Today’s Menu: Pan – Fried Oysters w/ Sliced New Potatoes, Corn on the Cob, and Wheat Bread

 

 

 

Well got the driveway clear of snow and ice and the streets are all clear and now it snowed again and then freezing rain on top of it. From what I seen on the weather forecast earlier it’s going to be in the 20’s all week with lows in the single digits. Sure miss my beautiful Fall weather! For dinner tonight it’s Pan – Fried Oysters w/ Sliced New Potatoes, Corn on the Cob, and Wheat Bread.

I had a small container of Willapoint Shucked Oysters, that I had picked up at Kroger the other day, that I’ve been wanting to use. I just love all Seafood and Oysters are no exception! I almost always use Willapoint Oysters, always fresh with an incredible taste. I pan fried these in Canola Oil. To prepare them I needed; 1 container Hilton’s Willapoint Oysters, 1/2 cup corm meal, 1 egg, beaten with 1 teaspoon water, and 2 tablespoons Canola Oil. To fry them I drained the oysters. Then dipped prepared oysters in the egg, then in corm meal, coating thoroughly. Set aside to dry. Heat Canola Oil in frying pan to 370 degrees Fahrenheit (or until quite hot). Then fry the oysters until golden brown on one side, then turn carefully to brown the other (about 4 minutes on each side). They fried up a beautiful golden brown with a fresh taste, love Seafood!

 

 

For one side dish I heated up a can of Del Monte Sliced New Potatoes. I use a lot of Del Monte Vegetable Products, always delicious and store a lot longer than fresh Vegetables. I always use fresh though when I have any. I also boiled some Green Giant Mini Ears of Sweet Corn along with a slice of Klosterman Wheat Bread. For dessert/snack later some sliced Cracker Barrel 2% Sharp Cheddar Cheese with Ritz Whole Grain Crackers.

 

 

Willapoint Oysters
Pan-Fried Oysters
Ingredients
1 8-ounce or 16-ounce container Hilton’s Willapoint Oysters
1 cup corm meal
2 eggs, beaten with 1 teaspoon water
2 tablespoons vegetable oil or cooking fat
Drain oysters. Dip prepared oysters in egg, then in corm meal, coating thoroughly. Set aside to dry. Heat oil or fat in frying pan to 370 degrees Fahrenheit (or until quite hot). First flu – free day in a while and it feels great! Plus it’s a beautiful and sunny day outside, about 50 degrees! I was even able to get out and enjoy that sunshine for a while. For dinner I prepared a Herbed Pork Chop w/ Mashed Potatoes, Green Beans, and Glazed Apples. Classic comfort food alert!

 
About 10 o’clock this morning I made my marinade for the Pork Chop. easy and quick marinade to whip up all you need is; 1/4 cup Kraft Free Italian dressing and 1 tablespoon each of fresh herbs, chopped (any combination – chives, basil, oregano, rosemary). Then I placed the chop in a resealable plastic bag. Added dressing and herbs; seal and refrigerate 8 to 24 hours. Remove the chop from marinade; discard marinade. Grill chop over medium-high heat (or broil 4 inches from heat) for 8 to 9 minutes, turning once until internal temperature on a thermometer reads 145 degrees Fahrenheit, followed by a 3-minute rest time. You then have one great tasting Chop! The marinade is perfect for Pork. It comes out very tender and the flavor is incredible! I prepared it on a cast iron griddle and was really pleased on how it grilled. I’ll be using this more often. This is about my favorite Pork Chop recipe and I found it at the Pork Be Inspired web site. I left the Chop recipe, which is for 4 Pork Chops, and a link to the web site at the end of the post.
I prepared 3 easy to fix side dishes to go with the Pork Chop; Mashed Potatoes, Green Beans, and Glazed Apples. I only had a half a serving of the Bob Evans Glazed Apples. The Mashed potatoes and Glazed Apples were Bob Evans Brand. Both come in a microwavable package and both taste as good homemade. the Apples are always a perfect pairing with Pork. I’ll be using some of the Glazed Apples for dessert tonight also. I also used Del Monte Cut Green Beans. Then for dessert later tonight I’ll be having Breyer’s Carb Smart Vanilla Ice Cream topped with a tablespoon of the Bob Evans Glazed Apples.

 

 

 

 

Herbed Pork Chops

Prep Time: 10 minutes prep, Cook Time: 15 minutes cook
Ingredients:

Today’s Menu: Italian Herbed Pork Chops w/ Steamed Asparagus, Rice A Roni, and Whole Grain Bread

 
I had Italian Herbed Pork Chops with Steamed Asparagus, Rice A Roni, and Whole Grain Bread for dinner tonight. I used Kraft Free Italian Dressing to marinate the Chops and used Thyme, Chives, Basil, and Oregano as my herbs. I’ve used this recipe several times and really like it. The Italian Dressing combined with Herbs makes the Chops tender and moist with a fantastic flavor.

For sides I had Steamed Asparagus, Rice A Roni (Chicken Flavor), and Whole Grain Bread. The Asparagus is Walmart Marketside Asparagus. It comes in a microwavable bag and you just heat it for 2 minutes and it’s done. Really a very easy and quick way to have some good steamed Asparagus! The Rice A Roni Chicken Flavor was the first time I’ve had Rice A Roni in years. It’s new one that comes in a 1 serving microwavable cup. Just add the seasoning packet and add water. Microwave for 3 1/2 minutes, cool for 1 minute and stir and serve! It came out great and tasted like the Rice A Roni I remember. They have 2 or 3 different kinds and look forward to trying them. This one was 190 calories, 41 carbs, and 1 gram fat. i also had Healthy Life Whole Grain Bread.

Today’s Menu: Italian Herbed Pork Chops w/ Steakhouse Seasoned Diced Potatoes, Green Beans, and Whole Grain Bread

Tried a new Pork Chop recipe for dinner tonight, Italian Herbed Pork Chops. I love marinating Chops in JB’s Fatboy Sauces but this recipe is a keeper! I used Kraft Free Italian Dressing to marinate the Chops and used Chives, Basil, and Oregano as my herbs. The Italian dressing gives the Chops great flavor while the Herbs provide flavor and a nice crust to the Chops. Everyone loved them! I’ll be adding this to menu much more often. I left the recipe at the end of the post.

For sides we had Simply Potatoes Steakhouse Seasoned Diced Potatoes, Green Beans, and Healthy Life Whole Grain Bread. It was the first time we had tried the Simply Potatoes Steakhouse Seasoned Diced Potatoes. These add another good Potatoe side dish. They come all ready seasonedand they’re seasoned just right! I left the description and web site link to Simply Potatoes below. For dessert later a slice of Pillsbury Nut Quick Bread topped with Breyer’s Carb Smart Vanilla Ice Cream.
