You’ve managed to talk the rest of the family into helping you with tonight’s scalloped potatoes, but now the potatoes are peeled long before you need them! To keep peeled potatoes from discoloring, place them in a bowl of cold water with a few drops of white vinegar, then refrigerate. Drain before cooking and add a small amount of sugar to the cooking water to revive some of the lost flavor.

Long night and day, dealing with a sinus infection. Every time there’s a shift in the weather my sinuses let me know! High of only in the 20’s coming this weekend they say. Our new microwave came in, just waiting to have it installed above the stove. For dinner tonight I prepared Fried Walleye w/ Au Gratin Potato Casserole, Green Beans, and Whole Grain Bread

 

 

 

I had bought a couple of large Walleye Fillets while at Costco yesterday. I cut one up and froze it and cut the other one into smaller Fried Walleye 001Fillets and prepared them for dinner. After cutting it up into smaller Fillets I rinsed them off in cold water and patted dry with paper towel. Seasoned them with Sea Salt and Ground Black Pepper. Put them in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till all fillets were well coated. I then fried them in Canola Oil on medium heat, about 3 to 4 minutes per side till golden brown! love Walleye, as I do most Fish. With Crappie their my favorite Fresh Water Fish to eat. Everyone agreed that was some of the freshest tasting Walleye I had ever purchased, so good job Costco!

 

 

 

Then for one side dish I baked a Idahoan Homestyle Au Gratin Potato Casserole. Hard to beat the Idahoan Potato Casseroles, easy to prepare and all come out delicious! I also heated up a can of Del Monte Low Sodium Cut Green Beans and a couple of slices of buttered Klosterman Wheat Bread. For dessert later a Jello Sugar Free Double Chocolate Pudding.

Oven Directions
Best for Golden Browning
PREHEAT oven to 450°F. COMBINE potatoes and sauce mix in 1 1/2 quart baking dish.
STIR in 1 1/2 cups boiling water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
BAKE uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling).
Remove from oven and let stand a few minutes before serving.
BAKING NOTES: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min. To bake potatoes and roast meat at the same time, bake at 375°F for about 45 min; 350°F for about 50 min; or 325°F for about 60 min.

Wild Idea Buffalo Buffalo Kielbasa Au gratin Casserole

 

Buffalo Kielbasa Au gratin Casserole (serves 6 to 8). A perfect casserole for family diners or easy entertaining.

 

Buffalo Kielbasa Au gratin Casserole (serves 6 to 8)

 

Ingredients: Kielbasa Au Gratin Casserole

1 – rope Buffalo Kielbasa, sliced
3 to 4 lbs. potatoes, par-boiled and chopped
¼ cup olive oil
1 small cabbage, sliced thin
1 onion, sliced thin
2 apples, peeled, cored and chopped
2 cups white cheddar cheese, finely grated
¼ cup vinegar
1 tablespoon coarse mustard
3 teaspoons salt
3 teaspoon black pepper
2 eggs, beaten
1 pint heavy cream
2 teaspoons caraway
2 cups dark rye crackers crushed

 

 

Preparation:

1.) Preheat oven to 475* Rack positioned on middle rack.
2.) Place chopped potatoes in a bowl. Mix vinegar, mustard, 2 teaspoons salt and 1 teaspoon pepper together in separate bowl until incorporated and pour over potatoes. Toss.
3.) Pour oil in bottom of heavy casserole pan and spread to cover. Spoon potatoes in pan and place in hot oven.
4.) Allow potatoes to brown, turning as needed.
5.) Remove from oven. Turn oven temperature down to 375*
6.) Toss sliced cabbage, onions and apples all together. Place mixture on top of potatoes and cover with grated cheese.
7.) Top with sliced Buffalo Kielbasa.
8.) Whip cream into beaten eggs with remaining salt and pepper. Pour over casserole.
9.) Cover casserole and bake at 375 for 30 minutes. Remove casserole and continue to bake for 15 minutes.
10.) Remove casserole from oven and turn oven to broil. Top casserole with crushed rye crackers and bake until crackers start to brown, about 7 minutes.
11.) Remove from oven and allow too rest for 5 minutes.

Use a large spoon to dish up portions. Serve with crusty bread and additional mustard to pass.

Sunday afternoon and Football is back! Opening week of the NFL and it was couch potato heaven! College football started last week and now the big boys have fired it up. Nice relaxing day of football most of the day. For dinner tonight my Mom bought some Ribs yesterday so today it was Ribs! I prepared Crock Pot Pork Back Ribs w/ Scalloped Red Potatoes and Green Beans. I also baked a loaf of Sourdough Bread for Mom and Dad.

