Today’s Menu: Seasoned Gulf Coast Grouper w/ Baked Tater Tots

 

 

To start this rainy Friday morning off I prepared one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Sunnyside Up Fried Egg. We had Thunderstorms overnight and into the morning here. Mostly cloudy and 76 degrees in the afternoon. Finished up on the Kitchen painting, looks 100% better! For Dinner tonight its a Seasoned Gulf Coast Grouper w/ Baked Tater Tots.

 


I love my Fish and Seafood, especially this Florida Gulf Coast Grouper. I had a couple small fillets of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful.

 

As my Grouper was cooking I preheated the oven on 425° to bake some Ore Ida Tater Tots. Just bake at 425 degrees for about 15 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Seasoned Gulf Coast Grouper Fish Sandwich w/ Baked Steak Fries

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Well after 2 days of being 60 degrees we are paying for it now! It started raining yesterday and early today and then the temperature started dropping late yesterday. Turned to freezing rain, sleet, and snow. We ended up with about 3 inches. The low this morning was 8 degrees with a cold wind blowing. It made it to 23 degrees today. Did some house cleaning and then watched some College Basketball. So many people with the flu around here, we’ve been lucky so far. For Dinner tonight I prepared a Seasoned Gulf Coast Grouper Fish Sandwich w/ Baked Steak Fries.

 

 

I love my Fish and Seafood, especially this Florida Gulf Coast Grouper. I had a fillet of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun. I got 2 Bun Size Fillets out of it, I’ll have the other one for Lunch tomorrow.

 

 

 

For a side I baked some Ore Ida Steak Fries and had a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

After Breakfast I headed out to Meijer. I wanted to pick up a small Prime Rib and I needed some new shoes. Having one leg, left leg amputated, I have a collection of new left shoes. Anyway my Tennis Shoe is worn out so i bought a pair of new ones and also a pair of Boots. I love one stop shopping! For Dinner tonight it’s a Seasoned Gulf Coast Grouper w/ Cheddar Potato Bake.

 

 

I love Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back up from Florida! It’s good to have friends that also own a house off the South Florida Gulf side. I had a fillet of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish and Love this Grouper!

 

 


Then to go with my Grouper, I prepared a Stouffer’s Cheddar Potato Bake. Another easy to prepare and delicious dish. To prepare this one I’m using the microwave. It comes in a microwavable tray. I just slit the film cover on the tray and microwaved it for 6 minutes, Done! I love this side by Stouffer’s! Delicious Potato Dish, really like the bread crumb topping. For dessert later a Weight Watcher’s Cookie and Cream Ice Cream Bar.

For Breakfast this morning I toasted a healthy Life Whole Grain English Muffin, fried up 2 Jennie – O Turkey Breakfast Sausage Links, Scrambled 1 Egg, and had my morning cup of Bigelow Decaf Green Tea. I still struggled a bit with the Phantom Pains but nothing like the night before. I’ll sure be glad when these stop! Had a lot of rain overnight but the bad weather went around us. Some places had tornado touchdowns. Cooler out today, high of 54 degrees and partly cloudy. After Breakfast me and Mom went to Jungle Jim’s International Market. I love going to this store, anything and more you want they have it! Back home not a lot going on. I’m still resting up from the Phantom Pains, it really took it out of me this time. For Dinner tonight I prepared a Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese.

Went out to grab the morning papers this morning and its 41 degrees. Another beautiful Fall Day out again, 70 degrees and sunny! After Breakfast I headed to Meijer and while there went to their Lawn and Garden and picked up a couple Fall Flowers they had in stock. Back home home after Lunch I got the cart out and did a few things around the yard. Took a spin around the neighborhood and enjoyed this beautiful weather! For Dinner tonight I prepared a Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese.

For Breakfast this morning I toasted a couple of Eggo Waffle’s and topped them with some I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. Went out to grab the morning papers this morning and its 55 degrees. Another beautiful day out again, 81 degrees and sunny! Today is the neighborhood’s annual community yard sale, as always it draws a lot of people. So I got the cart out and went around the neighborhood to look at all junk people were trying to unload! Later in the afternoon I went to see Dad. We hope he gets to come home soon! For Dinner tonight I prepared a Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese.

I just had a cup of Bigelow Decaf Green Tea for Breakfast, no appetite this morning. Did my morning workout, took a quick shower, and off to Walmart. I needed some Bigelow Decaf Green Tea, Copy Paper, and a few other things. Back home after Lunch, I went to see Dad. Still having good days and bad days, hope he can come home soon. Another pretty nice day out again. After getting back home I got the cart out for a ride around the neighborhood. For Dinner tonight it’s a Gulf Coast Grouper w/ Mac and Cheese.

For Breakfast this morning I toasted a couple of Nutri Grain Low Fat Eggo Waffles and had my morning cup of Bigelow Decaf Green Tea. After Breakfast and my morning workout I started a load of laundry for Mom and then headed to Marsh and Kroger. I needed quite a few things from Meijer and then stopped by Kroger to pick up a few things for Mom. Back home, after Lunch I got out the leaf blower and cleaned the deck and driveway areas. Trimmed the vine along the driveway and then picked some Basil and Cilantro for tonight’s meal. This is the best my Herb Plants have ever grown, nice size plants. Love watching stuff grow. As a child growing up my Grandparents always live on a farm with huge fields of Vegetables. Lucky to get to see all that while growing up. So for Dinner tonight I prepared Seasoned Gulf Coast Grouper w/ Hush Puppies and Mac and Cheese.

