Tangy Blue Cheese Potato Salad
Put a creamy twist on a picnic classic! Featuring mayo, sour cream, and chunks of blue cheese, this is a simple yet satisfy side for your next trip to the park.

Ingredients
1 pound red new potatoes
1/4 cup light mayonnaise
1/4 cup light sour cream
1/8 teaspoon garlic powder
1 tablespoon cider vinegar
1/3 cup reduced-fat crumbled blue cheese
1/2 cup chopped celery

Directions
Yield:
6 servings

Serving size:
3/4 cup

1. Boil potatoes until tender, drain, and cool. Cut into 1-inch chunks; set aside.

2. Meanwhile, combine mayonnaise, sour cream, garlic powder, vinegar, and blue cheese in medium bowl.

3. Fold in potatoes and celery and mix to combine.

Asparagus with Parmesan
Like asparagus? You’ll love this simple preparation for this spring’s fresh harvest! With just four ingredients and only about 10 minutes to put together, it’s suitable for even novice chefs.

Ingredients
3 cups diagonally sliced asparagus (2-inch slices)
2 tablespoons grated Parmesan cheese
1/4 teaspoon kosher salt
1/8 teaspoon black pepper

Directions
Yield: 4 servings
Serving size: 1 1/2 cups

1 – Coat large skillet with nonstick cooking spray; heat over medium-high heat. Add asparagus; cover and cook 8 minutes or until lightly browned and tender. Remove from heat; sprinkle with Parmesan, salt and pepper; mix to combine.

Brown Rice, Asparagus, and Tomato Salad
Make use of your fresh summer produce with this bountiful side dish that is the perfect combination of refreshing and filling. This salad combines wholesome brown rice with fresh veggies, making it the ideal summer side for any barbecue or afternoon picnic.

Ingredients
1 cup instant brown rice
12 medium spears asparagus, cooked and cut into 1-inch pieces
2 medium tomatoes
2 1/2 teaspoons lemon juice
2 teaspoons olive oil
1/8 teaspoon salt
1/8 teaspoon black pepper
1/4 cup minced fresh chives or green onions
2 teaspoons minced fresh dill

Directions
Yield: 4 servings
Serving size: 3/4 cup

1 – Bring 1 cup water to a boil in medium saucepan. Stir in rice. Bring water to a boil again. Reduce heat to low; cover and simmer 5 minutes. Remove from heat. Stir rice; cover again. Let stand 5 minutes or until water is absorbed and rice is tender. Fluff with fork; set aside.

2 – Meanwhile, place asparagus in large bowl. Core tomatoes over a separate bowl to catch juice. Dice tomatoes, reserving juice. Add tomatoes to asparagus. Whisk 1 1/2 tablespoons reserved tomato juice, lemon juice, oil, salt, and pepper in small bowl until well blended. Stir in chives and dill.

3 – Add rice to salad bowl. Pour in dressing; toss lightly to coat.

Variation: To turn this salad into a heartier main dish, add 1 cup chopped cooked chicken breast.

Lemony Steamed Broccoli
Interested in trying the Mediterranean diet? Why not give this simple steamed broccoli side a try? With only four ingredients, it’s a cinch to prepare!

Ingredients
1 pound broccoli
1 tablespoon butter
2 teaspoons lemon juice
Salt and black pepper

Directions
Yield: 4 servings
Serving size: 1/4 of total recipe

1. Break broccoli into florets. Discard large stems. Trim smaller stems; cut stems into thin slices. Place 2 to 3 inches of water and steamer basket in large saucepan; bring water to a boil. Add broccoli; cover. Steam 6 minutes, or until crisp-tender.

Grilled Corn on the Cob with Buttery Citrus Spread
This low-carb snack is a barbecue classic. Just grill the corn, mix the remaining ingredients in a bowl, top and voilà — an instant summer favorite!

Ingredients

4 medium ears corn, husks and silks removed

Nonstick cooking spray

2 tablespoons reduced-fat margarine

1 tablespoon finely chopped parsley

1 teaspoon grated lemon peel

1/2 teaspoon black pepper

1/4 teaspoon paprika

1/4 teaspoon salt

Directions
Yield: 4 servings
Serving size: 1 ear of corn and 2 teaspoons spread

1 – Preheat grill to medium heat. Coat corn with nonstick cooking spray. Grill, covered, 18 to 20 minutes or until golden brown, turning frequently.

Layered Mexican Salad
If you’ll be celebrating Cinco de Mayo — or simply want to satisfy a craving for Mexican food — you’ll love this Mexican salad. It’s easy to make, low-carb and jam-packed with

flavor!

Ingredients
1 package (10 ounces) shredded lettuce
1/2 cup chopped green onions (green and white parts)
1/2 cup fat-free sour cream
1/3 cup medium picante sauce
1 medium lime, halved
1 teaspoon sugar
1/2 teaspoon ground cumin
1 medium avocado, peeled, seeded and chopped
3/4 cup (3 ounces) shredded reduced-fat sharp Cheddar cheese
2 ounces baked tortilla chips, coarsely crumbled

Directions
Yield: 8 servings
Serving size: 1 cup

1. Place lettuce evenly in 13×9-inch baking pan. Sprinkle with green onions.

2. Stir together sour cream, picante sauce, juice from half of lime, sugar and cumin in small bowl. Spoon evenly over lettuce and green onions. Place avocado evenly over sour cream layer. Squeeze remaining lime half evenly over avocado layer. Sprinkle evenly with cheese.

