Today’s Menu: Sweet Slice Boneless Smoked Ham and Swiss Grilled Sandwich w/ Baked Fries

For Breakfast this morning I Poached an Egg and served it on a Healthy Life Whole Grain English Muffin. And as usual I had a morning cup of Bigelow Decaf Green Tea. Another cold morning out there, about 8 degrees and near 0 with the wind chill! it did get to about 30 degrees and sunny out. After Lunch I took a drive over to my Oncologist Doctor’s Office and dropped off some candy for the staff for Christmas. Then dropped some more off at my Family Physician Office. ‘Tis the Season! For Dinner tonight I prepared a Sweet Slice Boneless Smoked Ham and Swiss Grilled Sandwich w/ Baked Fries.

While at our local Kroger the other day, they had Boar’s Head Sweet Slice Boneless Smoked Ham on sale in the Deli. I had not tried this one before so I purchased some to give it a try. As all the Boar’s Head products it was delicious and only 60 calories and 1 carb per serving. I had made a Sandwich of it for Lunch yesterday and I’m having it for my Dinner tonight! To make the sandwich I’ll need the Boar’s Head Sweet Slice Boneless Smoked Ham, Sargento Reduced Fat Sliced swiss Cheese, French’s Yellow Mustard, and a Healthy Life Whole Grain Bun.

 

 
To prepare it I took a medium size skillet, sprayed it with Pam Cooking Spray, and heated it on medium heat. When heated I added my Ham and cooked it for about 4 minutes, flipping the slices several times. After flipping it for the sweet-slice-boneless-smoked-ham-and-swiss-grilled-sandwich-004last time I piled it up in the skillet and topped it with a slice of the Sargento Swiss Cheese. As the Cheese was melting I loaded it on to the Healthy Life Bun. Topped with French’s Mustard and served! The Boar’s Head Sweet Slice Boneless Smoked Ham makes one delicious Sandwich! When I order any sliced Cold-Cuts I always have them slice it paper-thin. Having Diabetes 2 I have to watch calories and carbs. And with the Cold-Cuts sliced thin I can pile it up and still be using the same amount as meat sliced regular. Sort of tricks the mind into thinking you’re getting more than you really are!

 

 

Grilled Cheese and Baked Fries 003
To go with my Sandwich I baked some Alexia Organic Yukon Select Fries leftover so I prepared them to go with my Burger.Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. I had a Diet Dr. Pepper to drink. For dessert later a Weight watchers Cookies and Cream Ice Cream Bar.

Today’s Menu: Fried Walleye Sandwich w/ Baked Potato

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, 2 Jennie – O Turkey Breakfast sausage Links, toasted a slice of Healthy Life Whole Grain Bread (lightly buttered), and a cup of Bigelow Decaf Green Tea. A couple of showers this morning and throughout the day, had a high in the 40’s. After Breakfast and my morning workout I started a couple of loads of laundry for Mom. After I started the Laundry I went to McDonald’s to pick up Breakfast for Mom and Dad. Back home cleaned the house today, ran the vacuum and dusted. Dinner tonight its a Fried Walleye Sandwich w/ Baked Potato.

 

I had purchased a couple of Walleye Fillets at Kroger and had prepared 1 of them and had the other in the freezer, I Fried Walleye w Risotto and Cut Green Beans 001laid the fillet in the fridge overnight to thaw. I love Walleye we had not so couldn’t wait to have some again. I rinsed the fillet off in cold water and patted it dry with a paper towel and cut the fillet in half. Seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Light Olive Oil on medium heat, about 3 to 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor. I served it on a Healthy Life Whole Grain Bun.

For a side I prepared a Baked Potato. I seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley, topped it with I Can’t Believe It’s Not Butter. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Started my morning off by making a Breakfast Sandwich. Toasted a Healthy Life Whole Grain English Muffin and as that toasted I fried up some Boar’s Head Deluxe Ham and as that was finishing I took a slice of Sargento Swiss Cheese and layered that on to top of the Ham while in the skillet. Love these English Muffin Breakfast Sandwiches! Heat, humidity, and showers throughout the day,seems to a holding pattern. We got a whole lot of rain overnight and into today. Helped out Mom on a couple of loads of laundry. Then had to do some minor repair on the Hoveround. For Dinner tonight I prepared some “Not So Sloppy” Buffalo Joe’s w/ Baked Crinkle Fries.

It’s Sloppy Joe Night tonight for dinner! A delicious and a super easy meal to make. To make the Sloppy Joe’s I used a 1 lb. package of Wild Idea Buffalo Premium Ground Buffalo, 1 jar of Hormel Not So Sloppy Joe Sauce, and Healthy Life Whole Grain Hamburger Buns. Using Buffalo, or Bison, instead of Beef will give your Sloppy Joe’s a deeper and richer flavor.

