LEMON MERINGUE PIE

Ingredients

For Pie Filling:
Pastry for single-crust 9-inch pie
2-1/4 cups water
1/2 cup fresh lemon juice or frozen lemon juice concentrate*
1/2 cup cornstarch
2 eggs
2 egg whites
1-1/2 teaspoons grated lemon peel
1-1/2 cups Equal Spoonful or Granulated**
2 tablespoons stick butter or margarine
1 to 2 drops yellow food coloring (optional)

For Meringue:
3 egg whites
1/4 teaspoon cream tartar
2/3 cup Equal Spoonful or Granulated***
* Such as Minute Maid Premium Lemon juice (frozen) 100% Pure Lemon Juice from Concentrate

** May substitute 36 packets Equal sweetener

Directions

1 – For Pie Filling, roll pastry on floured surface into circle 1 inch larger than inverted 9-inch pie plate. Ease pastry into plate; trim and flute edge. Pierce bottom and side of pastry with fork. Bake in preheated 425F oven 10 to 12 minutes or until pastry is golden. Cool on wire rack.
2 – Combine water, lemon juice and cornstarch in medium saucepan. Bring to a boil over medium-high heat, stirring constantly. Boil and stir 1 minute. Beat eggs, 2 egg whites and lemon peel in medium bowl. Mix in 1-1/2 cups Equal. Stir about half of hot cornstarch mixture into egg mixture.
3 – Return all to saucepan. Cook and stir over low heat 1 minute. Remove from heat. Stir in butter until melted. Stir in food coloring, if desired. Pour mixture over baked pie shell.
4 – For Meringue, beat 3 egg whites in mixing bowl on medium speed of mixer until foamy. Add cream of tartar. Beat to soft peaks. Gradually beat in 2/3 cup Equal, beating to stiff peaks. Spread meringue over hot lemon filling, carefully sealing to edge of crust to prevent shrinking or weeping.
5 – Bake pie in 425F oven about 5 minutes or until meringue is lightly browned.
6 – Cool completely on wire rack. Cut pie into wedges.

Cauliflower Potato Pancakes
Cauliflower brings down the carbohydrate content of these potato pancakes — without affecting the flavor!

Ingredients
1 1/2 cups cubed Yukon Gold potatoes
3 cups roughly chopped cauliflower
1/3 cup whole wheat flour
1 egg, lightly beaten
1 egg white
1 tablespoon chopped fresh chives, plus additional for garnish
1 teaspoon baking powder
1/2 teaspoon salt
3 teaspoons vegetable oil, divided
Light sour cream (optional)

Directions
Yield: 6 servings
Serving size: 2 pancakes

1 – Bring large saucepan of water to a boil. Add potatoes and cauliflower; reduce heat. Simmer 10 minutes or until fork-tender. Drain potatoes and cauliflower. Let stand 5 to 10 minutes or until cool enough to handle.

2 – Gently mash potatoes and cauliflower in large bowl. Add flour, egg, egg white, 1 tablespoon chives, baking powder, and salt; mix well.

3 – Heat 1 teaspoon oil in large nonstick skillet over medium heat. Drop 1/4 cupfull potato mixture into skillet; flatten slightly. Cook 5 to 7 minutes per side or until golden brown. Repeat with remaining oil and potato mixture.

4 – Serve with sour cream, if desired. Garnish with additional chives.

Mashed Potato Puffs
Low carb, fluffy, and the perfect accompaniment to meat or poultry!

Ingredients
1 cup prepared mashed potatoes
1/2 cup finely chopped broccoli or spinach
2 egg whites
4 tablespoons shredded Parmesan cheese, divided

Directions
Yield: 18 puffs
Serving size: 3 puffs

1 – Preheat oven to 400°F. Spray 18 mini (1 3/4-inch) muffin cups with nonstick cooking spray.

2 – Combine mashed potatoes, broccoli, egg whites and 2 tablespoons cheese in large bowl; mix well. Spoon evenly into prepared muffin cups. Top evenly with remaining 2 tablespoons cheese.

3 – Bake 20 to 23 minutes or until golden brown. To remove from pan, gently run knife around outer edges and lift out with fork. Serve warm.

