Today’s Menu: Buffalo Cheese Burger w/ Baked Fries

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 70 degrees with more rain and storms. Dryer weather on the way they say. I had to have Mom at her Doctor for a follow up on the high blood pressure check at 10:30 this morning. Then after Lunch I had to go to Kroger for Mom to pick up a prescription for her. Did a load of laundry a bit later. For Dinner tonight I prepared a 4oz. Buffalo Cheese Burger and Baked Fries.

 

As always when it’s a Buffalo Burger I’m using the Wild Idea Buffalo Burger Patties. I’m having the new 4 oz. Possible Burger. Same great taste and quality but these are 4 oz. Just love all the Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a skillet that I sprayed with Pam Cooking Spray and 1/2 tablespoon of Extra Light Olive Oil, seasoned my Burger with the Wild Idea Omnivore Salt. I then pan fried it about 3 minutes per side, and done. After I flipped the Burger I added a slice of Kraft Deli Style Sharp Cheddar Cheese. I’m serving it on a Healthy Life Wheat Hamburger Bun. This is the 2nd time having these, they are a smaller Burger but seem even juicer!

 

I also baked some Ore Ida Crinkle Cut Fries, served these with a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Pretzels along with a Coke Zero to drink.

Today’s Menu: Pulled Pork BBQ Sandwich w/ Baked Steak Fries

 

For Breakfast this morning I prepared a Jimmy Dean Simple Scramble Cup – Crumbled Turkey Sausage, Egg Whites, and Cheddar Cheese. I really love these. So easy to prepare and very good! Plus they are only 150 calories and 3 carbs per serving, which is excellent. Rain and thunderstorms most of the day, 64 degrees and windy also. Well with the weather going on outside I was indoors all day. Just not a lot to do though. Did a load of laundry and did some cleaning. For Dinner tonight its a Pork Boston Butt! Tonight its Slow Cooker BBQ Pulled Pork Sandwich w/ Baked Fries.

 

I purchased the Pork Boston Butt Roast on sale at Kroger yesterday. I placed a pick-up order for yesterday morning. I used the Crock Pot to prepare it. I’ll need the following; Pork Boston Butt Roast, 1/4 cup of Water, JB’s Fat Boy Premium All-Purpose Rub, and JB’s Fat Boy HaugWaush BBQ Sauce.

 

I applied the Rub all over Pork Shoulder and rubbed it in. Next I lined my Crock Pot with a Reynolds Crock Pot Plastic Bag Liner and sprayed that with Pam Cooking Spray w/ Olive Oil. Love these Crock Pot Liners, makes for an easy cleanup! The Roast was just over 16 pounds and I really didn’t have room for it in the Fridge so I just went ahead and heated the Crock Pot up on low heat. When heated, I added the Roast. Covered and cooked on High for 1 hour. Turned it to Low and cooked 7 to 9 hours longer, until fall apart tender.

 

Removed the Roast with the Bear Claws into a bowl. A word about these Bear Claws; I love these things to remove meat and roasts from whatever you’re cooking it in on to a plate. Word of caution though, these things are very sharp so be careful with them. I used the bear Claws to Shred the Pork. I normally re add to the Crock Pot with BBQ Sauce but Mom just wanted to add the BBQ Sauce to her Sandwich so we did it that way. I needed the Crock Pot anyway to cook the other 1/2 of the Boston Butt. It was too big to cook it all at once so I cooked the 1/2 and took it out later tonight. We are using JB’s Fat Boy HaugWaush BBQ Sauce for our BBQ Sauce. Served it on a Aunt Millie’s Reduced Calorie Whole Grain Bun, with extra BBQ Sauce on the side. Nothing but a winning Pork Butt Dish! So tender and seasoned just right with Rub and BBQ Sauce. A lot of leftovers for some delicious Sandwiches and Meals the rest of the week!

 

I also baked some Ore Ida Steak Fries, served with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Popcorn with a Diet Dr. Pepper to drink. Happy Mother’s Day to all you Moms out there!

 

 

 

 

 

 

 

Crock Pot BBQ Pork Shoulder or Boston Butt

INGREDIENTS
Pork Shoulder or Boston Butt, about 4 to 7 pounds, bone-in or boneless
1/4 cup of Water
JB’s Fat Boy Premium All-Purpose Rub
JB’s Fat Boy HaugWaush BBQ Sauce

PREPARATION

1 – The night before apply the Rub all over Pork Shoulder and seal in a plastic bag. Refrigerate until ready to use the next day.

2 – Place the meat in the slow cooker with water.

