Today’s Menu: Cumin Spiced Pork Tenderloin w/ Roasted Asparagus and Mashed Potatoes

 

 

 

To start this Monday off I prepared a packet of Pioneer Peppered White Gravy, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, fried 2 Jennie – O Turkey Breakfast Sausage Links, and a cup of Bigelow Decaf Green Tea. Plenty of Sunshine, 88 degrees, humid outside today. Still looking for a place to buy new carpet for my bedroom and the bath room. Hard to find a reliable place with good installers! For Dinner tonight its a Cumin Spiced Pork Tenderloin w/ Roasted Asparagus and Mashed Potatoes.

 

 

 

 

I purchased the Simple Truth Pork Tenderloin from Kroger yesterday, just over 1 1/2 lbs. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe by far!

 

 

 


For a side I prepared Roasted Asparagus. I love pairing Asparagus with Potatoes! To prepare it I’ll need; 1 bunch of Asparagus (fibrous bases removed), 1 Tablespoon of Crumbled Bacon or Bacon Bits, Ground Garlic Salt, Sea Salt, Freshly Ground Black Pepper, and 1 tbsp Extra Light Olive Oil. To prepare it is easy; Preheat the oven to 400F. Place the Asparagus in a baking tray sheet. Add the Bacon, Garlic Salt, Salt, Pepper, and Extra Light Olive Oil and toss to coat. Bake for 10 minutes. Remove from oven. Cool a couple of minutes and serve! Comes out tender and delicious!

 

 

 

 


For another side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. Then I also baked a loaf of Pillsbury French Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Cumin Spiced Pork Tenderloin w/ Cut Green Beans and Potatoes, Sliced Carrots, and French Bread

 
Starting off another post by sending prayers to all those that lost their lives and the many injured over in Nice, France. Another senseless attack on the Human Race. It’s time this Country rallies the World against these terrorist! Again my thoughts and prayers go out to all those affected.

 
For Breakfast I toasted a Healthy Life Whole Grain English Muffin, topped with just a dab of I Can’t Believe It’s Not Butter. Then I heated some Boar’s Head Branded Deluxe Ham in a large skillet. As the Ham was heating up I Cumin Spiced Pork Tenderloin Beans Potatoes Carrots 001Scrambled some Egg Beater’s Egg White. Topped the Ham and Egg off with a sprinkle of Sargento Reduced Calorie Shredded Sharp Cheddar. Fantastic, and healthy, way to start the day! It’s somewhat cooler out, 84 degrees, but still humid with passing showers. Did a load of laundry for Mom and we had to have Dad at his Family Doctor for a check-up. Everything seemed to be good so it was back home. For Dinner tonight Spiced Pork Tenderloin w/ Cut Green Beans and Potatoes, Sliced Carrots, and French Bread.

To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! The other “White Meat” sure is good!

 
For one side dish I heated up a can of Del Monte Cut Green Beans and Potatoes. I really like using the Del Monte Cut Cumin Spiced Pork Chops w Golden Hominy and Cut Green Beans and 012Green Beans and New Potatoes, contains 2 of my favorite vegetables (Green Beans and Potatoes). I also heated up a can of Del Monte Sliced Carrots. Another canned Vegetable that’s as good as fresh. Growing up I wouldn’t look at a Carrot, now I could have them every day! I also baked a loaf of Pillsbury French Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

I just had a cup of Bigelow Decaf Green Tea for Breakfast. Went out to grab the papers and it had finally quit raining! Cold though about 31 degrees. Nice day out though, sunny and around 50 degrees. After Breakfast I went to Meijer for Mom, she needed a few items. Back home and got the leaf blower out and cleaned the wooden deck and around the house. Finally got our satellite dish repositioned. Since they removed all the woods out from behind us our reception was going bad, everything good now. For dinner tonight I prepared a Thin Sliced Pork Tenderloin Hoagie w/ Baked Potato.

I purchased the Pork Tenderloin from Meijer the other day, about 1 1/2 lbs.. Thin Sliced Pork Tenderloin Hoagie w Baked Potato 003
When the Pork was done I let it cool for 5 minutes and started slicing. I sliced it thin so it would pile up on the bun just right. So to finish making the Hoagie I’ll need;Sargento Ultra Thin Provolone Cheese, French’s Spicy Brown Mustard, and Kroger 100% Whole Wheat Hoagie Roll. I first spread some of the French’s Spicy Brown Mustard on the bottom half of the Hoagie Roll, then layered 2 slices of the Sargento Ultra Thin Provolone Cheese, next I layered in my sliced Pork Roast, then spread some more of the Spicy Mustard on the Pork, and topped it with the top bun of the roll. A delicious Masterpiece! I love Pork Tenderloin anyway it can be prepared. The Provolone works great with Pork and the Spicy Brown Mustard was made for Pork. A winning Hoagie Dish for sure!

 

 

Baked Potato
For a side dish I baked a Russet Potatoes. I seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley. Topped it with I Can’t Believe It’s Not Butter. Then for dessert later tonight a Skinny Cow Chocolate Truffle Ice Cream Bar.

