Easy Oat Chocolate Chips Cookies Recipe
These classic oatmeal chocolate chip cookies have just 14 grams of carbohydrate per serving!

Ingredients
Preparation time: 15 minutes
Baking time: 10 minutes per pan

1/3 cup margarine, softened
1/2 cup firmly packed brown sugar
1 egg
3 teaspoons vanilla
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup quick-cooking rolled oats
1/3 cup semisweet chocolate chips
Vegetable cooking spray

Directions
Yield: about 3 dozen
Serving size: 2 cookies

1 – Preheat oven to 375°F. Beat margarine at medium speed with an electric mixer until light and fluffy; gradually add brown sugar and beat well. Add egg and vanilla, beating well. Combine flour, baking soda, and salt. Gradually add flour mixture to margarine mixture, mixing well. Stir in oats and chocolate chips. Coat cookie sheets with cooking spray. Using two teaspoons, drop dough onto cookie sheets, leaving about 2 inches between each cookie. Portion the dough so that you make about 3 dozen cookies. Bake 10 minutes or until lightly browned. Store in an airtight container.

Keto Chocolate Chip Cookies
Looking for a diabetes-friendly treat? These keto cookies use an almond flour base and sugar-free chocolate chips to make a delightful dessert that’s low in carbs but high in flavor!

Ingredients
1 cup almond flour
4 tablespoons sugar-free chocolate chips, such as Lily’s brand
2 tablespoons powdered erythritol, or equivalent of stevia
1/8 teaspoon baking powder
Pinch of salt
2 tablespoons butter, melted (or melted coconut oil)
1 teaspoon pure vanilla extract
3 teaspoons whole milk (or nondairy milk)

Directions
Yield: 12 servings
Serving size: 1 cookie

1. Preheat oven to 325°F.

2. Stir dry ingredients in a large bowl.

3. Add in wet ingredients to form a dough.

4. Shape into 1-inch balls.

5. Place cookie balls on a cookie tray and bake on center rack for 10 to 12 minutes.

6. Allow cookies to cool and firm up for 8 to 10 minutes.

MELON BANANA SORBET
Here’s a frozen treat to keep on hand for hot days or July 4th parties. Recipe for Melon Banana Sorbet from our Desserts recipe section.

Ingredients

1 small cantaloupe, peeled, seeded, and cut into chunks
1 banana, sliced
1/4 cup Splenda Sugar Blend
2 tablespoons corn syrup
2 teaspoons creme de menthe liqueur
1 tablespoon fresh lime juice
2 teaspoons grated lime peel
1/4 teaspoon ground cinnamon

Directions

1 – In a food processor or blender, combine all ingredients.
2 – Process until smooth, then scrape into an ice-cream maker and freeze according to manufacturer’s directions. Or scrape into a shallow metal pan, cover, and freeze 4 to 6 hours.
3 – Break mixture into chunks and pulse 10 to 20 seconds in the food processor or just until no longer chunky and somewhat creamy in texture. Freeze up to 1 month. Pulse briefly in the food processor just before serving.

NOTES:
Here’s a frozen treat to keep on hand for hot days.

Heat the oven up and get that cookie sheet out……

 
* Avoid over mixing the dough. Blend flour into the dough until just combined with the rest of the ingredients. Beating adds air to the dough, which allows gluten to expand leading to a denser, touch texture rather than a softer, more crumbly or flaky cookie.

 

* Make cookies a uniform shape and size so that they bake evenly.

 

* If you own only one cookie sheet, cool it to room temperature between batches. This prevents the butter from melting out of the dough and puddling up on the sheet.

 

* As a rule, let cookies cool on the baking sheet for 1 or 2 minutes, just long enough to firm them slightly and make it easier to slide them off the sheet and onto a rack.
