Creamy Strawberry-Banana Tart
What’s more divine than the classic flavor combination of strawberry and banana? Indulge your taste buds with this fun and summery tart recipe!

Ingredients
1 package (16 ounces) frozen unsweetened whole strawberries, thawed
2 tablespoons plus 1 1/2 teaspoons thawed frozen orange juice concentrate, divided
1/4 cup sugar
1 envelope (1/4 ounce) unflavored gelatin
3 egg whites, beaten
1 package (3 ounces) soft ladyfingers, split
4 teaspoons water
1/2 (8-ounce) container reduced-fat whipped topping
1 medium banana, quartered lengthwise and sliced
1 teaspoon multicolored decorator sprinkles (optional)

Directions
Yield: 10 servings
Serving size: 1 slice

1. Place thawed strawberries and 2 tablespoons orange juice concentrate in blender or food processor; blend until smooth.

2. Combine sugar and gelatin in medium saucepan. Stir in strawberry mixture until well blended. Cook over medium heat, stirring frequently, until boiling.

3. Stir about half of strawberry mixture into beaten egg whites. Return mixture to saucepan. Cook, stirring constantly, over medium heat about 2 minutes, or until slightly thickened. Do not boil. Pour into large bowl. Refrigerate 2 to 21/2 hours, or until mixture mounds when spooned, stirring occasionally.

4. Cut half of ladyfingers in half crosswise. Arrange around edge of 9-inch tart pan with removable bottom. Place remaining ladyfingers in bottom of pan, cutting to fit. Blend remaining 1 1/2 teaspoons orange juice concentrate and water in small bowl. Drizzle over ladyfingers in pan.

5. Fold whipped topping and banana into strawberry mixture; spoon into ladyfinger crust. Refrigerate at least 2 hours. Sprinkle with sprinkles, if desired. Cut into 10 slices.

Quick Orange Chicken
In need of a quick meal? With this quick and easy chicken dish, there’s no need to turn on the oven. Just a few minutes in the microwave, and this delicious low-carb entrée will be ready to serve!

Ingredients
2 tablespoons frozen orange juice concentrate
1 tablespoon no-sugar-added orange marmalade
1 teaspoon Dijon mustard
1/4 teaspoon salt
4 boneless skinless chicken breast halves (about 1 pound)
1/2 cup fresh orange sections
2 tablespoons chopped fresh parsley

Directions
Yield: 4 servings
Serving size: 1 chicken breast half with about 2 teaspoons sauce and 1 ounce of orange sections

1. For sauce, combine juice concentrate, marmalade, mustard and salt in 8-inch shallow microwavable dish until juice concentrate is thawed.

2. Add chicken, coating both sides with sauce. Arrange chicken around edge of dish without overlapping. Cover with vented plastic wrap. Microwave on high 3 minutes; turn chicken over. Microwave on medium-high (70%) 4 minutes, or until chicken is no longer pink in center.

3. Remove chicken to serving plate. Microwave remaining sauce on high 2 to 3 minutes, or until slightly thickened.

4. To serve, spoon sauce over chicken; top with orange sections and parsley.

Summer Strawberry Orange Cups
Nothing says summer quite like a strawberry bursting with juicy flavor. Quick and easy to make, these perfectly portioned desserts feature these delightful fruits!

Yield: 6 servings
Serving size: 1/6 of recipe

Ingredients
2 cups fresh strawberries, stems removed, divided
1 packet (1/4 ounce) unflavored gelatin
2 tablespoons cold water
2 tablespoons boiling water
1 1/2 cups reduced-fat (2%) milk
1/2 cup frozen orange juice concentrate
1 teaspoon vanilla

Directions
Yield:
6 servings

Serving size:
1/6 of recipe

1. Cut 1 cup strawberries into thin slices; place in bottom of 6 (8-ounce) dessert bowls or custard cups.

2. Combine gelatin and cold water in small bowl; let stand 5 minutes. Add boiling water to softened gelatin; stir until completely dissolved.

3. Combine milk, orange juice concentrate and vanilla in medium bowl; mix well. Let stand at room temperature 20 minutes. Stir in gelatin mixture until well blended. Pour evenly over sliced strawberries in bowls. Refrigerate 2 hours, or until completely set.

4. Slice remaining 1 cup strawberries; arrange on top of each dessert.
