Today’s Menu: Roast Beef and Sharp Cheddar Sandwich w/ Chips

 

 

Just had a cup of Bigelow Decaf Green Tea for Breakfast. Then about 8:00 I took Mom over to the hospital and we checked in on Dad and then on to Jungle Jim’s International Grocery. This store is one of a kind! You could spend all day in there looking at everything. I noticed in the Meat Department they had a special going on for their Ground Kangaroo. Then in the Seafood Department they had Blue Crab in! Passed on getting some for now, maybe next week. I ended up getting several things including something for Dinner tonight. Back at home I got the 4 wheel cart out and got a little yard work done. Looks as though I’m going to have to have our wooden deck painted. There goes $400 or more. We have a huge deck that wraps around 1/2 the house. Lot of money, but it has to be done. For Dinner tonight my favorite Boar’s Head Meat, the Rare Roast Beef. Tonight its a Roast Beef and Sharp Cheddar Sandwich w/ Chips.

 

 

While at Jungle Jim’s earlier today, of course I had to hit that incredible Deli Department! They carry any Boar’s Head Meat, Cheese, or Sauces that Boar’s Head makes! And as always I picked up some of my favorite Lunch Meat, Boar’s Head Rare Roast Beef. Besides all Boar’s Head Products in the Deli they have a large selection of other Cold Cuts, a huge selection of any Cheese you could want, Pickles, and an Olive Bar that is unmatched. I also picked up some Anti Pasta Salad.

 

 

 

 

So now about this Sandwich – I’ll be using the Boar’s Head Roast Beef, a slice of Kraft Sharp Cheddar, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Healthy Life Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffles Reduced Fat Potato Chips. And to drink a 7.5 Mini Can of Coke Zero, love these little Mini Cans. For Dessert later a Jello Sugar Free Dar Chocolate Pudding.

This morning for Breakfast I had a Poached egg, 2 Jimmy Dean Turkey Sausage Links, toasted Healthy Life Whole Grain English Muffin, and a cup of Bigelow Decaf Green Tea. A bit warmer out today and less windy, high of 57 degrees. Did a few things around the house then after Lunch went outside and got a few things out of storage from the shed. Pulled out some of the outdoor chairs and table and cleaned them up and also repaired a couple of the chairs. Back inside finished some laundry up for Mom. For Dinner tonight I prepared a Open-Faced Roast Beef Sandwich w/ Mashed Potatoes, Mushroom Gravy, and Green Beans.

 

 

It’s very seldom that I have Beef but when I was at Walmart the other day this just looked good and I had not had this in quite some time, a package of Hormel Slow Simmered Beef Roast Au Jus. And made into a an Open Face Roast Beef sounded real good! It comes packaged in a sealed microwave container and easy to prepare. Start by removing it from the outer sleeve and place the tray in microwave, do not pierce or vent film. Heat on high for 4 minutes or until hot. the self-venting film expands as it heats, forming a bubble to lock in flavor and juiciness. Let it stand for 2 minutes. Peel back and serve. Can’t get much easier and it’s really delicious. Plenty of Beef with excellent flavor. All I added was a bit Sea Salt to it. I lightly toasted a slice of Healthy Life Whole Grain Bread and served the Beef on top of the Toast. I also heated up a jar of Heinz Mushroom Gravy that I topped it with.

 

 

 

For a side I prepared my favorite Mashed Potatoes, Bob Evan’s Mashed Potatoes. Easy to fix and delicious. To prepare it just heat it up in the microwave for 6 minutes and it’s ready. Topped them with some of the Mushroom Gravy.

 

 

 

 

 

I also heated up a can of Del Monte Cut Green Beans. I could have Beans every meal, love them! For Dessert later tonight I’ll be having a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Grilled Cheese and Baked Fries

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with some Boar’s grilled-cheese-and-baked-fries-008Head Sweet Sliced Ham and a 1/2 slice of Sargento Reduced Fat Swiss Cheese, for a Breakfast Sandwich. Also had my morning cup of Bigelow Decaf Green Tea. It’s another Spring like Winters day here, 63 degrees and partly cloudy. From what they are saying the upcoming week is going to be in the 60’s! So nice out that the flowers are already coming up around the neighborhood. After Lunch I headed over to spend some time with Dad at the rehab care center. He continues getting stronger and walking a lot better! Back home finished up some housework and took it easy the rest of the day. For Dinner tonight I prepared a Grilled Cheese and Baked Fries.