Not a good day out there today. Had the 3 H’s going on- Hazy, Hot, and Humid! It’s about 94 degrees out and very humid. They are warning people with breathing problems to stay in today. Had a light Breakfast and my morning workout. Cleaned and straightened the pantry and then sorted out our spice drawer, had to pitch a couple that had expired. For dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Roasted Potatoes and Sugar Snap Peas.

 

 

 

Most of the time when I’m preparing Pork I use the Cumin Spiced Rub, as I did tonight. I had the Simple Truth Pork Cumin Spiced Pork Tenderloin  Red Potatoes Sugar Snap Peas 008Tenderloin in the freezer, I sat it in the fridge overnight to thaw. To prepare it I’ll need; 1 Simple Truth Pork Tenderloin, For the Rub: 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add Pork to pan; cook 4 minutes, browning on all sides. Bake at 375° for 15 minutes or until a thermometer registers 145° (slightly pink), turning after 7 minutes. Let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe!

 
I make a Potato Dish quite often, tried this new Roasted Potato Dish that uses Turkey Bacon with the Potatoes. To Cumin Spiced Pork Tenderloin  Red Potatoes Sugar Snap Peas 004make the Potato Dish I’ll need; 2 Slices of Jennie – O Turkey Bacon, Sea Salt Ground Black Pepper, 1/2 tablespoon Extra Virgin Olive Oil, and quartered Small red Potatoes. Heat a cast-iron skillet over medium-high heat. Add Turkey Bacon to pan; cook 5 minutes or until crisp. Remove Bacon from pan; crumble. Add Potatoes to drippings in pan; cook 4 minutes or until lightly browned, turning once. Then bake at 375° for 12 minutes or until Potatoes are fork tender. Sprinkle Bacon and Parsley over Potatoes; serve with pork. Excellent Potato Dish. Fantastic side with Pork.

Then I also prepared some Sauteed Sugar Snap Peas. To prepare them I heated 1/2 tablespoon of Extra Olive Oil in a large saute pan over medium-high heat. Added the Sugar Snap Peas, tossing occasionally for 5 to 6 minutes, until the Sugar Snap Peas were crisp tender. Another favorite Side Dish of mine. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

A cool morning, but another beautiful Spring Day out. The outside work is continuing today, still working on the wooden deck. Did a load of laundry and few household chores. After everything was done headed outside and got the 4 wheel cart out for a while, enjoying all this sunshine! I grabbed a Pork Tenderloin from the freezer and let it thaw in the fridge overnight. Dinner tonight is a Sliced Cumin Spiced Pork Tenderloin Sandwich w/ Baked Steak Fries.

 

 
I’m using my favorite rub for Pork, the Cumin Spiced Rub. I purchased a few of the Simple Truth Pork Tenderloin cumin-spiced-pork-roast-2from Kroger and have them in the freezer. To prepare it I’ll need; 1 Pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. Bake at 350° for 25 minutes or until a thermometer registers 145° (slightly pink), turning after 7 minutes. Let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which made one incredible Crust on the Pork with the inside being tender and moist! I let it rest for 10 minutes before slicing, to cool somewhat and let the juices marinate back into the Tenderloin. Leave the oven on so you can bake your sandwich.

 

Grabbed a knife and sharpened it up real good before using. I sliced up the entire Tenderloin, enough for my Sliced Cumin Spiced Pork Tenderloin Sandwich 002dinner tonight and a couple of sandwiches for lunch. I sliced it fairly thin, it’s just incredibly moist. After slicing it up I got a Perfection Deli Mini Sub Wheat Bun, Kraft Reduced Fat Mayo w/ Olive Oil, and a slice of Simple Truth Muenster Cheese. Built my sandwich by first laying the slice of Cheese, then the sliced Pork, and topped it with the Mayo. The oven was still on from roasting the Pork Tenderloin. Laid the sandwich on a small baking sheet, open-faced, and baked until heated through and the Cheese was melting. I love using Muenster Cheese when it’s used a topping on baked sandwiches, melts perfect and retains its full flavor. What a Sandwich! Moist and flavorful, the Cumin Spiced Rub gives the Pork a fantastic crust.

 

 

Then for a side dish I Baked some Ore Ida Steak Fries, perfect Fries for any Sandwich. Got to Love It! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Sunny and a high of 54 degrees today! Started out with a dense fog, worst we have had in quite some time. I went to Kroger about 8:40 this morning, I take I-75 North and you couldn’t see past a couple of cars ahead of you. It finally cleared up around Noon. After Kroger I stopped at the bank and then home for the day. I’ll have to get my four-wheel cart out of the shed and get it cleaned up and charged, we have some 60 degree weather coming! Well for dinner tonight one of my favorite meals, Cumin Spiced Pork Tenderloin w/ Mashed Potatoes and Cut Green Beans.