3 – Cover and cook on HIGH for 1 hour. Turn to LOW and cook 7 to 9 hours longer, until very tender. Remove roast and discard fat and juices. Chop or shred the pork; return to slow cooker. Mix a little barbecue sauce into the meat for flavor. Cover and cook on LOW for about 1 hour longer, until hot.

4 – Serve on sandwich buns with coleslaw (Optional) and extra barbecue sauce on the

Today’s Menu: Sharp Cheddar and Bacon Turkey Burger w/ Baked Fries

 

 

For Breakfast I had my morning cup of Bigelow Decaf Green Tea. High of 63 degrees and partly sunny out today. I took Mom over to Jungle Jim’s Market this morning. She went in and grabbed a couple of items and put them in my cart. Then she headed back out to the car. She’s having a lot of trouble walking for a long length of time. So I finished the shopping up, I love Jungle Jim’s! As I have said before it has everything from Quail Eggs to Ground Ostrich. Plus older U.S. Grocery Items you can no longer find anywhere else. Anyway back home, I took Mom’s car up and had it washed and then stopped and filled it with gas. Then cleaned up a little outside. For Dinner tonight its a Sharp Cheddar and Chicken Bacon Turkey Burger w/ Baked Fries.

 

So I started by getting a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need 2 slices but fried 5 slices. Always remember when frying Bacon use the Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

 

I had bought a package of the Jennie – O Lean 93% Lean Turkey Burger Patties at Meijer and had them in the freezer. I grabbed a couple of them last night and let it thaw in the fridge overnight. To prepare the Burger I grabbed a skillet, sprayed it with Pam and added 2 teaspoons of Extra Light Olive Oil, heated it on medium heat. When ready I added the Turkey Burger and cooked it for 12 minutes flipping it 3 times. With a minute of cooking time left I added a slice of Kraft Deli Deluxe Sharp Cheddar Cheese. And done!

 

Added the Bacon, Lettuce, some Hellman’s Spicy Chipotle Mayonnaise (my favorite Mayo) and served it on a Healthy Life Wheat Bun. Just love these Burgers, juicy and delicious, and with the Sharp Cheddar and Bacon it makes it that much better! I love this Mayo. The Hellman’s Spicy Chipotle Mayonnaise is nice and creamy with excellent flavor, with a little kick to it!

 

 

I also baked some Ore Ida Crinkle Cut Fries. I baked them for 19 minutes and done. Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

Today’s Menu: Applewood Smoke Bacon and Sharp Cheddar Cheese Ground Chicken Burger w/ Baked Fries

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. I had to have Mom at her Family Doctor’s at 8:30 this morning. Her blood pressure was a little high so they are starting her on new medication. They are also looking at some type of treatment to help with her arthritis. Back home took it easy, I had a headache all day. More than likely it’s my sinuses. Anyway for Dinner tonight I prepared a Applewood Smoke Bacon and Sharp Cheddar Cheese Ground Chicken Burger w/ Baked Fries.

 

I had purchased a package of Smart Ground Chicken from Meijer a while back and had it in the freezer. I set the package in the fridge overnight to thaw. To make the Burger I’ll need; the Ground Chicken (1 lb. package), Litehouse Poultry Herb Seasoning, McCormick’s Grinders of Sea Salt and Peppercorn Medley, and Meijer Italian Style Bread Crumbs. For toppings I’m using Kraft Reduced Fat Mayo w/Olive Oil, Heinz 57 Sauce, John Morrell Applewood Smoked Bacon, and Kraft Deli Style Sharp Cheddar Cheese. Served it on a Healthy Life Wheat Hamburger Bun.

 

First thing I did was fry the Bacon. I’m using John Morrell Applewood Smoked Bacon. I rarely use John Morrell but you have to use what you can find in stock right now at the stores. John Morrell Bacon is great tasting Bacon, just don’t use it. So I grabbed a large skillet and sprayed it with Pam cooking Spray. Then heated it on medium heat. When the skillet was heated I added the Bacon. Mom loves Bacon so I just fried the whole package. Fried up great and was delicious! I set it aside until I needed it.

 

Next I made my Chicken Burger patties. To prepare them, in a large bowl, combine Chicken, Ground Cumin, Paprika, Garlic Powder, Dried Oregano, Sea Salt and Peppercorn Medley, and Italian Style Bread Crumbs. The Seasonings amount are to taste and 2 tablespoons of the Italian Style Bread Crumbs. Make a little depression with your thumb in the center of each burger so they cook evenly. Divide the mixture into 4 patties.

 

In a Cast Iron Skillet over medium heat, heat oil. Add burger patties and cook, flipping once, until golden and a thermometer inserted into the center registers 165°, 8 to 10 minutes. Top with Cheddar and cook until just started melting, 2 minutes. Remove from heat and transfer patties to a plate. Serve on the Buns and top with Mayo, Heinz 57 Sauce, and the Bacon. The Ground Chicken Burger is juicy, moist, and flavorful! I’ll have to start having a lot more often!

