Happy 4th of July to everyone out there, have a fun and safe one! Sunny and a bit humid here, chance of a passing Banquet Homestyle Bakes Pizza Pasta 004shower but not bad. Had to get rid of a couple of hornet nests I found outside. It seems our neighborhood is having problems with those pesky brown ants again. All of our neighbors are all fighting them, including us. Sprayed some vinegar and sprinkled ground black pepper around the kitchen, ants hate both. Did a couple of loads of laundry for Mom and just cleaned up around the house. I was going to grill out burgers and brats for everyone but Mom and Dad met with some friends for dinner. So tonight I prepared Banquet Homestyle Bakes Pizza Pasta w/ Sliced Wheat Bread.

 

 
This is one of my favorite boxed foods,Banquet Homestyle Bakes Pizza Pasta. Nothing like a quick, easy and deliciousbanquet-pizza-pasta-002 comfort food like the Banquet Homestyle Bakes Pizza Pasta.But here’s another product I love and it’s getting harder and harder to find, I can only find it online now! Anyway it’s got two of my favorites in it pasta and pizza! The box contains 1 can of Pizza Sauce w/ Pepperoni and Sausage and 1 Pouch of Rotini Pasta. I also added a few slices of Turkey Pepperoni and sliced Portabello Mushrooms to the mix. For the preparation you can bake it or prepare it on the stove top, which is how I prepared it. Add 1 cup of water, stir and mix, and simmer and you have your dinner! This came out fantastic! Really had a good Pizza flavor to it. The Sauce with the Mushrooms, Sausage, and Pepperoni provides the great flavoring. Easily prepared and makes a hearty and delicious meal.

 
Along with the Pizza Pasta I had a slice of Klosterman Wheat Bread, topped with I Can’t Believe It’s Not Butter. Then for dessert later Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Stove Top:

1. Stir Together Can of Sauce and 1 Cup Hot Water In Medium Skillet.
2. Stir In Pasta Until Well Coated. Heat to Boiling.
3. Reduce Heat. Cover and Simmer About 15 Minutes, Or Until Pasta Is Tender, Stirring Occasionally.

Brrr! It’s cold outside, about 19 degrees with a wind chill around 10 degrees. But I can deal with cold as long as we don’t get a lot of snow and ice. Had a light Breakfast and worked out to start the day. Then spent most of the day cleaning the computer. Pulled everything out, cleaned and dusted. Then ran some scans and security and deleted some old programs that were taking up space. I got lazy, had a new recipe to try and had the ingredients ready and I got lazy! Tonight the Kitchen is Closed and Hello Domino’s!

 

 

 

Domino

Well I ordered Domino’s Pizza tonight! A Large Pizza with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, Black Olives, Green Olives, on a Hand Tossed Pizza, I got lazy! Then for Dad he wanted a Steak Hoagie, so I ordered him a Mushroom Delight Steak Hoagie. Both came on time and piping hot and delicious! Sure is nice not to have to cook every night. But I’ll be cooking tomorrow to start the New Year off right! For dessert later a Healthy Choice Dark Fudge Frozen Greek Yogurt. I’ve got my cell phone charged, the remote ready, and an evening in my recliner, quiet New Year’s Eve Here! I wish you all a healthy and prosperous 2015, Happy New Year Everyone!

Beautiful second day of Winter here today! Sunny and in the mid 40’s, not bad at all. After a light Breakfast and working out, I went to the Bank, Kroger, and got some gas. The gas station right around the corner has dropped the price of Unleaded Gas to $1.93 a gallon, lowest in quite some time. For dinner tonight an easy to prepare but delicious dinner tonight, Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.

 

 

 

 

 

Nothing easier and more delicious than Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal! It’s the best Frozen Chicken that I’ve found by far. Very easy to prepare; Preheat oven to 350° F. Arrange frozen chicken breast fritters in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes until no pink remains or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter. Chicken is served! As I said it’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of JB’s Fat Boy Sticky Stuff BBQ Sauce.

For one side I heated up a can of Del Monte Cut green Beans. Then I also prepared some Then I heated up some Bob Evans Mashed Potatoes, just microwave and done. I also had a slice of Klosterman Wheat Bread that I buttered with I Can’t Believe It’s Not Butter. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Another beautiful day out there again! Dad will be released from the rehab center and home Thursday! He’s getting along better, walking without the walker even. I had to go to the bank and then stopped and got the car washed, then back home. For dinner tonight a Cincinnati and a personal favorite, Skyline! I prepared a Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers.

I used my favorite as I said, the Skyline 3 Way – Chili, Spaghetti. They sell it packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those still watching calories and carbs. It comes with Spaghetti topped with Skyline Chili. I added a few dashes of Frank’s Red Hot Sauce and Cheese to make it a 3 Way and used Sargento Reduced Fat Shredded Sharp Cheese. The Chili Spaghetti is 270 calories and 20 net carbs. I also had a side of Skyline Oyster Crackers. And if you’re having Oyster Crackers you must have some Frank’s Red Hot Sauce! Just add a few drops on top of the Crackers, local way to have your Oyster Crackers.  For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

It makes for such a long day when you spend it at the hospital. Visited my Dad most of the afternoon at the hospital. He’s doing a lot better today. He got a full nights sleep and ate a good breakfast and lunch. His speech is better and had good coloring to his face, yesterday the speech was slurred and he was pale white. He’s a trooper! Mom had dinner with Dad at the hospital. So for my dinner I wanted a hot meal but I wanted one that was easy to prepare. So for dinner tonight its Breaded Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.