 

 

The ribs came from Kroger, they always have top quality Pork. Last night before I went to bed I cut the Ribs in half, so they’ll fit in the Crock Pot, and put each half in a Hefty Gallon Plastic Bag then covered the Ribs in JB’s Fat Boy Hawg Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray. Got the Ribs out of the fridge, discarded the Hefty Bags, and put them in the Crock Pot where I let them cook and simmer, on low,e. for about 8 hours. Long up in the afternoon you can start smelling the aroma of the Ribs, intoxicating! After 8 hours their ready and now for the hard part of cooking them, getting them out whole without breaking them up! Their that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For all of us JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs were incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot no clean-up. Just wipe it down and store it for the next time.

 

 

For one side dish I prepared Idahoan Premium Steakhouse Scalloped Red Potatoes. As all the Idahoan Potato Products the Scalloped Red Potatoes are easy to fix and a delicious Potato Dish. The box contains the Potatoes, Sauce, and Topping. I added 2 Tbsp. of Butter, 1/2 cup 2% Milk, and Water. Just mix all the ingredients, pre-heat the oven to 450 degrees, and bake uncovered for about 25 minutes. Let it set for 5 minutes before serving, that lets the Sauce thicken up. I also heated up some Del Monte Cut Green Beans and I baked a loaf of Sour Dough Bread for Mom and Dad, I passed on the Bread to save on the carbs and calories. One fine meal that everyone enjoyed! For dessert later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

After a night and morning of heavy rains, the sun finally came out late afternoon. It’s no wonder the crops are doing so well, this is the first Summer in quite sometime we’ve had enough rain. Usually by now our lawns are brown and crops are struggling but this year everything is green! For dinner I prepared a Cast Iron Skillet Blackened Tilapia w/ Scalloped Potato Casserole, Sugar Snap Peas, and Whole Grain Bread.

 

 

Nothing better to cook in than a well seasoned Cast Iron Skillet. My Mom has three of them and all are older than me. i had the Tilapia frozen so I let it thaw overnight in the fridge. Rinsed the fillets off in water and patted dry with a paper towel. I seasoned them with a bit of Sea Salt and Ground Black Pepper. Then i melted a tablespoon of Blue Bonnet Light Stick Butter down and rubbed the two fillets down with it, covering both sides. I then covered them, both sides, with Zatarain’s Blackening Seasoning. I added Canola Oil to my Cast Iron Skillet and preheated it until the Oil was almost ready to start smoking and I added the Tilapia. Just a word of warning have your window open and overhead stove fan a working, it will smoke! I cooked the fillets for 3 minutes each side and it was fork tender and ready. As usual anything that you use Zatarain’s on it’s going to be good and this was no exception! I love the smokey and heated flavor the seasoning provides. The fillet just melted in my mouth. I could live on Fish and Seafood alone.

To go with my Blackened Tilapia I prepared a box of Idahoan Scalloped Potato Casserole. Another easy to prepare and delicious dish. A breeze to make just mix the ingredients and bake at 450 degrees for 25 minutes and you have some delicious Scalloped Potatoes. Plus their only 160 calories and 20 carbs. I also heated up a bag og of Walmart Marketside Sugar Snap Peas and a couple of slices of Healthy Life Whole Grain Bread. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Not quite as humid or hot today but it could feel a lot better outside! Thank goodness I have a good air conditioner in my car as I went to Dayton, Ohio to pick up a friend at the Dayton Airport. But as luck would have it the flight was about 45 minutes late. By the time we got back into town and I dropped him off it was getting late in the day and i forgot to lay anything out for dinner. Thank goodness for packaged meals! I went with a Hormel Simple Ideas Slow Simmered Au Jus Pork Roast and Bob Evans Oven Baked Scalloped Potatoes.

 

 

I’ve had the Hormel Simple Ideas Slow Simmered Au Jus Pork Roast before but it’s been a while. Very easy and quick to prepare. Just microwave it in its own microwave container for 5 minutes then let it cool for a minute or so and you have yourself a delicious Pork Roast. Plenty of Pork in it and very well seasoned with some tasty juices. Makes a great main dish or use it as sandwiches, which is what I did. I served it on a Healthy Life Whole Grain Bun and topped with some Woeber’s Horseradish Mustard, a perfect Mustard for Pork or Beef.

