Today’s Menu: Leftovers – Sliced Pork Tenderloin Mini Sub w/ Baked Fries

For Breakfast I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 78 degrees and cloudy out today. Rain moving in later. I watered all the Flowers and the Garden Boxes. My Tomatoes and Peppers both look great, buds on all of them. I bought a Hanging Strawberry Plan and it’s been producing all kinds of Strawberries! For Dinner tonight I prepared the Leftover Sliced Pork Tenderloin Mini Sub w/ Baked Fries. I’ll never let these Leftovers go to waste! Way too Delicious to waste. I just heated the Leftovers in a skillet on low heat. I’ve left the original post from last night below for description and instructions. Enjoy! Take Care and Stay Safe out there.

To make this Delicious Mini Sub I’ll be using a Meijer Boneless Pork Tenderloin, Pennsylvania Dutchman Sliced Mushrooms, Emeril’s Deli Style Mustard, and Perfection Mini Sub White Roll.

I love Pork Tenderloin! I purchased Pork Tenderloin from Meijer the yesterday. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it, preheat the oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand for 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook for 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand for 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe by far!

I let the Pork rest for 5 minutes or so before slicing. I then sliced the Tenderloin into thin slices. After I finished slicing it I let it marinate in its own juices until ready to use. Wow, what a Pork Tenderloin! It was so tender and juicy with flavor that was incredible.

For a side I baked some Ore Ida Golden Fries that I served with a side of Hunt’s Ketchup.

Pork Tenderloin….
Pork tenderloin is one of the leanest, most tender cuts of meat on the market, so it can also be a little spendy. Pork loin, on the other hand, can often be a bargain choice if you’re looking for a tender cut of meat that cooks well for a crowd. Pork tenderloin and other loin cuts are excellent sources of protein, thiamine, vitamin B6, phosphorus and niacin and good sources of potassium, riboflavin and zinc.

Just a cup of Bigelow Decaf Green Tea to start my day. The day started off rainy but gradually stopped and we had of 75 degrees and partly cloudy out. After the rain stopped I went to Meijer, I needed a few items and one of my neighbors needed a few items. On the way back I stopped at McDonald’s and picked up Breakfast for Mom. Back home I did a load of laundry and some light house cleaning. For Dinner tonight I prepared Sliced Pork Tenderloin Mini Sub w/ Baked Fries.

To make this Delicious Mini Sub I’ll be using a Meijer Boneless Pork Tenderloin, Emeril’s Deli Style Mustard, and Perfection Mini Sub White Roll.

To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe by far!

This is the first time, and why I have no clue, that I sliced one for Sandwiches. Anyway I let the Pork rest for 5 minutes or so before slicing. I then sliced the Tenderloin into thin slices. After I finished slicing it I let it marinate in its own juices until ready to use. Wow, what a Pork Tenderloin! It was so tender and juicy with flavor that was incredible.

For a side I baked some Ore Ida Crinkle Cut Fries that I served with a side of Hunt’s Ketchup. For Dessert later a Breyer’s Vanilla Bean 90 Calorie Cup.

Today’s Menu: Black Forest Ham, Black Forest Turkey, Bacon, and Swiss Cheese Baked Mini Sub w/ Baked Fries

Just a cup of Bigelow Decaf Green Tea to start this chilly morning off. 32 degrees this morning with a heavy frost. 60 degrees and sunny for the afternoon. After my Tea Mom wanted me to go to the grocery store and she gave me a list of things to make different treats for Thanksgiving and Christmas. I was able to get a few things she needed from Meijer, but Chex Cereals to make the Holiday Chex Mix with. So I went to Kroger and they didn’t have any. Next I tried Walmart and found it there along with a few other things that she needed. Got to keep Mom happy! Back home did laundry. I always wash the clothes that I wore to the grocery as soon as I get home. I guess you can’t be too careful now days.  I have to start fasting at 11:00 tonight. I have to be at the Doctor’s office at 7:30 in the morning. For Dinner tonight I prepared a Black Forest Ham, Black Forest Turkey, Bacon, and Swiss Cheese Baked Mini Sub w/ Baked Fries.