A Grilled Cheese and Baked Fries just sounded good. To make my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread.

I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Oh, nothing like a good and toasty Grilled Cheese sometimes!

Then for a side I baked some Alexia Organic Yukon Select Fries. First time I’ve had these in a long time. Found the at Meijer and thought I would get a bag. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right! Plus they are only 120 calories and 15 net carbs. I love my Potatoes! Grilled Cheese and Baked Fries for a Sunday Dinner, not too bad! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Grilled Ham and Cheese w/ Baked Crinkle Fries

 
To start this sunny Thursday Morning off I Scrambled 2 Eggs, toasted a slice of Healthy Life Whole Grain Bread Grilled Ham and Cheese w Baked Crinkle Fries 004(lightly buttered), and had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to Walmart to pick up some printing ink and copy paper. What a beautiful Spring Day out there..I mean Fall Day! Sunny and 72 degrees out, beautiful! I got a few things done around the house and then got the cart out of the shed and rode around the neighborhood and down by the lake. Tomorrow is supposed to be around 75 degrees. But by Saturday morning a high in the 50’s and dropping throughout the day and possible snow flurries for Saturday night into Sunday. You don’t want to say that four letter word too loud in Ohio, people panic just saying the word! It’s so funny to watch people panic just over the mention of that word, Stores will all be sold out of everything! Anyway for my Dinner tonight its a Grilled Ham and Cheese w/ Baked Crinkle Fries.

 
From a Izzy’s Light Corned Beef yesterday to ham and Cheese tonight, sticking with the Sandwich for Dinner. I’m Grilled Ham and Cheese w Baked Crinkle Fries 002using Boar’s Head Deluxe Ham, Kraft Sliced Sharp Cheddar Cheese, and Healthy Life Whole Grain Bread. I love all the Boar’s Head Meats and Cheese and this Deluxe Ham has become my favorite Ham. Always fresh and lower in calories and sodium. To make the sandwich I buttered one side of both slices of bread with I Can’t Believe It’s Not Butter and then on the unbuttered sides layered the Ham and then the Cheese. I then grilled the sandwich in a preheated pan that I had sprayed with Pam Cooking Spray. Grilling both sides until golden brown. I love a Grilled Cheese Sandwich, but the Boar’s Head Ham kicks it up another notch!

I just had a cup of Bigelow Decaf Green Tea for Breakfast. After Breakfast I started laundry for Mom, a couple of loads. Then finished up house cleaning and it was clean the stove day. Everything done inside and moved on to the outside. As usual had to get the leaf blower out and clean the deck and driveway. Got the clippers out and trimmed the vines alongside the driveway. Today’s Menu: Buffalo Steak, Scrambled Eggs, and Hash Browns

 

 
For Breakfast this morning I made a bowl of Kroger Brand Instant Grits (Butter Flavor) and toasted a couple of slicesbuffalo-steak-scrambled-eggs-and-hash-browns-009 of Healthy Life Whole Grain Bread, buttered with I Can’t Believe It’s Not Butter. Also had that every morning cup of Bigelow Decaf Green Tea and also a glass of Kroger Brand Carb Master Chocolate Milk. Sunny, 88 degrees, and low humidity outside today.After Breakfast, as I do every Tuesday morning, I go around 4 of neighbors and take their trash bins from the street back up to their house for them. It’s not a lot but its a little something I can do for my neighbors that are always there when I need help with things. Being in a wheelchair its a lot off your mind when you can rely on neighbors to help you from time to time to get things done around the house. Got a couple of things done around the house and then got the cart out for a while and rode around the neighborhood. For dinner tonight its Breakfast! I prepared Buffalo Steak, Scrambled Eggs,Hash Browns, and Toast.