 

 

Then for a side to go with my Pork Roast another microwave, quick, and easy product, Bob Evans Oven Baked Scalloped Potatoes. This one also comes in a microwave package, just heat for 6 minutes and serve. First time I tried this and it also was delicious! Plenty of Potatoes with an excellent Cheese Sauce and seasoning. I’ll definitely use this again. So to be an all microwave meal it was a very filling and delicious meal. Plus it left me with some killer leftovers and a very easy one to clean up afterwards. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Today’s Menu: Cajun Spiced Seared Scallops w/ Brown Rice, Parmesan and Herb Red Potatoes, and Baked Artisan Multi Grain Loaf

 

 

They confirmed today my Dad is coming home Saturday from the rehab center! He’s been gone for a while now it’s going to be nice to have him home. So for dinner tonight while at Kroger yesterday I purchased some Bay Scallops, which I haven’t had in years! For Dinner; Cajun Spiced Seared Scallops w/ Brown Rice, Parmesan and Herb Red Potatoes, and Baked Artisan Multi Grain Loaf.

 

 

To prepare it I’ll need; 1 pound of Bay Sea Scallops, 2 teaspoons Cajun Seasoning, 2 teaspoons Extra Virgin Olive Oil, 1/2 teaspoon Sea Bay Scallops Brown Rice 008Salt, Dash freshly Ground Peppercorn, 1 tablespoon Extra Virgin Olive Oil, and 2 teaspoons unsalted Butter. To prepare them is quick and easy first in a food storage bag, toss the scallops gently with the Zatarain’s Cajun Seasoning, 2 teaspoons olive oil, salt, and pepper. Refrigerate for about 1 hour. Heat the 1 tablespoon olive oil and 2 teaspoons of butter in a large skillet over high heat. With tongs, arrange the scallops in the hot fat and cook for about 2 to 3 minutes on each side, or until nicely browned and your done! The Zatarain’s Cajun Seasoning is fantastic on the Scallops, nice heat and seasoning but not overpowering where you can’t enjoy the flavor of the Bay Scallops.

 

For side dishes I prepared some Uncle Ben’s Natural Whole Grain Brown Rice, not much to prepare it was the microwave single serving of Rice. The quick but still delicious way for Rice. I also prepared some more of the Idahoan Parmesan and Herb Red Potatoes. Second time I’ve had these and love them! I also baked up some more of the La Brea Bakery Take and Bake Artisan Multi Grain Loaf. I’ll have to have the Bay Scallops more often! The Scallops paired with the Parm Red Potatoes and Brown Rice is perfect! For dessert later a Jello Sugar Free Double Chocolate Pudding.

 

 

Cajun Spiced Seared Scallops
Ingredients:

1 pound Bay Scallops, about 18 to 20
2 teaspoons Cajun Seasoning
2 teaspoons Extra Virgin Olive Oil
1/2 teaspoon Sea Salt
Dash freshly ground Peppercorn

1 tablespoon Extara Virgin Olive Oil
2 teaspoons unsalted Butter
Preparation:

In a food storage bag, toss scallops gently with the Cajun seasoning, 2 teaspoons olive oil, salt, and pepper. Refrigerate for about 1 hour.

Add 3/4 cup milk and stir to combine.
Bake uncovered at 450°F for 20 minutes. Sprinkle Parmesan topping on top of potatoes and bake another 5 min.
Let stand 5 minutes, then serve.

Today’s Menu: Grilled 8 oz. Buffalo Top Sirloin w/ Sauteed Mushrooms, Baked Steakhouse Scalloped Red Potatoes, and Italian Pasta Salad

My Dad’s in a rehab center that’s on the opposite side of the County where we live and the drive is starting to get to the both of us. We’reGrilled Bison Top Sirloin 004 going to try to have moved to a closer rehab center, if we can find one that’s has an opening. It’s incredible how many people are in these centers in the area. Hopefully we can find one soon. For dinner Mom stayed and had dinner with Dad at the center and I had a Grilled 8 oz. Buffalo Top Sirloin w/ Sauteed Mushrooms, Baked Steakhouse Scalloped Red Potatoes, and a side of Italian Pasta Salad.

I used my last Wild Idea Buffalo Top Sirloin Steak, time to order more! I rubbed a little Extra Virgin Olive Oil on it, helps it not to stick to grill grate, and seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I set the timer for 4 minutes and then flipped it over for another 3 1/2 minutes for a beautiful and delicious medium rare. As I’ve said many times, “This is the best tasting Steak, Buffalo or Beef, there is!” It’s all on how their raised, free range and grass-fed. I topped it with Sauteed Baby Bella Mushrooms.
For side dishes I reheated the Baked Steakhouse Scalloped Red Potatoes I had leftover from the other night, another new favorite! Along with a small side of Italian Pasta Salad that I prepared last night. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
