Today’s Menu: Seasoned Gulf Coast Grouper w/ Baked Tater Tots

 

 

 

It’s a special day today, My Dad would have been 98 today! We miss you and love you Dad.
To start this Friday morning off I had a Jimmy Dean Simple Scramble – Turkey Sausage, Egg Whites, Shredded Cheddar Cheese. Love these, so easy to prepare and make a good Breakfast. Plus they are only 150 calories and 3 carbs per cup! Sunny and 85 degrees out today, with a high pollen and mold count! So I wasn’t outside a whole lot today with my allergies as they are. Got the leaf blower and cleaned off the deck and driveway areas. Not a whole lot going on today. For Dinner tonight its a Seasoned Gulf Coast Grouper w/ Baked Tater Tots.

 

 

 

 

I was out of the Gulf Coast Grouper until my friends got back from Florida a couple of days ago. They dropped off a couple of bags of Grouper they had caught a few days ago from the Gulf Coast. I had the fillets in the freezer, laid a fillet in the fridge overnight to thaw. I rinsed the Grouper in cold water and dried it on a paper towel. To prepare the fillet I seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillet was well coated. Shook off the excess off. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful.

 

 

 

As my Grouper was cooking I preheated the oven on 425° to bake some Ore Ida Tater Tots. Just bake at 425 degrees for about 15 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Mango/Tea to drink.

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Rough night, dealing with Phantom Pains all night. They finally let up about 10:00 this morning but it pretty much ruined my day today. Cleaned the house and then took it easy and caught up on some sleep. For Dinner tonight I prepared a Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese.

 

 

 

 

 

I love my Fish and Seafood, especially this Florida Gulf Coast Grouper. I had one last fillet of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Lemon Pepper Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun.

 

 

 

 

To go with Fish Sandwich I prepared a Stouffer’s Classic Mac and Cheese Mac Cup. Just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Mano Tea Snapple to drink.

Today’s Menu: Seasoned Grouper w/ Baked Tater Tots and Johnny Cakes

 

 

To start the day off I Poached an Egg and served it on a toasted slice of Aunt Millie’s Light Whole Grain Bread. Then I also heated up a couple of Johnsonville Turkey Breakfast Sausage Links along with my morning cup of Bigelow Decaf Green Tea. Same weather outside! Passing thunder storms, humid, and 80 degrees. We’ve had so much rain in this are, like a lot of country. There’s flooding throughout our area. Friday is supposed to be sunny and clear, hope they are right! For Dinner tonight its Seasoned Grouper w/ Baked Tater Tots and Johnny Cakes.

 

 

 

 

 

I purchased the Grouper while at Jungle Jim’s International Market. They had them on sale and I just couldn’t resist from buying 3 fillets. I have a couple of the Gulf Coast Groupers in the freezer but I can’t walk away from a sale!

 

 

 

 

 

 

I rinsed the Grouper in cold water and dried it on a paper towel. I then sliced the Grouper into smaller pieces. To prepare the fillet I seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillet was well coated. Shook off the excess off. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful.

 

 

 

 

As my Grouper was cooking I preheated the oven on 425° to bake some Ore Ida Tater Tots. Just bake at 425 degrees for about 15 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup.

 

 

 

 

 

 


I also made a batch of Johnny Cakes. Sort of last minute add on, Mom wanted some. To prepare the Johnny Cakes (I love these…) all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Light Virgin Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. The Cornbread works perfect with Chili! I had a Diet Peach Snapple to go with my Dinner. I took some of the Johnny Cakes and 3 Bean Turkey Chili over to Dad at the rehab center, which he loved. For Dessert/Snack tonight a bowl of Skinny – Pop Pop Corn with a Diet Peach Snapple to drink.

For Breakfast this morning I Scrambled 2 Eggs, topped them with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and Ortega Smokey Chipotle Taco Sauce. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread topping the toast with Smucker’s Sugar Free Blackberry Jam. And as always a cup of Bigelow Decaf Green Tea. Passing Showers and 74 degrees out today. My allergies seem to be a little better today! Went to home Depot and picked up some grass seed and fertilizer. Well my small garden is in full bloom. I have 2 Strawberry plants, 3 Tomato plants, 2 Bell Pepper plants, 2 Jalapeno plants, and a Thai Pepper plant. Not a lot going on today. For Dinner tonight I prepared a Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese.

