Today’s Menu: Hickory Smoked Ham and Swiss Sandwich w/ Baked Fingerling Potato Wedges and Green Beans

 

 

 


For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham,and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns and served.And had my morning cup of Bigelow Decaf Green Tea. Partly sunny and a bit more humid outside today. I took Mom’s car up to be washed then stopped by the ATM, the Post Office, and stopped and got gas. Back home, kicked back the rest of the afternoon. For Dinner tonight I prepared a Hickory Smoked Ham and Swiss Cheese Sandwich w/ Baked Fingerling Potato Wedges and Green Beans.

 

The other day at Meijer I bought a Kentucky Legend Hickory Smoked Ham. It was a small 2 1/2 lb. Ham, and it looked delicious as always! I’ve baked a couple of these now and really enjoy them. Having it for Dinner tonight.

 

 

 

 

To prepare it; Preheat oven to 350 degrees Fahrenheit. Remove the Kentucky Legend ham from the packaging and place it in a baking dish that’s at least 2 inches deep. Add enough water to just cover the bottom of the pan. Cover the baking dish with aluminum foil. Crimp the edges of the foil tightly over the pan edges to prevent steam from escaping. Place the baking dish into the oven and heat the ham until a meat thermometer shows an internal temperature of at least 140 degrees Fahrenheit. The amount of time this takes depends on the size and shape of the ham. Mine took 80minutes. When the Ham is heated through, remove the baking pan from the oven. Leave the foil on the pan for 15 minutes to rest the meat before removing it and carving.

 

I then began slicing it, I sliced it somewhat thin. I’m using Aunt Millie’s Light Whole Grain Bread and I’ll need Boar’s Head Imported Switzerland Swiss Cheese. I assembled my Sandwich, Ham, French’s Spicy Brown Mustard, served on Aunt Millie’s Light Whole Grain Bread. What a Sandwich! The Ham is delicious and moist. Excellent Ham Sandwich! Mom thought it was one of the best tasting Hams she ever had, and I agree! We had plenty of leftovers. Kept some out for Breakfast and froze another bag.

 

 

 

For a side I prepared some more of the Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area. Still only 1 store around here locally that sells them, so thank you Jungle Jim’s!

 

 


I also heated up some leftover Green Beans. These are the fresh Green Beans we had purchased from Jungle Jim’s Still delicious! Quite a Dinner tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Seasoned Haddock w/ Fresh Green Beans and Baked Fingerling Potato Wedges

 

 

For Breakfast on this rainy Thursday Morning I prepared a Scrambled Egg, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. After Breakfast I drove Mom back to Jungle Jim’s. She wanted another bag of the Green Beans and picked up some Beets. Back home it was back to canning the rest of the Green Beans. Then Mom canned the Beets she had bought. Another busy day of canning. For Dinner Tonight I prepared Seasoned Haddock w/ Fresh Green Beans and Baked Fingerling Potato Wedges.

 

 

 


While at Jungle Jim’s International Market I just had to go to their Seafood Department! I picked some Haddock, they just got the Haddock in and I to wait a bit until they had it ready. Then I also picked up a an Orange Roughy Fillet, New Zealand caught. I love their Seafood Department, in fact I love the whole store! I’m having the Haddock tonight!

 

 

 

To prepare it I rinsed the fillet off in cold water and patted dry with a paper towel. Next I sliced it in half. So to prepare it I seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until both pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

 

 

For a side I cooked up some of the fresh Green Beans we bought at Jungle Jim’s. Had to string them and break them up. Then boiled them with a piece of Fatback Pork in the kettle. Love these fresh Green Beans! And we 14 quarts of canned Beans now!

