A simple succotash prepared with kidney instead of lima beans

Succotash (from Narragansett sohquttahhash, “broken corn kernels” is a vegetable dish consisting primarily of sweet corn with lima beans or other shell beans.

Other ingredients may be added such as onions, potatoes, turnips, tomatoes, bell peppers, corned beef, salt pork, or okra.

Combining a grain with a legume provides a dish that is high in all essential amino acids.

Succotash has a long history. The dish was introduced as a stew to North American colonists in the 17th century by indigenous peoples. Composed of ingredients unknown in Europe at the time, it gradually became a standard meal in the cuisine of New England and is a traditional dish of many Thanksgiving celebrations in the region, as well as in Pennsylvania and other states.

Because of the relatively inexpensive and more readily available ingredients, the dish was popular during the Great Depression in the United States.[citation needed] It was sometimes cooked in a casserole form, often with a light pie crust on top as in a traditional pot pie.

Sweet corn (a form of maize), American beans, tomatoes, and peppers are New World foods.

Catherine Beecher’s 19th-century recipe includes beans boiled with corn cobs from which the kernels have been removed. The kernels are added later, after the beans have boiled for several hours. The corn cobs are removed and the finished stew, in proportions of 2 parts corn to 1 part beans, is thickened with flour.

Henry Ward Beecher’s recipe, published in an 1846 issue of Western Farmer and Gardner, adds salt pork, which he says is “an essential part of the affair.”

In some parts of the American South, any mixture of vegetables prepared with lima beans and topped with lard or butter is called succotash.

To make whiter rice, add a teaspoon of lemon juice to the water before you cook the rice. The grains won’t stick together either.

SAVORY GRAIN RECIPES – TABBOULEH
The trio of grains add an additional layer of textures and flavor. Feel free to switch out the mint with basil or dill, based on your taste. You can also sprinkle some crumbled feta on top right before serving, or better yet, serve with warm pita’s smeared with goat cheese and topped with Kalamata olives! Great as a meal itself, or use as a side dish. Next time I will make my grandfather’s recipe for Kibbeh and serve together!

Ingredients: (Recipe can easily be doubled.)

SAVORY GRAIN RECIPES – TABBOULEH

½ – prepared Kale and Kamut, about 1½ cups
½ – cup cherry tomatoes, chopped
½ – cup red onion, finely chopped
¾ – cup parsley, chopped
2 to 3 – tablespoons mint, julienned
¼ – cup lemon juice
¼ – cup olive oil
½ – teaspoon cracked pepper
pinch of chili flake – to taste
pinch of salt – to taste

Preparation:

1 – Prepare the Kale & Kamut Savory grains per direction, adding only ¾ cup water. Divide the prepared grains in half, reserving the other for later use, or use all to make a double batch for a larger group.
2 – Add the grains and vegetable to a bowl and toss to incorporate.
3 – Drizzle with the lemon and the olive oil and season to taste.
4 – Serve at room temperature or store in the refrigerator until needed, pulling an hour or so

Today’s Menu: Baked Salmon Fillets w/ Multi-Grain Medley and Sliced Carrots

 

 

 

I had a Scrambled Egg and a cup of Bigelow Decaf Green Tea for Breakfast. I had to be at the Dentist at 8:45 yesterday morning. I dread going to a Dentist more than anything but I’ve got a bad tooth and later I need more work done. I also had to go back to the family Doctor the day before and he increased my Metformin from 1 to 2 pills daily. So much stress lately he wanted me to increase for 3 months. After that we’ll do the checks again. He thinks that it’s all the stress I’ve been having for my elevated blood work. Another wait and see. For Dinner tonight I prepared Baked Salmon Fillets w/ Multi-Grain Medley and Sliced Carrots.

 


I purchased a package of North Atlantic Salmon from Meijer and had it in the freezer. To make it I’ll need the Salmon, McCormick Grinder Sea Salt and Peppercorn Medley, Dried Parsley, Dried Chive, and Extra Light Olive Oil.

 

 

 

 


To prepare it; I preheated the oven on 400 degrees. I then got a small baking pan and sprayed it with Pam Cooking Spray. I washed the Fillet off in cold water and patted dry with a paper towel. Next I put a light coat of the Extra Light Olive Oil on the Fillet and then seasoned. Lined the Fillet in the pan and baked. I baked it for 8 minutes, and done. Excellent Salmon!

 

 

 

I really enjoy the combo of Rice or Grain and Carrots with Salmon For one side to go with the Salmon I prepared a packet of the Minute Rice – Multi-Grain Medley.First time I’ve prepared this in a while. It has Brown Rice, Thai red Rice, Wild Rice, and Quinoa. Now that’s a good combo of Grains! The box contains 4 – 2 Serving Packets and easy to prepare. Combine water and the contents of one bag in medium saucepan and stir. Add oil if desired. Or, if desired, to add more flavor, substitute broth, fruit or vegetable juice for water. Bring to a boil, reduce heat, cover and simmer 10 MINUTES or until water is absorbed. Remove from heat. Fluff with fork and serve! Easy to prepare and makes one excellent side dish.

 

 

 

I also heated up a can of Del Monte Sliced Carrots. Just empty the contents into a small sauce pan , bring it to a boil, reduce the heat and simmer until heated through. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Baked Salmon Fillets w/ Multi-Grain Medley and Sliced Carrots

 

 

For Breakfast I Scrambled a couple of Eggs, fried 2 Jennie – O Turkey Breakfast Sausage Links, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Good way to start off a cold morning. How cold is it you ask, 18 degrees! Wasted no time going out to grab the morning papers! Partly cloudy and 33 degrees for a high. Cleaned the oven and did some cleaning and straightening up of all the shelves and drawers in the Kitchen. Wish I could afford new cabinets but it’s just not in the budget. For Dinner tonight I prepared Baked Salmon Fillets w/ Multi-Grain Medley and Sliced Carrots.

 

 

I purchased a package of North Atlantic Salmon, there was 2 small Fillets in the package. With the Fillets being small I prepared both of them for Dinner tonight. They were small Fillets so I only had to bake them for 8 minutes and they were done. They may be small but that was some excellent Salmon! Nicely Seasoned and flakey.
