Scalloped Potatoes and Ham
Full of flavor with 270 calories per serving? That’s comfort food with a nutritious twist. And whether you serve up this classic as a side or one-pot meal, every bite is full of melty cheese, delicious potatoes, and the rich, full flavor of JENNIE-O® Turkey Ham. INGREDIENTS
4 tablespoons butter
¼ cup all-purpose flour
½ teaspoon black pepper
¾ cup milk
1 cup shredded Cheddar cheese
2 tablespoons diced onion
¼ cup diced green pepper
2½ cups potatoes, sliced
1¼ cups JENNIE-O® Turkey Ham, diced

DIRECTIONS
1) Heat oven to 350°F.
2) Grease 8 x 8-inch baking dish.
3) In saucepan, over low-heat, melt butter. Blend in flour and pepper. Cook for 5 minutes. Gradually stir in milk. Cook until sauce starts to thicken. Stir in cheese until melted and sauce is smooth. Add onion and peppers.
4) Layer potatoes and ham in prepared baking dish. Top with sauce. Cover and bake 45 minutes. Uncover bake 20 to 30 minutes or until potatoes are tender and golden brown.

Tex-Mex Chili Cheese Supreme
This great tasting Tex-Mex chili cheese casserole is sure to win approval and ‘keeper status’ by family and friends.

Recipe Ingredients:
2 tablespoons vegetable oil
1 medium green pepper, seeded and chopped
1 clove garlic, minced
1 (15.5-ounce) can kidney beans, drained
1 (16-ounce) can tomatoes, with juice, coarsely chopped
1 (15-ounce) can tomato sauce
1 tablespoon chili powder, or to taste
1 (15-ounce) carton Wisconsin ricotta cheese
2 cups shredded Wisconsin Monterey Jack cheese
1 (4-ounce) can diced green chiles
1 bunch green onions, finely chopped
3 large eggs, beaten
1 (8-ounce) bag tortilla chips
2 cups (8 ounces) shredded Sharp Wisconsin cheddar cheese

Cooking Directions:
1 – Heat oil in skillet over medium high heat. Sauté green pepper and garlic until tender. Add kidney beans. Set aside.
2 – In saucepan, combine tomatoes, tomato sauce and chili powder. Bring to a boil, then reduce heat and simmer, uncovered, for 15 minutes.
3 – Add to kidney bean mixture. Combine ricotta and Monterey Jack cheeses, chiles, onions and eggs.
4 – Spread 1/4 of cheese mixture evenly in greased 13x9x2 inch glass baking dish. Arrange 1/4 of chips over cheese. Spread 1/4 of tomato mixture over chips. Repeat layer 3 more times.
5 – Cover with aluminum foil and bake at 325°F (160°C) for 30 to 40 minutes.
6 – Remove foil and top with cheddar cheese and bake 10 to 15 minutes more.
7 – Let stand 5 minutes before serving.

Makes 8 to 10 servings.

Orient Eggspress
Orient Eggspress Easily turn hard-boiled eggs, cooked brown rice and classic Asian veggies into a wholesome and delicious entrée.

Recipe Ingredients:
1 (6-ounce) package frozen snow pea pods
1 medium sweet red or green pepper, cut in julienne strips
1/4 cup water
1 (8-ounce) can sliced water chestnuts, undrained
1 (4-ounce) can sliced mushrooms, undrained
3 tablespoons teriyaki sauce
1 1/2 teaspoons cornstarch
3/4 teaspoon garlic powder
4 hard-boiled eggs, wedged
3 cups cooked brown rice

Cooking Directions:
1 – In medium saucepan, stir together pea pods, pepper, and water. Cover. Cook over medium heat until vegetables are tender, about 5 minutes.
2 – Drain liquid from chestnuts and mushrooms into small bowl or cup. Add teriyaki sauce, cornstarch, and garlic powder. Stir until smooth. Pour over vegetables. Cook, stirring constantly, until mixture boils and thickens.
3 – Stir in chestnuts and mushrooms. Gently fold in eggs. Reduce heat to low. Cook until heated throughout, about 2 to 3 minutes.
4 – To serve, spoon over cooked rice.

Makes 4 servings.

Dieter’s Delight Bison Pastrami Casserole

Bison Pastrami: It’s lean; it’s tender; it’s delicious. The healthy alternative to beef. When you purchase our ready made pastrami your order includes 2 (1 lb) packages of Sliced Corned Bison.

Dieter’s Delight Bison Pastrami Casserole

Ingredients
Ingredients:

1 (8-oz.) low-fat cream cheese, softened
2 T. instant minced onion
1/2 c. pecans, chopped (optional)
2 T. fresh green pepper, chopped
1/2 c. low-fat sour cream
2 T. skim milk
3 oz. Bison pastrami, finely chopped
1/2 tsp. white pepper

Instructions
1 – Combine all ingredients and put into 1 quart casserole dish.
2 – Bake in preheated 350° oven for 20 minutes, or until edges are bubbly.
3 – Serve with crackers or Melba toast.
Notes
Leftovers may be served cold.