Using a large skillet to brown the Buffalo in I seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley. After the Buffalo was browned and no longer pink I added the jar of Not So Sloppy Joe Sauce stirring and making sure the Sauce and Buffalo was well mixed. Simmer until it’s warm, and served. I love the Hormel Not So Sloppy Joe Sauce. It’s a good thick sauce well seasoned with Spices, Onions, Green Peppers among other ingredients (70 calories and 15 carbs per serving). I served them on the Healthy Life Bun. Another delicious dish using Wild Idea Buffalo. For a side I baked some Ore Ida Crinkle Fries, with a side of Hunt’s Ketchup for the Fries. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Had to start my morning off by going to the Dermatologist, my least favorite doctor exam to go to. But I always have to play it safe being a Melanoma Cancer Survivor, so it’s worth it. And everything has been looking so good the Doctor has moved my visits to just a yearly visit! I’ve come along way, health wise. Another cold morning, especially with the wind. Stopped by Kroger for Mom after the doctors and back home. Anyway for dinner tonight I prepared a Pulled Buffalo Chuck Roast Sandwich w/ Baked Fries.

 
I used the Wild Idea Buffalo Pulled Buffalo Chuck Roast. This is so tender and incredibly flavorful. It comes already cooked and seasoned. It’s seasoned with, Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper. And that’s why it’s so flavorful! Delicious Buffalo Meat that you just heat and serve. I served it on a Healthy Life Whole Grain Hamburger Bun and topped it with just a bit JB’s Fat Boy Chipotle BBQ Sauce. What a sandwich! For a side I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Had some overnight and early morning showers but a sunny afternoon. A bit warmer and more humid out, ready for the Fall weather to return. Laundry and house cleaning and then NFL Football for the rest of the day! For dinner tonight it’s an Extra Sharp Cheddar and Mushroom Buffalo Burger w/ Baked Fries.

 

 
I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers. Just love these Buffalo Burgers.Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it about 3 1/2 minutes per side, and done! I topped it with a fresh slice of Borden Extra Sharp Cheddar and Sauteed Mushrooms, served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun. Hard to beat these Wild Idea Buffalo Burgers, juicy and delicious!

 

 
Then for a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Another one of those long days around here today. i made me and Mom Breakfast and then I had to go the store for a few items and back home, here is where it starts to wrong! Mom had left to go to Church and then to see Dad at rehab center. So I unloaded the groceries and put them away and went in the spare room and did my daily exercises. Went back to my Hoveround and the tire was flat! So I got my walker and was going for the phone to call my neighbor to give me a hand to change the tire, and I tripped and fell. Banged my head pretty good on the wall and slightly twisted my knee. Finally managed to call my neighbor and he came over to change the tire, luckily I had a couple of older tires that were still usable. The knee aches a bit but everything back to normal. For dinner tonight I prepared “Not So Sloppy” Buffalo Joe w/ Baked Fries.

 

 

 
It’s been a while since its been Sloppy Joe Night, too long! It’s a delicious and a super easy meal to prepare. To make the Sloppy Joe I used Wild Idea Buffalo – Premium Ground Buffalo (my favorite meat), 1 jar of Hormel Not So Sloppy Joe Sauce, and Healthy Life Whole Grain Buns.Using a large skillet to brown the Bison in, I seasoned it with Morton’s Salt Substitute, Ground Black Pepper, and Roasted Ground Cumin. After the Bison was browned and no longer pink I added the jar of Not So Sloppy Joe Sauce stirring and making sure the Sauce and Bison were well mixed. Simmer until it’s heated throughout, and serve. I love using Not So Sloppy Joe Sauce! It’s a good thick sauce well seasoned with Spices, Onions, Green Peppers among other ingredients (70 calories and 15 carbs per serving). Buffalo makes a great Sloppy Joe Sandwich. I served it on a Healthy Life Whole Grain Bun with a side of Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Had a bowl of Cheerios for Breakfast this morning. That’s the first bowl of Cereal I’ve had in forever, I can’t even remember the last time starting the day with one! Had to have my Hoveround worked on today, just general maintenance; tires and batteries and such. Then ventured to Kroger, which is a real adventure anymore due to their remodeling. I really y don’t consider it remodeling when all they’re doing is moving items over an aisle or two and making a mess out of it. But as one Kroger employee told me, when they do stuff like this it’s job security. As soon as they see that things are more confusing than before they’ll move everything back, job security. Anyway for dinner tonight I prepared a Pulled Buffalo Chuck Roast Sandwich w/ Baked Fries.

