HEART HEALTH
It’s true – you are what you eat, and you are what you eat, eats too. With this in mind and in celebration of February’s American Heart Month, we’d like to share some important heart-health facts on grass-fed meat.
Grass-fed meat has:
Lower total fat content & health-promoting fats such as;
Omega-3 fatty acids – key component to heart health
Conjugated linoleic acid (CLA) – a fat that has been shown to reduce heart disease and cancer risks
More antioxidant vitamins (health boosters) such as; Vitamin E
Beta-carotene and; Vitamin C
“Specifically, bison contains an increased ratio of polyunsaturated fatty acids (PUFA) to saturated fatty acids (SFA), 3–4 times more anti-inflammatory omega-3 PUFA and is particularly high in alpha linolenic acid. In addition, ruminants such as bison are a major contributor of conjugated linoleic acid (CLA) to the human diet, providing significantly more CLA than other non-ruminant meat sources such as pork, fish, chicken, and turkey. The dietary inclusion of a specifically rich source of CLA may be advantageous as CLA is believed to have anti-inflammatory properties, and may have an important role in the prevention of cardiovascular disease and cancer.”
When it comes to omega-3 fatty acids (which our body does not make on its own) – it’s important that we turn to foods that include this essential fat, which has been shown to prevent heart disease. Consuming our native, grass-fed buffalo meat that delivers 3.5x more omega-3s – is a not only a good choice but a go-to choice for a healthy heart.
“Omega-3 fatty acids have been shown to significantly reduce the risk for sudden death caused by cardiac arrhythmias and all-cause mortality in patients with known coronary heart disease. Omega-3 fatty acids are also used to treat hyperlipidemia and hypertension.”
Evidence has also shown that “some antioxidant vitamins appear to be important in reducing the risk of coronary heart disease (CHD).” With the power-packed antioxidant vitamins found in grass-fed meat, these healthy, can-do substances protect a person’s cells, keeping us free from “oxidative stress” and boosting overall health.
Besides the known health benefits of grass-fed meat, it’s also important to consider its role in weight health, which directly correlates to heart health. Being overweight leads to many conditions such as, high blood pressure or diabetes that lead to heart disease. This week’s Wild Idea Buffalo Recipe of the Week is – LAYERED NACHOS. Anytime is good for Nachos! These are made using your choice of Meat from Wild Idea Buffalo. LAYERED NACHOS
This layered meaty, cheesy concoction, loaded with veggies, is irresistible. I like to make this dish using the shank meat from my homemade stock recipe, but it could also be made with leftover braised chuck roast, or with ground meat. (Serves 4)
Ingredients:
Buffalo Shank meat from the Buffalo Stock recipe. I usually get about 1½ pounds of meat.
1 – tablespoon olive oil
2 – teaspoons chili powder
2 – teaspoons cumin
1½ – teaspoons salt
1 – teaspoon black pepper
1 – teaspoon garlic powder
1 – teaspoon oregano
1 – teaspoon smoked paprika
½ – teaspoon coriander
8 – ounces Colby cheese, shredded
1 – can black beans, rinsed & drained
1 – cup chopped tomatoes
1 – bell pepper, diced
3 – green onions, diced
1 – avocado, chopped, reserve a little for garnish
½ – cup chopped cilantro leaves, reserve a little for garnish
Corn Chips, thicker style
Lime wedges
Preparation:
1 – In sauté pan over medium high heat, heat oil. Add shredded shank meat and all of the spices, stirring to incorporate. Bring to full heat.
2 – Remove pan from heat, cover the meat, and set aside.
3 – Pre-heat oven to 400°.
4 – Shred your cheese and prep all of your vegetables.
5 – On 4 oven safe plates, arrange a layer of corn chips. Top chips with 1/3 of meat, and other ingredients divided between the 4 plates. Repeat layer two more times.
6 – Place prepared nachos in the oven for about 10 minutes or until the cheese is melted.
7 – Remove the nachos from the oven and place on a heat resistant surface, and allow nachos to cool slightly before serving.
8 -Top with reserved avocado and cilantro and serve with fresh lime wedges and desired condiments.

