Very Strawberry Shortcake
Unlike the familiar little sponge cake, this is a sweet and tender biscuit filled with fresh strawberries that are laced with a splash of balsamic vinegar.

Recipe Ingredients:
Strawberry Filling
3 cups sliced fresh strawberries
2 tablespoons Splenda® Granulated No Calorie Sweetener
2 teaspoons balsamic vinegar

Shortcakes
2 1/2 cups reduced-fat biscuit mix
1 tablespoon Splenda® Granulated No Calorie Sweetener
1 cup plain fat-free yogurt
1 1/2 teaspoons vanilla extract
Fat-free frozen whipped topping, thawed (optional)
Mint sprigs (optional)

Cooking Directions:
1 – Strawberry Filling Directions: Stir together strawberries, 1/3 cup Splenda® Granulated Sweetener and balsamic vinegar; let stand 1 hour, stirring occasionally.
2 – Shortcake Directions: Preheat oven to 425°F (220°C).
3 – Combine biscuit mix and 1/3 cup Splenda® Granulated Sweetener in a large bowl.
4 – Stir together yogurt and vanilla; add to dry ingredients, stirring just until moistened.
5 – Turn dough out onto a lightly floured surface, and knead 3 or 4 times. Pat dough to a 1/2-inch thickness. Cut with a 2 1/4-inch round cutter, reusing dough scraps, if necessary.
6 – Place shortcakes on an ungreased baking sheet. Bake 12 to 15 minutes.
7 – Serve warm with sliced strawberries. Garnish, if desired.
Makes 12 servings.

CHOCOLATE PUDDING WITH FRESH STRAWBERRIES

Ingredients

2 tablespoons cornstarch
3 tablespoons cocoa powder
6 packets Splenda Essentials No Calorie Sweetener with Fiber, divided
1 1/2 cups skim milk
1/4 cup egg substitute
1 teaspoon vanilla extract
2 teaspoons butter
2 cups fresh strawberries, sliced
1/4 cup fat-free whipped topping

Directions

1 – Mix cornstarch, cocoa powder and 5 packets of Splenda Essentials No Calorie Sweetener with Fiber together in a small mixing bowl. Set aside.
2 – Combine milk, egg substitute, and vanilla in a small sauce pot.
3 – Whisk in cocoa powder mixture until well blended. Add butter.
4 – Heat on medium heat until thickened, stirring constantly for about 5 minutes. Remove from heat. Refrigerate until cool, about 30-40 minutes.
5 – Mix strawberries and remaining one packet of Splenda No Calorie Sweetener with Fiber. Stir well.
6 – Spoon pudding into individual serving cups or parfait dishes. Top each serving with berries and finish with 1 tablespoon of whipped topping.

Cool Strawberry Soup
Who says soup is only for cold weather? Providing a hearty dose of vitamin C, this colorful and refreshing dish featuring fresh, juicy strawberries is a cinch to prepare. It’s perfect for cooling down during the dog days of summer!

Ingredients
Preparation time: 15 minutes
Cooking time: 5 minutes.
Chilling time: 2 1/2 hours

4 cups sliced fresh strawberries (do not substitute unsweetened, frozen strawberries)
1 cup unsweetened orange juice
1 1/2 tablespoons cornstarch
12 packets NutraSweet (may add more or use less depending on sweetness of strawberries)
1 cup plain, nonfat yogurt

Directions
Yield: 3 1/2 cups
Serving size: 1 cup

1 – Place strawberries and orange juice in a blender, cover, and process until smooth. Pour fruit mixture into a saucepan and whisk in cornstarch. Place over medium-high heat and cook, whisking periodically, until the mixture comes to a boil. Reduce heat to low and cook for 1 minute, whisking constantly. Remove pan from heat and let cool 5 minutes. Whisk in NutraSweet and yogurt. Pour soup into a shallow container and refrigerate for at least 2 1/2 hours to allow for thorough chilling and blending of flavors. If desired, thin soup slightly with cold water before serving. Serve in bowls and garnish each serving with a whole strawberry and two vanilla wafers, if desired.