Rain and more rain today and in the future forecast! A little cooler out also, high in the 60’s. Went for my Cancer Checkup and every thing is looking normal! Really blessed on having one of the finest Oncology Doctors around, but I was informed today that he was going to retire in June. Very sad, I’m losing a Doctor that I trust more than any other and a friend at the same time. Wanted an easy meal to prepare for Dinner tonight So tonight its Breaded Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.

Today’s Menu: Paprika Pork Chops w/ Fresh Roasted Asparagus and Roasted Red Potatoes

What a beautiful Spring Day we had today! Sunny all day and around 70 degrees. Went to Kroger early this morning to pick up a few ingredients for tonight’s dinner and home the rest of the day. Worked on the shed again for a while and then out on the 4 wheel mobility cart. Rode down to the neighborhood lake and stopped to see a few people in the neighborhood. Really enjoyable day out! For dinner tonight a new Pork Chop Recipe. I prepared Paprika Pork Chops w/ Fresh Roasted Asparagus and Herbed Red Potatoes.

 

 

 
Found this recipe in the latest issue of Cuisine At Home, Paprika Pork Chops. I needed the following Ingredients; 1/2 tsp. Smoked or Sweet Paprika, 1/4 tsp. Black Pepper, 1/8 tsp. Sea Salt, 4 Bone-In Pork Chops (trimmed), 2 tsp. Extra Virgin Olive Oil, and 1/4 cup Dry Marsala or Sherry.

 

 

 
To prepare it start by combining all the seasonings and sprinkle over both sides of Chops. Then heat the Oil in a large nonstick skillet over medium-high heat. Add Chops and saute until browned on one side, about 3 minutes. Flip Chops and saute until browned on the other side, about 3 minutes more. This cooking time will vary depending on how thick your Chops are. Add Wine to skillet; simmer until liquid is almost evaporated, about 2 minutes or so. Your Chops are done when an instant-read thermometer inserted near(but not touching) the bone registers 145 degrees. Remove the Chops from the heat, tent with foil, and let rest 3 minutes before serving. Easy to prepare and comes out moist with incredible taste! Another Keeper Recipe. The Marsala Wine and Paprika worked great together. Just a note I used Hungarian Sweet Paprika.

 

 

 

Then for sides it was 2 of my favorites, Fresh Roasted Asparagus and Roasted Red Potatoes. For the Red Potatoes, preheat oven to 400 degrees, I needed 1 tablespoon Extra Virgin Olive Oil, 1 tablespoon minced fresh or Dried Rosemary, 1 tablespoon Dried Thyme, 1/2 teaspoon Sea Salt, and 1/4 teaspoon Ground Black Pepper. I start by heating up a Cast Iron Skillet on medium heat and as that’s heating up quartered the Red Potatoes. Combined all ingredients in a large bowl and added the Potatoes. Toss to coat Potatoes and add them to to the Skillet. Fry them about 4-5 minutes and transfer the Skillet to the preheated oven. That’s why I love using Cast Iron Skillets, from the stove to the oven. I skillet and easy clean up! Bake them for 20 minutes or until their fork tender.

 

 

 
With your oven already at 400 degrees you can make the Roasted Asparagus also. To prepare the Asparagus I just needed Extra Virgin Olive Oil, Cloves Garlic, minced, Sea Salt, Freshly grated Black Pepper, Lemon Juice, and Shredded Parmesan Cheese. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. (Alternatively you can put the asparagus and oil in a plastic bag, and rub the bag so that the oil gets evenly distributed.) Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly distributed. Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until lightly browned and tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving. Chops, Potatoes, and Asparagus, What is not to like! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

(Makes 4 Servings)
Ingredients:

 

1/2 tsp. Smoked or Sweet Paprika
1/4 tsp. Black Pepper
1/8 tsp. Sea Salt
4 Bone-In Pork Chops, trimmed
2 tsp. Extra Virgin Olive Oil
1/4 cup Dry Marsala or Sherry

 
Directions:

Today’s Menu: Roasted Mesquite Marinated Pork Sirloin w/ Mashed Potatoes and Cut Green Beans

More heavy rain overnight but a sunny afternoon, more rain coming this evening though. Finally drying out tomorrow and 70 degrees by Thursday! Took Dad for a follow-up check-up at his doctors. He’s still having more and more problems with breathing, a lot congestion. For dinner tonight I prepared a Roasted Mesquite Marinated Pork Sirloin w/ Mashed Potatoes and Cut Green Beans.

 

 

 

 

I used a Smithfield Mesquite Marinated Pork Sirloin. First time I believe I used that. It wasn’t a very big one, only 1.39 lbs. But more than enough for me, Mom and Dad went out to eat. The instructions said to roast it 20 minutes for every lb. at 425 degrees. Preheated the oven and put the Sirloin in a small baking pan that i sprayed with Pam Cooking Spray. I also added just a bit of McCormick Grinder Sea salt and Black Peppercorn. Then I Brushed it with JB’s Fat Boy Haug Waush BBQ Sauce. Put in the oven and let it roast! Checked the temperature after about 24 minutes, wasn’t quite done so roasted it an additional 3 minutes. Rechecked it and it was 148 degrees, removed it from the oven and let it rest and finish cooking. It came out beautiful and delicious, very tender. The Mesquite Marinade with the JB’s BBQ Glaze worked perfect.

I also prepared some Bob Evans Mashed Potatoes, microwave a total of 6 minutes and their done and just as good as anyone’s homemade Mashed Potatoes. Then I also heated up a small can of Del Monte Cut Green Beans and had a slice of Klosterman Wheat Bread. To drink an ice-cold Diet Dr. Pepper that I had let set in the freezer for about 15 minutes. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.