Buffalo and Black Bean Chili
In this healthy buffalo and black bean chili recipe, the buffalo is cooked with sweet red bell peppers and spiced with two types of chili powder, cocoa powder and espresso powder, making this chili mouthwatering and memorable. Bison Taco Salad
INGREDIENTS:
Dressing
1 c. sour cream
1 T. canned jalapeno peppers, chopped
3 T. chili sauce
1 tsp. onion, finely grated
Salad
1 lb. ground Bison, browned
1 lg. avocado, peeled and sliced
1/2 c. onion, chopped
3 tomatoes, quartered
1 (15-oz.) can red kidney beans, drained
1/2 c. pitted ripe olives, sliced
1 pkg. 1 1/4 ounces taco seasoning mix
2 c. taco flavored tortilla chips, slightly broken
1 c. water
2 qts. Romaine lettuce or salad greens
1 1/2 c. Cheddar cheese, shredded, chilled and torn
Preparation:
Dressing: Combine ingredients; cover and chill to blend flavors.
Salad: Brown Bison with onion. Drain. Add kidney beans, taco seasoning mix and water. Cover and simmer 10 minutes. Drain. Assemble salad: toss meat mixture with lettuce, avocado, tomatoes, olives, tortilla chips, cheese and chilled dressing. Serves 6.

Bison bone-in shanks are great for the traditional Italian dish “Osso Buco”. The marrow is also coveted as a delicacy and is wonderful on toast points. The shank is cut from the leg portion of the bison. Four bone in shanks / 3.5 lbs.

Colorado Buffalo Chili
INGREDIENTS:
1 pound ground buffalo
1/2 teaspoon ground cumin
1 pinch cayenne pepper, or to taste
1 (10 ounce) can diced tomatoes with
green chiles
1 (10.75 ounce) can tomato soup
1 (14.5 ounce) can kidney beans, drained
1 (15 ounce) can chili beans, drained
1/2 medium onion, chopped
1/2 teaspoon minced garlic
1 Anaheim chile pepper, chopped
1 poblano chile pepper, chopped
2 tablespoons chili powder
1 teaspoon red pepper flakes
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
salt and ground black pepper to taste
DIRECTIONS:
1. Brown the buffalo in a skillet over medium heat; season with 1/2 teaspoon cumin and 1 pinch cayenne pepper, or to taste. Drain excess grease.
2. Combine the buffalo, tomatoes with green chiles, tomato soup, kidney beans, chili beans, onion, garlic, Anaheim chile pepper, poblano chile pepper, chili powder, red pepper flakes, 1 1/2 teaspoons cumin, 1/2 teaspoon cayenne pepper, salt, and black pepper in a slow cooker. Cover and cook on Low overnight or 8 hours.

Temperature Guide–Internal temperatures of meat:
Rare – 130 degrees. Medium-rare – 140 degrees. Medium – 155 degrees.

90% Lean Wild Idea Ground Buffalo
We use the finest cuts for our trim. A healthy, delicious staple for all of your favorite ground meat dishes! Grill, sear, bake or sauté.
99% Lean Ground Round
We use the Top Round and remove all exterior fat, for this super lean meat. It is rich and dark in taste and color. Use as a substitute for ground meat dishes, or use for Steak Tartar. When grilling or sautéing do not over cook, as meat will be become dry. Recommend cooking no more then medium rare.
Wild Idea Ready Made Buffalo Burgers
I find it easier to prepare the ready-made patties while they are still partially frozen. Pull apart partially thawed burgers. Rub with olive oil and salt and pepper. To achieve a medium rare temperature, place on a hot grill for 2.5 minutes each side, closing grill during grilling time.
