Southern-Style Crowder Peas
For an easy side dish packed with protein and veggies, whip up these simple crowder peas. Just combine all your chopped ingredients in a pan, stir well and voilà! You’ve got a tasty side that will pair well with any Southern feast.

Ingredients
Preparation time: 10 minutes
Cooking time: Approximately 45 minutes.

1 package (16 ounces) frozen crowder peas, thawed (frozen black-eyed peas can also be used)
1 small onion, finely chopped
2 cups water
2 teaspoons sodium-free powdered instant beef bouillon
1/2 teaspoon garlic powder
1 bay leaf
1 cup diced ham (approximately 4 1/2 ounces)
1/8 teaspoon black pepper

Directions
Yield: 4 cups
Serving size: 1/2 cup

1 – Place all ingredients in a large pan and stir to mix well. Cover and bring to a boil. Reduce heat to medium-low and simmer 40 minutes, or until peas are tender; stir occasionally. Remove bay leaf before serving.

Today’s Menu: Izzy’s Lean Corned Beef Sandwich w/ Potato Chips

 


For Breakfast I toasted a couple of Eggo’s – Nutrigrain Waffles. Topped both we some I Can’t Believe It’s Not Butter and Log Cabin Sugarless Maple Syrup. Also prepared a 1/2 a Butterball Hardwood Smoked Turkey Sausage and had my Morning cup of Bigelow Decaf Green Tea. Mostly Sunny , Humid, and 92 Degrees outside today. After Breakfast I did a load of laundry then later got the cart out of the shed and got some yard work done. Put on plenty of sunscreen, that sun was hot! For Dinner tonight the Kitchen is Closed. : For Dinner tonight, Izzy’s Lean Corned Beef Sandwich w/ Potato Chips.

 

 

 


With the Kitchen Closed it was Izzy’s tonight! I had an Izzy’s famous corned beef, 96% lean cut, on whole wheat bread. I also had some Ruffle’s Reduced Fat Chips along with a Diet Peach Snapple. There’s 360 calories and 32 carbs for a full sandwich. I had half of it and saved the other half for lunch tomorrow, half sandwich 170 calories and 16 carbs. Not only does it look delicious, it is delicious! Izzy’s by far has the best and most tender Corned Beef there is! I bought Mom a Reuben and Potato Pancake. For Dessert later a Jello Sugar Free Dark Chocolate Pudding Cup topped with Cool Whip Free.

Today’s Menu: Skillet Potatoes and Ham with a Sunny Side Up Egg

 

 

 

For Breakfast this morning I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain English Muffin, lightly fried an al fresco Country Style Chicken Sausage Breakfast Patty, And had a cup of Bigelow Decaf Green Tea. After Breakfast I went to Menard’s to pick up a small can of Black Paint and then to Kroger and picked up a couple of Donuts for Mom, she wanted Coffee and Donuts for her Breakfast. I needed the paint to touch up the trim of the shed and to touch up a couple of the shutters around the house. A bit hotter and more humid today, 88 degrees and sunny. For Dinner tonight I prepared a Skillet Potatoes and Ham with a Sunny Side Up Egg.

 

 

The 2nd day of Breakfast for Dinner tonight. Skillet Potatoes and Ham for Breakfast, I mean Dinner! I’ll need; 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes, a package of Meijer Diced Ham, 1 Egg, Morton’s Lite Salt, Ground Black Pepper, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Pam Non Stick Cooking Spray, and Extra Light Olive Oil.

 

 

 

 

To start I got a large skillet and sprayed it with Pam and added 2 tablespoons of Extra Light Olive Oil, heated it on medium heat. When the skillet was ready I added the package of the Simply Potatoes Steakhouse Seasoned Diced Potatoes. I lightly seasoned them with the Salt and stirred. Put the lid on the skillet and let them cook. Using a spatula, I turned them several times so they would cook evenly. Cooked a total of 15 minutes. With about 3 minutes of cooking time left I added the package of Meijer Diced Ham. Stirred and finished the cooking of the Potatoes. When done put them in a large bowl and set it aside.

 

 

As the Potatoes and Ham were finishing I got a small skillet sprayed it with Pam and added a 1/2 tablespoon of Extra Light Olive Oil, heated it on medium heat. When the skillet was heated I added the Egg. Seasoned it with Salt and Pepper. I grabbed a teaspoon and scooped up some of the Olive Oil and poured it on top of the Yolk. Then put a lid over the skillet and cooked my Egg. Sunny Side Eggs always cook better with a lid over the skillet and a bit of the Oil over them when cooking them. It gives the Yolk a good finish.

 

 

To put the dish together I used a bowl and made a bed of the Potatoes and Ham, seasoned them with a little of the Salt. Sprinkled some Sargento Reduced Fat Shredded Sharp Cheddar Cheese on top and then added the Sunny Side Egg. Time to Eat! I love the combo of Potatoes and Ham! Then with Egg topping it off it gave great flavor and tied the dish together. Excellent Dinner tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Tropa – Rock – A Snapple to drink.

Directions:
Instructions: Keep refrigerated.Cook before serving.For best quality and cooking results, do not freeze.After opening, store in an airtight container and use within 3 days.Simple Steps to Delicious Potatoes:Heat 2 tbsp of vegetable oil in a skillet over medium heat.Add potatoes. Today’s Menu: Izzy’s Lean Corned Beef Sandwich w/ Potato Chips

 

 

For Breakfast I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a Sunnyside Up Fried Egg. Just love these skillet Meals! It was another night of little to no sleep again. Dealing with the Phantom Pains again. I usually don’t have them so close together like this. But they started late last night and continued till about 10:00 this morning. So not a lot got done today. Not that a lot would get done outside in that humidity! Showers in the morning then partly cloudy, 89 degrees and HUMID. After Lunch I laid back down in bed to catch up on some sleep. So the kitchen is shutdown tonight and its an Izzy’s Lean Corned Beef Sandwich w/ Ruffle’s Reduced Fat Chips.

 

After catching up on some sleep I didn’t feel like cooking tonight so it was Izzy’s! I had an Izzy’s famous corned beef, 96% lean cut, on whole wheat bread. I also had some Ruffle’s Reduced Fat Chips along with a Diet Peach Snapple. There’s 360 calories and 32 carbs for a full sandwich. The Kitchen will reopen tomorrow!

Soup Special of the Day! – Bean Soup

This week’s Soup Special of the Day is Bean Soup. An easy prepared Bean Soup recipe, make extra to freeze!
Bean Soup

 

 

Ingredients
1 (16 ounce) package dried navy beans
7 cups water
1 ham bone
2 cups diced ham (I used a package of Meijer Diced Ham)
1/4 cup minced onion
1/2 teaspoon sea salt
1 pinch ground black pepper
1/2 teaspoon ground cumin
2 bay leaves
1/2 cup sliced carrots
1/2 cup sliced celery (optional)

 
Directions
1 – Place rinsed beans into a large stock pot. Add water and bring to a boil. Boil gently for 2 minutes; remove from heat, cover and let stand for 1 hour.
2 – Add ham bone, cubed ham, onion, salt, pepper, cumin, and bay leaves. Bring to a boil; reduce heat, cover and simmer for 1 hour and 15 minutes or until beans are soft. Occasionally skim service of soup while it is cooking.
3 – Add carrots and celery, cook until tender. Remove ham bone, scrape any meat from bone and place back into soup and serve.
