Today’s Menu: Turkey Tacos

Turkey Tacos Stand and Stuff 004

Rain and sun mix on and off all day. We’ve been lucky so far, the bad storms and tornadoes haven’t been in this area. I had read the other day that Pork prices were soaring and after stopping by Kroger I believe it! Huge increase on all the Pork as well as the Beef products. For dinner tonight it’s Taco Night!

As usual when I make Turkey Tacos it’s with Jennie -O Ground Turkey Breast! Love the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. Most times I also add Black Beans but decided not to this time.

For toppings I’ll be using; Sliced Black Olives, Sliced Green Olives, Dean’s Guacamole, Old El Paso Taco Sauce, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love Taco Nights. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Today’s Menu: Black Bean and Turkey Tacos with Fiesta Flats Tacos

Incredible weather, even for Ohio! It was 80 degrees and sunny Sunday and now it’s going to be a high of 36 degrees and we got about 1/4″ of snow this morning. Wow, enough is enough! Even colder in the morning, low of 22 degrees. That’s going to kill a lot plants and trees that has started coming out.The winter was so rough it looks as though it killed everyone’s Rose plants and it took out half of huge Vine we had growing on the car port fence. Kroger got some Veal Shoulder in so I went and picked up a 3.7 lb. one for our Easter dinner, more on that Sunday. For dinner tonight, one of my favorites, it’s Taco Night! Black Bean and Jennie – O Turkey Tacos with the Ortega Fiesta Flats.

As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I had drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos, added flavor and protein. Mixed well until everything was coated and then simmered another 5 minutes until heated through. As i said the Black Bean and Gound Turkey mix is a perfect one for Tacos, they complement each other very well.

For my other toppings I used 1 small can of Mario Sliced Black Olives, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Diced Tomatoes, Dean’s Guacamole Dip, Old El Paso Taco Sauce, and all in a Ortega Fiesta Flats. I love Taco Nights! You can have so many different types of Tacos with so many different toppings, just endless options for dinner. The New Ortega Fiesta Flats have quickly become one of our favorite Taco Shells. They make a nice option to the regular Taco Shell. Their 150 calories and 17 net carbs per serving, 2 Shells make a serving. They’re nice size, so you can load them up with healthy toppings. Another plus is they hold their shapes, even after you add toppings and after a couple of bites. We keep box of these in the pantry. For dessert later a bowl of Del Monte No Sugar Added Mango Chunks.

Today’s Menu: Sweet Pepper, Cilantro and Green Chile Shrimp Fajitas

Shrimp fajitas 003

Went to Meijer early this morning to pick up a few items I needed. As I was checking out it started pouring the rain, as I reached the door to go out the Meijer greeter said that I couldn’t take the mobility cart out in the rain. So I asked her if somebody could pull my car up for me and I would load them up from there. She said no because of insurance reasons, so I asked her what I was supposed to do. She more less said I would have to wait for it to stop raining, which it wasn’t going to stop for quite a while. I then asked if the guy that gets the carts could come out and get the cart after I unloaded everything into my car, again no. So to shorten the story I took an empty grocery bag covered the controls, so they wouldn’t get wet, and took it out and unloaded my groceries. When done I grabbed my walker and took the cart back in out of the rain and walked back to the car. By the time I got in I was drenched and what really made me mad was two Meijer Employees stood there in full rain gear and just watched me, no attempt to lend a hand! I hope any of them are never in the position where they’re having to do what I did and no one attempts to help them. Oh well, life goes on! For dinner tonight; Sweet Pepper, Cilantro and Green Chile Shrimp Fajitas.

I used a packet of the Ortega Cilantro and Green Chile Skillet Sauce. I’ve used this a few times now and love it! To prepare it I used a bag of Kroger Seafood Jumbo Shrimp along with the packet of Ortega Cilantro and Green Chile Skillet Sauce, Delallo Tri-Color Ppperazzi Spicy Sweet Peppers, Chopped Jalapeno slices, fresh Shredded Dutch Gouda Cheese, and Ole Fajita Flour Tortillas.

Shrimp fajitas 001
I heated up a tablespoon of Extra Virn Olive Oil in a medium size skillet over medium heat. I started by slicing the Sweet Peppers into strips and adding them to the skillet, stirring them and cooking until tender (about 4 minutes). Stirred in the Shrimp and sliced Jalapenos, stirred this until the Shrimp just started turning pink. Then added the Ortega Cilantro and Green Chile Skillet Sauce, cooking another 4 minutes till everything was heated through. What an aroma coming from the skillet! Heated up the tortillas in the microwave for 20 seconds and topped them with Guacamole and the Shrimp Taco Mixture. I also topped it some fresh grated Dutch Gouda, and served. I keep packets of the Ortega Cilantro and Green Chile Skillet Sauce in stock, it makes on delicious Fajita! Had a nice heat to it but not overpowering. For dessert later a Skinny Cow Chocolate Truffle Ice cream Bar.

Today’s Menu: Black Bean and Turkey Tacos with Fiesta Flats Tacos

Black Bean Turkey Fiesta Flats 005

We missed the damaging part of the storm that moved through the region. Got a lot of heavy rain with some strong winds from time to time. The rain did get rid of most of our snow that was left though. I actually think it’s more windy today than overnight. Went to Kroger to pick up a few items and was heading home on I-75 and it was struggle for everyone driving as the winds were very high. For dinner tonight, one of my favorites, Taco Night! Black Bean and Jennie – O Turkey Tacos with the new Ortega Fiesta Flats.

Black Bean Turkey Fiesta Flats 001

As usual when it’s Turkey Tacos it’s Jennie -O Ground Turkey! As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I had drained and rinsed them before I added them.
