Today’s Menu: Seasoned Haddock w/ Roasted Asparagus and Brown and Wild Rice

 

 

For Breakfast this morning I made a Breakfast Sandwich. To prepare it I toasted a Thomas Light English Muffin, I lightly fried 4 slices of Boar’s Head Sweet Slice Ham, and added a 1/2 slice of Boar’s Head Swiss Cheese. Breakfast is served! Also had a cup of Bigelow Decaf Green Tea. Partly cloudy and 55 degrees outside today. It looks as though we have some snow flurries moving in by tomorrow evening, tis the Season! Not a lot going on today. Got the cart out along with my trusty rake and raked the back yard. Everything done and an afternoon of NFL Football. For Dinner tonight I prepared a Seasoned Haddock w/ Roasted Asparagus and Brown and Wild Rice.

 

 

Had not had Haddock in a while and it sounded good! I had purchased the Haddock from Kroger yesterday. I had already rinsed the fillets off in cold water and cut the fillet into 4 pieces. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until the pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love this Haddock it cooks up so nice and easy and I love the flavor and how meaty it is.

 

 

I first turned the stove on at 400 degrees for my Roasted Asparagus. To prepare the Asparagus I just needed Extra Light Olive Oil, McCormick Garlic Salt, McCormick Grinders of Sea Salt and Peppercorn Medley. Rinse cleaned the Asparagus and cut the tough ends off of the Asparagus before Seasoning. Laid the Asparagus Spears out in a single layer on a foil lined baking sheet. First put some Extra Light Olive Oil across the Asparagus and then my Seasonings. Placed the pan in oven and cook for approximately 8 minutes. Topped it with a sprinkle of Kraft Reduced Fat Parmesan Cheese before serving.

 

 

 

For my Rice I’m using Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice. It comes in a micowavable package. I guess one my favorites from the Uncle Ben’s Ready Rice, all though I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. Haddock, Asparagus, and Rice make a delicious trio! I also had a slice of Aunt Millie’s Light Whole Grain Bread that I lightly Buttered with I Can’t Believe It’s Not Butter. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

For Breakfast this morning I had a Jimmy Dean Simple Scramble Cup – Crumbled Turkey Sausage, Egg Whites, and Shredded Cheddar Cheese. After Breakfast I went with Mom to Jungle Jim’s International Market in near by Fairfield, Ohio. Love shopping there. The biggest grocery store around! Picked some Boar’s Head Cold Cuts, Snapple, Half Runner Green Beans, 2 small Lobster Tails, and a Haddock Fillet. Too hot and humid to do a lot outside today, stayed in with the A.C.! For Dinner tonight I prepared Seasoned Haddock w/ Mac and Cheese.

Shook until the pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love this Haddock it cooks up so nice and easy and I love the flavor and how meaty it is.

 

 

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Seasoned Haddock w/ Mac and Cheese

 

For Breakfast this morning I Scrambled a couple of eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Partly sunny and 74 degrees, rain and thunderstorms moving in toward evening. Had the other half of the outside deck painted, looks great. Went to Meijer Lawn and Garden and picked up another bag of the dark Mulch. Ran a little short of Mulch for around the tree out front. Got the front and side yards looking good! Next is the back yard flower bed and replacing some skirting around the back of the shed. For Dinner tonight I prepared Seasoned Haddock w/ Mac and Cheese.

I had already rinsed the fillets off in cold water and cut the fillets in half before I froze them. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until the pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. For Breakfast this morning I Scrambled a couple of Eggs, topped them with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a few shakes of Frank’s Hot Sauce. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread and a cup of Bigelow Decaf Green Tea. Mostly cloudy and 63 degrees out, rain late in the day. After Breakfast I headed to Meijer, I needed a few items I needed to make tomorrow night’s Dinner. Back home did some work outside. Cleaned off the deck and driveway areas. Then got the cart out and raked some leaves in back and side yards. Leaves are already falling! For Dinner tonight I prepared Seasoned Haddock w/ Mac and Cheese.

