Jalapeño Sweet Potato and Chicken Chowder

Recipe Ingredients:
2 large sweet potatoes
2 tablespoons butter or vegetable oil
1 small onion, 1/4-inch diced
Up to 1 quart vegetable broth, chicken stock or water
2 cups cooked chicken, cubed
1 1/2 cups whole kernel corn (fresh or frozen)
2 teaspoons jalapeños, minced (or more to taste)
1/2 cup heavy cream
1 teaspoon salt
Chopped green onions for garnish

Cooking Directions:
1 – Bake sweet potatoes at 350°F (175°C) until softened. Scoop out flesh; discard skin. Purée (or mash) sweet potatoes.
2 – In a soup pot, sauté onion in butter until softened. Add puréed sweet potato and desired amount of chicken stock. Bring to a boil, reducing liquid slightly.
3 – Add chicken, corn, jalapeños, heavy cream and salt. Simmer soup for 10 minutes.
4 – Serve garnished with chopped green onions.
Makes 4 servings.

Apple and Cornbread-Stuffed Pork Loin with Roasted Apple Gravy

Recipe adapted from Bruce Aidells’ Complete Book of Pork, courtesy of Harper Collins Publishers. “A full-flavored American Pale Ale is the perfect compromise between the meatiness of the pork and the rich fruitiness of the baked apples,” says Aidells.

Recipe Ingredients:
Cornbread and Apple Stuffing:
1 1/2 tablespoons butter
1/2 cup smoked ham, finely chopped, or diced smoked sausage
1/2 cup finely chopped onion
1/4 cup finely chopped celery
Kosher salt
Freshly ground black pepper
3/4 cup apples, peeled and diced 1/4-inch
1/2 teaspoon dried sage
1 1/2 cups homemade cornbread, crumbled and dried or dried cornbread stuffing mix
1/4 cup apple juice

4 pound pork loin roast, boneless
Kosher salt
Freshly ground black pepper
1 teaspoon dried sage
3 medium apples, peeled, halved, cored and cut into 1/2-inch slices
1/4 cup Calvados, or apple brandy
1 1/4 cup homemade chicken stock, or canned low-sodium chicken broth
1 cup apple juice, or cider
1/4 cup heavy cream

Cooking Directions:
1 – For Stuffing: Heat butter in a heavy medium skillet over medium-low heat; add ham or sausage and cook 3 minutes. Add onion, celery and a pinch each of salt and pepper; cover and cook, stirring occasionally, until the vegetables are quite soft, about 10 minutes. Stir in diced apple and cook 1 minute. Transfer apple mixture to a large bowl. Sprinkle with sage and stir in cornbread crumbs, apple juice and egg. The mixture should be moist but not wet. Add more apple juice if the mixture seems dry. Taste for seasoning and set aside.
2 – Preheat oven to 450°F (230°C). To double butterfly the pork loin, lay the meat, fat-side down, on a work surface and make a horizontal lengthwise cut two-thirds of the way into the depth of the loin and about 1 inch from the long edge nearest you, taking care not to cut all the way through. Flip the loin over so that the cut you just made is opposite you. Make another lengthwise cut, again 1 inch from the edge. Open up the two cuts so you have a large rectangle of meat whose diameter is roughly 3 times the thickness of the meat. Place fat-side down and cover with a sheet of plastic wrap. Using the flat side of a cleaver or a meat pounder, gently flatten the meat to an even thickness.
3 – Remove plastic wrap and spread apple stuffing evenly over the meat, leaving a generous 3/4–inch border. Roll up meat jelly-roll style so that stuffing is in a spiral pattern. Tie rolled roast at 2-inch intervals with butcher’s twine.
4 – Combine 2 teaspoons salt, 1 teaspoon pepper, and remaining sage and sprinkle over roast. Lay the sliced apples on the bottom of a roasting pan just a bit larger than the roast and set the roast, fat-side up, on the apples. Put roast in the oven and cook for 15 minutes, turn the oven down to 325°F (160°C) and roast for 45 minutes. Check the internal temperature of the roast with an instant-read thermometer: The roast is done when it reaches 145°F (162.7°C). If it is not ready, continue to roast, checking the temperature every 10 minutes. When the roast is done, transfer it to a cutting board, tent loosely with foil, and let rest for at least 10 minutes while you make the sauce.
5 – With a slotted spoon, transfer the apples in the roasting pan to a bowl and keep warm. Pour off any fat from the roasting pan, leaving the meat juices on the bottom. Put pan over medium-high heat, add Calvados and deglaze pan allowing the alcohol to burn off, about 15 seconds. Transfer to a small saucepan and add stock, apple juice and cream. Increase heat to high and bring liquid to a boil. Simmer, stirring, until reduced by half. Taste for salt and pepper. Keep the sauce warm while you carve the pork roast.
6 – Remove twine from the roast and cut it into 1/2-inch thick slices. (If you cut the slices too thin, they will fall apart.) Arrange the pork on a serving platter. Spoon the sliced apples around the meat and pour the sauce over all.
Makes 8 servings.

