Love Pancakes? Remember these Hints…..


* You might be tempted to store pancake batter for those I-need-pancakes-right-this-instant emergencies. You must resist the temptation. You should make the batter only right before you plan on cooking pancakes. If not, the flour will absorb too much liquid and thicken the batter, which will lead to imperfect pancakes.

* Your griddle or pan isn’t properly pre-heated. Heat the pan for two to three minutes before adding the butter or oil to make sure your pancakes don’t burn. If you’re concerned about adding Oil or butter, a nonstick spray is an excellent choice.

* One flip only! Wait until the batter is bubbly then flip it. Once. Handle it any more and you will overcook and toughen the pancake.

* Don’t over mix the batter: Over-mixing can make your pancakes tough, stop mixing when you’re batter has small lumps.

When cooking on the griddle, you’ll get better results if you clean it between each batch of pancakes or whatever you happen to be making. Do this easily with coarse salt wrapped in a piece of cheesecloth. The salt will provide a light abrasive cleaning and won’t harm the surface if you’re gentle.

Pancake tips….

* Don’t over mix batter – you don’t want the gluten in the flour to overdevelop and allow the carbon dioxide that creates little air pockets to escape. It’s better to leave a couple of lumps in the batter.

* Refrigerate the batter for up to 30 minutes. This further slows the development of the gluten and the leavening action.

For all the Pancake lovers out there! Thank you Chris for passing these tips along to me!



Hint #1 – Make sure the pancakes are cooked evenly before flipping them in the pan – wait until lots of bubbles form on the surface and start to pop, then flip them.

Hint #2 – Use a medium-low heat to allow the pancakes to cook slowly, so they cook through to the center and don’t burn.
