Today’s Menu: Chicken Fried Cubed Pork Steak w/ Mashed Potatoes, White Gravy, Boiled Mini Carrots, and Biscuits

Cubed Pork Steak 006

Happy First Day of Autumn Everybody! And what a perfect Fall Day it’s been! About 42 and sunny this morning and a high of 68 and sunshine all day. Went to my Aunt’s 82nd Birthday Party this afternoon. She’s in assisted living but she’s doing pretty good. Good to see a lot of the family, and all their kids who are getting big. Then for dinner tonight I prepared Chicken Fried Cubed Pork Steak w/ Mashed Potatoes, White Gravy, Boiled Mini Carrots, and Biscuits. Nothing like a good old Country Dinner on a Sunday!

I had a package of Walmart Cubed Pork Steak in the freezer that I had laid out in the fridge overnight to thaw. Had the big three to bread them with; Flour, EggBeater’s, and Bread Crumbs. I seasoned the Flour with Sea Salt and Ground Black Pepper and I then seasoned the Egg Beater‘s with Hungarian Sweet Paprika and used Progresso Italian Style Bread Crumbs. I first rolled the Cubed Steaks in the seasoned Flour, shaking off the excess. Next I dipped them in the seasoned Egg Beater’s again shaking off the excess. The final step was to roll them in the Italian Style Bread Crumbs, making sure both sides were well covered. When that’s complete I pan fried them in a medium size skillet, in Canola Oil. Fried them until both sides were Golden Brown, about 3-4 minutes per side. They came out the perfect Golden Brown on the outside and moist and flavorful on the inside! I like using the Pork Cubed Steaks over the Beef, their more tender, less stringy, and healthier.

For side dishes I prepared my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Easy to fix and delicious. To prepare them just heat them up in the microwave for 6 minutes or so and their ready. To top my Mashed Potatoes and Cubed Pork Steak I made some Pioneer Peppered White Gravy. Another quick and easy prep and comes out piping hot and delicious. I topped both my Mashed Potatoes and Cubed Steak with it. I also boiled some Mini carrots and baked a small container of Pillsbury Grands Jr. Golden Layer Biscuits. Whole Grain Bread would have been fewer calories but Biscuits with this Dinner is perfect! For dessert later a Jello Sugar Free Double Chocolate Pudding.

Today’s Menu: Pork Cube Steak w/ Mashed Potatoes, White Gravy, and Sugar Snap Peas

I spent the morning doing some price comparing at Walmart and Kroger, you can read about that in an earlier post from today. What a beautiful morning it was this morning. I went out, about 6:30 am, and got the 2 Sunday Papers and it was a perfect morning out. Birds singing, Sunny and about 68 degrees. The sky in the east looked like a rainbow. I prepared something for dinner that I’ve never had a Pork Cube Steak, purchased at Walmart. I had a Beef Cube Steak before but never a Pork. For dinner I prepared a Pork Cube Steak w/ Mashed Potatoes, White Gravy, and Sugar Snap Peas.

Cubed Pork Steak 005To prepare the Pork Cube Steak I seasoned it with Sea Salt and Ground Black Pepper. I then rolled them through the classic seasoning and breading of Seasoned Flour, Egg Beater’s, and Panko Bread Crumbs. A fantastic trio to bread most any meat. I seasoned the Flour with Sea Salt and Ground Black Pepper, added a few shakes or more of Frank’s Hot Sauce to the Egg Beater’s, and Garlic Powder to the Panko Bread Crumbs. After breading I pan fried them in Canola Oil to a Golden Brown, about 7 minutes per side. As I said it was the first time I tried them and really liked them better than the Beef Cube Steaks, a lot more tender. I’ll be using them again!

For sides to go with the Cube Steak I heated up some Pioneer White Peppered Gravy along with Bob Evan’s Mashed Potatoes, microwave a total of 6 minutes and ready! Then I also microwaved a bag of Walmat Marketside Sugar Snap Peas . For dessert later I had bought a Bunch of Bananas while out so I’ll just have a Banana tonight.

Today’s Menu: “Surf & Turf” Bison Sirloin Steak w/ Jumbo Butterfly Shrimp, Harvest Vegetables, and Whole Grain Bread

Busy, busy, busy!! Spent part of the day at the hospital with my Dad and came home and caught up on all the house cleaning and laundry for my Mom. I’ve come to the conclusion that they need to make a vacuum cleaner for people in wheelchairs. It’s very difficult to run a sweeper in a Hoveround Mobility Chair. Might look into this and see what I can find.

On to dinner! I had Surf and Turf dinner tonight. I used a Wild Idea Buffalo Petite Top Sirloin Steak (5 oz.) for my “Turf”. I highly recommend Wild Idea Buffalo Products. I love Buffalo or Bison anyway but these Wild Idea Buffalo Steaks are the best. You have your fresh game taste but also almost a sweet taste to the Steak. To prepare it I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Canola Oil about 4 minutes per side to a beautiful and juicy medium rare. These Steaks are just so good!

On the “Surf side I used Sea Pak Jumbo Shrimp. Of course fresh Shrimp is better but if your short on time Sea Pak is your Shrimp! Easily prepared; just bake at 425 degrees for 13-14 minutes turning over once after 6 minutes. They came out Golden Brown and delicious. I also had Pictsweet Steam’ables Lightly Sauced Harvest Vegetables w/ Roasted Potatoes and a Garlic Herb Sauce. The Harvest Vegetables has sugar snap peas, carrots and roasted red potatoes in a Light Garlic Herb Sauce. A breeze to fix just microwave for 5 minutes and their done and only 90 calories and 17 carbs! For dessert later a slice of Pillsbury Nut Bread topped with a scoop of Breyer’s Carnb Smart Vanilla Ice Cream.

Harvest Vegetables with Roasted Red Potatoes and Herb and Garlic Seasoning
The rustle of leaves, chilly evenings and a good walk in the woods. It’s harvest time, and we’ve brought together sugar snap peas, carrots and robust roasted red potatoes – great vegetables of early fall to steam up for a burst of real stick-to-the-ribs flavor.