 

 

 

 

 

Then for another side I prepared some Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area. Still only 1 store around here locally that sells them, so thank you Jungle Jim’s! I also baked a loaf of RiverRoad Bake House The family’s favorite Baked Bread. And Meijer is the only store that sells this around here. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

For Breakfast this morning I had another of the al fresco Apple Maple Chicken Sausage Breakfast Patties. I love this Sausage, so good! I found more of these at Meijer the other day and picked a few of the packages up. I love making these and making them into a Breakfast Sandwich, the patties are the perfect size for English Muffins. I fried the patty for 8 minutes and as that was cooking I toasted a Healthy Life Whole Grain English Muffin. Along with my Breakfast Sandwich I had that morning cup of Bigelow Decaf Green Tea. Passing showers this morning and then mostly sunny and 75 degrees. I got my cart out of the shed and cleaned it today, a much needed cleaning!Then repotted a couple of plants for Mom. For Dinner tonight its Seasoned Haddock w/ Oven Roasted Fingerling Potatoes and Mini Ears of Sweet Corn.

 
I had purchased 2 Haddock fillets from Kroger a while back. I had rinsed both fillets and cut into smaller pieces. I ended up with 3 bags, I had one the day I purchased them and having the last bag tonight. So I grabbed one of the plastic bag and laid it in the fridge overnight to thaw. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. I also boiled some Green Giant Mini Ears of Sweet Corn. If you’ve never tried the Green Giant Corn you need to! It’s frozen Mini Ears of sweet Corn and you just boil for 10 minutes and you have some of the Sweetest Corn you can find! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

 

 

 

 

Oven-Roasted Fingerling Potato Fries

Ingredients:

Fingerling Potatoes
Extra Virgin Olive Oil
Garlic Powder
Sea Salt
Pepper
Chili Powder
Kraft Reduced Fat Parmesan Grated Cheese
Directions:

1.) Thoroughly clean and scrub the potatoes.

2.) Cut the potatoes in half and add to a large mixing bowl.

3.) Add the olive oil. I used about 1 tablespoon, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.

4.) Put on a baking sheet and sprinkle with the Parmesan Grated Cheese

5.) Roast in the oven for 25-35 minutes at 450 degrees. The potatoes should be tender in the middle when done.

Today’s Menu: Seasoned Gulf Coast Grouper Sandwich w/ Baked Fingerling Potato Wedges

 

 
For my Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and Scrambled 2 medium size seasoned-gulf-coast-grouper-sandwich-w-baked-fingerling-potato-w-007Eggs. Also had a cup of Bigelow Decaf Green Tea. Very good way to start off this cold Friday Morning. Rolled out to get the morning papers and it was cold out, 19 degrees and a wind chill near 9 degrees! And we had our first snow of the year, not much but traces on the grass and rooftops. For the day mostly cloudy and only a high of 29 degrees. Cleaned the house this afternoon, run the vacuum, dusted, and such. Back to bed afterwards, still not feeling real good. For Dinner tonight its a Seasoned Gulf Coast Grouper Sandwich w/ Baked Fingerling Potato Wedges.

 

 
I love Fish and Seafood, especially this Florida Gulf Coast Grouper my friends bring me up from Florida! I had a filletseasoned-gulf-coast-grouper-sandwich-w-baked-fingerling-potato-w-002 in the freezer so I sat it in the fridge to thaw overnight. To prepare the fillet I seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until it was well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a 1/2 tablespoon of Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillet, frying about 3 minutes per side until golden brown. The fillet came out Golden Brown and Delicious! I served it on a Healthy Life Whole Grain Hamburger Bun.

To go with the Fish Sandwich I baked some Fingerling Potato Wedges. I purchased these at Jungle Jim’s last week and prepared what was left of them. To start I first washed the Potatoes off in cold water and patted dry with a paper towel. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. I love Fingerling Potatoes! I had a Peach Diet Snapple to drink with the meal. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Fried Shrimp w/ Baked Fingerling Potatoes and Roasted Butternut Squash

 

 
For Breakfast this morning I made a favorite, Skillet Potatoes and Ham. I used 1 package of Simply Potatoes fried-shrimp-w-baked-fingerling-potatoes-and-roasted-butternut-s-008Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped everything with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar and a fried Sunny Side Up Egg. Mom and Dad wanted McDonald’s again so I went there to pick up Breakfast for them. Today was the funeral for my god friend that passed away a couple of days ago. May he rest in peace. Back home didn’t do a whole lot, just relaxed and watched some College Football. For Dinner tonight I prepared Fried Shrimp w/ Baked Fingerling Potatoes and Roasted Butternut Squash

While at Kroger yesterday I seen they had some more of the huge Freshwater Shrimp, and couldn’t pass those up! I rinsed them off in cold water and removed the shells, they were already deveined. To prepare these I’m using Zatarain’s Shrimp Fri – Seasoned Seafood Breading Mix. I used this for the first time just last week and I’m using it again.

