Today’s Menu: Baked Flounder Sandwich w/ Egg Noodles

For Breakfast I had a couple of Jennie – O Turkey Breakfast Sausage Links and 2 slices of Healthy Life Whole Grain Toast, lightly buttered. After Breakfast did some light cleaning around the house and finished up a load of laundry for Mom. I rarely buy Lottery Tickets but I went this afternoon and purchased some Powerball Tickets for tonight’s drawing of over 800 Million Dollars! They say it could even go much higher before it’s time to draw the numbers. As they say “you can’t win if you don’t play’. Not much else going on today around the house, pretty quiet. For Dinner tonight I prepared a Baked Flounder Sandwich w/ Egg Noodles.

While at Kroger a while back I purchased a package of frozen Flounder Fillets. They can be prepared by Baking and can be prepared from frozen or thawed. So I got 2 of the fillets out as I went to bed last night and let them thaw in the fridge overnight.

To prepare them I preheated the oven on 400 degrees. I then took a small baking pan lined it with foil and sprayed it with Pam Cooking Spray. Got the Flounder out of the fridge and patted them dry with a paper towel, then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley along with a dash of Garlic Salt. When the oven was ready I baked the Flounder for about 10 minutes. Not bad for frozen Fish, good flavor and baked up nicely. Just the right size for small Hoagie Buns. I used Aunt Millie’s Deli Style Whole Grain Mini Sub Buns and topped the fillet with McCormick Fat Free Tartar Sauce.

For side dish I had planned on Mac and Cheese but my Mom had prepared a bag of Inn Maid Amish Egg Noodles as part of her and Dad’s dinner she had prepared for their dinner, so I just used the leftovers for my dinner. First time I had tried that brand of Egg Noodle and really liked them. I don’t have Egg noodles a lot because of the higher calories and carbs but I hadn’t had any in quite a while so they sounded good. Just reheated them a bit and reseasoned with Morton’s Lite Salt and Ground Black Pepper along with a pat of I Can’t Believe It’s Not Butter. Enjoyed the meal tonight, bit of an odd combo but enjoyed it! For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Another cold and foggy morning out. Went out to get the morning paper and the fog mist was freezing on the ground in some areas. Fried up some Glier’s Turkey Goetta for Breakfast along with a Scrambled Egg and 2 slices of toasted Aunt Millie’s Light Whole Grain Bread. Throw in a cup of Bigelow Decaf Green Tea and the morning papers, I was set to start the day! Not a whole lot going on today. Did some laundry and cleaned up around the house. For dinner tonight I prepared Pan Fried Flounder w/ Cut Italian Green Beans and Whole New Potatoes.

When I was at Kroger yesterday I just couldn’t pass up a couple of items in their Seafood Department. They had some beautiful Flounder Fillets and Bay Scallops, best looking Bay Scallops I’ve seen in a while! So I’m preparing the Flounder for my dinner tonight.

 

 

Start by washing the fillets in cold water and pat dry. I’ll need the following; Flounder Fillets, Flour, Sea Salt, Pepper, Garlic Powder and Hungarian Smoked Paprika, Egg Beater’s, and Shake and Bake Panko Bread Crumbs. Then I’ll be using 3 bowls for Breading the Flounder:
Bowl 1 – combine Flour, Sea Salt, Pepper, Garlic Powder and Hungarian Smoked Paprika
Bowl 2 – 1/4 cup Egg Beater’s
Bowl 3 – Shake and Bake Panko Bread Crumbs

Then bread the fillets. Dip the fillet in the Egg Beater’s, let excess drip off. Coat the fillets in the Flour-Spice mixture, dip in the Egg Beater’s again. Coat in the Panko. Then heat up a Cast Iron Skillet, over medium high. Add Extra Virgin Olive Oil to fully coat the bottom of the pan. The oil should be hot. Place the fillets in the hot oil, don’t overcrowd the skillet. Turn pan down to medium. Fry them 3 minutes per side. That time may be less or more depending on the size of the fillets. The fillets came out golden brown and delicious! A perfect combination of Spices gives a fantastic flavor.

Then for one side dish I heated a can of Allens Cut Italian Green Beans. My Aunt had grown some in her garden and brought us over some last Summer and loved them. Then just the other day while at Kroger I came across the Allens Cut Italian Green Beans, so I bought 4 cans of them. Prepared 1 can tonight. Just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea salt and it’s ready!

Then for another side I heated up a can of Del Monte Whole New Potatoes. Just heat and serve, seasoned with McCormick Grinder Sea Salt and Black Peppercorn Medley, Parsley, and I Can’t Believe It’s Not Butter. Another favorite that’s just heat and serve. Also had a slice of Aunt Millie’s Light Whole Grain Bread. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Flounder are a group of flatfish species. They are demersal fish found at the bottom of coastal lagoons and estuaries of the Northern flounderAtlantic and Pacific Oceans.

 

There are a number of geographical and taxonomical species to which flounder belong.
* Western Atlantic
* Gulf flounder – Paralichthys albigutta
* Southern flounder – Paralichthys lethostigma
* Summer flounder (also known as fluke) – Paralichthys dentatus
* Winter flounder – Pseudopleuronectes americanus
* European waters
* European flounder – Platichthys flesus
* Northwestern Pacific
* Olive flounder – Paralichthys olivaceus

 

In its life cycle, an adult flounder has two eyes situated on one side of its head, while at hatching one eye is located on each side of its brain. One eye migrates to the other side of the body as a process of metamorphosis as it grows from larval to juvenile stage. As an adult, a flounder changes its habits and camouflages itself by lying on the bottom of the ocean floor as protection against predators. As a result, the eyes are then on the side which faces up. The side to which the eyes migrate is dependent on the species type.

 

Flounder ambush their prey, feeding at soft muddy areas of the sea bottom, near bridge piles, docks and coral reefs. They have been found at the bottom of the Mariana trench, the deepest known ocean canyon. Swiss scientist Jacques Piccard and US Navy Lt. Don Walsh reached a depth of 10,916 meters (35,814 ft) and were surprised to discover sole or flounder about 30 cm long.
A flounder’s diet consists mainly of fish spawn, crustaceans, polychaetes and small fish. Flounder typically grow to a length of 12.5–37.5 centimeters (4.9–14.8 in), and as large as 60 centimeters (24 in). Their width is about half their length. Male Platichthys are known to display a pioneering spirit, and have been found up to 80 miles off the coast of northern Sardinia, sometimes with heavy encrustations of various species of Barnacle.

 

World stocks of large predatory fish and large ground fish such as sole and flounder were estimated in 2003 to be only about 10% of pre-industrial levels, largely due to overfishing. Most overfishing is due to the extensive activities of the fishing industry. Current estimates suggest that approximately 30 million flounder (excluding sole) are alive in the world today. In the Gulf of Mexico, along the coast of Texas, research indicates the flounder population could be as low as 15 million due to heavy overfishing and industrial pollution.
According to Seafood Watch, Atlantic flounder and sole are currently on the list of seafood that sustainability-minded consumers should avoid.

 

A flounder plays a prominent role in the German folk tale “The Fisherman and His Wife” collected by the Brothers Grimm and in Günter Grass’s novel The Flounder.
“Flounder” is the nickname given to the character Kent Dorfman (played by actor Stephen Furst) in the classic 1978 comedy film, Animal House.