Autumn Bran Muffins

Ingredients
Preparation time: 20 minutes
Cooking time: 20 minutes.

Nonstick cooking spray
3/4 cup all-purpose flour
3/4 cup whole wheat flour
2 tablespoons sugar
1 tablespoon baking powder
1/8 teaspoon salt
1 teaspoon pumpkin pie spice
2 cups 100% bran cereal
1 1/2 cups skim milk
2 egg whites
1 can (15 ounces) pumpkin
2 tablespoons vegetable oil

Directions
Yield: 22 muffins
Serving size: one 2 1/2-inch muffin

1 – Preheat oven to 400°F. Spray muffin pans (with enough cups for 22 muffins) with nonstick cooking spray. Stir together flours, sugar, baking powder, salt, and pumpkin pie spice. Set aside. In a large mixing bowl, combine the bran cereal and milk and let sit until the cereal softens, about two minutes. Add the egg whites, oil, and pumpkin to the cereal and milk, and blend well. Add the flour mixture, stirring only until it is combined. Portion the batter evenly into the muffin pans. Bake for 20 minutes or until lightly browned and a toothpick inserted into the center comes out clean. Gently remove muffins from baking pans and serve warm or cold.

Spicy Eggplant Burgers
Make your next cookout meat free with this flavorful eggplant burger — so tasty, it’s sure to please vegetarians and omnivores alike!

Ingredients
1 eggplant (1 1/4 pounds), peeled
2 egg whites
1/2 cup Italian-style panko bread crumbs
Nonstick cooking spray
3 tablespoons reduced-fat chipotle mayonnaise or regular reduced-fat mayonnaise
4 whole-wheat hamburger buns, warmed
1 1/2 cups loosely packed baby spinach
8 thin slices tomato
4 slices pepper jack cheese

Directions
Yield: 4 servings
Serving size: 1 burger

1. Preheat oven to 375°F. Spray baking sheet with cooking spray. Cut 4 slices (1/2-inch thick) from widest part of eggplant. Beat egg whites in shallow bowl. Place panko on medium plate.

2. Dip eggplant slices in egg whites; dredge in bread crumbs, pressing gently to adhere. Place on prepared baking sheet. Bake 15 minutes or until golden brown; turn and coat with cooking spray. Bake 15 minutes.

3. Spread mayonnaise on bottom halves of buns and top with spinach, tomatoes and eggplant slice. Top with cheese and tops of buns.

Savory Bread Pudding
The best of both worlds come together with this recipe for bread pudding; combining sweet apples, chicken and maple breakfast sausage for the ultimate fall flavor combo. A great dish if you’re attending a big family dinner or a potluck with friends, this recipe is sure to become a go-to this season!

Ingredients
1 tablespoon olive or vegetable oil
1 red bell pepper, diced
1 cup diced onion
3 large egg whites
2 cups low-fat (1%) milk
9 small links (6 ounces) fully cooked chicken, apple, and maple breakfast sausage, thinly sliced
8 slices whole wheat or multigrain bread, cut into 1-inch squares
1/2 cup shredded low-fat sharp Cheddar cheese

Directions
Yield:
6 servings

Serving size:
1/6 of recipe

Preheat oven to 350°F. Coat 11×7-inch baking dish or shallow casserole with nonstick cooking spray. Heat large skillet over medium heat until hot. Add oil, bell pepper, and onion. Cook 6 to 8 minutes or until vegetables are tender, stirring occasionally. Remove from heat; set aside.

Meanwhile, whisk together egg whites and milk in large bowl. Stir in sausage and bread; mix well. Add cooked vegetables; mix again. Transfer mixture to prepared baking dish, pressing down lightly. (At this point, dish may be covered and refrigerated up to 6 hours before baking.)

Bake, uncovered, 40 to 45 minutes or until puffed and center is set. Remove from oven. Sprinkle cheese over pudding. Return to oven; bake 2 minutes or until cheese melts slightly. Cut into 6 squares.

Tropical Fruit Coconut Tart
Nothing says paradise quite like a heavenly blend of tropical fruits. Combining pineapple, mango, banana and coconut, this divine dessert is sure to transport you to the islands without leaving your backyard.