 

 

 
Poured about 1 inch of olive oil into large skillet. Heat oil to 350°F on medium heat. Take the peeled shrimp, mix 1/2 fried-shrimp-with-rotini-and-cheese-006cup Zatarain’s Seasoned Shrimp Fri with 1/2 cup water in medium bowl. Pour additional 1/2 cup Shrimp Fri onto plate or into plastic bag. Dip shrimp in the batter. Shake off excess. Roll or shake shrimp in remaining 1/2 cup Shrimp Fri until evenly coated. Discard any remaining batter in bowl or Shrimp Fri on plate or in plastic bag. Fry the shrimp, a few pieces at a time, in hot oil until light golden brown. Drain on paper towels and served. The Zatarain’s Shrimp Fri is an excellent breading for Shrimp! Nice light coating with good flavor.

 

 
Then for one side I prepared Baked Fingerling Potatoes. I used the remainder of Fingerling Potatoes that I had Sweet Asian Wings fingerling fries 001purchased at Jungle Jim’s the other day. To start I first washed the Potatoes off in cold water and patted dry with a paper towel. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. I love Fingerling Potatoes, probably my favorite Potato. Just love how easy they cook up and taste.

Then for another side I prepared some Roasted Butternut Squash, easy recipe for some delicious Butternut Squash! I purchased 2 small packages of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 2 packages of Diced Butternut Squash, 2 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.

To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the Olive Oil, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! For Dessert later a Weight watcher’s Cookies and Cream Ice Cream Bar.

 

 

 
ZATARAIN’S® Seasoned Shrimp Fri®

Zatarain’s Seasoned Shrimp Fri combines a unique blend of ingredients for crispy, golden and easy-to-make shrimp every time. The delicious, golden coating is perfect for shrimp and even fried vegetables – with real lemon added.

DEEP FRYING DIRECTIONS

4. FRY shrimp, a few pieces at a time, in hot oil until light golden brown. Drain on paper towels.

PAN FRYING DIRECTIONS
1. POUR 1 inch of vegetable oil into large skillet. Heat oil to 350°F on medium heat.
2. COAT and fry shrimp as directed above.

Note: For thicker coating, dip shrimp in 1/2 cup milk mixed with 1 lightly beaten egg. Shake off excess. Roll or shake shrimp in Shrimp Fri. Repeat.

Today’s Menu: Blackened Gulf Coast Grouper w/ Baked Fingerling Potatoes, Cut Green Beans, and French Bread

 
I was awakened about 3:00 this morning by the severe storms that moved through the area. Heavy wind, hail, and some heavy rain. It slowed up and I fell back to sleep and then around 5:00 this morning the next round came Blackened Gulf Coast Grouper Baked Fingerling Potatoes 007through. We had some trees down and flooding in the area, no damage around here though. So after all the excitement I woke up hungry! I prepared a couple of Jennie – O Turkey Breakfast Sausage Links, 1 Egg Sunny Side Up, 2 slices of toasted Healthy Life Bread, and a cup of Bigelow Green Tea. Not a bad way to start the day! After Breakfast did a load of laundry. After that I ran the vacuum, and dusted (hate dusting). After Lunch I headed over to spend the afternoon with Dad at the rehab center, he’s being released on the 28th of this month. Been 2 months since he’s been home. For dinner tonight it’s Blackened Gulf Coast Grouper w/ Baked Fingerling Potatoes and Cut Green Beans.

