This week’s Diabetic Dish of the Week is Enlightened Tuna Noodle Casserole. Here’s a Diabetic Friendly Enlightened Tuna Noodle Casserole. Made using Elbow Macaroni, Onion, Celery, Red Bell Pepper, Whole Wheat Flour, Fat-Free Reduced-Sodium Vegetable Broth, Cottage Cheese, and Spices. Enlightened Tuna Noodle Casserole
Your family is sure to ask for seconds of this traditional comfort food!

Ingredients
4 ounces uncooked elbow macaroni
1 tablespoon olive oil
3/4 cup chopped onion
1/2 cup thinly sliced celery
1/2 cup chopped red bell pepper
2 tablespoons whole wheat flour
1 teaspoon dried thyme
1/8 teaspoon white pepper
1 1/2 cups fat-free reduced-sodium vegetable broth, warmed
2 packages (3 ounces each) albacore tuna
1/2 cup fat-free cottage cheese
1 teaspoon ground paprika
Fresh dill sprigs (optional)

Directions
Yield: 4 servings
Serving size: 1/4 of casserole

1 -Preheat oven to 375°F. Spray 8-inch square baking dish with nonstick cooking spray.

2 – Cook macaroni according to package directions, omitting salt. Drain; set aside.

3 – Heat oil in large nonstick skillet over medium heat. Add onion; cook and stir 3 minutes. Add celery and bell pepper; cook and stir 3 minutes. Sprinkle flour, thyme, and white pepper over vegetables; cook and stir 1 minute. Gradually stir in broth; cook and stir until thickened. Remove from heat.

4 – Stir macaroni, tuna, and cottage cheese into skillet until well combined and macaroni is evenly coated. Transfer to prepared dish; sprinkle with paprika.

5 – Bake 20 to 25 minutes or until heated through. Garnish with dill sprigs.

Turkey Vegetable Chili Mac Recipe

Ingredients
3/4 pound ground turkey
1 can (about 15 ounces) black beans, rinsed and drained
1 can (about 14 ounces) Mexican-style diced tomatoes
1 can (about 14 ounces) diced tomatoes
1 cup frozen corn
1/2 cup chopped onion
2 cloves garlic, minced
1 teaspoon Mexican seasoning
1/2 cup uncooked elbow macaroni
1/3 cup sour cream

Directions
1 – Spray large skillet with cooking spray; heat over medium-high heat. Add turkey; cook and stir 5 minutes or until no longer pink. Transfer to slow cooker. Add beans, tomatoes, corn, onion, garlic and Mexican seasoning. Cover; cook on LOW 4 to 5 hours.

2 -Stir in macaroni. Cover; cook 10 minutes. Stir. Cover; cook 20 to 30 minutes or until macaroni is tender. Serve with sour cream.

Tip: Feel free to substitute 2 ounces of any other pasta. Short pasta shapes like cavatappi, penne, or rigatoni (which are sometimes called “cut pastas” because they are cut into pieces during the manufacturing process) can be added straight out of the packages. Longer shapes such as linguine, fettuccine, or spaghetti should be broken in halves or thirds before being stirred in so that all the pasta can be fully immersed in the sauce.

Yield: 6 servings.

Hearty Breakfast Soup

 

Hearty Breakfast Soup

Ingredients:
1 lb. ground Bison (salt and pepper to taste)
2 T. light olive oil
2 (15-oz.) cans mixed vegetables
1 T. chopped parsley
1 (15-oz.) can tomatoes, finely diced
1 tsp. celery seed
2 qts. water
1/2 tsp. garlic powder
6 c. elbow macaroni, cooked
1/2 tsp. onion powder
Preparation:

Brown Bison in olive oil in 6 quart soup pot. Add parsley, celery seed, garlic and onion powder, canned vegetables, tomatoes, salt and pepper, and water. Simmer for 30 minutes. Add cooked macaroni. Serve with grated Parmesan cheese and salad. Great the next day too! Serves 6.
