Turkey Heartland
Rich cranberry mayo, red onion and Gouda cheese make for a delicious twist on the classic turkey sandwich. Ready in under 15 minutes and just 320 calories per serving!

INGREDIENTS

¼ cup chopped cranberry relish
¼ cup mayonnaise
1 tablespoon Dijon mustard
8 slices whole grain bread
8 ounces thinly sliced JENNIE-O® Honey Roasted Turkey Breast, from the service deli
4 ounces Gouda cheese, thinly sliced
4 thin slices red onion, separated into rings
4 leaves lettuce

DIRECTIONS

1) In small bowl, mix together cranberry relish, mayonnaise and mustard. Spread cranberry mayo on each slice of bread.
2) On 4 bread slices, layer turkey, cheese, onion and lettuce. Top with remaining bread slices and cut in half.

INGREDIENTS:
3 boneless chicken breast halves,
cooked and cubed
1 cup hickory flavored barbeque sauce
1 tablespoon honey
1 teaspoon molasses
1/3 cup brown sugar
1/2 bunch fresh cilantro, chopped
1 (12 inch) pre-baked pizza crust
1 cup smoked Gouda cheese, shredded
1 cup thinly sliced red onion
DIRECTIONS:
1. Preheat oven to 425 degrees F (220 degrees C). In a saucepan over medium high heat, combine chicken, barbeque sauce, honey, molasses, brown sugar and cilantro. Bring to a boil.
2. Spread chicken mixture evenly over pizza crust, and top with cheese and onions. Bake for 15 to 20 minutes, or until cheese is melted.

The Taste Test of Two New Items!

I’ve been seeing the commercials advertising the new McDonald’s Mighty Wings and Arby’s Smokehouse Brisket Sandwich and both looked soooo good I had to sample them! So for lunch today my Mom and Dad wanted to try them so I went out and bought Mom the Arby’s Smokehouse Brisket Sandwich and Dad the McDonald’s Mighty Wings, and I got a small sample of both.

Start with the McDonald’s Mighty Wings; McD’s got their self a winner with these wings! Nice breading and a great spicy taste. The wings were nice size and very meaty and you have a choice of a variety of dipping sauces.

Arbys Smoke House McDs Wings 004

Next the Arby’s Smokehouse Brisket Sandwich; and another winner! Not only does this one look mouth-watering on TV but looks even better when buy one. The brisket is smoked for 13 hours making it nice and tender. Arby’s Smokehouse Brisket is piled high with slow-smoked beef brisket, topped with smoked Gouda cheese, crispy onions, BBQ sauce and mayo, and served on a toasted, bakery-style bun. I couldn’t believe how good it was! It was tender and went great with the BBQ sauce and Gouda which just melted in your mouth, and I love Gouda Cheese! But the bad part about it is the calories and carbs. It’s high in both with 610 calories and 42 carbs. It is one good sandwich though.

Ground Pork Pesto Burger w/ Baked Crinkle Fries

Today’s Menu: Ground Pork Pesto Burger w/  Baked Crinkle Fries

I had a Ground Pork & Pesto Burger along with some Baked Crinkle Fries. The pesto mixed in with the Ground Pork is a perfect match! I had made up several of these and froze them. So after getting one from the freezer and thawing it out I fried the Burger in Extra Virgin Olive Oil about 4 minutes per side. It came out moist and juicy bursting with flavor. I topped it with Sauteed Baby Bella Mushrooms, a slice of Sargento Muenster Cheese and Reduced Kraft Mayo and served it on a Healthy Life Whole Grain Bun. I left the recipe at the end of the post. If you’ve never had a Ground Pork Burger you have to give them a try! As a side I had Baked Ore Ida Crinkle Fries. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Ground Pork Burgers
(Makes 4 Burgers)
Ingredients:

1 LB. Ground Pork (I used a 93/7 Blend)
1/4 Cup Basil Pesto (You can add more or less to taste)
1/4 cup Italian Style Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
4 Slices of Smoked Gouda Cheese or Muenster Cheese, Optional
Lettuce, sliced Tomato optional

Instructions:

* In a mixing bowl add your bread crumbs, pesto, and ground pork. Mix together and form into 4 Burgers
* Spray a large skillet and heat on medium heat and add 1/2 tablespoon Extra Virgin Olive Oil
* Fry the Burgers to your liking, I fried these for about 4 minutes per side.
* Serve on a Bun of your choice (I used Healthy Life Whole Grain Buns). Add Sauteed Baby Bella Mushrooms, Reduced or Lite Mayo, and a Slice of Cheese.

Lunch – Chipotle Bison Wrap

I had a Chipotle Bison Wrap for lunch today. I used the other Bison Sirloin I had grilled the other day for the Wrap. After warming I sliced thin and layered it on the Wrap. For the Wrap I used Flatout Light Original Flat bread. Love these they are 100% Whole Wheat , High Fiber, and only 90 calories and 16 carbs! I topped the Bison with JB’s Fat Boy Chipotle Sauce, sliced Deli Jalapenos, sliced Black Olives and fresh grated Smoked Dutch Gouda. Unfortunately I was out of lettuce which would have went great with this. After assembling the wrap and folding it I put it in the microwave for 35 seconds. The lean and delicious Bison along with heat of the Jalapenos, Chipotle Sauce, and the fresh and creaminess of the Smoked Gouda Cheese just makes an unbelievable Wrap! Gotta Love That Bison!
