Turkey, Chive and Shrimp Cakes
A succulent, surf and turf appetizer with an Asian influence. Served with a tangy cilantro and sesame dipping sauce, this quick and simple Turkey, Chive & Shrimp Cakes recipe are packed with authentic flavor. Under 300 calories per serving.

Total Time – 1 Hour
Serving Size – 4 Servings

Ingredients
12 – medium shrimp, peeled, deveined and coarsely chopped
½ – (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
1 – tablespoon lime juice
1 – small jalapeño pepper, chopped
¼ – cup chopped chives
3 – tablespoons flour
2 – egg whites, lightly beaten

DIPPING SAUCE
¼ – cup white vinegar
¼ – cup sugar
¼ – cup water
1 – tablespoon chopped fresh cilantro
1 – teaspoon sesame oil
1 – teaspoon toasted sesame seeds

Directions
1) Combine shrimp, turkey, lime juice, jalapeño pepper, chives, flour and egg whites in bowl.

2) Spray skillet with cooking spray and heat over medium heat. Add 1 tablespoon of turkey mixture per cake to hot pan.

3) Cook 3 to 4 minutes per side or until golden and thoroughly cooked. Always cook to well-done, 165°F. as measured by a meat thermometer.

4) To make dipping sauce, combine vinegar, sugar and water in saucepan. Stir over medium-high heat. Bring to boil. Remove from heat and let cool completely. Stir in cilantro, sesame oil and sesame seeds.

5) Serve with cakes.

VIETNAMESE BEEF and VEGETABLE SPRING ROLLS

Ingredients
16 thin slices deli roast beef (about 12 ounces)
1 cup shredded carrots
1/2 cup chopped jicama
3/4 cup torn fresh cilantro
1/2 cup torn fresh basil
1/4 cup torn fresh mint
8 rice paper wrappers (8-1/2-inch diameter)
8 green leaf lettuce leaves, ribs removed

Dipping Sauce:
1/4 cup seasoned rice vinegar
2 tablespoons red jalapeno pepper jelly
1 teaspoon soy sauce

Directions

1 – Whisk dipping sauce ingredients in small microwave-safe bowl until blended. Microwave on HIGH 20 to 40 seconds or until warm; do not boil. Set aside to cool.
2 – Toss carrots and jicama with 2 tablespoons of the dipping sauce in small bowl. Set aside. Toss cilantro, basil and mint in small bowl to combine. Set aside.
3 – Fill large bowl with warm water. Dip 1 rice paper wrapper into water for a few seconds or just until moistened. Rice paper will still be firm but will continue to soften during assembly. Place on work surface.
4 – Place 1 lettuce leaf at bottom of wrapper, leaving 1-inch border on right and left sides. Top with 2 slices roast beef, 2 tablespoons carrot mixture and 1/8 of herb mixture (about 1/4 cup). Fold right and left sides of wrapper over filling. Fold bottom edge up over filling and roll up tightly. Place seam-side down on serving platter. Repeat with remaining wrappers and filling ingredients. Cover rolls with damp paper towel during assembly to prevent from drying out. Cut each spring roll diagonally in half. Serve with dipping sauce.

Beer-Battered Portabella Strips with Spicy Dipping Sauce

Recipe Ingredients:
3 cups beer or ale
3 cups all-purpose flour
1 1/2 quarts mayonnaise
1 tablespoon plus 1 teaspoon lemon zest
3 tablespoons lemon juice
1/4 cup chopped cilantro
1/4 teaspoon cayenne pepper
24 Portabella mushrooms, slice about 3/8-inch thick (about 2.5 ounces each; stems reserved for other use)
Lemon zest, for garnish as needed

Cooking Directions:
1 – Whisk together beer and flour; let sit at least 2 hour
2 – To make sauce, mix mayonnaise, zest, lemon juice, cilantro and cayenne pepper until well combined; reserve.
3 – Dip Portabella strips into reserved beer batter.
4 – Deep fry until crisp and golden brown, about 3 minutes.
5 – mServe with 1/4 cup Spicy Sauce on the side. Garnish with lemon zest, if desired.
Makes 24 servings.
