Curried Turkey and Apple Salad
Chunks of apple, celery and turkey are tossed with a creamy curry sauce and served on a bed of salad greens. Garnish with a light sprinkling of dried cranberries, cherries or chopped apricots.
Recipe Ingredients:
1 tablespoon canola oil
1 tablespoon curry powder
1/4 cup diced onion
2 tablespoons fresh lemon juice
2 tablespoons Splenda® Granulated No Calorie Sweetener
1/4 teaspoon salt (optional)
1/4 cup low-fat mayonnaise
2 stalks celery, thinly sliced
1 medium apple, cut into chunks
1 pound roasted turkey breast, chopped into bite size chunks
1/3 cup chopped dried apricots
Cooking Directions:
1 – Place oil, curry powder and onion in a small saucepan. Heat on medium high heat. Simmer 1 to 2 minutes or until onions are tender. Add lemon juice, Splenda® Granulated Sweetener and salt. Simmer over medium heat approx. 1 minute or until sauce begins to thicken. Remove from heat and cool.
2 – Add mayonnaise to cooled sauce. Stir well. Place prepared salad ingredients in a large bowl. Toss with dressing until evenly coated.
3 – Serve on salad greens. Garnish with a sprinkling of chopped apricots.
Makes 4 servings.

Lamb Chops with Cranberry-Pear Chutney
These juicy lamb chops will be the hit of any dinner — whether serving your family or a table of hungry guests. The colorful chutney adds just the right hint of seasonal flavor to the succulent chops. At only 260 calories per serving, everyone will be happily satisfied, not uncomfortably stuffed.
Ingredients
1/2 cup water
1/4 cup dried cranberries
1/4 cup dried apricots, cut into quarters
1/4 cup no-sugar-added raspberry fruit spread
1 tablespoon red wine vinegar
1/4 teaspoon ground cinnamon
1/4 teaspoon plus 1/8 teaspoon salt, divided
1 medium pear, peeled and cut into 1/2-inch pieces
1/2 teaspoon vanilla
4 bone-in lamb loin chops (about 5 ounces each)
2 cloves garlic, minced
1/4 teaspoon dried rosemary, crushed
Black pepper
Directions
Yield: 4 servings
Serving size: 1 lamb chop with 1/4 cup chutney
1 – Preheat broiler. For chutney, combine water, cranberries, apricots, fruit spread, vinegar, cinnamon, and 1/8 teaspoon salt in medium saucepan; bring to a boil over high heat. Reduce heat to medium-low; simmer, uncovered, 12 minutes or until mixture is thickened. Remove from heat; stir in pear and vanilla.
2 – Rub both sides of lamb chops with garlic. Sprinkle with remaining 1/4 teaspoon salt, rosemary, and pepper. Coat broiler pan and rack with nonstick cooking spray; arrange lamb chops on prepared rack.
3 – Broil lamb at least 5 inches from heat source 7 minutes. Turn and broil 7 minutes more or until desired doneness. Serve lamb chops with chutney.

Ingredients
1 pound frozen sliced peaches, thawed
2 ripe pears, sliced
3/4 cup dried apricots, cut into 1/4-inch pieces
4 tablespoons packed dark brown sugar, divided
1 tablespoon cornstarch
1 teaspoon vanilla
12 gingersnaps, finely crushed
1 tablespoon canola oil
1/2 teaspoon ground cinnamon
Whipped cream (optional)
Directions
Yield: 6 servings
Serving size: 1/2 cup
1 – Preheat oven to 350°F. Spray 9-inch deep-dish pie plate with nonstick cooking spray.
2 – Combine peaches, pears, apricots, 2 tablespoons brown sugar, cornstarch, and vanilla in large bowl; toss to coat evenly. Transfer to prepared pie plate.
3 – Combine crushed gingersnaps, remaining 2 tablespoons brown sugar, oil, and cinnamon in small bowl; mix well. Sprinkle evenly over peach mixture.
4 – Bake 30 minutes or until bubbly. Cool in pan on wire rack 10 minutes. Serve with whipped cream, if desired.

Apricot Brisket
This delicious entree combines sweet apricots and spicy cinnamon with tender beef for a flavor that can’t be beat!
Ingredients
1 cup chopped dried apricots, divided
1 cup canned diced tomatoes, divided
2 teaspoons ground cumin
1 teaspoon salt, divided
1 clove garlic
1/4 teaspoon ground cinnamon
1 medium onion, thinly sliced
2 large carrots, cut into 1-inch pieces
1 small beef brisket (about 2 to 3 pounds), trimmed of fat
1/2 teaspoon black pepper
1 1/2 cups low-sodium beef broth
2 tablespoons cornstarch
2 tablespoons cold water
Chopped parsley (optional)
Directions
Yield: 8 servings
Serving size: 1/8 of recipe
1 – Preheat oven to 325°F.
2 – Combine 1/2 cup chopped apricots, 1/2 cup tomatoes, cumin, 1/2 teaspoon salt, garlic, and cinnamon in food processor. Process using on/off pulses until coarsely combined.
3 – Place onion and carrots on bottom of roasting pan. Place brisket on top. Cut several small slits across top of brisket; gently spoon apricot mixture into slits. Sprinkle brisket with remaining 1/2 teaspoon salt and pepper. Spread remaining 1/2 cup diced tomatoes over brisket; top with remaining 1/2 cup apricots. Drizzle broth over brisket. Cover with foil.
4 – Roast 2 to 2 1/2 hours. Transfer brisket to carving board; tent with foil and let stand 15 minutes.
5 – Pour pan juices and vegetables into medium saucepan. Stir cornstarch into water in small bowl until smooth and well blended. Stir into pan juices; simmer until thickened, about 5 minutes.
6 – Carve brisket crosswise into thin slices; serve with onion, carrots, tomatoes, apricots, and pan juices. Sprinkle with parsley, if desired.

Ingredients
3 tablespoons butter
2 tablespoons all-purpose flour
1 cup apricot no-sugar-added pourable fruit*
1/3 cup finely chopped dried apricots
3 egg yolks, beaten
4 egg whites
1/4 teaspoon cream of tartar
1/8 teaspoon salt
Directions
Preheat oven to 325°F. Melt butter in medium saucepan. Add flour; cook and stir until bubbly. Add pourable fruit and apricots; cook and stir 3 minutes or until thickened. Remove from heat; whisk in egg yolks. Cool to room temperature, stirring occasionally.
Beat egg whites, cream of tartar, and salt in small bowl at high speed with electric mixer until stiff peaks form. Gently fold into apricot mixture. Spoon into 1 1/2-quart soufflé dish. Bake 30 minutes or until puffed and golden brown.** Serve immediately.
*Note. 3/4 cup apricot fruit spread mixed with 1/4 cup warm water can be substituted.
**Note. Soufflé will be soft in center. For a firmer soufflé, increase baking time to 35 minutes.