I’m using the Florida Gulf Coast Grouper my friends dropped off to me yesterday on their return from Florida. It’s another one of those beautiful Grouper fillet! To prepare it I rinsed the fillet off in cold water and patted it dry with paper towel. Then I cut it into smaller pieces. I then seasoned them it with a bit of Sea Salt. Then I melted 1 tablespoon of Blue Bonnet Lite Butter and rolled the fillet in the Butter. I then added the Zatarain’s Blackening Seasoning, coating both sides of the fillet.

I prepared it in a preheated Cast Iron Skillet that I sprayed with Pam Cooking Spray. When the pan was fully heated, on medium heat, I added my Grouper. At this point turn on your Stove Overhead Exhaust Fan on, because it will start smoking from the seasoning. Cooked it about 4 minutes per side, and it was ready! Cast Iron Skillets are perfect to use for any cooking but especially when you Blacken something. The Skillet heats up and holds it heat and the heat evenly distributes across the Skillet, perfect for Blackening Meats. This is one delicious Grouper! The fresh taste of the Grouper, so meaty, along with the Blackening Season are a perfect combo. Love Fish, Love Seafood! Plus as you can tell as big as this filet was I only had half of it for dinner. The other half for lunch tomorrow!

 
Then I also Baked some Fingerling Potatoes, picked up a bag at our local Kroger. They come in a small bag, Melissa’s Fingerling Potato Medley. It’s a variety of 4-5 different Potatoes including Fingerling Potatoes, which I love using! ToFingerling Potatoes Bag prepare them I started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Love those Potatoes! Perfect side dish for any dinner, especially Fish.

 

 

French Bread
Then I also heated up a small can of Del Monte Cut Green Beans. I also baked a loaf of Pillsbury French Bread. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Today’s Menu: Blackened Gulf Coast Grouper w/ Baked Fingerling Potatoes, Cut Green Beans, and Whole Grain Bread

 
Restless night last night. It seemed like I woke up every hour on the hour. I was awake at 6:Blackened Gulf Coast Grouper Baked Fingerling Potatoes 00700 this morning and just stayed up. For Breakfast it was an Eggo Waffle and a cup of Bigelow Decaf Green Tea. After Breakfast I did a load of laundry and some cleaning around the house. Later on after Lunch I took the car out and had it washed and the inside cleaned. They had to take Dad from the rehab to the family doctor, he has an inner ear infection. Just when it seems he’s getting stronger and making progress he has a set back. We hope to have him home soon but it looks like it’s going to be a bit longer. So for Dinner tonight I prepared a Blackened Gulf Coast Grouper w/ Baked Fingerling Potatoes and Cut Green Beans.

I’m using the Florida Gulf Coast Grouper my friends bring me back from when they return from Florida, I had it in the freezer. I got one of the fillets out of the freezer and let it thaw overnight in the fridge. It’s one beautiful Grouper fillet! For breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and I reheated a slice of the Cubed Steak leftover from last night’s dinner. Made a great Breakfast Sandwich! Cold and overcast out today, just an overall dreary day. My back is still giving me problems but it is slowly getting better. Stayed busy today cleaning. Helped out with some laundry for Mom and then dusted and vacuumed the house. For dinner tonight it’s a Crab Cake Slider w/ Roasted Finger Potatoes.

I’m using the Kroger Private Selection Maryland Style Crab Cakes. They come frozen and there’s 2 to a box. To prepare them just preheat the oven on 400 degrees and bake for 30 minutes. Nothing beats a fresh made Crab Cake, but these are too good to be frozen! They’re just the right size, about 3.5 ounces each, and full of flavor. Baked them for about 30 minutes and they were done. Served then on a Pepperidge Farm Wheat Slider Buns. Topped them with Louisiana Remoulade Dressing. This makes one delicious Slider! The taste of the Crab Meat and Remoulade Sauce is perfect together! If you want one flavorful Remoulade Sauce you have to try the LOUISIANA Remoulade Dressing. This sauce is incredible and is good on about anything you put it on!