I was going to have this yesterday but I wanted to try the Swift Premium Boneless Ribs, which I loved. For this Breakfast/Dinner I’ll be using; Wild Idea Buffalo – 5 oz. Petite Top Sirloin Steak, 2 medium size Eggs, Simply Potatoes Shredded Hash Browns, Healthy Life Whole Grain Bread, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, and A-1 Sauce Thick and Hearty.

As I said I’ll be using the Wild Idea Buffalo Petite Top Sirloin Steak (5 oz.). To prepare the Steak; I rubbed the Steak with a 1/2 teaspoon of Extra Virgin Olive Oil. Then seasoned it with McCormick’s Grinder Sea Salt and Peppercorn Medley. I then preheated a Cast Iron Skillet on medium heat. When the skillet was heated I added my Buffalo Sirloin, cooked it 4 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So tender, juicy, and the best flavor of any Steak. I topped the Steak with a bit of A-1 Sauce Thick and Hearty.

As the Steak was cooking I heated up another skillet for my Hash Browns. Sprayed the skillet with Pam Cooking Spray and added a tablespoon of Olive Oil, I use Berolli Extra Light Olive Oil. With the skillet heated I fried up the Simply Potatoes Hash Browns. Seasoned them with Sea Salt and Ground Black Pepper. I love all the Simply Potatoes products! I topped these with a sprinkle of Sargeto Reduced Fat Shredded Sharp Cheddar Cheese.

As both the Steak and Hash Browns were finishing I then made the Scrambled Eggs. As soon as the Hash Browns were done I removed them from the skillet and used this skillet for my Eggs. I used 2 Medium Size Eggs; also Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Sea Salt, and Ground Black Pepper. To prepare them In a small bowl, whisked the Eggs and add just a splash of water. Added the Eggs, to the all ready heated skillet and cooked. Flipped the Eggs a couple of times and turned the heat off and finished the Eggs. When done I sprinkled the Scramble with some of the Sargento Cheese.

Finally just as the Scrambled Eggs were finishing I toasted 2 slices of Healthy Life Whole Grain Bread. I buttered the slices with I Can’t Believe It’s Not Butter. I had a glass of the carb Master Chocolate Milk to drink. I’ve been having the Carb Master Chocolate Drink for a while now. Tastes incredible and its only 80 calories, 7 net carbs, and 11 grams of protein. For Dessert later a bowl of Dole Sliced Peaches. Nothing like a good Breakfast, for Dinner!

For Breakfast this morning I fried up some slices Glier’s Turkey Goetta and toasted a couple of slices of Healthy Life Whole Grain Bread that I topped with some Smucker’s Sugar Free Blackberry Jam. Along with the morning cup of Bigelow Decaf Green Tea. After Breakfast i headed up to our local Kroger and picked up a few items for Mom and myself. Then on the way back I took the car through the car wash and back home. The heat and humidity has returned, blah! It does beat zero and snow though!! Did some cleaning outside. Back inside I had to repair a wheel on the vacuum again. The Hoover Cordless Vacuum is one of the best buys I’ve made, It makes sweeping so much easier without dealing with cord. Wanted to keep it simple and light for Dinner, tonight its a Grilled Ham and Cheese w/ Baked Crinkle Fries.

Restless night, last night. Just couldn’t seem to get comfortable. For Breakfast I scrambled some Egg Beater’s Egg Whites, topped with a slice of Sargento Ultra Thin Swiss Cheese, and served it on top of a Healthy Life Whole Grain English Muffin. All today was cleaning and organizing. Dad is coming home from rehab, he’s been gone for over 2 months. Besides cleaning I replaced a filter in his oxygen machine and replaced the tubing on it. Had everything done by late afternoon and kicked back for a while before preparing Dinner. Tonight I’m having a Buffalo Burger Pattie Melt w/ Baked Crinkle Fries.