Strawberry Mousse
This perfectly portioned mousse is the ideal way to close out a lazy summer evening. It’s light on carbs, with only 8 grams per serving, but jam-packed with strawberry flavor!

Ingredients
1 package (4-serving size) strawberry sugar-free gelatin
1/2 cup boiling water
2 cups fresh sliced strawberries, divided
1/2 cup reduced-fat cream cheese
1/2 cup cold water
1/4 teaspoon almond extract
1 cup reduced-fat whipped topping, plus additional for garnish (optional)

Directions
Yield: 6 servings
Serving size: 1/2 cup

1. Place gelatin in small bowl. Pour boiling water over gelatin and stir until completely dissolved. Pour gelatin mixture into blender; add 1 cup sliced strawberries, cream cheese, cold water and almond extract. Blend 1 minute or until completely smooth.

2. Pour mixture into medium bowl. Thoroughly whisk whipped topping into mixture (make sure gelatin mix does not settle to bottom).

3. Pour mousse into 6 serving cups. Refrigerate at least 2 hours, or until mousse sets. Top mousse with remaining sliced strawberries and dollop of whipped topping, if desired.

Strawberries with Honeyed Yogurt Sauce
Looking for an easy but elegant dessert for your next garden party? Look no further than this simple dish. A sweet seasonal selection, it features a light sauce of yogurt, honey, cinnamon and a hint of orange over a delicate bed of fresh strawberries.

Ingredients
1 cup plain low-fat yogurt
1 tablespoon orange juice
1 to 2 teaspoons honey
Ground cinnamon
1 quart fresh strawberries, stems removed

Directions
Yield: 4 servings
Serving size: about 1/4 cup dip with about 7 strawberries (1 cup)

1 – Combine yogurt, juice, honey, and cinnamon to taste in small bowl; mix well. Serve sauce over strawberries.

Strawberry Trifle Recipe for Diabetics
Ingredients
Preparation time: 15 minutes
1 box (2.1 ounces) sugar-free, fat-free vanilla instant pudding mix
2 cups skim milk
1 pound fresh strawberries
Half of a prepared 1-pound angel food cake
1 cup lite, nondairy whipped topping

Directions
Yield: 8 servings
Serving size: 1 cup

* Combine pudding mix and milk in small bowl with an electric mixer until pudding is thickened. Remove stems and leaves of strawberries and slice. Spread half the slices over the bottom of a trifle dish or 3-quart clear glass bowl. Tear the angel food cake into small pieces (approximately 1-inch cubes) and layer half the pieces over the strawberry slices. Pour or spoon the prepared pudding over the cake pieces. Layer the remaining cake pieces, then the remaining strawberry slices, on top of the pudding. Spoon the whipped topping over the strawberries to complete the trifle. Serve at once, or refrigerate until serving.

Fresno Pork Roast
This roast is a perfect foil for springtime flavors. Serve with steamed fresh asparagus and roasted new potatoes.

Recipe Ingredients:
3 pound boneless loin roast
1 tablespoon granulated sugar
2 tablespoons cornstarch
6 ounces canned pineapple juice
6 ounces orange juice
Dash of salt
Dash of ground cloves
2 tablespoons lemon juice
1 pint fresh strawberries, hulled and sliced

Cooking Directions:
1 – Place roast in a shallow roasting pan. Bake at 350°F (175°C) for 60 to 90 minutes, until meat thermometer inserted registers 155°F to 160°F (approximately 65°C to 70°C). Remove roast from oven, let stand 10 minutes before slicing.
2 – Meanwhile, combine sugar and cornstarch in medium saucepan. Stir in pineapple and orange juices and cook, stirring, over medium heat, until mixture bubbles and thickens. Remove from heat and stir in salt, cloves and lemon juice.
3 – Serve roast with sauce, and garnish with strawberries.
Makes 4 servings.
