Today’s Menu: Chicken Burger w/ Baked Fries

For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. Cold morning out, 24 degrees! For the day had a high of 47 degrees and mostly sunny. After I had my Tea I went to Kroger for a couple of items for Mom. Raked some leaves and then used the leaf blower and cleaned off the deck and driveway areas. Not a lot to do today so I settled back and watched some College Football. For Dinner tonight I prepared a Chicken Burger w/ Baked Fries.

I purchased a package of Ground Chicken from Meijer my last visit there. To make the Burger I’ll need; the Ground Chicken (1 lb. package), Ground Cumin, Paprika, Garlic Powder, Dried Oregano, McCormick’s Grinders of Sea Salt and Peppercorn Medley, and Meijer Italian Style Bread Crumbs. For toppings I’m using Kraft Reduced Fat Mayo w/Olive Oil, Heinz 57 Sauce, Hoffman’s Sharp Cheddar Cheese, Butter Leaf Lettuce and served on a Aunt Millie’s Reduced Calorie Whole Grain Bun.

To prepare them, in a large bowl, combine Chicken, Ground Cumin, Paprika, Garlic Powder, Dried Oregano, Sea Salt and Peppercorn Medley, and Italian Style Bread Crumbs. The Seasonings amount are to taste and 2 tablespoons of the Italian Style Bread Crumbs. Make a little depression with your thumb in the center of each burger so they cook evenly. Divide the mixture into 4 patties.

In a Cast Iron Skillet over medium heat, heat oil. Add burger patties and cook, flipping once, until golden and a thermometer inserted into the center registers 165°, 8 to 10 minutes. Top with cheddar and cook until just started melting, 2 minutes. Remove from heat and transfer patties to a plate. Serve on the Buns and top with Mayo, Heinz 57 Sauce, and Lettuce. The Ground Chicken Burger is juicy, moist, and flavorful! I’ll have to start having a lot more often!

To go with the Chicken Burger I prepared Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Heinz 57 Sauce. For Dessert later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Ground Chicken
Ground chicken is a healthy start for any meal since one serving (100 grams, or about 3 ounces) meets one’s protein needs for a nutritious meal – plus it’s lower in calories and fat than many meat sources. Lean ground chicken is high in protein and offers less saturated fat than ground beef.

Today’s Menu: Chicken Burger w/ Baked Fries

For Breakfast this morning I Scrambled a couple of Eggs and toasted 2 slices of Aunt Millie’s Light Whole Grain Bread. Also had my morning cup of Bigelow Decaf Green Tea. Sort of cold ou there this morning, 33 degrees with a cold wind blowing! Partly cloudy and a high of 58 degrees. After Breakfast I ran a couple of errands for Mom and picked up Breakfast for her at McDonald’s. Didn’t do a lot today. Most of the morning and day I had a bad sinus headache. For Dinner tonight I prepared a Chicken Burger w/ Baked Fries.

Today’s Menu: Chicken Burger w/ Baked Fries

To start this day off I had a cup of Bigelow Decaf Green Tea. What a beautiful day out there today! Sunny and 75 degrees, and low humidity! Early Fall?? The only bad thing is the pollen, mold, and ragweed is sky high! Bad news for people like myself with allergies. I was sneezing and sniffling all day. Which led top a bad headache most of the day. I’ll be glad when all the weeds die and my allergies die with them. So just another thing to work through. Not a lot going on, just did a few chores around the house. I went to a funeral home in the early evening. A friend of mine brother passed away. For Dinner tonight I prepared a Chicken Burger w/ Baked Fries.

I bought a package of Ground Chicken from Meijer the day before. I have these about once a week or so anymore. I’m using Smart Chicken – Ground Chicken. To make the Burger I’ll need; the Ground Chicken (1 lb. package), Ground Cumin, Paprika, Garlic Powder, Dried Oregano, McCormick’s Grinders of Sea Salt and Peppercorn Medley, and Meijer Italian Style Bread Crumbs. For toppings I’m using Kraft Reduced Fat Mayo w/Olive Oil, Heinz 57 Sauce, Hoffman’s Sharp Cheddar Cheese, Butter Leaf Lettuce and served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I’m keeping the toppings the same as last time, the Burgers came out delicious!

Today’s Menu: Chicken Burger w/ Baked Fries

To start this day off I prepared a Poached Egg that I served on a Thomas Light English Muffin. Also had a cup of Bigelow Decaf Green Tea. Heavy Rains and Thunderstorms hit the early morning hours. We nned the rain though the grass was starting to turn brown. Cleaned the house and then put Mom’s new Hoover Vacuum together, not a lot to it. This one has a cord which she will use and we still have Hoover Cordless which I use. The Cordless are nice, especially for me being in a wheelchair. But they don’t have the power of a Vacuum with a cord. Not much else going on. For Dinner tonight I prepared a Chicken Burger w/ Baked Fries.

I had been seeing a lot of Chicken Burgers at a lot of blogs out there, and they all look incredible! So I had bought a package from Meijer. The Burgers turned out so good that I purchased another package of the Smart Chicken – Ground Chicken and having them again tonight.