Ingredients
1 cup cornflakes, crushed
1 can (3 1/2 ounces) sweetened flaked coconut
2 egg whites
1 can (15 1/4 ounces) pineapple chunks in juice, undrained
2 teaspoons cornstarch
2 packets sugar substitute or equivalent of 4 teaspoons sugar
1 teaspoon coconut extract (optional)
1 mango, peeled, pitted and thinly sliced
1 medium banana, thinly sliced

Directions
Yield: 8 servings
Serving size: 1 wedge

1 – Preheat oven to 425°F. Coat 9-inch springform pan with nonstick cooking spray; set aside.

2 – Combine cornflakes, coconut, and egg whites in medium bowl; toss gently until blended. Place mixture in prepared pan; press firmly to cover bottom and 1/2 inch up side of pan. Bake 8 minutes or until edge begins to brown. Cool completely on wire rack.

3 – Drain pineapple, reserving juice in small saucepan. Stir pineapple juice into cornstarch until smooth. Bring to a boil over high heat. Boil 1 minute, stirring constantly. Remove from heat; cool completely. Stir in sugar substitute and coconut extract, if desired.

4 – Combine pineapple, mango slices, and banana slices in medium bowl. Spoon over baked crust; drizzle with pineapple juice mixture. Cover with plastic wrap; refrigerate 2 hours. Cut into 8 wedges.

Note: The crust can be made 24 hours in advance, if desired.

Double Chocolate Biscotti
Satisfy your sweet tooth without blowing your carbohydrate count with these chocolately biscotti. This easy-to-prepare recipe makes 24 servings, providing an ideal dessert for your next shindig.

Ingredients
3/4 cup all-purpose flour
3 tablespoons sugar substitute
3 tablespoons packed brown sugar
2 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
2 egg whites, lightly beaten
2 tablespoons butter
1 tablespoon chocolate syrup
1/2 cup puffed wheat cereal
4 teaspoons sliced almonds

Directions
Yield: 24 servings
Serving size: 1 biscotti

1 – Preheat oven to 350°F. Line cookie sheet with parchment paper; set aside.

2 – Combine flour, sugar substitute, brown sugar, cocoa, baking powder, and salt in medium bowl.

3 – Melt butter in small saucepan. Pour into small bowl. Stir in chocolate syrup and egg whites. Stir butter mixture into flour mixture to form stiff dough. Stir in cereal.

4 – Turn dough out onto prepared cookie sheet; shape into 12×2-inch log. Press almonds onto log. Bake 20 to 25 minutes or until firm. Cool completely on wire rack.

5 – Reduce oven temperature to 300°F. Using serrated knife, cut loaf into 1/2-inch-thick diagonal slices. Place slices, cut sides down, on cookie sheet. Bake biscotti 10 minutes. Turn slices; bake 10 minutes more. Cool completely on wire racks.

This week’s Diabetic Dessert of the Week is Chewy Chocolate Brownies. Diabetic Friendly Chewy Chocolate Brownies! Made using All Purpose Flour, Cocoa, Salt, Egg Whites, Whole Egg, Sugar, Unsweetened Applesauce, Oil, Vanilla, and Chopped Walnuts. Plus these are only 11 calories and 16 net carbs per serving. Chewy Chocolate Brownies
Ingredients
Preparation time: 10 minutes
Baking time: 25 minutes

Vegetable cooking spray
1/4 cup plus 3 tablespoons all-purpose flour
1/2 cup cocoa
1/4 teaspoon salt
2 egg whites
1 whole egg
1/2 cup plus 2 tablespoons sugar
6 tablespoons unsweetened applesauce
2 tablespoons oil
1 1/2 teaspoons vanilla
2 tablespoons chopped walnuts or pecans

Directions
Yield: 12 brownies
Serving size: 1 brownie

* Preheat oven to 350°F. Spray an 8-inch square baking pan with vegetable cooking spray. In a medium bowl, combine flour, cocoa, and salt. Mix well. In a separate large bowl, whisk together egg whites, egg, sugar, applesauce, oil, and vanilla. Stir in the flour mixture until just blended; do not overmix. Pour batter into the prepared pan and sprinkle walnuts on top. Bake for 25 minutes, until a toothpick inserted in the center comes out clean. Cool the brownies on a wire rack for at least 15 minutes. Cut into 12 rectangles.
