Pork With Spicy Orange Cranberry Sauce
Packed with the cold-weather flavors of cranberry, orange, and cinnamon, this satisfying dish is quick and easy to throw together for supper on a busy weeknight!

Ingredients
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon ground allspice
1/4 teaspoon salt
1/4 teaspoon black pepper
4 boneless pork chops (about 1 pound)
1 tablespoon canola oil
1 cup whole-berry cranberry sauce
1/2 teaspoon grated orange peel
1/4 teaspoon ground cinnamon
1/8 teaspoon red pepper flakes

Directions
Yield: 4 servings
Serving size: 1 pork chop and 1/4 cup sauce

1. Combine chili powder, cumin, allspice, salt, and black pepper in small bowl; mix well. Sprinkle evenly over both sides of pork chops.

2. Heat oil in large nonstick skillet over medium heat. Add pork; cook 4 to 5 minutes on each side, or until barely pink in center.

3. Combine cranberry sauce, orange peel, cinnamon, and red pepper flakes in small bowl; mix well. Serve sauce with pork chops.

Orange Pecan Whole Wheat Scones
Bursting with citrus flavor from orange peel and juice and just a hint of crunch from chopped pecans, these whole-grain homemade scones are sure to delight!

Ingredients
Preparation time: 18 minutes
Baking time: 15 minutes

1/2 cup all-purpose flour
1 1/2 cups whole wheat flour
1 1/2 packed tablespoons plus 1 teaspoon brown sugar
1 teaspoon freshly grated orange peel
2 tablespoons margarine, softened
1/4 cup orange juice
3/4 cup plus 1 1/2 tablespoons reduced-fat buttermilk
1/4 cup chopped pecans
Nonstick cooking spray

Directions
Yield: 9 scones
Serving size: 1 scone

1 – Preheat the oven to 425°F. In a medium mixing bowl, combine flours, 1 1/2 packed tablespoons brown sugar, and orange peel. Cut in margarine with a fork until the mixture forms a dry crumbly dough. Stir orange juice and 3/4 cup buttermilk together in a small bowl and slowly add to crumbly dough, mixing with a wooden spoon until a sticky dough forms. Fold in chopped pecans. Spray a baking sheet with nonstick cooking spray. With floured hands, divide dough into 9 equal portions. Form each portion of dough into a triangle and place on baking sheet. Mix 1 1/2 tablespoons buttermilk and 1 teaspoon brown sugar in a small mixing bowl. With a pastry brush, brush the tops of the scones with a small amount of the buttermilk mixture. Place in the oven and bake for approximately 15 minutes until the scones are golden and cooked through. Remove and serve immediately.

Cranberry-Orange Bread Pudding
Looking for a treat? You’ll love this low-carb twist on the conventional bread pudding recipe!

Ingredients
2 cups (4 slices) cubed cinnamon bread
1/4 cup dried cranberries
2 cups low-fat (1%) milk
1/2 cup cholesterol-free egg substitute
1 package (4-serving size) vanilla fat-free sugar-free pudding and pie filling mix*
1 teaspoon grated orange peel
1 teaspoon vanilla
1/2 teaspoon ground cinnamon

Directions
Yield: 9 servings
Serving size: 1 bread pudding

1 – Preheat oven to 325°F. Spray 9 (4-ounce) custard cups with nonstick cooking spray.

2 – Divide bread cubes evenly among custard cups; bake 10 minutes. Sprinkle evenly with cranberries.

3 – Combine remaining ingredients in medium bowl. Pour into custard cups over cranberries. Let stand 5 to 10 minutes.

4 – Bake 25 to 30 minutes or until centers are almost set. Let stand 10 minutes before serving.

*Note. Do not use instant pudding and pie filling mix.

Mushroom Sage Stuffing
This dish is a deliciously different take on the Thanksgiving staple! If you’re tempted to try a new stuffing on Turkey Day, look no further than this mouthwatering recipe, which incorporates shiitake mushrooms, sage and orange peel for a side that’s sure to be a hit.

Ingredients
1/4 cup (1/2 stick) blended butter and oil baking sticks
2 cups sliced shiitake mushroom caps
1 onion, chopped
1 stalk celery, chopped
6 cups French or sourdough bread cubes, toasted
2 teaspoons minced fresh sage
1 teaspoon grated orange peel
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup low-sodium chicken broth

Directions
Yield: 8 servings

1 – Preheat oven to 325°F. Spray shallow 2-quart casserole with nonstick cooking spray.

2 – Melt butter in large saucepan or Dutch oven over medium-high heat. Add mushrooms, onion, and celery; cook and stir 5 minutes or until tender. Stir in bread cubes, sage, orange peel, salt, and pepper. Slowly stir in broth. Pour into prepared casserole.

3 – Bake 30 minutes or until stuffing is heated through and lightly browned.

Apple Butter Rolls
Requiring just five ingredients, these fruity Apple Butter Rolls are a cinch to prepare!

Ingredients
1 package (11 ounces) refrigerated breadstick dough
2 tablespoons apple butter
1 to 1 1/2 teaspoons orange juice
1/4 cup sifted powdered sugar
1/4 teaspoon grated orange peel (optional)

Directions
Yield: 12 servings
Serving size: 1 roll

1 – Preheat oven to 350°F. Spray baking sheet with nonstick cooking spray; set aside.

2 – Unroll breadstick dough. Separate along perforations into 12 pieces. Gently stretch each piece to 9 inches in length. Twist ends of each piece in opposite directions 3 to 4 times. Coil each twisted strip into snail shape on prepared baking sheet. Tuck ends underneath.

3 – Use thumb to make small indentation in center of each breadstick coil. Spoon about 1/2 teaspoon apple butter into each indentation. Bake 11 to 13 minutes or until golden brown. Remove from baking sheet. Cool on wire rack 10 minutes.

4 – Meanwhile, stir enough orange juice into powdered sugar in small bowl to make a pourable glaze. Stir in orange peel, if desired. Drizzle over rolls. Serve warm.

Chocolate Orange Bread Pudding
Cocoa and citrus make for a delightful combination in this low-fat pudding.

Ingredients
1/4 cup sugar
3 tablespoons unsweetened cocoa powder
1 1/2 cups fat-free (skim) milk
3 eggs, lightly beaten
1 to 2 teaspoons grated orange peel
1 teaspoon vanilla
3/4 teaspoon ground cinnamon
4 ounces (4 cups) cubed French baguette
1/4 cup sugar-free chocolate ice cream topping
8 maraschino cherries with stems (optional)

Directions
Yield:
8 servings

Serving size:
3/4 cup

1 – Preheat oven to 350°F. Combine sugar and cocoa in medium bowl; stir in milk, eggs, orange peel, vanilla, and cinnamon until well blended.

2 – Place bread cubes in ungreased 8-inch square baking dish. Pour milk mixture evenly over bread cubes.

3 – Bake about 35 minutes or until a knife inserted near center comes out clean. Cool 5 to 10 minutes.

4 – Spoon warm pudding into dessert dishes. Drizzle with ice cream topping and garnish with a cherry.
