I’ve got another Appetizer Recipe to pass along, Firecracker Deviled Eggs. Firecracker Deviled Eggs
Gage the fiery heat of these Southwestern-style deviled eggs to your personal preference by choosing to use mild, medium or hot salsa.

Recipe Ingredients:
6 large hard-boiled eggs*
1/3 cup mild, medium or hot salsa
3 tablespoons low-fat sour cream
3 tablespoons green onions, minced
1 tablespoon black olives, chopped
1 teaspoon lemon juice

Optional Garnishes: Chopped or sliced green onions, red pepper strips, sliced ripe olives, and/or chopped fresh cilantro or parsley

Cooking Directions:
1 – Cut eggs in half lengthwise. Remove yolks and set whites aside.
2 – In small bowl, mash yolks with fork. Stir in remaining ingredients until well blended. Refill whites, using 1 heaping tablespoon yolk mixture for each egg half.
3 – Chill to blend flavors.
4 – Garnish as desired.
Makes 12 deviled egg halves.

*Place eggs in single layer in sauce pan. Add water to cover eggs at least 1-inch. Cover and bring to boiling. Turn off heat. Let eggs stand, covered, 15 minutes for large eggs. Immediately drain and run cold water over eggs until completely cooled.

What to add to boiled eggs to make them peel easier………..

 

Add a little baking soda (about 1/2 teaspoon or a little less) to the water while boiling. This will make it easier to peel the eggs later on. Once the eggs are done cooking, give them a little crack and plunge them in an ice water bath. Only do this if you’re going to peel them right away. Enjoy those Eggs!

When making Deviled Eggs…………

Don’t use Fresh Eggs! Use older eggs that are closer to their expiration date, as you’ll find them easier to peel. Also Avoid Overcooking Eggs. Also overcooked yolks turn a grayish color and emit a slight sulfurous odor, making them unappetizing and unpleasant to smell and look at, so don’t overcook.

Use older eggs for boiling…………………..

If you want to cook and peel hard-boiled eggs perfectly every time, don’t start with a dozen eggs you just bought at the grocery store. Older eggs will peel much more easily. Add the eggs to a pot of cold water, bring them to a boil, take them off the heat and stew for 13 minutes. Then you can make the most delicious deviled eggs with ease.

Perfect hard boiled eggs, every time…………………

If your hard-boiled eggs always end up with blue-ringed yolks, it’s because they’re overcooked. For a perfectly-boiled egg, add the eggs to cold water, bring it to a boil, and remove the pan from the heat, keeping it covered. Set a timer for 10-15 minutes, and voilà – no more blue ring.

Extra duty for the egg slicer………..

Use an egg slicer to quickly chop strawberries for fruit salads and desserts. Or cut avocados for sandwiches and as always use it to slice those hard boiled eggs.