For one side for my Grouper I prepared a box of the McCormick Hush Puppy Corn Meal Mix. First time I’ve made these and they turned out great! Just followed the easy instructions and served. I left the full instructions at the end of the post. First time I’ve had Hush Puppies in a long time, really enjoyed these!

 

 

 

 

Also to go with the Grouper prepared some Kraft 50% Whole Grain Mac and Cheese. I normally have the regular Mac and Cheese but I seen the 50% Whole Grain at Meijer and picked up a 4 pack of them. It comes in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! Seafood and Mac and Cheese are just a natural pairing. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Directions:
Instructions: All You Need:1 box Hush Puppy Mix2/3 cup Water Vegetable Oil Pour oil into deep fryer, large heavy skillet or saucepan, filling no more than 1/3 full. Heat oil to 375F on medium heat.1. Stir Batter Mix and water in medium bowl until smooth. Let stand 10 minutes to thicken.2. Drop batter carefully by teaspoonfuls into hot oil. Cook several hush puppies at a time. Fry 2 minutes or until golden brown, turning once. Drain on paper towels.To prepare only of the box use 1 cup Hush Puppy Mix and 1/3 cup plus 1 tbsp. water. Today’s Menu: Seasoned Gulf Coast Grouper w/ Smashed Potatoes and Purple Passion Asparagus

 

 

For Breakfast this morning I prepared a Scrambled Egg that i topped with Sargento Reduced Fat Sharp Cheddar Cheese and a few drops of Frank’s Red Hot Sauce. Then I fried 2 Jennie – O Turkey Breakfast Sausage Links, toasted 2 slices of Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Outside it was 48 degrees this morning and its partly cloudy and had a high of 76 degrees. Gave Mom a hand with laundry and then outside and cleaned. After Lunch I got the clippers out and trimmed the vines alongside the driveway. Got the cart out later and took a ride around the neighborhood. For Dinner tonight its Seasoned Gulf Coast Grouper w/ Smashed Potatoes and Purple Passion Asparagus.

 
I love Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back up from Florida! I had a fillet of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish and Love this Grouper!

 

For a side dish I prepared Rustic Smashed Potatoes with Sea Salt. I’ve made Smashed Potatoes before and thought I would give this recipe a try. I came across this recipe on the Swift Premium site while reading about the Shoulder Roast I’m having tonight. I’ll need the following to prepare the dish; Yukon gold new potatoes, Blue Bonnet Light Butter (melted), Extra Light Olive Oil, Garlic Powder, and McCormick Grinder Sea Salt and Peppercorn Medley Pepper.

 

 

 

To prepare the dish; Cook potatoes in gently boiling heavily salted water for 12 to 15 minutes or just until tender. Drain well and cool slightly. Transfer the potatoes to a large baking sheet lined with foil. Gently press each potato with the bottom of a cup until slightly crushed and flattened, but not falling apart. Next preheat oven broiler. Combine the butter, oil and garlic powder. Brush half of the butter mixture on potatoes. Broil 3 inches from heat for 3 to 5 minutes or until golden and slightly crisp. Carefully turn potatoes over using a wide spatula. Brush with butter mixture; lightly sprinkle with salt and pepper. Broil for another 2 to 4 minutes or until golden. Let cool and serve! Excellent Smashed Potato Recipe!

 

For another side dish I had picked up some more of the Purple Passion Asparagus at Meijer. It tastes like Green Asparagus but it’s less fibrous and sweeter due to a higher sugar content. I prepared it the same way as the Roasted Asparagus I’ve made before. I’ll need; 1 bunch of Purple Asparagus (fibrous bases removed), 1 Tablespoon of Crumbled Bacon or Bacon Bits, Ground Garlic Salt, Sea Salt, Freshly Ground Black Pepper, and 1 tbsp Extra Light Olive Oil.

 

 

 

To prepare it is easy; Preheat the oven to 400F. Place asparagus in a baking tray sheet. Add the bacon, garlic salt, salt, pepper, and olive oil and toss to coat. Bake for 12 minutes. Remove from oven. Cool a couple of minutes and serve! Comes out tender and that slight sweet taste to it. Really like the Purple Asparagus over the Green Asparagus! What a Dinner tonight! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Seasoned Gulf Coast Grouper w/ Creamy Cheddar Pasta

 

 

 

For Breakfast I’m having a toasted Healthy Life Whole Grain English Muffin, topped with Smucker’s Sugar-Blackberry Jam, and as every morning, a cup of Bigelow Decaf Green Tea. After Breakfast I headed out to do some grocery shopping. Another windy day and a high in the low 60’s. Went to Meijer and then swung by the Kroger up the road for a couple of items. They are expanding the Meijer here in West Chester. It’s a huge store already but they are putting in a lot of upgrades. Should be even nicer when done. After Breakfast did a few chores around the house. For Dinner tonight its Seasoned Gulf Coast Grouper w/ Creamy Cheddar Pasta.

To go with my Fried Grouper I prepared some Bear Creek Creamy Cheddar Pasta Mix. I had tried this a while back and loved it! I’ve also had the Bear Creek Potato Soup Mix, Navy Bean Soup Mix, Minestrone, and Creamy Chicken Pasta, which all were excellent! To prepare it; Grabbed a 2 quart sauce pan, added 4 cups of water. Heated to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought the mixture back to a rolling boil. Reduced the heat to a medium boil and cooked for 15 minutes, stirring occasionally.

 

 

Removed from the heat and let it sit for 8 minutes. The Sauce thickened up beautifully as it cooled. Another excellent product from Bear Creek. Really enjoy these all these Products! I seasoned the Pasta with just a little sea Salt and Ground Black Pepper. The Pasta and Catfish make a great pairing! For Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.
