Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Fries

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, fried 2 Jennie – O Turkey Breakfast Sausage Links, and made a cup of Bigelow Decaf Green Tea. Another beautiful day out there again a bit more windy but sunny and 61 degrees!. After Breakfast did some light house cleaning and started Mom’s laundry for her. After Lunch I had to back to the store, Meijer was out of all its Aunt Millie’s Reduced Fat Buns and Bread. So I went back to pick some up. Back home not much else going on. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.

 

 

Purchased the Cod Loin Fillets at Kroger and had them in the freezer. So I laid a fillet in the fridge overnight to thaw. To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish which makes for one excellent Fish Sandwich.

 

For my Fries I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling meal. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

 

 

 

Panko Crusted Cod Fish Sandwich

Ingredients:

(4) 4oz. Orange Roughy or Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Extra Virgin Olive Oil

Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.
* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

For Breakfast on this beautiful Sunday Morning I reheated 3 of the Potato Pancakes leftover from last night’s Dinner, love these things! I also toasted 2 slices of Healthy Life Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. Another gorgeous day out there again. Sunny and 75 degrees, and no humidity. It’s unusual for this area to have weather like this at the end of June. Usually the high humidity has set in for the Summer and high temps. After Breakfast I headed to Meijer for a few items and picked up Breakfast for Mom and Dad at McDonald’s for them. Did a load of laundry and some light house cleaning, not a lot going on after that. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs.

Then for a side dish I prepared I had some Alexia Potato Puffs, that I had leftover in the freezer. To prepare them; Preheat the oven to 425 degrees F. Arrange the frozen potatoes in a single layer on a baking sheet lined with foil. Baked for 25, stirring halfway through the cooking time. Excellent Potato Product, browned up perfect with excellent seasoning. For dessert later a 100 Calorie Breyer’s Vanilla Ice Cream Cup that I topped with some Smucker’s Sugar Free Hot Fudge Topping.

For Breakfast I had a toasted Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam and a cup of Bigelow Decaf Green Tea. Mostly cloudy and 82 degrees. More rain moving back in tonight. Along with that the pollen and spore count is high today, and I can tell it with my allergies! We had to have Dad at the optometrist at 9:00 this morning, he needs new glasses. Back home did a few things around the yard and shed and then took the cart out for a spin around the neighborhood. For dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs.

Today’s Menu: Seasoned Gulf Coast Grouper Sandwich w/ Baked Fingerling Potato Wedges

 

 
For my Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and Scrambled 2 medium size seasoned-gulf-coast-grouper-sandwich-w-baked-fingerling-potato-w-007Eggs. Also had a cup of Bigelow Decaf Green Tea. Very good way to start off this cold Friday Morning. Rolled out to get the morning papers and it was cold out, 19 degrees and a wind chill near 9 degrees! And we had our first snow of the year, not much but traces on the grass and rooftops. For the day mostly cloudy and only a high of 29 degrees. Cleaned the house this afternoon, run the vacuum, dusted, and such. Back to bed afterwards, still not feeling real good. For Dinner tonight its a Seasoned Gulf Coast Grouper Sandwich w/ Baked Fingerling Potato Wedges.

 

 
I love Fish and Seafood, especially this Florida Gulf Coast Grouper my friends bring me up from Florida! I had a filletseasoned-gulf-coast-grouper-sandwich-w-baked-fingerling-potato-w-002 in the freezer so I sat it in the fridge to thaw overnight. To prepare the fillet I seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until it was well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a 1/2 tablespoon of Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillet, frying about 3 minutes per side until golden brown. The fillet came out Golden Brown and Delicious! I served it on a Healthy Life Whole Grain Hamburger Bun.

To go with the Fish Sandwich I baked some Fingerling Potato Wedges. I purchased these at Jungle Jim’s last week and prepared what was left of them. To start I first washed the Potatoes off in cold water and patted dry with a paper towel. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. I love Fingerling Potatoes! I had a Peach Diet Snapple to drink with the meal. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

It’s another beautiful Spring morning here in West Chester! For Breakfast I toasted a Healthy Life Whole Grain English Muffin that I lightly buttered with I Can’t Believe It’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Cleaned the house this morning, dust and vacuum. Everything done got the cart out and enjoyed the day, sunny and 70 degrees! Glad the warm temps and sun are back. For dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Crinkle Fries.