 


I had purchased a Haddock fillet from Kroger the day before. I rinsed the fillet off in cold water and patted dry with a paper towel and had them in a plastic bag in the fridge. To prepare it I sliced it in half. So to prepare it I seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until both pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Today’s Menu: Seasoned Haddock w/ Fresh Green Beans and Baked Fingerling Potato Wedges

 

 

For Breakfast on this rainy Thursday Morning I prepared a Scrambled Egg, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. After Breakfast I drove Mom back to Jungle Jim’s. She wanted another bag of the Green Beans and picked up some Beets. Back home it was back to canning the rest of the Green Beans. Then Mom canned the Beets she had bought. Another busy day of canning. For Dinner Tonight I prepared Seasoned Haddock w/ Fresh Green Beans and Baked Fingerling Potato Wedges.

 

 

 


While at Jungle Jim’s International Market I just had to go to their Seafood Department! I picked some Haddock, they just got the Haddock in and I to wait a bit until they had it ready. Then I also picked up a an Orange Roughy Fillet, New Zealand caught. I love their Seafood Department, in fact I love the whole store! I’m having the Haddock tonight!

For a side I cooked up some of the fresh Green Beans we bought at Jungle Jim’s. Had to string them and break them up. Then boiled them with a piece of Fatback Pork in the kettle. Love these fresh Green Beans! And we 14 quarts of canned Beans now!

 

 

 

 

 

Then for another side I prepared some Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area. Still only 1 store around here locally that sells them, so thank you Jungle Jim’s! I also baked a loaf of RiverRoad Bake House The family’s favorite Baked Bread. And Meijer is the only store that sells this around here. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Seasoned Haddock w/ Cheesy Cheddar Rotini Pasta

 

To start this morning off I toasted a couple of slices of Healthy Life Whole Grain Bread, Scrambled a couple of Eggs, fried 2 Jennie – O Turkey Breakfast Sausage Links, and made the morning cup of Bigelow Decaf Green Tea. After Breakfast I went to Walgreen’s and picked up a Prescription and then to McDonald’s and picked up Breakfast for Mom. It really hasn’t rained a lot of late and the yards are starting to turn brown. Outside today it’s 87 degrees and sunny. After Lunch got the cart out and did some yard work. Later took a spin around the neighborhood. So for Dinner tonight I prepared a Seasoned Haddock w/ Cheesy Cheddar Rotini Pasta.

To go with my Seasoned Haddock I prepared a new dish, Knorr Pasta Sides Cheesy Cheddar Rotini Pasta. I had heard of the Knorr Products but had never tried them until now. To prepare it; In medium saucepan, bring 1-1/2 cups water, 1/2 cup 2% milk and 1 Tbsp. of I Can’t Believe It’s Not Butter. Stir in contents of package and return to a boil. Reduce heat and continue boiling gently for 10 minutes or until pasta is tender, stirring occasionally. Let stand at least 2 minutes. Stir and serve. Easy to prepare and delicious! Excellent Pasta with good Cheese flavor. I also baked a loaf of the RiverRoad Bake House Garlic Oval Loaf Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Seasoned Haddock w/ Oven Roasted Fingerling Potatoes and Mini Ears of Sweet Corn

 

 

For Breakfast this morning I had another of the al fresco Apple Maple Chicken Sausage Breakfast Patties. I love this Sausage, so good! I found more of these at Meijer the other day and picked a few of the packages up. I love making these and making them into a Breakfast Sandwich, the patties are the perfect size for English Muffins. I fried the patty for 8 minutes and as that was cooking I toasted a Healthy Life Whole Grain English Muffin. Along with my Breakfast Sandwich I had that morning cup of Bigelow Decaf Green Tea. Passing showers this morning and then mostly sunny and 75 degrees. I got my cart out of the shed and cleaned it today, a much needed cleaning!Then repotted a couple of plants for Mom. For Dinner tonight its Seasoned Haddock w/ Oven Roasted Fingerling Potatoes and Mini Ears of Sweet Corn.

 
I had purchased 2 Haddock fillets from Kroger a while back. I had rinsed both fillets and cut into smaller pieces. I ended up with 3 bags, I had one the day I purchased them and having the last bag tonight. So I grabbed one of the plastic bag and laid it in the fridge overnight to thaw. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

 
Then for another side I prepared some Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area. Still only 1 store around here locally that sells them, so thank you Jungle Jim’s!

