Beef Tenderloin with Roasted Vegetables
This hearty recipe combines tender, juicy beef with the delicious flavors of potatoes, Brussels sprouts, and baby carrots!

Ingredients
1 beef tenderloin roast (about 3 pounds), trimmed of fat
1/2 cup chardonnay or other dry white wine
1/2 cup reduced-sodium soy sauce
2 cloves garlic, sliced
1 tablespoon fresh rosemary leaves
1 tablespoon Dijon mustard
1 teaspoon dry mustard
1 pound small red or white potatoes, cut into 1-inch pieces
1 pound Brussels sprouts
1 package (12 ounces) baby carrots

Directions
Yield: 10 servings
Serving size: 1/10 of total recipe (without gravy)

1 – Place roast in large resealable food storage bag. Combine wine, soy sauce, garlic, rosemary, Dijon mustard, and dry mustard in small bowl. Pour over roast. Seal bag; turn to coat. Marinate in refrigerator 4 to 12 hours, turning several times.

2 – Preheat oven to 425°F. Spray 13 x 9-inch baking pan with nonstick cooking spray. Place potatoes, Brussels sprouts, and carrots in pan. Remove roast from marinade. Pour marinade over vegetables; toss to coat. Cover vegetables with foil; roast 30 minutes. Stir.

3 – Place tenderloin on vegetables. Roast, uncovered, 35 to 45 minutes or until internal temperature of roast reaches 135°F for medium-rare to 150°F for medium when tested with meat thermometer inserted into thickest part of tenderloin.

4 – Transfer tenderloin to cutting board; tent with foil. Let stand 10 to 15 minutes before carving. (Internal temperature will continue to rise 5°F to 10°F during stand time.) Reserve drippings from roasting pan to make gravy, if desired.

5 – Stir vegetables; continue roasting if not tender. Slice tenderloin; arrange on serving platter with roasted vegetables.

German Beer Spread with Swiss and Cheddar Cheeses

German Beer Spread with Swiss and Cheddar Cheeses

Serve this tasty beer spread at room temperature with rye or pumpernickel crackers or bread rounds.

Recipe Ingredients:
2 cups (8 ounces) Wisconsin Sharp Cheddar Cheese, shredded
2 cups (8 ounces) Wisconsin Swiss Cheese, shredded
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
1 clove garlic, minced
1/2 cup dark German or other beer
Assorted rye or pumpernickel crackers, breadsticks, or rye bread rounds

Cooking Directions:
1 – Bring cheeses to room temperature; place in a food processor bowl fitted with metal blade. Add Worcestershire sauce, mustard, and garlic. Pulse until combined.
2 – Add beer and process until smooth, 2 to 3 minutes.
3 – Pack in crock or decorative jar; refrigerate overnight to blend flavors.
4 – Bring to room temperature and serve with crackers or bread rounds.
Makes 12 servings.

Asian Chicken
Ginger, garlic, and red pepper flakes add a burst of Asian-inspired flavor to this low-carb chicken dish.

Ingredients
3 pounds boneless skinless chicken breasts
1/2 cup reduced-sodium soy sauce
1/4 cup fresh lemon juice
1 tablespoon honey
2 teaspoons sesame oil
1 teaspoon dry mustard
1 teaspoon grated fresh ginger or 1/2 teaspoon powdered ginger
1 teaspoon minced garlic
1/4 teaspoon red pepper flakes

Directions
Yield: 10 servings
Serving size: 1/10 of total recipe

1 – Place soy sauce, juice, honey, oil, mustard, ginger, garlic, and red pepper flakes in gallon-size resealable food storage bag. Add chicken. Seal bag. Turn to coat evenly. Place bag in pan. Chill in refrigerator 1 hour or overnight.

2 – Preheat oven to 350°F. Line roasting pan with foil. Remove chicken from bag and place in pan. (Discard unused marinade.) Bake chicken breasts 30 minutes or until no longer pink in center.

Chicken Dinner Salad with Green Onion Dressing

Ingredients
Preparation time: 10 minutes
Cooking time: 30 minutes to cook chicken.

4 cooked chicken breasts (3 ounces each), boneless, skinless
4 cups iceberg lettuce, washed and torn into bite-size pieces
4 small tomatoes (about 3 1/2 inches in diameter) or 24 grape tomatoes
1 large cucumber (about 8 inches), sliced thinly
1 cup grated carrot
4 ounces green onions
1/4 cup canola oil or extra-virgin olive oil
1/3 cup red wine vinegar
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
2 packets Splenda
2 tablespoons water
1/4 teaspoon black pepper
2 dashes salt
1/4 cup fresh cilantro leaves (optional)

Directions
Yield: 4 servings
Serving size: 1 breast on 1 1/2 cups salad

Dressing:

1 – Cut chicken into bite-size cubes and set aside. Place 1 cup torn iceberg lettuce on each of four salad plates. Quarter each tomato and place quarters around each plate, or place 6 grape tomatoes on each plate. Distribute cucumber slices evenly between tomato slices on each plate. Top with grated carrots (1/4 cup per plate) and chicken.

2 – Trim the roots and 2 inches from the tops of the green onions. In a blender or food processor, combine all dressing ingredients and blend thoroughly until well mixed. Pour approximately 1/4 cup dressing over each salad. Top with cilantro if desired.

Honey-Glazed Game Hen
The glaze, made with honey, soy sauce, lemon juice, dry mustard and ground ginger, would be excellent with roast chicken or turkey, too.

Recipe Ingredients:
1/4 cup honey
2 tablespoons soy sauce
2 tablespoons lemon juice
1/2 teaspoon dry mustard
1/2 teaspoon ground ginger
1 (1 1/2 to 1 3/4-pound) game hen, thawed
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/2 onion, peeled and quartered

Cooking Directions:
1 – Combine honey, soy sauce, lemon juice, dry mustard and ginger in 1-cup microwave-safe measure or bowl; mix well.
2 – Microwave at HIGH 1 to 1 1/2 minutes or until heated; stir to dissolve honey.
3 – Rinse game hen and pat dry. Sprinkle cavity with salt and pepper.
4 – Dip onion in honey mixture and place 2 quarters in game hen.
5 – Tie legs together with heavy string. Place game hen, breast side down, in microwave-safe roasting dish. Brush generously with honey mixture.
6 – Microwave at HIGH for 16 to 20 minutes or until juices run clean and meat near bone is no longer pink; rotate rack one-quarter turn every 5 minutes. Turn hen breast side up halfway through cooking time and glaze with remaining sauce. Remove onion from cavity and cut game hen in half.
7 – If desired, heat drippings and onion 1 1/2 to 2 minutes in microwave-safe measure; strain and serve with game hen.
Makes 2 servings.

Nutritional Information Per Serving (1/2 of recipe): Calories: 363 Calories from Fat: 14% Carbohydrates: 41.2 g Cholesterol: 119 mg Dietary Fiber: 0.74 g Fat Total: 5.5 g Protein: 38.2 g Sodium: 1434 mg.

Note: Honey should not be fed to infants under one year of age. Honey is a safe and wholesome food for children and adults.

Didn’t know this one……..

 

When roasting a cut of beef or pork with a high fat content, cover the surface with dry mustard powder. This will counteract the fattiness and flavor to the gravy.