 

 
As usual when using Buffalo I’m using Wild Idea Buffalo. I used the Wild Idea Buffalo Pulled Buffalo Chuck Roast. This is so tender and incredibly flavorful. It comes already cooked and seasoned. Started this hot day off with a Jennie – O Turkey Bacon, Scrambled Egg, and Wheat Toast Breakfast! And hot it is, the three H’s today Hot, Hazy, and Humid! Went to the store early to pick up a couple of items for tomorrow’s dinner and back home to AC. Bad day also out if you have allergies, very mold and pollen. So just a good day to stay indoors if you can. For dinner tonight it’s a Sharp Cheddar and Mushroom Buffalo Burger w/ Baked Fries.

I then pan fried it about 3 1/2 minutes per side, and done! I topped it with a fresh slice of Borden Extra Sharp Cheddar and Sauteed Mushrooms, served it on a Healthy Life Whole Grain Bun. Hard to beat these Wild Idea Buffalo Burgers!

 

 

 
Then for a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a bowl of Breyer’s Low Carb Vanilla Bean Ice Cream.

Today’s Menu: Open Face Crock Pot Pork Shoulder Sandwich w/ Mashed Potatoes and Gravy

Cloudy, rain on and off, hot, and humid around here today, but they’re saying we have some more beautiful weather coming in! Hope so, I’d like to do some fishing at a local County Park this week. Hung around inside doing some odds and ends things and that was about it for the day. For dinner tonight, nothing but comfort food! I prepared an Open Face Crock Pot Pork Shoulder Sandwich w/ Mashed Potatoes and Gravy.

 

 

 
I used a Kroger Brand Pork Shoulder (Butt) Roast, about 2 1/2 lbs. I put the Pork on this morning and let it slow cook through-out the day. All I needed was the Pork Shoulder or Boston Butt (bone-in or boneless), 1/3 cup of Water, Sea Salt, Pepper (lightly), Roasted Cumin, Garlic Powder, Onion Powder, and JB’s Fatboy Haug Waush BBQ Sauce. Then to prepare it; Combine all the Seasonings in a bowl and mix well. Rub the Seasoning Mix all over the Roast, make sure all sides have Seasoning. Place the Roast in the slow cooker with water. Cover and cook on HIGH for 1 hour. Turn to LOW and cook 7 to 9 hours longer, until very tender. Remove roast and discard fat and juices. Chop or shred the pork; return to slow cooker. Mix a little barbecue sauce into the meat for flavor. Cook for about 1 hour longer, until hot. Serve on warm split sandwich buns with coleslaw (Optional) and extra BBQ Sauce on the side. The pork just fell apart, not much need to shred it! Moist and just bursting with flavor! Served 3 people with plenty leftover for Sandwiches the rest of the week.

 

 

 
I served the Pork on top of a toasted half of a Healthy Life Wheat Sandwich Bun. I also had a side of Bob Evan’s Mashed potatoes topped with some Heinz Mushroom Brown Gravy. Hope all you can try this sometime, it makes one incredible and delicious dinner! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 

 
Crock Pot Pork Shoulder

Use your favorite barbecue sauce in this crock pot pork roast recipe. This is a basic recipe for pulled pork shoulder using a boneless or bone-in shoulder, but be sure your pork shoulder will fit in the slow cooker and will allow you to put the cover on tightly.
Ingredients:

pork shoulder or Boston Butt, about 4 to 7 pounds, bone-in or boneless
1/3 cup of water
Sea Salt, Pepper (lightly)
Roasted Cumin

JB’s Fatboy Haug Waush BBQ Sauce

The high humidity continued today outside, a couple of showers and in the high 80’s. Went to my Family Doctor today for a check-up, blood work for sugar, cholesterol, and such. I was in my wheelchair heading in to the examination area and as I was going in the door the front wheel came flying off throwing me forward onto the floor. A nut on the axle had come off causing the wheel to come off. Luckily nothing was broke, but my right wrist has a slight sprain and my knee has a bruise. Could have been worse I guess. Came home and repaired the wheel, I need a new one but just don’t have the money right now. Enough excitement on to dinner! Tonight it’s Jennie – O Turkey Frank Cincinnati Style Cheese Coneys.

I used the Jennie – O Turkey Franks. I boiled them, it took about 5 minutes and they were ready. I opened up a can of Skyline Original Chili and heated that up for my Chili Topping. I served everything on a Healthy Life Whole Grain Hot Dog Bun. Then for my toppings I used the Skyline Chili, French’s Yellow Mustard, and Sargento Reduced Fat Sharp Cheddar Shredded Cheese. Put it altogether and you have a prime example of the World Famous Cincinnati Style Cheese Coney! Had a small side of some Marinated Olives along with a Diet Dr. Pepper that I had let chill in the freezer for about 15 minutes. For dessert later a Jello Sugar Free Dark Chocolate Mousse.