 

 

To go with the Chicken Burger I prepared Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Heinz 57 Sauce. For Dessert later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

For Breakfast I Scrambled a couple of Eggs and toasted 2 slices of Aunt Millie’s 1 Carb Wheat Bread. I also had my morning cup of Bigelow Decaf Green Tea. 62 degrees and mostly cloudy today, with rain moving in by evening. They say by 10:00 or so tonight the temperature will drop to the mid 30’s. Then overnight a possible 1″ of wet snow by the morning! It’s an old but true saying, If you don’t like the weather in Ohio just wait a few hours it will change! With the roads and ground fairly warm little to none of the snow will stick, mainly slush. So anyway I got the cart out and got some yard work in. For Dinner tonight its a Sharp Cheddar and Chicken Bacon Turkey Burger w/ Baked Fries.

Today’s Menu: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries

 

 

For Breakfast I prepared I Scrambled a couple of Eggs along with a toasted Thomas Light English Muffin. Also had my morning cup of Bigelow Decaf Green Tea. 60 degrees and cloudy out today. Not too active today, down with my sinuses again! For Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

 

I’m using the Wild Idea Buffalo Pulled Chuck Roast. I had the package in the freezer so I sat it in the fridge to thaw overnight. The Pulled Chuck Roast is so tender and incredibly flavorful. It comes already cooked and seasoned, so just heat and serve! It’s Seasoned with, Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper. And that’s why it’s so flavorful! Delicious Pulled Buffalo that you just heat and serve.

 

I used a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. Added the Buffalo and heated it on medium low until heated through. I served it on a Healthy Life Wheat Hamburger Bun and topped it with some Jack Daniel’s Honey Smokehouse BBQ Sauce. What a sandwich, just incredible flavor! The Wild Idea Buffalo Pulled Buffalo Chuck Roast is so flavorful and tender. It just has such a deep and rich flavor to it. One of my favorites!

 

For my Fries I’m using Ore Ida Crinkle Cut Fries. Seasoned them with Salt and Pepper. Baked them at 425 degrees for 16 minutes. They are only 90 calories and 10 net carbs. Served them with a side of Hunt’s Ketchup for dipping. For Dessert a Jello Sugar Free Dark Cherry Jello.

To start the day off I toasted Thomas Light English Muffin that I topped with some Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 79 degrees and mostly sunny out today. Got the cart, rake, leaf blower and grass seed out of the shed. Raked the yard and then took the leaf blower and cleaned off the deck and driveway areas. Then took the blower and got the flower beds. Then finished sowing some grass seed in few spots around the yard. Love getting out in this weather! For Dinner tonight Grilled Buffalo Cheese and Bacon Burger and Baked Fries.

 

For the Buffalo Burger I used my favorite, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Their meaty, juicy and just flat out delicious! I had the Burger in the freezer so I laid in the fridge overnight to thaw. Uncovered the grill and cleaned it up. Used a Paper Towel and rubbed it in some Extra Light Olive Oil. Then rubbed the Grill Grate down with it. Then fired up the Grill! Seasoned my Burger with McCormick Grinder Sea Salt and Peppercorn Medley. With the Grill heated I started grilling. I grilled the Buffalo Burger and Brat and Hot Dog for Mom. I grilled the Burger about 3 minutes and flipped it over. After 2 minutes I added a slice of Boar’s Head Yellow Vermont Cheddar and cooked it another 1 minute. Added the al fresco Chicken Bacon that I had prepared earlier and done! Served the Burger on a Healthy Life Wheat Hamburger Bun. The Burger was juicy and delicious, as all the Wild Idea Products are. Just love a good Burger, Buffalo Burger! Plus that added flavor by grilling it.

 

To go with my Burger I prepared some Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Sprite Zero to drink.

Today’s Menu: Sharp Cheddar and Bacon Turkey Burger w/ Baked Fries

 

To start my day off I had a cup of Bigelow Decaf Green Tea. 72 and sunny out today, beautiful! I had bought some Grass Seed a while back. Got the cart out of the shed and raked the front and side yards. Then got the Grass Seed out and spread the seeds around the yard. Kept the cart out and enjoyed this beautiful Sunny Day! So for Dinner tonight its a Sharp Cheddar and Chicken Bacon Turkey Burger w/ Baked Fries.