Then I also Baked some Fingerling Potatoes. I actually found some other than Jungle Jim’s Market, found them finally at the Kroger up the road from us! Today’s Menu: Fried Walleye w/ Cut Italian Beans and Baked Fingerling Potatoes

 
For Breakfast I reheated a couple of Pork Tenderloin Medallions I had leftover from dinner the other night. With the Fried Walleye w Cut Italian Beans and Baked Fingerling Potatoes 002Pork I scrambled 1 medium size Egg and toasted a Healthy Life Whole Grain Muffin. It was in the 40’s early this morning but the temps started dropping after that, snow flurries in the late afternoon. Had to head to Home Depot, needed to buy a new faucet for the kitchen sink. It started leaking around the base. Then later in the day our local repairman come by and installed it. Another minor job that’s tough to get to from a wheelchair unfortunately, just a little frustrating sometimes. So for dinner tonight I prepared a Fried Walleye w/ Cut Italian Beans and Baked Fingerling Potatoes.

 

 

 

Fried Walleye w Risotto and Cut Green Beans 001
While at Costco last week I just couldn’t pass up the beautiful Walleye Fillets they had. So I’m having one for dinner tonight. I rinsed them off in cold water and patted dry with paper towel. Seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put them in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till all fillets were well coated. I then fried them in Canola Oil on medium heat, about 3 to 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor. Along with Crappie their my favorite Fresh Water Fish to eat.

For one side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them.

Then for another side I prepared some Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. I had the Italian Beans and Fingerling Potatoes just the other night, so good I paired it up again for tonight’s dinner! For dessert later a bowl of Breyer’s Low Carb Chocolate Ice Cream.

Today’s Menu: Tuscan Seasoned Pork Medallions w/ Roasted Fingerling Potatoes and Cut Italian Beans

Not quite as cold this morning, sunny and about 27 degrees. For Breakfast I scrambled a couple of medium size Eggs and toasted a couple of slices of Healthy Life Whole Grain Bread. After Breakfast I helped Mom out with a couple of loads of laundry and did a little house work. About Noon or so a friend of mine came over and helped replace the hard drive on my computer. Bit of a pain, had to transfer all the files to the new hard drive and reinstall Windows. When I bought the computer it came with Windows 7 already installed so I had to purchase a Windows 7 disc to reinstall. If this happens again I think I’ll just buy a new computer! Anyway long afternoon, thankfully I had help. For dinner tonight I prepared Tuscan Seasoned Pork Medallions w/ Roasted Fingerling Potatoes and Cut Italian Beans.

While at Costco the other day I came across a package of Tuscan Seasoned Pork Loin Medallions. it was a good size package with 24 slices. I kept 4 slices out and froze the remaining 20 pieces.

 

 

 

 
I started by preheating the oven on 400 degrees. To prepare them I used a Cast Iron Skillet. Sprayed it with Pam Tuscan Seasoned Pork Medallions w Roasted Fingerling Potatoes an 003Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil and heated it on medium heat. I then lightly Salted the Pork with Sea Salt and a sprinkle of McCormick Dried Parsley. Added the Pork to the skillet and cooked it for 2 minutes a side, just started to brown. Then from the stove to the oven, love Cast Iron Skillets! I then backed them to a medium rare, 145 degrees in the center of the medallions using a meat thermometer. Pork Tenderloin is one of my favorites and this one ranked way up the chart! The Pork was so tender and flavorful. Seasoned just right and very moist. Can’t wait to prepare the other pieces in the freezer!

For a side I had some Fingerling Potatoes left so I used them tonight, prepared Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, Parsley, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area, only 1 store around here locally that sells them (Thank you Jungle Jim’s).

Oven-Roasted Fingerling Potato Fries

Ingredients:Tuscan Seasoned Pork Medallions w Roasted Fingerling Potatoes an 002

Fingerling Potatoes
Extra Virgin Olive Oil
Garlic Powder
Sea Salt
Pepper
Chili Powder
Kraft Reduced Fat Parmesan Grated Cheese
Directions:

1.) Thoroughly clean and scrub the potatoes.

2.) Cut the potatoes in half and add to a large mixing bowl.

3.) Add the olive oil. I used about 1 tablespoon, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.

4.) Put on a baking sheet and sprinkle with the Parmesan Grated Cheese

5.) Roast in the oven for 25-35 minutes at 450 degrees. The potatoes should be tender in the middle when done.
