Today’s Menu: Seasoned Gulf Coast Grouper Sandwich w/ Baked Fingerling Potato Wedges

 

 
For my Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and Scrambled 2 medium size seasoned-gulf-coast-grouper-sandwich-w-baked-fingerling-potato-w-007Eggs. Also had a cup of Bigelow Decaf Green Tea. Very good way to start off this cold Friday Morning. Rolled out to get the morning papers and it was cold out, 19 degrees and a wind chill near 9 degrees! And we had our first snow of the year, not much but traces on the grass and rooftops. For the day mostly cloudy and only a high of 29 degrees. Cleaned the house this afternoon, run the vacuum, dusted, and such. Back to bed afterwards, still not feeling real good. For Dinner tonight its a Seasoned Gulf Coast Grouper Sandwich w/ Baked Fingerling Potato Wedges.

 

 
I love Fish and Seafood, especially this Florida Gulf Coast Grouper my friends bring me up from Florida! I had a filletseasoned-gulf-coast-grouper-sandwich-w-baked-fingerling-potato-w-002 in the freezer so I sat it in the fridge to thaw overnight. To prepare the fillet I seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until it was well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a 1/2 tablespoon of Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillet, frying about 3 minutes per side until golden brown. The fillet came out Golden Brown and Delicious! I served it on a Healthy Life Whole Grain Hamburger Bun.

To go with the Fish Sandwich I baked some Fingerling Potato Wedges. I purchased these at Jungle Jim’s last week and prepared what was left of them. To start I first washed the Potatoes off in cold water and patted dry with a paper towel. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. I love Fingerling Potatoes! I had a Peach Diet Snapple to drink with the meal. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Seasoned Gulf Coast Grouper Sandwich w/ Baked Fries

 

 
For my Breakfast this morning I made a Breakfast Sandwich. I fried up slices of Boar’s Head Deluxe Ham, scrambledseasoned-gulf-coast-grouper-sandwich-w-baked-fries-007 some Egg Beater’s Egg Whites, used 1 slice of Sargento Ultra Thin Swiss Cheese, and served all on a Healthy Life Whole Grain English Muffin. Also had a cup of Bigelow Decaf Green Tea. Very good way to start the day off. Rolled out to get the morning papers and it was a bit cool out, 38 degrees! It was mostly sunny and had a high around 63 degrees, beautiful Fall Day! After Breakfast I got the leaf blower out, a ton of leaves on our deck and driveway, tis the Fall Season! After getting the outside tidied up I moved indoors to clean, run the vacuum, dusted, and such. Finished everything up after Lunch and it a Saturday afternoon of College Football! Love Football. for Dinner tonight its a Seasoned Gulf Coast Grouper Sandwich w/ Baked Fries.

Grilled Cheese and Baked Fries 003
To go with the Fish Sandwich I baked some Alexia Organic Yukon Select Fries. I seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Sharp Cheddar and Mushroom Buffalo Burger w/ Baked Steak Fries

 
Started my morning off with a Sunnyside Up Egg, 2 Jennie – O Turkey Breakfast Sausage Links, Healthy Life Whole Sharp Cheddar and Mushroom Buffalo Burger 005Grain English Muffin, and hot cup Bigelow Decaf Green Tea. Now that’s a good start to the day! It was a beautiful sunny morning but the clouds and rain started rolling in about 10:00. I’ve had one rough one night, had to deal with phantom Pains! And they were very painful throughout the night, so I didn’t get a lot of sleep. They continued throughout the day, hopefully it will end soon! Did some laundry and tried to catch up on some sleep. For dinner tonight I kept it simple, I prepared a Sharp Cheddar and Mushroom Buffalo Burger w/ Baked Steak Fries.

 
Used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burger. I had it in the freezer so I laid it in the fridge overnight to thaw. ! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, in Extra Virgin Olive Oil, about 3 1/2 minutes per side, and done! I topped it with a slice of Kraft Sharp Cheddar Cheese and Sauteed Mushrooms, served it on a Healthy Life Whole Grain Hamburger Bun. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious For a side I baked some Ore Ida Steak Fries, with a side of Hunt’s Ketchup for the Fries. For dessert later a bowl of Ben and Jerry’s Half – Baked Fro Yo!, Don’t have Ben and Jerry’s a lot but I broke down and bought a pint when I was at Meijer.

Another frigid morning here, -1 degrees! The wind chill dropped it to -11. They are saying by the weekend it should at least be at 32 degrees, heat wave baby! Well with the weather outside I stayed inside, Did a load of laundry and then caught up on some shows I had recorded and some reading. For Breakfast It was Turkey Goetta, 1 Egg, and Wheat Toast. Lunch was a Turkey Meatloaf Sandwich on a Whole Grain Bun and for a last minute dinner substitute, a Fish sandwich w/ Baked Fries.

 

 

I had a dinner planned out but about the time I was getting ready to prepare dinner I noticed that my car was leaking antifreeze, not a good time to be leaking either with our weather! I had taken a bag of garbage out and noticed it leaking. So I took to the mechanic we always used and dropped it off. So to avoid an over crowded kitchen, Mom was wanting to prepare her dinner for her and Dad, I wanted something quickly to prepare. I used a Gorton’s Fish Sandwich Fillet that I baked along with some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Baked both at the same time.
I served the Gorton’s Fish on a Healthy Life Whole Grain Bun and topped the Fish with a slice of Sargento Ultra Thin Sharp Cheddar Cheese. With the Fries I had some Hunt’s Ketchup for dipping. Frozen foods sure come in handy for last minute meals! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt. Later!

Today’s Menu: Turkey Bacon and Muenster Cheese Turkey Burger w/ Baked Fries

 

 

 

A beautiful Autumn Day outside today! Sunny and a high of about 61 degrees. Started off with a couple of Jennie – O Turkey Sausage Links, a Golden All Natural Potato Cake, a slice of Toast, and hot cup of Bigelow Decaf Green Tea. A very good Turkey Bacon Muenster Cheese Turkey Burger 002start to the day! Did some laundry and got the cart out and spent most of the afternoon riding around and enjoying the day. For dinner tonight it’s a Turkey Bacon and Muenster Cheese Turkey Burger w/ Baked Fries.

 

 
I’m using the Jennie – O Turkey Burger Patties. Their already pre-made Patties and come fresh or frozen so all I did was season it with Sea Salt and Ground Black Pepper and fry! I fried them in Canola Oil about 8 minutes per side. I served the Burgers on Healthy life Whole Grain Bun and topped the Burger with Jennie – O Turkey Bacon and Kroger Private Selection Muenster Cheese. Love these Burgers!

 

 

 

Then for a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