I purchased the Swiss Cheese, Black Forest Ham and Turkey all from Meijer and all Dietz and Watson Brand Deli items. For topping ingredients I’ll be using Emeril’s Deli Style Mustard, Kraft Light Mayo w/ Olive Oil, and Kraft Fat Free Zesty Italian Dressing. For the Sub Buns I’ll be using Perfection Mini Sub Buns. The Ingredients of one Delicious Mini Sub!

I first turned the oven on 400 degrees. To make my Sub I took the bottom half of the Bun and added the Kraft Mayo, next I added the Ham, topped that with the 2 slices of Swiss Cheese, And topped it with the top half of the Bun.

I then laid the Sub on a small baking sheet and topped the Sub with the Kraft Lite Italian Dressing. And then it baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Baked Ham and Swiss Subs!

To go with my Sub I had some Mike Sells Green Onion Potato Chips, love these Chips. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Half and Half (Tea and Lemonade) Snapple to drink.

Grilled Beef and Ham on Wheat Bun w/ Baked Fingerling Potatoes

Today’s Menu: Grilled Beef and Ham on Wheat Bun w/ Baked Fingerling Potatoes

For Breakfast this morning I prepared a Skillet Diced Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Off the Block Sharp Cheddar Cheese. I also had a cup of Bigelow Decaf Green Tea.

It’s 90 degrees, humid, and passing rain showers. Lately it seems if one health related thing isn’t bothering me another one is! Last night around 11:00 I started getting Phantom Pains. It was one rough and long night, with little or no sleep. The Pains finally eased up around 10:00 this morning but the damage was done. I was so tired and just drained from the pain I spent most of the day catching up on sleep. I so wish there was a cure for Phantom Pains, but there is not! Maybe one day but until that happens thousands if not more suffer from this. So for Dinner tonight I prepared a Grilled Beef and Ham on Wheat Bun w/ Baked Fingerling Potatoes.

So tonight I prepared a Grilled Beef and Ham on Wheat Bun. To make my Sandwich I’ll be needing; For the Meat I used Kroger Brand Private Selection Rare Sliced Roast Beef and Kroger Brand Private Selection Honey Ham then for the Cheese Kraft Deli Style Sharp Cheddar Cheese, all served on a Healthy Life Wheat Bun.

I’m using my small Flat Cast Iron Griddle. I love this Griddle, it has 2 sides one a flat surface and the other side with a grate. I heated up the flat surface side on medium heat, spraying it with Pam Non Stick Spray. With the Pan heated I added the Meat. I had small handful of the Roast Beef and Ham. I made 2 stacks, one Roast Beef and the other the Ham. I smashed the piles down with the spatula and flipped each stack. After about 3 minutes I took the Ham pile and placed it on top of the Beef. I then added a slice of Sharp Cheddar Cheese. Next I added both halves of the Bun, bottom side down on the pan to heat the buns a bit.

I flipped the bottom half bun over and placed Roast Beef/Ham on top of it and removed it from the pan. I then topped the Sandwich with some Emeril’s Deli Style Mustard. Love this Mustard, fantastic flavor! This really made one delicious Sandwich! Roast Beef and the Ham are perfect together.

As my Sandwich was grilling I had preheat the oven to 425 degrees. Then for a side I prepared some Roasted Fingerling Potatoes. I purchased these at Jungle Jim’s. To start I first washed the Potatoes off in cold water and patted dry with a paper towel. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 425 degrees until they were fork tender, about 20 minutes. I love Fingerling Potatoes, probably my favorite Potato. Just love how easy they cook up and taste. Excellent Meal with the Sandwich and Baked Potato Wedges! For Dessert tonight I’m having a bowl of Breyer’s Carb Smart Chocolate Ice Cream.