I had purchased the Cod from Kroger yesterday. To prepare the Cod I rinsed the fillet off with cold water and patted dry. I then cut the fillet in half. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and saute 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter which way you cook it. Plus it’s so meaty.

I also baked some Ore Ida Crinkle Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Ingredients:

(4) 4oz. Orange Roughy or Cod FilletsPanko Crusted Veal Cutlet w Jalapeno Cheese Fried Potatoes and 001
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to tastePanko Crusted Cod Fish Sandwich w Potato Pancakes 001
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Extra Virgin Olive Oil

Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.

Started my morning off with a Egg Beater’s Egg White Scrambled, a slice of Boar’s Head Black Forest Ham, served on a Healthy Life Whole Grain English Muffin. A lot colder out there today, it was 33 degrees this morning and one cold wind blowing. The day didn’t warm up much, sunny and a high in the 30’s. Gave Mom a hand cleaning out their bedroom walk-in closet, a lot of clothes headed to Good Will. After that it was house cleaning time, dusted and vacuumed. For dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Tater Tots.

 

 
I had purchased the Cod from Kroger and had it in the freezer. I laid 2 small fillets in the fridge overnight to thaw. To prepare the Cod I rinsed the fillets off with cold water and patted dry. Then to go with the Fish Sandwich I prepared some Tater Tots. Love those Tater Tots and I always use Ore Ida Mini Tater Tots. Just bake at 425 degrees for about 15 minutes and done! I baked these at the same time I baked my Gorton’s Fish Fillet, 1 pan and easy clean up. The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. Fish and Potatoes, a perfect pairing. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Deep Fry: Caution: Ice crystals on frozen foods can cause spattering when added to hot oil. Add product carefully. Tips for Frying with Oil: Always preheat oil uncovered. If oil splatters, cover immediately and reduce heat. When splattering stops, remove cover and return to cooking temperature. Be careful not to spatter or spill oil onto hot burner of range. 1. Preheat cooking oil in electric deep fryer to 375 degrees F, check oil temperature. Fill deep fryer not more than half full of oil. 2. Fill fryer basket not more than half full of frozen mini tater tots. Carefully lower basket into hot oil. 3. Fry 3-4 minutes. Cook to a light golden color. 4. Drain on paper towels. Season to taste.

Started my morning off with a Simple Life Turkey Sausage Breakfast Sandwich. After Breakfast I went to Kroger for a few things and stopped by McDonald’s to pick up Breakfast for Mom and Dad. They went to Church this morning after Breakfast. While they were out I did a load of laundry and did some light house work. It started snowing on and off about noon and throughout the day. They say by morning the wind chill will be around -10 to -15 degrees, BRRR! Had everything done around the house so I kicked back and watched some Football and watched a couple of movies that i had recorded. For dinner tonight my favorite Fish sandwich. I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Crinkle Fries.

Had a light Breakfast, Eggo’s, and then off to Meijer for a few items. Rainy and dreary out to start the day but the clouds cleared and the sun came out. Beautiful day out to be December 22, sunny and a high near 60 degrees! Christmas Day they said we could break a record high. They say we’re getting this weather due to the El Nino Winds. Did some cleaning around the house and deck outside and even got the cart out of the shed for a while today. For dinner tonight it’s a Panko Crusted Cod Fish Sandwich w/ Mac and Cheese.

To prepare the Cod I’ll need; Shake and Bake Seasoned Panko, Sea Salt and Ground Black Pepper (to taste), 1 tsp. Onion Powder, 1/2 tsp. Garlic Powder, 1/2 tsp. Paprika, 1/2 c. Egg Beater’s, 1/2 c. Flour, and 1 Tbs. Extra Virgin Olive Oil.

Meanwhile, heat Extra Virgin Olive Oil in a skillet and place the fillets in and saute 3 minutes each side, or until fillets are heated through and Panko Crust has browned. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun.

 

I also prepared a Stouffer’s Classic Mac and Cheese Cup. Frozen individual Mac Cups, just microwave and serve. Finally a great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.
* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.