 
When I want a Buffalo Burger I use my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Burgers. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, Buffalo Cheese Burger w Baked Fries 001seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it about 3 1/2 minutes per side, and done. After I flipped the Burger I added a slice of Kraft Sharp Cheddar Cheese on top. As my Burger was getting done I toasted 2 slices of Healthy Life Whole Grain Bread and put just a dab of I Can’t Believe It’s Not Butter on both slices. I served my Buffalo Burger on the Toasted Wheat Bread and topped it with French’s Spicy Brown Mustard. One delicious Sandwich! Anytime when I can use the Wild Idea Buffalo I use it, it always turns out delicious!

I also baked some Ore Ida Crinkle Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Grilled Cheese and Baked Fries

 

 
For Breakfast this morning I prepared some Buffalo Sausage, a Scrambled Egg, 2 slices of toasted Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. While rummaging through the freezer I came across a Breakfast Scrambled Egg Buufalo Sausage 003package of Wild Idea Buffalo Ground Breakfast Sausage. Formed it into patties and fried it. I loved them, excellent seasoning! Went on-line to buy some more and they no longer make it. They have it in Buffalo Sausage Links now. Which I’ll have to try, love Wild Idea Buffalo. Outside we have another hot and humid day going on. In the 90’s and high humidity. So I spent my day inside again because of my allergies, another day of high Pollen and mold. Finished up some housework and took it easy today. For Dinner tonight I prepared a Grilled Cheese and Baked Fries.

It was Ham and Cheese Slider and Soup yesterday and tonight it’s more comfort food, Grilled Cheese and Baked Fries. When it’s hot and humid outside I like to eat light, nothing too heavy. To make my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread.

I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. Oh, nothing like a good and toasty Grilled Cheese sometimes!

Then for a side I baked some Alexia Organic Yukon Select Fries. First time I’ve had these in a long time. Found the at Meijer and thought I would get a bag. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right! Plus they are only 120 calories and 15 net carbs. I love my Potatoes! Grilled Cheese and Baked Fries for a Sunday Dinner, not too bad! For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Rolled out to grab the morning papers and it wasn’t quite as cold as it has been, in the low 20’s. For breakfast I prepared a packet of my favorite gravy, Pioneer White Peppered Gravy. Along with 2 slices of toasted Healthy Life Whole Grain Bread and my morning cup of Bigelow Decaf Green Tea. Had a high in the 40’s today with plenty of sunshine. Finally starting to melt our snow on the ground that’s been sticking around. Straightened up the pantry and cleaned the fridge today. Ran a couple of errands for Mom and stopped by the bank before heading back home. For dinner tonight I prepared Chunky Baked Potato with Cheddar and Bacon Bits Soup w/ Grilled Ham and Swiss.

I used Boar’s Head Maple Glazed Honey Coat Ham, Hellmann’s Light Mayonnaise, Kraft Sharp Cheddar Cheese, and Aunt Millie’s Whole Grain Bread. I had purchased the Boar’s Head Maple Glazed Honey Coat Ham at Kroger. I love all the Boar’s Head Meats and Cheese. Always fresh and lower in calories and sodium. To make the sandwich I buttered one side of both slices of bread with I Can’t Believe It’s Not Butter and then on the unbuttered sides layered the Ham, a bit of Hellmann’s Light Mayonnaise, and then the Cheese. I then grilled the sandwich in a preheated pan that I had sprayed with Pam Cooking Spray. Grilling both sides until golden brown. I love a Grilled Cheese Sandwich, but the added Ham makes it even better! A Classic Comfort Food Sandwich.

I also used my favorite Potato Soup, Campbell’s Chunky Baked Potato with Cheddar and Bacon Bits. Love this Soup, it’s nice and thick with some big chunks of Potato with just the right amount of Cheddar and Bacon Bits. Plus it can’t be much easier to prepare, just open the can and heat it up in a small sauce pan. Love the taste and it’s only 190 calories and 19 net carbs. A good meal for a Cold Winter’s Day! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Cover; microwave on high for 3 1/2 minutes or until hot, stirring once during heating. Careful, keep covered 1 minute. Stir before serving. Promptly refrigerate any unused portion in separate container. Recommend use by date on can end. Store unopened can at room temperature.