CORNED BUFFALO HASH WITH CREAMED SPINACH

One more reason to try our Corned Buffalo Brisket! A great lazy weekend brunch, where you get to eat your buffalo meat and have your vegetables too!

Ingredients for Hash: (serves 2)
1 ½ – tablespoons oil
2 – medium potatoes, pre-cooked and chopped (*Leftovers work well.)
¼ – cup chopped onion
1 – cup chopped Wild Idea Corned Buffalo Brisket
2 – eggs
½ – cup hot water
salt & pepper

Ingredients for Creamed Spinach: (serves 2)
1 – tablespoon butter
¼ – cup onion, minced
1 – teaspoon garlic, minced
2 – big handfuls spinach
1/3 – cup heavy cream
salt & pepper
Preparation:

1 – In a sauté pan over medium high heat, heat 1 tablespoon of the oil and add the potatoes, onion, and a pinch of salt & pepper. Allow the potatoes to brown a bit before stirring. Continue to cook until the potatoes are lightly browned, about 8 minutes. Add the Corned Buffalo and mix to incorporate. Continue to cook for 3 minutes.
2 – Simultaneously in another sauté pan over medium -to- medium low heat, melt the butter for the creamed spinach. Add the onions and garlic and cook until tender, about 6 minutes. Add the spinach and cover, stirring occasionally until spinach is wilted. Add the heavy cream and stir in to incorporate. Reduce heat to low and allow the cream to reduce and thicken a bit.
3 – Transfer the hash to a plate and cover with foil. Wipe the pan out with a paper towel and return to the burner over medium heat. Brush the pan with the remaining oil. Add the eggs to the pan, and then add the hot water and cover. Baste for 1 to 2 minutes.
4 – To serve, divide the spinach between two plates and top with desired amount of hash. Place basted egg on the top and season with a pinch of salt & pepper.

Smoked Gouda and Turkey Dip
Get out the crackers. This marvelously melt-y dip recipe makes an amazing no-gluten appetizer that’s highly recommended by us. Low in sodium, low in carbs and done in under 15 minutes!

INGREDIENTS
⅔ cup heavy cream
8 ounces smoked Gouda cheese, cut into small chunks or shredded
½ pound minced JENNIE-O® Oven Browned Turkey Breast, from the service deli
2 green onions, minced
¼ cup chopped walnuts, toasted
1 tablespoon diced pimiento
sliced apples and crackers for dipping, if desired

DIRECTIONS
1) In medium saucepan, heat cream to scalding; slowly add cheese. Stir continuously over low heat until completely melted.
2) Stir in turkey, onions, walnuts and pimiento. Stir and heat through.
3) Pour into heated bowl and serve with sliced apples and crackers for dipping, if desired.

Creamy Spinach Soup
Indulgently creamy, this spinach soup recipe will have everyone “eating their vegetables”.

INGREDIENTS
2 tablespoons butter
1 onion, chopped
1 clove garlic, minced
¼ cup flour
4 cups chicken broth
4 cups packed baby spinach
1 lemon
¼ cup heavy cream
salt and pepper, to taste
cream, if desired
croutons, if desired

DIRECTIONS
1) In large saucepan over medium heat, melt butter. Add onion and cook 3 to 4 minutes or until tender.
2) Add garlic and cook 1 minute.
3) Add flour and whisk 1 minute. Gradually whisk in broth. Add spinach and stir until wilted. Simmer over low heat 10 minutes.
4) Grate peel from lemon. Juice lemon; add lemon juice to soup. Using food processor or blender, process soup to smooth puree. Return to pan. Add ¼ cup cream and lemon peel to soup. Simmer 5 minutes. Season with salt and pepper.
5) Ladle into bowls. Drizzle with additional cream, if desired and sprinkle with croutons.

HEARTY MUSHROOM SOUP

Ingredients

1/2 cup chopped onion
3 strips bacon, diced
1 pound mushrooms, thinly sliced
1/3 cup all-purpose flour
5-3/4 cups (46 ounces) chicken broth
1 cup hot water
1 small packet lower-sodium chicken bouillon granules
1-1/4 pounds all-purpose potatoes, peeled and cubed
2 tablespoons dry sherry
1/2 cup heavy cream
1 tablespoon chopped fresh parsley

Directions

Cook onion and bacon in a Dutch oven over medium heat until onion is golden, 2 to 3 minutes. Add mushrooms; cook until liquid evaporates, about 8 minutes. Add flour; cook, stirring, about 1 minute.
Stir broth, water and bouillon granules into saucepan. Add potatoes and sherry; simmer 15 minutes or until potatoes are tender. Transfer 4 cups of soup mixture to a food processor. Puree and return to pot. Stir in cream. Genly reheat, stirring occasionally.
Ladle into soup bowls. Garnish with parsley.
