Today’s Menu: Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Seasoned Pinto Beans
A day of errands today. The Bank, Post Office, Meijer, and Walmart. Got a couple of Gift Cards for the family, buying some early Christmas Gifts. The storm they were warning everyone about for 2 days barely affected our area, and it didn’t come in till about 10 pm last night. For dinner tonight; Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Seasoned Pinto Beans.
Still running low on the Wild Idea Buffalo Steaks so I used a Great Range Bison Sirloin. I seasoned it with McCormick Grinder Sea salt and Black Peppercorn. No new grill yet so I pan fried it in Canola Oil, about 4 minutes per side. Medium rare with a nice char on the outside and a little pink and moist inside, love Bison or Buffalo! Topped it with some Sauteed Baby Bella Mushrooms. Steak and Mushrooms are always the perfect pairing.
For a side I had a Baked Potato that I seasoned with Sea Salt and Ground Black Pepper, topped with some I Can’t Believe It’s Not Butter. Then I also heated up a can of Margaret Holmes Seasoned Pinto Beans. First time I tried these, I picked a can up while at Walmart earlier. And as all Margaret Holmes Products they were delicious! Nicely seasoned and full of flavor. For dessert/snack later tonight a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Today’s Menu: Cheddar Buffalo Burger w/ Baked Fries
Back to a beautiful, sunny, Autumn Day, in the 20’s this morning starting out though. Not much going on today, most of my friends are in downtown Cincinnati for the Bengals late afternoon Football Game. For dinner it was a Cheddar Buffalo Burger w/ Baked Fries.
I used Great Range Ground Bison. I seasoned it with Sea Salt and Ground Black Pepper and pan fried it in Canola Oil, about 4 minutes per side. Came out medium rare with a nice char on the outside with a little pink and juicy in the middle! I made that switch to Buffalo, or Bison, quite a while back and have never missed Beef. I just love the taste of Buffalo over Beef and the way it cooks up. I served it on an Aunt Millie’s Light Whole Grain Bun and topped the Burger with a slice of Sargento Ultra Thin Sharp Cheddar. For a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Overcast day out today and not much going on. Updated the computer and ran all the cleanups and installed a new program and that was the extent of my day. For dinner it was a Cheddar Buffalo Burger w/ Baked Fries.
I used Great Range Ground Bison. I seasoned it with Sea Salt and Ground Black Pepper and I pan fried it in Canola Oil, about 4 minutes per side. Came out just like I like them, medium rare with a nice char on the outside with a little pink and juicy in the middle! I made the switch to Buffalo, or Bison, quite a while back and have never missed Beef. I love the taste of Buffalo over Beef and the way it cooks up. I served it on an Aunt Millie’s Light Whole Grain Bun and topped the Burger with a slice of Sargento Ultra Thin Sharp Cheddar. Sort of a long day today, I was dealing with those dreaded Phantom Pains again today! When these start up till the time they end I’m pretty much in shutdown mode. It’s always amazing how painful these are without the aching part, in my case left leg, being these. They have finally started to ease up towards the early evening. For dinner tonight I prepared a Bison Sirloin and Sauteed Mushrooms w/ Diced New Potatoes, Cut Green Beans, and Whole Grain Bread.
I was out of the Wild Idea Buffalo Steaks so I went with Great Range Bison Sirloin. Great range is a very good Bison Meat supplier and the only one that sold here locally, Kroger sells the Sirloins and Ground Bison Products. Their not quite the sweet and wild flavor as Wild Idea Buffalo but still a very good one. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I pan fried it in Canola Oil, about 4 1/2 minutes per side. I cooked it a tad longer than normal Bison, these were a bit thicker cut. It came out just as I like them, nice sear on the outside and a nice pink center on the inside. Served it with Sauteed Mushrooms.
The sides were complements of Del Monte again! I had Del Monte Diced New Potatoes along with Del Monte Reduced Sodium Cut Green Beans. I love Baked Potatoes but for the past month or so the Baking Potatoes around here haven’t been very good. Bad year for Potatoes maybe? For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Smucker’s Sugarless Hot Fudge Topping, good stuff!

I was out getting the morning paper, about 6:45, and checked the outside thermometer and it was 47 degrees! August 14th and 47 this morning, Amazing and I love it! The day it was only 71 with a cool breeze. I had the 4 wheel Mobility Cart out all day. For dinner I prepared a Mushroom Buffalo Burger w/ Baked Crinkle Fries.
Tried to get the grill going but couldn’t get it fired up, this is the last Summer for this grill. I used Great Range Ground Bison. I seasoned it with Sea Salt and Ground Black Pepper and since the grill was down I pan fried it in Canola Oil, about 4 minutes per side. Came out just like I like them, medium rare with a nice char on the outside with a little pink and juicy in the middle! I served it on a Healthy Life Whole Grain Bun and topped the Burger with Sauteed Baby Bella Mushrooms.
For a side to go with that delicious Buffalo Burger I baked some Ore Ida Crinkle Fries. I also had a couple of Peppadews to add some of that delicious Peppadew flavor. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