Had a light dusting of snow this morning, in the low teens with a wind chill today. Went to a Special Valentine’s Day Party at Noon today! My cousin’s son had a party at school and she also has twins where she had to be at their school also. So me and Mom filled in for her at the school part, and it was a hoot! It was fun watching them give their Valentine Cards to each other. Found out my little man has himself girl friend, he’s already got good taste in women! Too much fun, really enjoyed it! For dinner tonight I prepared a Cumin Spiced Pork Tenderloin Roast w/ Mashed Potatoes and Sweet Corn.

 

 

 

 

I’ve been using the Cumin Spice Rub for a while now. I had come across the recipe a while back on-line, and use it all the time now. I purchased the Pork Tenderloin Boneless Roast from Kroger. To prepare it I’ll needCumin Spiced Pork Tenderloin Roast 003; 1 Pork Tenderloin Roast, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combined all the ingredients; rub it all over the Pork. Let stand 20 minutes. To Roast it I used a mall Broiler Pan with a Wire Rack in it. Sprayed the Rack with Pam Cooking Spray and put the Pork on it. I baked it for about 1 hour, until my thermometer registered 150° (slightly pink) Let stand 10 minutes before slicing. Then got ready to enjoy one delicious Pork Tenderloin Roast! Fantastic combo of Spices, which made one incredible Crust on the Pork with the inside being so tender and moist! This is my favorite Pork recipe, bar none! It’s all about the Pork!

For one side I prepared Bob Evan’s Mashed Potatoes, just microwave and serve. Then I made some Brown Mushroom Garvey. I used a packet of Pioneer Brown Gravy Mix and added some sliced Baby Bella Mushrooms to it and heated. I also heated up a can of Green Giant Sweet White and Yellow Whole Kernel Corn. For dessert later a Jello Sugarless Dark Chocolate Mousse.

Today’s Menu: Cumin Spiced Pork Tenderloin w/ Roasted Red Potatoes and Cut Green Beans

A wee bit colder this morning, about 26 degrees and a wind chill to boot! Had a light Breakfast and then an early morning workout. I went to Meijer and Kroger then. About a mile from the house on my way to Meijer, they had a light snow on the ground. And the further away from the house the more snow! Had to make a Meijer/ Jennie – O Turkey run. Meijer has the best selection of Jennie – O Turkey in our area. Stocked up a couple of rolls of the Ground Turkey Breakfast Sausage, some Turkey Breakfast Sausage Links, and Extra Lean Ground Turkey Breast. Thank you Meijer and Jennie – O Turkey! For dinner tonight it’s a Cumin Spiced Pork Tenderloin w/ Roasted Red Potatoes and Cut Green Beans.

I had come across the Cumin Spiced Pork Tenderloin recipe a while back on-line, and use it all the time now. I purchased the pork Tenderloin from Kroger, Simple Truth Natural Pork Tenderloin. To prepare it I’ll need; 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. Bake at 350° for 15 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which made one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork recipe!

 

 

 

Roasted Red Potatoes

For one side I prepared Roasted Red Potatoes. I put these in the oven as I started Roasting my Pork Tenderloin, same temperature of 400 degrees. Then to prepare them I needed; 1 tablespoon Extra Virgin Olive Oil, 1 tablespoon minced fresh or Dried Rosemary, 1 tablespoon Dried Thyme, 1/2 teaspoon Sea Salt, and 1/4 teaspoon Ground Black Pepper. I start by heating up a Cast Iron Skillet on medium heat and as that’s heating up quartered the Red Potatoes. Combined all ingredients in a large bowl and added the Potatoes. Toss to coat Potatoes and add them to to the Skillet. Fry them about 4-5 minutes and transfer the Skillet to the oven, for about 15 – 20 minutes until they are fork tender. This is why I love using Cast Iron Skillets, from the stove to the oven, and easy clean up. I also heated up a can of Del Monte Cut Green Beans and baked a Sour Dough Mini Boule.

Rainy and windy day today around West Chester. Caught up on some laundry and cleaning house today. The Honeycrisp Apples are back in season and what a great tasting crop! I’ve been having them the last few weeks and have been delicious. So for dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Mashed Potatoes and Cut Green Beans.

For one side I reheated some leftover Bob Evan’s Mashed Potatoes, My Mom had made them for her and Dad last night. Then I heated up a can of Del Monte Low Sodium Cut Green Beans. For dessert later a Jello Sugarless Dark Chocolate Mousse.

It’s been a bit more humid today, cloudy with showers later in the day. Had to have the fridge worked on today, ice maker on the blink. After that I ran an errand for Mom and stopped by the bank. Not a whole lot going on today. For dinner tonight, Cumin Spiced Pork Tenderloin w/ Mashed Potatoes and Sliced Carrots.

For one side I had the leftover Bob Evan’s Mashed Potatoes from last night, just reheated and served. Then I also heated up a can of Walmart Brand Sliced Carrots. Also had a slice of Healthy Life Whole Grain Bread. For dessert later a Healthy Choice Dark Chocolate Swirl Frozen Greek Yogurt.