 

 

 

I also boiled some Green Giant Mini Ears of Sweet Corn. If you’ve never tried the Green Giant Corn you need to! It’s frozen Mini Ears of sweet Corn and you just boil for 10 minutes and you have some of the Sweetest Corn you can find! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

 

 

 

 

Oven-Roasted Fingerling Potato Fries

Ingredients:

Fingerling Potatoes
Extra Virgin Olive Oil
Garlic Powder
Sea Salt
Pepper
Chili Powder
Kraft Reduced Fat Parmesan Grated Cheese
Directions:

1.) Thoroughly clean and scrub the potatoes.

2.) Cut the potatoes in half and add to a large mixing bowl.

3.) Add the olive oil. I used about 1 tablespoon, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.

4.) Put on a baking sheet and sprinkle with the Parmesan Grated Cheese

5.) Roast in the oven for 25-35 minutes at 450 degrees. The potatoes should be tender in the middle when done.

Today’s Menu: Seasoned Haddock w/ Creamy Cheddar Pasta

 

 

To start this snowy morning off I toasted a couple of slices of Healthy Life Whole Grain Bread, Scrambled a couple of Eggs, fried 2 Jennie – O Turkey Breakfast Sausage Links, and made the daily morning cup of Bigelow Decaf Green Tea. It started snowing late yesterday but the ground was to warm and it didn’t stick, at first. Eventually though it started sticking. We’ve had snow flurries on and off most of the day. It was 16 degrees this morning and we had a high of only 31. What happened to our early Spring! The cold looks as though it’s killed all the early flowers that had come out. The cold is here for a few days they say. Sure be glad for warmer weather! Dad is doing better. They thought he had shingles but it turned out to be a rash from an anti biotic they had given him. Not sure when he’s coming home. So for Dinner tonight I prepared a Seasoned Haddock w/ Creamy Cheddar Pasta.

To go with my Seasoned Haddock I prepared a new dish, Bear Creek Creamy Cheddar Pasta Mix. I had tried the Bear Creek Potato Soup Mix and Creamy Chicken Pasta, which both were excellent! To prepare it; Grabbed a 2 quart sauce pan, added 4 cups of water. Heated to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought the mixture back to a rolling boil. Reduced the heat to a medium boil and cooked for 15 minutes, stirring occasionally.

 

 

 

Removed from the heat and let it sit for 8 minutes. The Sauce thickened up beautifully as it cooled. Another excellent product from Bear Creek. Really enjoy these all these Products! I seasoned the Pasta with just a little sea Salt and Ground Black Pepper. The Pasta and Haddock make a perfect pairing! For Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.

Today’s Menu: Seasoned Haddock w/ Creamy Parmesan Risotto and Sliced Carrots

 

 

 

For Breakfast this morning I prepared a packet of Pioneer Peppered White Gravy, toasted 2 slices of Healthy Life seasoned-haddock-w-creamy-parmesan-risotto-and-sliced-carrots-006Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. After a night of heavy rain and thunder storms, the morning was quiet but a lot cooler. We had a record high of 76 degrees yesterday and a high of 41 degrees today! There goes my Sinuses again!Just as soon as they get adjusted to warm weather, here comes the cool weather back. Cloudy and breezy out. After Lunch I went up to see Dad for a while at the rehab center. Back home took a quick nap and watched some College Basketball. For Dinner tonight its a Seasoned Haddock w/ Creamy Parmesan Risotto and Sliced Carrots.

So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is. These make a great Fish Sandwich also!

 

 

Baked Salmon W Creamy Parmesan Risotto and Whole Baby Carrots 006

 

 

For one side dish I made some Creamy Parmesan Risotto. As always I used Lundberg Creamy Parmesan Risotto. Quick, easy, and delicious Risotto dish. Ready in about 25 – 30 minutes.

 

 

 

Chicken ‘n’ Noodles w Sliced Carrots and Whole Grain Bread 003

Then I also heated up a can of Del Monte Sliced carrots. These are so much easier to prepare than boiling fresh Carrots, and they taste just as fresh and good. I also baked a 1/2 loaf of LaBrea Whole Grain Loaf Bread. For dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.

 

 

 

 
Lundberg Creamy Parmesan Risotto

Enjoy the delectable flavor of rich, aged Parmesan cheese in this elegant Italian-style risotto. Cooking Instructions