I spent some of the day with little and lovely ladies, Jaiden and Aria. Their my cousin’s two little gals and I love spending time with them. I took them out for lunch and they wanted to go to Sonic’s, so Sonic’s it was! The oldest one is going to be in third grade and the other a first grader this year. Hopefully next week I’m going to have them over for a picnic before school starts back up, starting early this year. For dinner I prepared a Sauteed Mushroom Buffalo Burger w/ Baked Crinkle Fries.
We ll the grill died again so I had to pan fry the Burger. I used Great Range Ground Bison to make my Burger.I made my pattie and seasoned it with Sea Salt and Ground Black Pepper. I pan fried it in Canola Oil and fried it about 4 minutes per side, a good medium rare with a char on the outside and a little pink in the center. Made a delicious juicy burger! I served it on a Healthy Life Whole Grain Bun and topped with Sauteed Baby Bella Mushrooms.
To go with my Burger I had Baked Ore Ida Crinkle Fries with a side of Daisy Reduced Fat Sour Cream. Made a perfect and healthier Burger and Fries. Not much going on today. I even took a rare afternoon siesta which I hardly ever do. I did go to a local farmers Vegetable stand nearby here and picked up a Watermelon and Cantaloupe up for my Mom and Dad. I can eat either but never been a huge fan of either. For dinner I prepared a Sauteed Mushroom Buffalo Burger w/ Baked Crinkle Fries.
I used Great Range Ground Bison to make my Burger. My favorite is Wild Idea Buffalo but I have a lot of the Great Range Bison in the freezer that I have to use. It’s always a good product but it doesn’t have the taste to it as Wild Idea Buffalo does. Anyway I made my pattie and seasoned it with Sea Salt and Ground Black Pepper. I pan fried it in Canola Oil and fried it about 4 minutes per side, a good medium rare with a char on the outside and a little pink in the center. Makes a delicious juicy burger! As I went to the bank and running a couple of errands I noticed how good the Corn crops are looking this year. This time last year they looked terrible from lack of any rain. This year we’ve had plenty of rain and the Corn has really flourished, good news for our farmers. For dinner I prepared a Buffalo Sirloin and Sauteed Mushrooms w/ Baked Potato, Green Beans and Whole Grain Bread.
I had a Great Range Bison Sirloin Steak froze that I wanted to use. The grill is still on the outs so I pan fried the Bison. I fried it in Canola Oil on medium heat about 4 minutes per side, seasoning it with McCormick Grinder Sea Salt and Black Peppercorn. I used Great Range Bison Sirloin, my second favorite Bison next to Wild Idea Buffalo. It came out medium rare and delicious! A little char on the outside and moist and pink in the center, Love that Bison! Topped it with Sauteed Baby Bella Mushrooms.
Along with Buffalo Sirloin and Mushrooms I prepared a Baked Potato that I seasoned with McCormick Grinder Sea Salt and Black Peppercorn and topped with I Can’t Believe It’s Not Butter. I also had a side of some leftover Green Beans my Mom I prepared yesterday along with a couple of slices of Healthy Life Whole Grain Bread. Another Sunny Spring like day outside. Got the 4 wheel mobility cart out along with my fishing pole and tackle box. Spent most of the day down by the community lake fishing. Nothing more relaxing and peaceful. Caught a few small Bass that I released back, Nice Day! For dinner; Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Sugar Snap Peas.
I used another of the Great Range Bison Sirloin Steaks. I have an order coming next week from Wild Idea Buffalo. ordered some Top Sirloin, Ground Buffalo, and premade Buffalo 1/4 lb. Burgers. So for tonight’s dinner I pan fried my Steak in Canola Oil about 4 minutes per side. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I topped it with a side of Sauteed Mushrooms. Sauteed in Butter and Extra Virgin Olive Oil and seasoned with Roasted Cumin, Thyme, and Sea Salt and Ground Black Pepper.
For side dishes I had a Baked Potato that I seasoned with Sea Salt and Ground Black Pepper and topped with Newman’s Own Pineapple Salsa. I also had Walmart Marketside Sugar Snap Peas. Love these, everybody that I’ve got to try these love them! They come in a microwavable bag. Just heat for 2 minutes and their done. Quick, easy, and delicious. For dessert later a slice of Pillsbury Nut Quick Bread topped with 2 scoops of Breyer’s Carb Smart Vanilla Ice Cream.

Today’s Menu: Buffalo Sirloin and Buffalo Shrimp w/ Baked Potato
Heavy, heavy rains since early last night, they even have posted a flood alert for the area. This weather is amazing through the Ohio Valley here! Cold and snowy to 60 degrees and sunny to rain and flooding in a matter of days. I wasn’t real sure on what to have for dinner so I dug into the freezer and found a Great Range Buffalo Sirloin Steak. So I had that and some unprepared Shrimp I had leftover from the other nights dinner to go with the Buffalo Sirloin.
So for my dinner tonight I prepared a Buffalo Sirloin along with Buffalo Shrimp and a Baked Potato. To prepare the Buffalo Sirloin I seasoned it with McCormick Grinder Steakhouse Seasoning. I pan fried it in Canola Oil about 4 minutes per side, to medium rare.
To prepare the Shrimp In a resealable plastic bag, I combined flour, Creole-style seasoning, garlic powder, ground cayenne pepper, onion powder, and ground black pepper. Seal the bag and shake a few times to combine the ingredients well. Rinse the Shrimp under cold water and place them in the plastic bag with the flour mixture. Seal the bag and shake to coat all of the shrimp well with the flour mixture. Then just fry the Shrimp on medium heat about 2 minutes per side. When done I put them in a large bowl that I had added Kroger Medium Wing Sauce to and shook until well covered with the Sauce. I love Shrimp any and all ways you can fix them! Love the heat on these. Served them with a side of Litehouse Bleu Cheese Dressing to dip them in. I also had a Baked Potato that I topped with Sea Salt and Ground Pepper along with I Can’t Believe It’s Not Butter. For dessert later tonight a Healthy Choice Chocolate Swirl Frozen Yogurt.