To start my Monday morning off I Poached an Egg, heated up a couple of Johnsonville Turkey Sausage Links, toasted a couple of slices of Ant Millie’s Light Whole Grain Bread, and had my morning cup of Bigelow Decaf Green Tea. A delicious way to start the day! Cloudy with light rain and a high of 56 degrees. Cleaned and straightened the Pantry and Freezers. Later on just rested for a while, my Sinuses are really bad today. For Dinner tonight its a Seasoned Gulf Coast Grouper w/ Vegetable Rotini and Marinara Sauce

 

 

 

 

 


I had purchased the Grouper Fillet at Kroger yesterday. So to prepare the fillet I seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillet was well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillet, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful!

 

 

 

 

Last minute change, Out of the Stouffer’s Mac and Cheese and I used Birds Eye Steamfresh Veggie Made Rotini Marinara. First time trying it and loved it! Heated in the package for 4 minutes in the microwave. Turned out perfect! I’ll be trying this and the others soon! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

To start this rainy Friday morning off I prepared one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Sunnyside Up Fried Egg. Well the rains have finally eased up! Had a light sprinkle and then cloudy and 50 degrees. Went Kroger for Mom after Lunch and stopped by the Bank for her. Not a lot going on today. For Dinner tonight its a Seasoned Gulf Coast Grouper w/ Baked Tater Tots.

For Breakfast this morning I Made a Breakfast Sandwich using; Healthy Life Multi Grain English Muffin, Scrambled 1 Egg, lightly heated 3 slices of Boar’s Head Sweet Slice Ham, and 1 slice of Boar’s Head Swiss Cheese. Outside today it’s sunny and 90 degrees today. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald’s and picked up Breakfast for Mom. Then I had to go to the Bank and make some changes on my Checking Account and Purchased a Safety Deposit Box. I ‘ve been needing a Safety Box for a while. I used to have one and the Bank I was at closed and my new one was sold out and I was put on a waiting list. And it came through yesterday. So I got that all taken care of. For Dinner tonight its Seasoned Gulf Coast Grouper w/ Roasted Fingerling Potatoes and Golden Hominy.

I had a couple of the fillets in a bag in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Crispy Southern Fish Fri. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish and Love this Grouper!

 


Then for another side I prepared some Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area, only 1 store around here locally that sells them (Thank you Jungle Jim’s).

 


For another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy, and its been a while since I’ve any. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Oven-Roasted Fingerling Potato Fries

Ingredients:

Fingerling Potatoes
Extra Virgin Olive Oil
Garlic Powder
Sea Salt
Pepper
Chili Powder
Kraft Reduced Fat Parmesan Grated Cheese
Directions:

1.) Thoroughly clean and scrub the potatoes.

2.) Cut the potatoes in half and add to a large mixing bowl.

3.) Add the olive oil. I used about 1 tablespoon, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.

4.) Put on a baking sheet and sprinkle with the Parmesan Grated Cheese

5.) Roast in the oven for 25-35 minutes at 450 degrees. The potatoes should be tender in the middle when done.

Today’s Menu: Seasoned Gulf Coast Grouper w/ Baked Tater Tots

 

 

To start this rainy Friday morning off I prepared one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Sunnyside Up Fried Egg. We had Thunderstorms overnight and into the morning here. Mostly cloudy and 76 degrees in the afternoon. Finished up on the Kitchen painting, looks 100% better! For Dinner tonight its a Seasoned Gulf Coast Grouper w/ Baked Tater Tots.

 


I love my Fish and Seafood, especially this Florida Gulf Coast Grouper. I had a couple small fillets of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful.

 

As my Grouper was cooking I preheated the oven on 425° to bake some Ore Ida Tater Tots. Just bake at 425 degrees for about 15 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Seasoned Gulf Coast Grouper Fish Sandwich w/ Baked Steak Fries

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Well after 2 days of being 60 degrees we are paying for it now! It started raining yesterday and early today and then the temperature started dropping late yesterday. Turned to freezing rain, sleet, and snow. We ended up with about 3 inches. The low this morning was 8 degrees with a cold wind blowing. It made it to 23 degrees today. Did some house cleaning and then watched some College Basketball. So many people with the flu around here, we’ve been lucky so far. For Dinner tonight I prepared a Seasoned Gulf Coast Grouper Fish Sandwich w/ Baked Steak Fries.
