Turkey burgers seem to stick to the grill……….

Just like in a traditional meatloaf, you need something to hold the meat together. Try adding some dry breadcrumbs to the turkey mixture before you shape the patties. The crumbs will absorb the moisture and, together with the egg, will act like glue and help your burgers maintain their shape on the grill. Now Grill those Burgers!

Lean Ground Turkey health benefits……………….

It contains less saturated fat, calories, and cholesterol than lean ground beef. Be sure to check the packaging though, some turkey is made with dark meat, which tends to have more fat in it than ground turkey breast. Ground turkey is also an excellent source of lean protein and vitamins B-6 and 12.

This week’s Appetizer of the Week is HOISIN-WHISKEY GLAZED MEATBALLS. The Meatballs are made from Ground Turkey, Quick Cooking Oats, Green Onions, Jalapeno, Egg Whites, Coarsely Ground Black Pepper, and Canola Oil. Also included is a recipe for the Hoisin Whiskey Glaze in which you’ll be needing Hoisin Sauce and Bourbon or Canadian Whiskey. HOISIN-WHISKEY GLAZED MEATBALLS
Hoisin sauce, also called Chinese barbecue sauce, adds a lot of flavor and helps to thicken this Asian-inspired glaze. Recipe for Hoisin-Whiskey Glazed Meatballs from our Appetizer recipe section.

Ingredients
8 oz ground turkey 250 g
1/3 cup quick cooking oats 75 mL
1/3 cup finely chopped green onion (green and white parts) 75 mL
1 medium jalapeno chili pepper, finely chopped (with seeds)
2 egg whites
1/4 tsp coarsely ground black pepper 1 mL
2 Tbsp canola oil 30 mL

Glaze
2 Tbsp hoisin sauce 30 mL
2 Tbsp Bourbon or Canadian whiskey 30 mL
2 tsp

Directions

1 – In medium bowl, combine turkey, oats, green onion, chili pepper, egg whites, pepper and 1 Tbsp (15 mL) of canola oil and shape into 24 small meatballs (about 1 Tbsp/15 mL each).
2 – Heat 1 Tbsp (15 mL) canola oil in large, nonstick skillet over medium heat. Cook meatballs 6 minutes or until no longer pink in center, turning frequently.
3 – Meanwhile, in small bowl, stir together hoisin sauce, bourbon and sugar substitute.
4 – Pour hoisin mixture over meatballs in skillet and cook 15 seconds, stirring gently until well coated. Serve with wooden picks.
NOTES:
Hoisin sauce, also called Chinese barbecue sauce, adds a lot of flavor and helps to thicken this Asian-inspired glaze.

Recipe Yield: Yield: 6 servings.

Serving size: 4 meatballs.

How healthy is Turkey…………………..

Turkey is a very rich source of protein, niacin, vitamin B6 and the amino acid tryptothan. Apart from these nutrients, it also contains zinc and vitamin B12. The skinless white meat of turkey is low on fat and is an excellent source of high protein. Turkey also contains anti-cancer properties.

Touchdown Turkey Pesto Party Pops with Hail Mary Horseradish Dipping Sauce
Score winning points with game fans when you serve these tasty turkey pesto pops with a kickn’ cranberry and horseradish dipping sauce! Recipe by Devon Delaney of Westpoint, Connecticut, 2012 Ocean Spray Tailgating Recipe Contest Winner.

Recipe Ingredients:
1 tablespoon vegetable oil

Turkey Pesto Party Pops:
1 pound ground turkey
1/3 pound mild Italian bulk sausage
2/3 cup Italian seasoned croutons, crushed
1/4 cup basil pesto
1 large egg
1/2 teaspoon sea salt
1/2 teaspoon ground black pepper
Lollipop sticks

Hail Mary Horseradish Dipping Sauce:
1 cup Ocean Spray® Jellied Cranberry Sauce
2 ounces goat cheese, softened
2 tablespoons sour cream
2 tablespoons prepared grated horseradish
Salt and ground black pepper to taste
Chopped fresh flat leaf parsley for garnish

Cooking Directions:
1 – Preheat oven or grill to 400°F (205°C). Grease a large baking sheet with 1 tablespoon oil; set aside.
2 – For Turkey Pesto Party Pops: Combine the turkey, sausage, croutons, pesto, egg, salt and pepper in a large bowl.
3 – Shape turkey mixture into uniform meatballs and lay side by side on oiled baking sheet.
4 – Bake for 12 to 14 minutes or until cooked through.
5 – For Hail Mary Horseradish Dipping Sauce: Place cranberry sauce, goat cheese, sour cream and horseradish in a blender or food processor and pulse until well combined. Season to taste with salt and pepper. Sprinkle with parsley to garnish.
6 – Poke meatballs with lollipop sticks and place in a transportable container to take to the tailgate party along with the dipping sauce.

Makes about 24 appetizer servings.

Authentic Meatloaf

Ingredients
3/4 cup no-salt-added tomato sauce, divided
2 egg whites
4 tablespoons reduced-sodium chunky salsa, divided
1/2 teaspoon black pepper
1/2 cup old-fashioned oatmeal
1/2 cup finely minced onion
1/3 cup canned no-salt-added mushroom stems and pieces, drained and chopped
1 clove garlic, finely minced
8 ounces lean ground turkey
8 ounces 96% lean ground beef

Directions
1 – Preheat oven to 350°F. Spray piece of aluminum foil with nonstick cooking spray. Place foil on broiler pan; set aside.

2 – Mix 1/2 cup tomato sauce, egg whites, 3 tablespoons salsa, and pepper in medium bowl. Stir in oatmeal, onion, mushrooms, and garlic.

3 – Place ground turkey and ground beef in large bowl; mix lightly to combine. Stir in tomato mixture; mix well.

4 – Transfer meat mixture to prepared pan; shape into 4 x 8-inch rectangular loaf. Mix remaining 1/4 cup tomato sauce and 1 tablespoon salsa in small bowl; drizzle on top of meat loaf.

Bake 55 minutes or until cooked through (165°F). Let stand 5 minutes before slicing.

Yield: 4 servings.

Turkey Tortilla Stew
Turn lean ground turkey into a hearty and satisfying Southwestern stew with onion, garlic, tomatoes, pinto beans, corn, green chiles and crispy corn tortilla strips.

Recipe Ingredients:
1 1/2 pounds ground turkey
1 medium onion, finely chopped
2 garlic cloves, minced
2 teaspoons vegetable oil
2 1/2 cups water
1 (14.5-ounce) can diced tomatoes
1 (15-ounce) can pinto beans in chili sauce, undrained
1 (10.75-ounce) can condensed tomato soup
1 cup loose-pack frozen whole corn kernels
1/4 teaspoon ground black pepper
1 (4-ounce) can diced green chiles
12 (6-inch) corn tortillas, cut into 1/4-inch strips
2 tablespoons vegetable oil

Cooking Directions:
1 – In a large Dutch oven over medium-high heat sauté turkey, onion and garlic in oil for 5 minutes or until turkey is no longer pink. Add water, tomatoes, beans, soup, corn, chiles and black pepper. Heat until mixture is bubbly; reduce heat to low and simmer for 30 minutes.
2 – In a large skillet over medium-high heat, sauté tortilla strips in the 2 tablespoons oil for 30 seconds or until lightly browned and crisp. Drain on paper towels. Add tortilla strips to turkey stew just before serving to let them soften.

Makes 6 servings.