3. Cover with plastic wrap. Refrigerate until serving. (May be prepared 8 hours in advance, if desired.) Sprinkle with crumbled tortilla chips before serving.

Variation: Add chopped fresh tomatoes to avocado layer. Sprinkle chip layer with chopped fresh cilantro.

Directions

Heartland Vegetable Medley
Assorted vegetables topped with Muenster cheese and crushed cracker crumbs make a hearty Midwest side dish.

Recipe Ingredients:
3 cups peeled 1-inch cubes butternut squash
3 tablespoons olive oil
4 cups broccoli florets
2 cups 2-inch strips red pepper
1 cup sliced red onion
1/3 cup light balsamic vinaigrette dressing
1/2 cup shredded Muenster cheese
1/3 cup crushed buttery crackers

Cooking Directions:
1 – Place squash in medium saucepan and cover with water. Bring to boil. Cook 3 to 4 minutes or until just tender. Drain squash; set aside.
2 – Meanwhile, heat oil in a large skillet on medium-high. Add broccoli, peppers and onion. Cook and stir vegetables for 10 to 12 minutes or until they are crisp-tender. Add squash, vinaigrette; heat through.
3 – Place vegetables in a shallow serving bowl. Sprinkle shredded cheese over the vegetables. Microwave on HIGH for 1 to 2 minutes or until cheese melts. Sprinkle top with crushed crackers.

Parmesan Pan-Fried Tomatoes
Crispy pan-fried ripe tomatoes, breaded with seasoned panko crumbs and Parmesan cheese. Terrific served alongside grilled or roasted meats and poultry. Or, for a delicious breakfast treat, serve them with bacon and eggs.

Recipe Ingredients:
1 cup all-purpose flour
1 tablespoon onion powder
2 teaspoons granulated garlic
1 teaspoon salt
1/2 teaspoon ground black pepper
1 cup freshly grated Parmesan cheese
1 cup panko Japanese bread crumbs
12 slices tomatoes, sliced 1/2-inch thick (about 3 tomatoes)
2 large eggs
2 tablespoons Dijon mustard
3 tablespoons olive oil

Cooking Directions:
1 – Combine flour, onion powder, granulated garlic, salt and pepper. Mix well.
2 – In separate bowl combine panko and Parmesan.
3 – In third bowl combine eggs and mustard.
4 – Take slices of tomato and dip in flour, dust off excess. Then dip in egg mixture, letting excess drip off. Finally dip in parmesan/panko mixture, pressing Parmesan mixture onto slices for good coverage. Repeat until all slices are breaded. These should be stored in a single layer dusted lightly with extra crumbs.
5 – Heat olive oil in non-stick frying pan, over medium-high heat. Place 3 slices in pan, and let cook about 1 1/2 to 2 minutes on each side, until just golden brown. Don’t flip too soon or Parmesan mix will fall off. Serve hot.

Ingredients
Preparation time: 5 minutes
Soaking time: approximately 30 minutes
Cooking time: approximately 50 minutes.

1/2 ounce dried porcini mushrooms, broken into small pieces
4 cups warm water
2 tablespoons plus 2 tablespoons extra-virgin olive oil
1 clove garlic, minced
1/4 cup plus 1/4 cup dry white wine
Salt and pepper to taste
1 scallion, thinly sliced
1 cup pearled barley
1 tablespoon fresh thyme, minced
Dash ground cardamom
Pinch ground cumin
1/4 cup grated Parmigiano-Reggiano cheese

Directions
Yield: 8 servings
Serving size: about 1/2 cup

Let dried mushrooms stand in 4 cups of warm water for at least 30 minutes. With a slotted spoon or small strainer, lift the mushrooms out of the water, taking care not to pick up any dirt particles from the water. Place mushrooms on a paper towel and pat dry. Remove any visible remaining dirt. Strain the water, removing all dirt and debris, and put aside for later use. In a medium saucepan, heat 2 tablespoons of olive oil over medium heat, then add garlic and sauté for 30 seconds. Add mushrooms and continue sautéing for 1 minute with frequent stirring. Pour 1/4 cup wine over mushroom–garlic mixture and continue cooking for another 2 minutes. Remove pan from heat. Add salt and pepper to taste; set aside. In a separate large pan, heat remaining 2 tablespoons of olive oil over medium heat; add scallion and sauté for 1 minute with frequent stirring. Add in barley and mix well. Allow the barley to sizzle in the pan for about 2–3 minutes, then mix in thyme and spices. Very slowly add remaining 1/4 cup wine, using a long wooden spoon to prevent steam from burning your hand. Reduce heat, then carefully and slowly add 2 cups of mushroom water to barley while stirring. Allow barley to simmer, uncovered, for 30 minutes, stirring frequently to prevent sticking. After 30 minutes, add in mushroom–garlic mixture. Continue cooking uncovered for another 15 minutes, adding remaining mushroom liquid a little at a time as needed, until barley is tender. Remove pan from heat, sprinkle grated cheese over barley, and mix in well. Let barley mixture rest for 5 minutes before serving, adding more mushroom liquid if needed. Barley should be moist but not soupy. Serve hot.
