Sweet Potato Minestrone
The calendar is showing October, and that can only mean one thing — we’re in sweet potato season! Perfect for warming up on a crisp fall evening, this hearty soup is jam-packed with nutrients. And with its blend of sweet potatoes, Great Northern beans, tomatoes and kale, it’s as beautifully colored as the autumn leaves

Ingredients
1 tablespoon extra virgin olive oil
3/4 cup diced onion
1/2 cup diced celery
2 cups diced peeled sweet potatoes
1 can (about 15 ounces) Great Northern beans, rinsed and drained
1 can (about 14 ounces) no-salt-added diced tomatoes
3 cups water
3/4 teaspoon dried rosemary
1/2 teaspoon salt (optional)
1/8 teaspoon black pepper
2 cups coarsely chopped kale leaves (lightly packed)
4 tablespoons grated Parmesan cheese

Directions
Yield: 4 servings
Serving size: 1 1/2 cups

1 – Heat oil in large saucepan or Dutch oven over medium-high heat. Add onion and celery; cook and stir 4 minutes or until onion is softened. Stir water, sweet potatoes, beans, tomatoes, rosemary, salt, if desired, and pepper into saucepan. Cover and bring to a simmer; reduce heat and simmer 30 minutes.

2 – Add kale; cover and cook 10 minutes or until tender.

3 – Ladle soup into bowls; sprinkle with cheese.

Note: Choose kale in small bunches with firm leaves and a rich, deep color. Avoid bunches with limp, wilted, or discolored leaves. To remove the tough stems, make a “V-shaped” cut where the stem joins the leaf. Stack the leaves and cut them into pieces.

Grape Tomato Salad with White Beans and Cucumber
Requiring just a few simple steps, the quick and easy salad with homemade dressing is high in fiber — and flavor.

Ingredients
1 cup canned Great Northern beans, rinsed and drained
1 cup grape tomato halves
1 cup 1/2-inch diced cucumber
2 tablespoons finely diced red onion
1 tablespoon finely chopped fresh cilantro
1 tablespoon extra-virgin olive oil
1 tablespoon lime juice
1/4 teaspoon salt
1/8 teaspoon black pepper

Directions
Yield: 4 servings
Serving size: 1 cup

1 -Combine beans, tomatoes, cucumber, onion, and cilantro in large bowl.

2 – Whisk oil, lime juice, salt, and pepper in small bowl. Pour over salad and mix gently.

*Note. Always be sure to rinse and drain canned beans. Rinsing and draining can eliminate up to 40% of the sodium in canned beans.

Garden Noodle Soup
Recipe Ingredients:
12 ounces medium or thin egg noodles, uncooked
1 medium onion, chopped
2 garlic cloves, minced
2 carrots, peeled and chopped
2 celery stalks, chopped
1 (14.5-ounce) can crushed tomatoes, cut up and juice reserved
3 (14.5-ounce) cans low-sodium vegetable, chicken or beef broth
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 bay leaf
2 (12-ounce) cans white cannellini or great northern beans, drained and rinsed
1/4 cup freshly grated Parmesan cheese
1/4 cup chopped parsley
1 tablespoon vegetable oil
1 1/2 cups water
Salt and freshly ground pepper to taste

Cooking Directions:
1 – Cook noodles according to package directions. Drain and set aside.
2 – While noodles are cooking, heat oil in large saucepan over medium heat. Sauté onion, stirring until pale golden, about 5 minutes.
3 – Add garlic, carrots and celery and sauté until tender, stirring occasionally, about 5 minutes.
4 – Add tomatoes and reserved juice, broth, water, oregano, basil, bay leaf, and salt and pepper to taste. Bring to a boil, then reduce heat and simmer, partially covered, about 30 minutes.
5 – Stir in the beans and cooked noodles.
6 – Remove bay leaf. Sprinkle some of the Parmesan cheese and chopped parsley on each serving of soup, or stir into saucepan prior to serving. Serve immediately.
Makes 6 servings.

Turkey Tuscan Bean and Tomato Soup
Rosemary, shallots, lean ground turkey and Great Northern Beans simmer together to create this low fat Italian soup. Topped with crunchy croutons, it’s great comfort food for cool nights.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Italian Seasoned Ground Turkey
1 tablespoon olive oil
½ cup sliced shallots or onion
3 cloves garlic, minced
2 (16-ounce) cans Great Northern Beans, rinsed and drained
1 (14.5-ounce) can seasoned diced tomatoes
2 (14.5-ounce) cans reduced-sodium chicken broth
1 tablespoon chopped fresh rosemary
¼ teaspoon freshly ground pepper
½ cup garlic or herb croutons, divided, if desired

DIRECTIONS
1) Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) In large saucepan, heat oil over medium-high heat. Add shallots and garlic; cook 5 minutes or until softened, stirring occasionally.
3) Add beans, tomatoes, broth, rosemary, pepper and turkey; bring to boil. Reduce heat; simmer, uncovered 15 minutes or until thickened.
4) Ladle into shallow bowls; top with croutons.
* Always cook to an internal temperature of 165°F.

Black and White Bean Salad

This striking side dish with great northern white and black beans is not only delicious, it’s nutritious.

Recipe Ingredients:
2 cups finely chopped red onions
2 tablespoons olive or vegetable oil
1/3 cup red wine vinegar
1/4 cup chopped red pepper
2 tablespoons minced parsley
2 cloves garlic, minced
2 tablespoons Equal® Spoonful™
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 (15-ounce) can great northern beans, drained and rinsed
1 (15-ounce) can black beans, drained and rinsed
Red pepper rings

Cooking Directions:
1 – Sauté onions in oil until crisp-tender in medium skillet; remove from heat and cool until warm.
2 – Stir vinegar, red pepper, parsley, garlic, Equal® Spoonful™ , salt and pepper into onions.
3 – Pour onion mixture over combined beans in bowl; mix well. Garnish with pepper rings.
Makes 8 servings.
