out of the shed and did a few things around the yard and then rode around the neighborhood and enjoyed this Fall day. For Dinner tonight I prepared a Ground Chicken Burger w/ Baked Fries.

The only bad thing is the pollen, mold, and ragweed is sky high! Bad news for people like myself with allergies. I was sneezing and sniffling all day. Which led top a bad headache most of the day. I’ll be glad when all the weeds die and my allergies die with them. So just another thing to work through. Not a lot going on, just did a few chores around the house. I went to a funeral home in the early evening. A friend of mine brother passed away. For Dinner tonight I prepared a Chicken Burger w/ Baked Fries.

Today’s Menu: Chicken Burger w/ Baked Fries
To start this day off I prepared a Poached Egg that I served on a Thomas Light English Muffin. Also had a cup of Bigelow Decaf Green Tea. Heavy Rains and Thunderstorms hit the early morning hours. We nned the rain though the grass was starting to turn brown. Cleaned the house and then put Mom’s new Hoover Vacuum together, not a lot to it. This one has a cord which she will use and we still have Hoover Cordless which I use. The Cordless are nice, especially for me being in a wheelchair. But they don’t have the power of a Vacuum with a cord. Not much else going on. For Dinner tonight I prepared a Chicken Burger w/ Baked Fries.
I had been seeing a lot of Chicken Burgers at a lot of blogs out there, and they all look incredible! So I had bought a package from Meijer. The Burgers turned out so good that I purchased another package of the Smart Chicken – Ground Chicken and having them again tonight. To make the Burger I’ll need; the Ground Chicken (1 lb. package), Ground Cumin, Paprika, Garlic Powder, Dried Oregano, McCormick’s Grinders of Sea Salt and Peppercorn Medley, and Meijer Italian Style Bread Crumbs.
For toppings I’m using Kraft Reduced Fat Mayo w/Olive Oil, Heinz 57 Sauce, Hoffman’s Sharp Cheddar Cheese, Butter Leaf Lettuce and served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I’m keeping the toppings the same as last time, the Burgers came out delicious!
So to prepare them, in a large bowl, combine Chicken, Ground Cumin, Paprika, Garlic Powder, Dried Oregano, Sea Salt and Peppercorn Medley, and Italian Style Bread Crumbs. The Seasonings amount are to taste and 2 tablespoons of the Italian Style Bread Crumbs. Make a little depression with your thumb in the center of each burger so they cook evenly. Divide the mixture into 4 patties.
In a Cast Iron Skillet over medium heat, heat oil. Add burger patties and cook, flipping once, until golden and a thermometer inserted into the center registers 165°, 8 to 10 minutes. Top with cheddar and cook until just started melting, 2 minutes. Remove from heat and transfer patties to a plate. Serve on the Buns and top with Mayo, Heinz 57 Sauce, and Lettuce. The Ground Chicken Burger is juicy, moist, and flavorful!
To go with the Chicken Burger I prepared Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Heinz 57 Sauce. For Dessert/Snack later a Snyder’s 100 Calorie Mini Bag of Pretzels along with a Diet Peach Snapple.

To start this day off I prepared a packet of Kroger Buttery Grits, fried 2 Jennie – O Turkey Breakfast Sausage Links, toasted a slice of Aunt Millie’s Light Whole Grain Bread, and had my morning cup of Bigelow Decaf Green Tea. Too good! 84 degrees and humid out along with thunderstorms around the area toady. We need the rain though. Spent most of the day boxing items up in my bedroom. They are coming next week to put down new carpet in my bedroom and bath room. Much needed! My Hoveround Chair has really run the carpet down in the bedroom. For Dinner tonight I prepared a Chicken Burger w/ Baked Fries.

Today’s Menu: Cube Steak Sandwich w/ Roasted Baby Gold Potatoes and Sliced Carrots
Had a cup of Bigelow Decaf Green Tea for Breakfast and then off to Meijer and quick stop at Kroger. Wanted to get back home to get some things done today around the house. I built a couple of new shelves for the shed that I installed today. Then inside the house I had to replace some moulding that damaged while in my Hoveround, which happens a lot! Life in a wheelchair! Very thankful for my Hoveround Mobility Chair, it’s my legs now. If you have allergies, stay out of Southwest Ohio for the next few days! They said that for the next few days that Pollen, Mold, and etc. will be terrible. And by the way my head feels along with my sneezing they’re right! Suffering with it today. For dinner tonight I prepared Cube Steak Sandwich w/ Roasted Baby Gold Potatoes and Sliced Carrots.
I used my favorite Cubed Steak, Meijer Cubed Steak. I picked up a couple of packages this morning at Meijer, it’s the best Cubed Steak I have ever found or had. It’s about the only Beef I ever have, normally I have Buffalo, Fish, Chicken, or Pork. They’re good size patties so I was able to cut them in half and get 2 meals out 1 pattie. To prepare them I seasoned them with Sea Salt and Ground Black Pepper and I then rolled them in flour that I had mixed with a bit of Hungarian Paprika. Shook off the excess flour and pan fried them in Canola Oil, about 4 minutes per side. They came out delicious! Excellent flavor and very tender, especially for Cubed Steak which sometimes can be somewhat tough and stringy. Topped with some Heinz 57 Sauce and served it on a Aunt Millie’s Reduced Calorie Whole Grain Bun.
I made a skillet of Roasted Potato with Turkey Bacon. To make this Potato Dish I’ll need; 2 Slices of Jennie – O Turkey Bacon, Sea Salt Ground Black Pepper, 1/2 tablespoon Extra Virgin Olive Oil, and quartered Baby Gold Potatoes (quartered). Start by heating a cast-iron skillet over medium-high heat. Add Turkey Bacon to pan; cook 5 minutes or until crisp. Remove Bacon from pan; crumble. Add Potatoes to drippings in pan; cook 4 minutes or until lightly browned, turning once. Then bake at 375° for 12 minutes or until Potatoes are fork tender. Sprinkle Bacon and Parsley over Potatoes; serve with pork. Excellent Potato Dish.
Then I opened up a can of Del Monte Sliced Carrots. These are so much easier to prepare than boiling fresh Carrots, and they taste just as fresh and good as fresh Carrots. Just empty the can of Carrots into a small sauce pan; heat to a boil and reduce heat to a slow simmer until heated through. Drain excess liquid and serve. Also had a slice of Healthy Life Whole Grain Bread topped with I Can’t Believe It’s Not Butter. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.
Cube Steak
Cube steak is a cut of beef, usually top round or top sirloin, tenderized by fierce pounding with a meat tenderizer, or use of an electric tenderizer. The name refers to the shape of the indentations left by that process (called “cubing”). Many professional cooks insist that regular tenderizing mallets cause too much mashing to produce a proper cube steak, and insist on either using specialized cube steak machines, or manually applying a set of sharp-pointed rods to pierce the meat in every direction. This is the most common cut of meat used for chicken fried steak.
In Canada as well as in some parts of the United States, cube steak may be called a minute steak, because it can be cooked quickly.
Others distinguish minute steak as:
* simply referring to the cut, which is not necessarily tenderized;
* thinner than cube steak (hence does not need tenderizing);
* cut from sirloin or round, while cube steak cut is from chuck or round.
The term “minute steak” is also used in the United Kingdom, where the term “cube steak” is little known.