Turkey Philly Cheesesteak

INGREDIENTS
1 tablespoon vegetable oil
1 large onion, thinly sliced
2 green bell peppers, sliced
½ (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins
4 baguettes, split and toasted
2 slices Provolone cheese, halved

DIRECTIONS
1) In skillet, heat oil on medium. Add onion. Cook 10 minutes until softened and golden brown. Add peppers; cook 5 minutes or until softened; set aside.
2) Grill turkey tenderloin as specified on the package. Always cook until well done, 165°F as measured by meat thermometer. Slice turkey into thin strips.
3) On baguette, place turkey, onion mixture and cheese.
* Always cook to an internal temperature of 165°F.

Chunky Santa Fe Turkey Tacos
Spice up weeknight dinner with the savory flavors of Santa Fe Tex-Mex. This taco recipe takes just 30 minutes to make and features an irresistible combination of sautéed peppers and lean turkey.

INGREDIENTS
1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets
1 tablespoon chili powder
1 tablespoon vegetable oil
1 diced yellow or green pepper
1 teaspoon ground cumin
2 teaspoons minced garlic
2 tablespoons finely chopped jalapeño
¼ cup picante sauce
1 large tomato, diced
¼ cup chopped fresh cilantro
16 soft flour tortillas
2 cups crumbled queso fresco cheese or shredded Mexican cheese

DIRECTIONS
1) Cut turkey into ½-inch thick strips; toss with chili powder.
2) Heat vegetable oil in skillet over medium-high heat. Add turkey, yellow pepper, cumin, garlic and jalapeño. Cook turkey according to package directions. Always cook to well-done, 165ºF as measured by a meat thermometer.
3) Add picante sauce. Cook, 3 minutes, stirring occasionally. Stir in tomato and cilantro. Cook 1 to 2 minutes or until hot. Spoon mixture into tortillas; sprinkle with cheese.
* Always cook to an internal temperature of 165°F.

Easy Turkey Stew

1 tablespoon canola oil
1 cup diced onion
1 cup diced carrot
½ cup diced celery
½ cup diced green pepper
1 cup diced potato
½ teaspoon dried sage
½ teaspoon ground thyme
½ teaspoon freshly ground pepper
1½ cups low-sodium chicken broth
2 ½ pounds JENNIE-O® Bone-in Turkey Pot Roast, cut into pieces
crusty bread, if desired

DIRECTIONS

1) In large saucepan, heat oil over medium-high heat. Add onion, carrot, celery and green pepper. Cook 5 minutes or until softened, stirring occasionally.
2) Add potato, sage, thyme, pepper and broth. Cook 10 to 15 minutes or until potato is cooked.
3) Stir in turkey; cook 5 minutes or until hot. Serve with bread, if desired.

Cheese Stuffed Green Peppers

These appealing cheese and rice stuffed bell peppers make a comforting and satisfying meatless entrée or a hearty side dish.

Recipe Ingredients:

6 medium green peppers
1/3 cup chopped onion
2 tablespoons butter
3 cups cooked regular rice
3 cups (12 ounces) shredded Wisconsin Cheddar cheese
2 tablespoons chopped pimento
1/2 teaspoon kosher or sea salt

Cooking Directions:

1 – Cut off tops of green peppers; remove seeds and membrane. Cook 5 minutes in boiling salted water; drain.
2 – Sauté onion in butter until golden.
3 – In a mixing bowl combine onion, rice, cheddar cheese, pimento and salt; toss to blend. Spoon into green pepper cups, packing down lightly. Place peppers upright in a 10x6x1 1/2-inch baking dish.
4 – Bake in a preheated oven at 350°F (175°C) for 25 to 30 minutes or until heated through.
Makes 6 servings.

Turkey Ham and Corn Chowder

A rich, creamy homemade broth combined with corn and turkey ham makes the perfect weeknight dinner. And at less than 300 calories per serving, comfort food just got even more comforting.

INGREDIENTS

1 cup chopped onion
1 tablespoon vegetable oil
3 tablespoons flour
½ teaspoon black pepper
4 cups milk
2 cups frozen hash brown potatoes
2 (11-ounce) cans corn with red and green peppers
¾ pound JENNIE-O® Turkey Ham, cut into ½-inch cubes

DIRECTIONS

1) In 3-quart saucepan over medium-high heat, saute onion in vegetable oil 3 minutes or until tender. Blend in flour and black pepper. Remove pan from heat; slowly add milk; stirring constantly. Return pan to heat.
2) Add hash brown potatoes; bring mixture to boil, stirring constantly. Add corn and ham; return mixture to boil. Reduce heat to low and simmer 15 minutes or until potatoes are tender and mixture has thickened.
