Spaghetti and Meatballs
A high-fiber version of the traditional Italian dish!

Ingredients
Nonstick cooking spray
6 ounces uncooked multigrain or whole wheat spaghetti
3/4 pound extra-lean ground beef
1/4 pound hot turkey Italian sausage, casing removed
1 egg white
2 tablespoons plain dry bread crumbs
1 teaspoon dried oregano
2 cups tomato-basil pasta sauce
3 tablespoons chopped fresh basil
2 tablespoons grated Parmesan cheese

Directions
Yield: 4 servings
Serving size: 3 meatballs, 3/4 cup spaghetti and 3/4 cup sauce

1 – Preheat oven to 450°F. Coat baking sheet with cooking spray. Cook spaghetti according to package directions, omitting salt and fat. Drain; keep warm.

2 – Combine beef, sausage, egg white, bread crumbs, and oregano in medium bowl; mix well. Shape mixture into 16 (1 1/2-inch) meatballs. Place on prepared baking sheet; coat with cooking spray. Bake 12 minutes, turning once.

3 – Pour pasta sauce into large skillet; add meatballs. Cook and stir over medium heat 9 minutes or until sauce is heated through and meatballs are cooked through (160°F). Divide among four plates. Top with meatballs and sauce; sprinkle with basil and Parmesan cheese.

Grilled Chicken Adobo
This twist on the classic Filipino dish uses chicken breast to keep the fat content low. And with only 1 gram of carb per serving, it will have minimal impact on your blood sugar, but

maximum effect on your taste buds!

Ingredients
1/2 cup chopped onion
1/3 cup lime juice
6 cloves garlic, coarsely chopped
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon ground red pepper
6 boneless skinless chicken breasts (about 1/4 pound each)
3 tablespoons chopped fresh cilantro (optional)

Directions
Yield: 6 servings
Serving size: 1 grilled chicken breast

1. Combine onion, lime juice, and garlic in food processor. Process until onion is finely minced. Transfer to large resealable food storage bag. Add cumin, oregano, thyme, and red pepper; knead bag until blended. Place chicken in bag; press out air and seal. Turn to coat chicken with marinade. Refrigerate 30 minutes or up to 4 hours, turning occasionally.

2. Spray grid with nonstick cooking spray. Prepare grill for direct cooking. Remove chicken from marinade; discard marinade. Place chicken on grid. Grill 5 to 7 minutes on each side over medium heat, or until chicken is no longer pink in center. Transfer to clean serving platter and garnish with cilantro, if desired.

Tex-Mex Turkey Spaghetti
Here’s a fun and easy weeknight dinner that combines two favorite food genres — Italian and Tex-Mex for a classic spaghetti with a picante twist. Tex-Mex Turkey Spaghetti is ready in under 30 minutes and full of authentic flavor—all for under 500 calories per serving.

Total Time 40 Minutes
Serving Size 6 Servings

Ingredients
2 teaspoons olive oil

1 (19.5-ounce) package JENNIE-O® Lean Turkey Bratwurst

1 cup chopped onion

2 teaspoons minced garlic

1 tablespoon Mexican seasoning or 2 teaspoons chili powder plus 1 teaspoon ground cumin

1 (140.5-ounce) can chili or salsa-style tomatoes, undrained

¾ cup picante sauce

1 teaspoon dried oregano leaves

12 ounces spaghetti, cooked and drained

1 ½ cups shredded Cheddar cheese

Directions
1) In large skillet, heat oil over medium heat. Pinch ¾-inch pieces of bratwurst into pan; discard casings. Cook 5 to 8 minutes or until browned. Always cook to well-done, 165°F. as measured by a meat thermometer.

2) Add onion, garlic and Mexican seasoning; cook over medium-high heat 8 minutes, stirring occasionally. Add tomatoes, picante sauce and oregano; bring to a boil.

3) Reduce heat; simmer, uncovered, 15 to 20 minutes or until thickened. Transfer spaghetti to serving plates.

4) Top with sauce; sprinkle with cheese.

Garlic-Herb Parmesan Dipping Sticks
These dipping sticks are perfect for pairing with marinara sauce or ranch dressing!

Ingredients
1 package (13.8 ounces) refrigerated pizza dough
3/4 cup light garlic-and-herb spreadable cheese
3/4 cup shredded Italian cheese blend
1/4 cup grated Parmesan cheese
1/2 teaspoon dried oregano
Warm marinara sauce and/or reduced-fat ranch salad dressing (optional)

Directions
Yield: 12 servings
Serving size: 2 dipping sticks

1 – Preheat oven to 400°F. Spray baking sheet with nonstick cooking spray.

2 – Roll out dough on lightly floured surface to 12-inch square. Place prepared baking sheet. Bake 10 minutes.

3 – Spread garlic-and-herb spreadable cheese evenly over crust. Layer evenly with Italian cheese blend, Parmesan cheese, and oregano. Bake 15 minutes or until golden brown.

4 – Slice lengthwise into 8 rows; slice opposite direction into 3 rows. Serve with marinara sauce or ranch for dipping, if desired.

Barley and Sausage Gumbo
Celebrate Mardi Gras with this healthful twist on an authentic Creole gumbo dish!

Ingredients
1 small onion, chopped
1 large green bell pepper, chopped
1 cup frozen sliced okra
1 medium stalk celery, chopped
1 clove garlic, minced
1 cup reduced-sodium chicken broth
1 cup no-salt-added tomato purée
1/4 cup uncooked pearl barley
1 teaspoon dried oregano
1/4 teaspoon salt (optional)
1/8 teaspoon red pepper flakes
2 low-fat chicken andouille sausages (3 ounces each), sliced 1/2 inch thick

Directions
Yield:
4 servings

Serving size:
1 1/3-cup

Place onion, bell pepper, okra, celery, and garlic in slow cooker. Add chicken broth, tomato purée, barley, oregano, salt, if desired, and red pepper flakes; stir. Add sliced sausages. Cover; cook on LOW 5 to 6 hours.

Let stand 5 minutes before serving.