Today’s Menu: Chicken Burger w/ Baked Fries

To start this day off I prepared a packet of Kroger Buttery Grits, fried 2 Jennie – O Turkey Breakfast Sausage Links, toasted a slice of Aunt Millie’s Light Whole Grain Bread, and had my morning cup of Bigelow Decaf Green Tea. Too good! 84 degrees and humid out along with thunderstorms around the area toady. We need the rain though. Spent most of the day boxing items up in my bedroom. They are coming next week to put down new carpet in my bedroom and bath room. Much needed! My Hoveround Chair has really run the carpet down in the bedroom. For Dinner tonight I prepared a Chicken Burger w/ Baked Fries.

Today’s Menu: Thousand Island Ground Chicken Cheese Burger w/ Baked Fries

For Breakfast this morning I prepared an Egg Suunyside Up, reheated the remaining piece of pork Chop, toasted a Healthy Life Whole Grain English Muffin, and had the morning cup of Bigelow Decaf Green Tea. Cleaned the house today, vacuumed and dusted. Then after Lunch I took Mom’s car to have the oil changed and then took it to washed and the inside vacuumed. Another hot and humid day out. Looks pretty good for an older car. For Dinner tonight its a Thousand Island Ground Chicken Cheese Burger w/ Baked Fries.

I had purchased a 1 lb. package of Ground Meijer Chicken while there the other day. I had no t had a ground Chicken Burger in a long time and it just sounded good! To make the Burger I’ll need; Pam Cooking Spray, Extra Light Olive Oil, Ground Chicken, Dried Sage (just a pinch), Sea salt, Ground Black Pepper, Litehouse Thousand Island Dressing, Kraft Deli Deluxe Sharp Cheddar Cheese, Aunt Millie’s Reduced Calorie Whole Grain Hamburger Buns.

To prepare it I was able to make 4 Burgers out the package of Ground Chicken. I added just a pinch of Rubbed Dried Sage to the Chicken and formed it into 4 Chicken Patties. I got a 10″ skillet that I lightly coated with Pam Cooking Spray and added a 1/2 tablespoon of Extra Light Olive Oil also. I then preheated the skillet on medium heat. I then fried the patties, 2 at a time. I fried them until the juices ran clear and I had an internal temperature reading of 165 degrees. Flipping the Burgers one time. After flipping it, with about 1 minute of frying time left I added my Cheese on it. I served it on an Aunt Millie’s Bun and topped the Burger with Litehouse Thousand Island Dressing. Love the Chicken Burger! Came moist and delicious, nice flavor to it and the Sharp Cheddar and Thousand Island Dressing was perfect with it.

To go with my Burger, what else but Baked Fries. I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Alexia Organic Yukon Select Fries

Lightly seasoned with sea salt, these Julienne Fries make your everyday French fry wonder where it went wrong.

Ingredients: Organic Potatoes, Organic Canola Oil and/or Organic Sunflower Oil and/or Organic Safflower Oil, Sea Salt, Citric Acid.

It’s all about the Chicken – Ground Chicken

Ground Chicken

Ground chicken is simply chicken that has been ground or finely chopped. Ground chicken can be prepared at home or it can be bought from supermarkets, grocery stores or butcher shops. Ground chicken is minced or cubed chicken meat preferably from the less tender and less popular cuts of the chicken. Ground chicken or minced chicken is made of finely chopped chicken, minced by a meat grinder. One recipe example using Ground Chicken is Buffalo Chicken Chili.

Buffalo Chicken Chili

Ingredients

1 tablespoon extra-virgin olive oil
2 tablespoons butter
2 pounds ground chicken breast
1 large carrot, peeled and finely chopped
1 large onion, chopped
3 stalks celery, finely chopped
5 cloves garlic, chopped
5 tablespoons chili powder
2 tablespoons ground cumin
1 tablespoon ground paprika
sea salt and pepper to taste
3/4 cups Swanson’s reduced sodium chicken broth
1/2 cup hot buffalo wing sauce, Frank’s® REDHOT Buffalo Wing Sauce or to taste
2 (15 ounce) cans tomato sauce
1 (15 ounce) can crushed tomatoes
1 (15 ounce) can white kidney or cannelloni beans, drained
1 (19 ounce) can red kidney beans, drained

Directions
1. Heat olive oil and butter in a large pot over medium-high heat. Place chicken in the pot. Cook and stir 7 to 10 minutes, until chicken is no longer pink. Stir in the carrot, onion, celery, garlic, chili powder, cumin, paprika, and salt and pepper, and cook and stir until the onion is translucent and the vegetables are beginning to soften, 3 to 4 more minutes.
2. Stir in the hot sauce, tomato sauce, crushed tomatoes, and white and red kidney beans. Bring to a boil, and simmer over medium-low heat about 1 hour, until the vegetables are tender and the flavors have blended.

Optional toppings:

Sargento reduced fat shredded cheddar
chopped scallions
Daisy reduced fat sour cream