 

So I started by getting a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need 2 slices but fried 5 slices. Always remember when frying Bacon use the Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

 

I had bought a package of the Jennie – O Lean 93% Lean Turkey Burger Patties at Meijer and had them in the freezer. I grabbed a couple of them last night and let it thaw in the fridge overnight. To prepare the Burger I grabbed a skillet, sprayed it with Pam and added 2 teaspoons of Extra Light Olive Oil, heated it on medium heat. When ready I added the Turkey Burger and cooked it for 12 minutes flipping it 3 times. With a minute of cooking time left I added a slice of Kraft Deli Deluxe Sharp Cheddar Cheese. And done!

 

Added the Bacon, Lettuce, some Hellman’s Spicy Chipotle Mayonnaise and served it on a Healthy Life Wheat Bun. Just love these Burgers, juicy and delicious, and with the Sharp Cheddar and Bacon it makes it that much better! I love this Mayo, you have to try it! I tried the Hellman’s Spicy Chipotle Mayonnaise on the last Turkey Burger and loved it! It’s nice and Creamy with excellent flavor and a nice little kick to it!

 

I also baked some Ore Ida Crinkle Cut Fries. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

Spray skillet with nonstick cooking spray or add 1 to 2 teaspoons of oil. Preheat skillet over medium heat. Place burger patties in hot skillet. Cook approximately 15 to 17 minutes turning occasionally (2-3 times). Always cook to well-done, 165°F. as measured by a meat thermometer.

Today’s Menu: Asiago Cheese Ground Pork Burger w/ Baked Fries

 

 

To start my morning I Scrambled a couple of Eggs, toasted a Thomas Light English Muffin, and made a cup of Bigelow Decaf Green Tea. Mostly cloudy and 66 degrees out today. After my Tea I started a load of laundry and then went to McDonald’s and picked up Breakfast for Mom and stopped by Dunkin Donuts and bought her a couple of Glazed Donuts. Back home home finished up the laundry. I took the brush out of the sweeper and cleaned it and then dusted and ran the vacuum. For Dinner tonight I prepared a Asiago Cheese Ground Pork Burger w/ Baked Fries.

 

I bought a 1 lb. package of Ground Pork at Meijer the other day. With a 1 lb. package of Ground Pork you can easily get 4-5 Burgers. To make them I got a large bowl and added the Pork. I then added all the Spices; Garlic Powder, Onion Powder, Cumin, Mustard Powder, Dried Cilantro Leaves. I mixed the Spices with the Ground Pork until well mixed. Don’t overwork the Pork, you don’t want to break the Pork down. Next just form the Pork Mixture into Burgers. To cook the Burgers I’m using a Cast Iron Skillet. I first sprayed it with Pam Cooking Spray and added 1 tablespoon of Extra Virgin Olive Oil, heated the Skillet on medium heat. When the Skillet was heated up I added my Burgers.

 

After 3 minutes flip the burgers. Continued cooking for 6-8 minutes more. Flipped one more time and cook for another 2 minutes or until cooked through. If you’re adding on Cheese go ahead and do so with about a minute before removing from them pan. I’m using Boar’s Head Asiago Cheese. When cooking Pork Burgers, you want to make sure that they are cooked all the way through. Which means taking them to 160 degrees internally. I served the Burgers on Healthy Life Whole Grain Hamburger Buns. The Burgers were topped with the Boar’s Head Asiago Cheese, and Hellman’s Organic Mayonnaise – Spicy Chipotle. One delicious Burger!

 

To go with the Burger I I also baked some Ore Ida Crinkle Cut Fries, served with a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Snapple Diet Raspberry/Tea .

Today’s Menu: Buffalo Cheese Burger w/ Baked Fries

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 46 degrees and sunny out today. ! Went to Wendy’s and picked up Breakfast for Mom. After Lunch I went to a few of the Used Car lots here in West Chester. I’m looking for a new/used car. Not sure on which one I’m going with. I would like a SUV or a Jeep model, something I can get my wheelchair in and out easier than a car. Just taking my time. For Dinner tonight I prepared a 4oz. Buffalo Cheese Burger and Baked Fries.

 

As always when it’s a Buffalo Burger I’m using the Wild Idea Buffalo Burger Patties. I’m having the new 4 oz. Possible Burger. Same great taste and quality but these are 4 oz. Just love all the Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a skillet that I sprayed with Pam Cooking Spray and 1/2 tablespoon of Extra Light Olive Oil, seasoned my Burger with the Wild Idea Omnivore Salt. I then pan fried it about 3 minutes per side, and done. After I flipped the Burger I added a slice of Kraft Deli Style Sharp Cheddar Cheese. I’m serving it on a Healthy Life Wheat Hamburger Bun. This is the 2nd time having these, they are a smaller Burger but seem even juicer!

 

I also baked some Ore Ida Crinkle Cut Fries, served these with a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Pretzels along with a Sprite Free to drink.
